understanding all the parts
1. Motor handle
Stylish, ergonomoc design houses the powerful motor.

The blades are very sharp. Never touch the serrated edge of the blades. To prevent
injury, take care when assembling, disassembling and cleaning.
Never immerse the motor handle, power cord, or mains plug in water or any other
liquid.
Do not use harsh abrasives, chemicals or oven cleaners.
ALWAYS ensure your electric knife is switched off and unplugged from the mains supply
socket before assembling, disassembling or cleaning.
Before using your electric knife for the first time wash both blades in warm, soapy water.
Rinse and dry thoroughly.
Using a slightly damp cloth or sponge, wipe the motor handle with a mild detergent solution.
Dry thoroughly.

ALWAYS ensure your electric knife is switched off and unplugged from the mains
supply socket before assembling, disassembling or cleaning.
The two blades have to be assembled before fitting into the motor handle. To do this,
hold the blades by the safety grips and position the slot on one blade over the rivet on the
other blade. This fastens the ends of the blades together whilst still allowing them to move
backwards and forwards during operation.
Slide the blades together ensuring they are completely flush.
Hold the blades by the safety grips with your thumb and forefinger with the serrated
edges upermost. Hold the motor handle upside down (i.e. with the on/off button facing
downwards) as shown. Slide the blades into the motor handle until both blades click into
place.
Removing the Blades
ALWAYS ensure your electric knife is switched off and unplugged from the mains
supply socket before assembling, disassembling or cleaning.
A. Press and hold the blade release button.
B. While holding the blades by the safety grips between your thumb and forefinger, gently pull
them from the motor handle.

ALWAYS ensure your electric knife is switched off and unplugged from the mains supply
socket before assembling, disassembling or cleaning.
Never operate your electric knife without the blades correctly fitted to the motor
handle.
Keep hands, fingers, hair, clothing, the power cord and other utensils away from the
moving blades during operation to prevent injury to yourself and damage to your
electric knife.
Because the blades move backwards and forwards, never place your hand on top of the
blade to support it while using your electric knife.
Assemble the blades and fit them to the motor handle (see page 8).
Plug the power cord into the mains supply and switch on.
Hold the motor handle securely and position the blade near the food to be sliced.
To operate, press and hold the on/off button. Slice food in a downwards or crossways
motion, keeping the blade away from your fingers and body. Guide the knife blades through
the food to be sliced, pressing down lightly. There is no need to use a sawing motion with
your knife.
To stop your electric knife, release the on/off button.
After use, switch off and unplug your electric knife from the mains supply socket. Remove the
blades from the motor handle (see page 8).
In the unlikely event of the blades getting stuck in operation, switch off and unplug your electric
knife from the mains supply socket. Do not try and release the blades while your electric knife is
plugged in and switched on.

Chickens and turkeys are carved in much the same way, although with large turkeys the breast is
usually carved first and the legs are removed afterwards. Before carving allow the meat to rest for
about 15 minutes. This will allow for the juices to redistribute and the meat will be more tender,
and easier to carve.
Place the chicken/turkey, breast side up on a carving board and steady with a carving fork.
Using the Electric knife, cut the skin between the thighs and breast.
Bend the thigh outwards and cut straight through the hip joint, removing the whole leg.
Separate the thigh from the drumstick. Remove the wings in a similar way.
Starting at the neck cavity, begin to carve the breast meat evenly.

Carve slices from the breast, parallel to the breastbone. Then repeat on the other side. Lift
off each slice by holding it between the knife and fork to keep the slice intact.
Hold the drumstick with a carving fork. Carve the meat and skin from one side of the
drumstick along the line of the bone. Roll the leg over and carve along the bone on the other
side.

To clean your electric knife remove the blades from the motor handle (see page 8) and wash them
in warm, soapy water. Rinse and dry thoroughly before placing inside the blade cover.
Using a slightly damp cloth or sponge, wipe the motor handle with a mild detergent solution. Dry
thoroughly.

This product is guaranteed for a period of 1 year from the date of purchase against mechanical and
electrical defects.
This guarantee is only valid if the appliance is used solely for domestic purposes in accordance with
the instructions provided, that it is not connected to an unsuitable electricity supply, dismantled
or interfered with in any way or damaged through misuse. Under this guarantee we undertake to
repair or replace free of charge any parts found to be defective.
Nothing in this guarantee or the instructions relating to the product excludes, restricts or
otherwise affects your statutory rights.

after use and before cleaning.
Always remove all packaging materials from
the electric knife.
Always turn the electric knife on and off by
using the On/Off switch.
Never use the electric knife outdoors.
Never use the electric knife for anything other
than its intended use. For household use only.
Never touch the serrated edge of the blades.
Exercise extreme caution when operating,
assembling, disassembling and cleaning, to
prevent injury.

knife. Close supervision is necessary when the

Never operate any appliance with a damaged
cord or plug or after an appliance malfunction
or if it has been damaged in any manner.
Never cover the electric knife when in use.
Never use attachments or accessories not
recommended by the manufacturer.
Never leave the electric knife unattended

connection to the mains supply
This appliance is fitted with either a moulded or rewirable BS1363, 13 amp plug. The fuse should
be rated at 3 amps and be ASTA approved to BS1362.
If the fuse in a moulded plug needs to be changed, the fuse cover must be refitted. The appliance
must not be used without the fuse cover fitted.
If the plug is unsuitable, it should be dismantled and removed from the supply cord and an
appropriate plug fitted as detailed below. If you remove the plug it must not be connected to a 13
amp socket and the plug must be disposed of immediately.
The wires of the mains lead are coloured in accordance with the following code:
BLUE – NEUTRAL BROWN – LIVE
The wire which is coloured Blue, must be connected to the terminal which is marked with the
letter N or coloured Black.
The wire which is coloured Brown, must be connected to the terminal which is marked with the
letter L or coloured Red.
If any other plug is used, a 3 amp fuse must be fitted either in the plug or adaptor or at the
distribution board.
CAUTION: DO NOT CONNECT EITHER WIRE TO THE EARTH TERMINAL IN THE PLUG
WHICH IS MARKED E OR WITH THE EARTH SYMBOL ( ) OR COLOURED GREEN OR
GREEN AND YELLOW.
This symbol indicates that this unit is a Class II appliance and therefore an earth
connection is not required.

These appliances are built to the very highest of standards. There are no user serviceable parts.
Follow these steps if the unit fails to operate:
Check that the instructions have been followed correctly.
Check the fuse has not blown.
Check that the mains supply is functional.
If the appliance will still not operate return the appliance to the place it was purchased for a
replacement.
To return the appliance to Breville Customer Service Department, follow the steps below:
Pack it carefully, preferably in the original carton. Ensure unit is clean.
Enclose your name and address and quote the model number on all correspondence.
Give the reason why you are returning it.
If within the guarantee period, state when and where it was purchased and include proof of
purchase (e.g. till receipt).
