CONNECTION AND INSTALLATION
All Cafina machines are supplied ready for connection. Before a machine can be
installed, however, the service outlets and the drain must be prepared (according to the
connections diagram) and be located within 1 m.
This work must be carried out by appropriately qualified personnel and be in strict
accordance with the applicable regulations. The Cafina service department is not
authorised to install the service outlets or the drain and can accept no responsibility
for them.
The machine must be placed on a solid table top or counter surface. A hole with a
diameter of 120 mm must be drilled in the surface for the connections as shown in the
connections diagram.
Please do not install the machine in large catering kitchens. It is has not been
designed for that kind of operation.
a) Electrical connection
The power supply voltage must agree with
the data on the nameplate. The supply must
be separately fused in accordance with
local regulations. A power point outlet is
preferred. However, where the connection is
directly terminated at junction box, a switch
must be provided which breaks all poles and
has a contact gap when open of at least
3 mm.
b) Water supply
A stop-cock with a back-pressure valve must be installed in an easily accessible position.
A water filter (option) should be fitted where the local conditions require it. The filter must
be mounted vertically. Water supply and drain hoses are provided with the machine. The
hoses must not be shortened during installation for safety reasons. The steady-state
water pressure must be at least 2 bar. A pressure reduction valve must be included
between the stop-cock and the machine where the water pressure exceeds 5 bar.
Before using the machine for the first time, any water filter fitted must be activated as
directed in the
specific instructions (Brita
®
= 3 min, Everpure
®
= 5 min). The activation
procedure must be repeated whenever the filter element is replaced.
c) Water drain
All machines are equipped with a drain outlet to which the hose supplied can be fitted.
The hose is inserted into an open drain pipe.

WARNING
Maximum safety is one of those Cafina product features which receives our very special
attention.
Nevertheless if it is used incorrectly, an element of danger always remains with every
item of technical apparatus in spite of all the precautions taken in the design.
For this reason, we have included the following warnings for your safety.
Important instructions you should carefully observe for your own safety:

The connection of the machine to the outlets which have been prepared for it and also
the performance of maintenance and repairs may only be carried out by the especially
trained and authorised personnel of the Cafina customer service department using
original parts and spares.
♦
The safety devices included in the machine may in no circumstances be repaired,
bridged or adapted by unqualified personnel.
CAUTION!
♦
There is danger of scalding near the hot water/steam outlet (3 and 5) and the coffee
outlet (4).
CAUTION!
♦
Never touch the coffee bean container when the machine is switched on.

COMMISSIONING
Before switching the machine on, check that the water stop-cock is open and the
electrical power is switched on. As soon as electricity is applied to the machine,
" c60 " appears on the otherwise unilluminated display.
Up to 15 different beverages can be programmed and listed on three display pages.
Pressing the SHIFT button switches from one page to the next. Only pages containing at
least one beverage are displayed (empty pages are omitted).
The control system switches back to the first page, unless a beverage button on one of
the other pages is pressed within 6 seconds.
The service department technician will enter the beverages in the lists according to your
wishes. Apart from the well-known types of beverages, special names can also be
entered.
Place the control switch (8) to the "Service" position. "ON" lights on the display and the
machine goes through its initialisation routine. At the same time the flow-through water
heater starts to warm up.
The display shows:

The initialisation program terminates once the water heater has reached the SET

COFFEE BEAN CONTAINER
♦
Fill the coffee bean container (12, 14) with coffee beans of your choice for coffee with
cream, espresso or decaffeinated coffee.
♦
When a coffee bean container is empty, the names of the beverages supplied by its
grinder disappear from the display and instead "refill hopper 1" (or 2) appears. Coffee of
this blend is no longer available.
♦
Fill the container again with coffee of the same blend and press the correspondingly
marked button (Coffee filler). The beverage selected last is repeated automatically.
♦
The remaining beverages (not displaying "refill hopper") are still available and can be
selected, but in this case, the last beverage selected from the coffee filler which is now
empty will not be repeated.

CHOICE OF COFFEE BEVERAGE
♦
The Cafina c60 provides a choice of different coffee beverages such as Espresso, Café
Créme, Pot, Jug etc. The machine automatically prepares and dispenses the coffee
upon pressing the desired beverage button (1 to 5) on the panel (9). Refer to page 8
(Commissioning) for programming the buttons.

Place 1 or, if you want two cups of coffee, 2 cups under the coffee spouts (4).
♦
Press the button for the desired kind of coffee and number of cups. If necessary, press
SHIFT beforehand to select beverages on the 2nd. or 3rd. pages of the display.

If a beverage button is not pressed for 6 seconds, the control system switches
automatically back to the first page.
♦
The display shows the beverage names and number of cups programmed for the
buttons.
♦
The preparation of the coffee commences and it flows out of the spout(s) (4).
♦
Where a larger number of cups of the same beverage is required, press the beverage
button a corresponding number of times to increase the quantity in one's, respectively in
two's.
♦
If you make a mistake, you can delete the number of cups ordered by pressing the
STOP button. In this case. the cup currently being prepared is completed.
♦
Pressing the STOP button a second time aborts the current program.

DIFFERENT KIND OF COFFEE
♦
If you wish a different kind of coffee to that already loaded in the coffee bean container
(e.g. decaffeinated espresso etc.), the procedure is as follows:
♦
Press the button marked "Decaffeinated". The cover (13) opens and "put in coffee"
appears on the display for 5 seconds.
The selection can be cancelled again during the 5 seconds by pressing STOP. The
machine then returns to its ready position after a movement of the piston.
♦
A heart symbol then appears next to all the standard beverages on all pages of the
display.
♦
Tip a level metal measure of the correctly ground coffee powder (F) in the decaffeinated
coffee filler (13).
♦
Press the desired beverage button. A cup of coffee is now dispensed using the coffee
which has been tipped in. It is not possible to select several cups at once.
♦
NOTE:The filler cover stays open for a maximum of 20 seconds. If a beverage is not
selected during this time, the cover closes and the machine returns to the ready position
after a movement of the piston.

COFFEE GROUNDS DRAWER
♦
The dry coffee grounds are ejected into the coffee grounds drawer. When the drawer is
full, the machine stops and "empty drawer!" appears on the display. The drawer cannot
be over-filled. Cups of coffee already selected but not dispensed remain on memory.
♦
Take out the drawer, empty the coffee grounds and replace the drawer.
♦
Normal operation of the machine is resumed when a beverage button is pressed. The
dispensing of already selected cups continues automatically when the drawer is
reinserted.
♦
The message "drawer missing!" appears on the display when the coffee grounds drawer
is removed. The machine is blocked until the drawer is reinserted. Once started, the
dispensing of a cup is completed.

HOT WATER AND STEAM OUTLETS
♦
Either measured portions of hot water or steam can be obtained or the output can be
controlled manually using buttons (6) and (7). Provision is made for the manager to
program the portions and manual control buttons.
♦
There is also the possibility of controlling the hot water output via the coffee buttons. The
service technician can program the buttons for you accordingly.
Hot water outlet:
a) manual
♦
An undefined quantity of hot water can be obtained via the spout (3) by pressing the hot
water button (6). Press the button once to turn the water on and press it again to turn the
water off.
b) in measures
♦
A measured portion of hot water can be obtained via the spout (3) by pressing the hot water
button (6). The flow of water stops automatically after the time programmed.
The flow of a measure portion of hot water can also be turned off by pressing the hot water
button (6) a second time.
Steam outlet:
IMPORTANT: Always briefly start and stop the flow of steam first before actually using it.
a) manual
♦
An undefined quantity of steam can be obtained via the nozzle (5) by pressing the steam
button (7). To heat a beverage, immerse the nozzle in the beverage and press the steam
button to turn the steam on. Press the button again to turn off the flow of steam after the
beverage has reached the desired temperature.
b) in measures (e.g. for cappuccino)
♦
To heat a beverage, immerse the nozzle in the beverage and press the steam button to turn
the steam on. The flow of steam stops automatically after the time programmed. The flow of
a measure portion of steam can also be turned off by pressing the steam button (7) a
second time.
Note:
♦
The steam nozzle must be cleaned as frequently as possible for reasons of hygiene. It is
advisable to wipe it with a damp cloth every time immediately after use.

CLEANING, CARE AND MAINTENANCE
♦
Catering coffee machines represent a considerable investment which it is worth while
preserving for as long as possible. Coffee machines which are looked after do not only look
better, they also make bettercoffee longer.
For this purpose, Cafina machines include a carefully developed cleaning program.
CAUTION: The machine must not be cleaned by immersing in water, pouring water over it
or spraying it down. Hot rinsing water flows out of the coffee spouts during the course of the
cleaning program.
a) External cleaning
♦
Wipe plastic parts, painted covers and stainless steel surfaces regularly with a damp cloth.
We recommend the use of the chrome cleaning spray Order No. 2150024 for taking care of
the stainless steel surfaces.
b) Daily cleaning
♦
Depending on how often it is used, the hot water part of the machine must be cleaned at
least twice a day. To ensure that cleaning does indeed take place at regular intervals, the
service technician can program a maximum number of cups. When this programmed
number of cups has been drawn, the message "CLEANING" is displayed on intermediate
line 1. Cleaning should be carried out as soon as possible afterwards. From the moment
the message appears, a further 100 cups can be dispensed.
♦
Run the cleaning program (see Page 15) for daily cleaning.
NOTE: The number of times the cleaning program is carried and also aborted is
automatically recorded and can be viewed by the service technician in the machine report.
Maintenance
♦
The service technician programs a maximum number of cups depending on the water
hardness after which the element of the water filter must be replaced.
♦
The message "FILTER" appears on intermediate line 4 when the filter element is due for
replacement. Further cups of coffee can still be dispensed.
♦
The element, however, has to be replaced and the service department should be notified as
quickly as possible. Before the machine is used again, the new filter element must be
activated at full flow (Brita 3 min / Everpure 5 min). After replacing the filter, the number of
cups for the next replacement must be entered. Please consult our service department.
Please note: The water filter has a decisive influence on the quality of the water and is
therefore also important with respect to the quality of the coffee and the safe operation of
the machine.
The filter must be changed at least once a year!

CLEANING PROGRAM
♦
Every evening or after the message "CLEANING" is displayed, turn the key switch from
"Service" to "0".
♦
The following is then displayed:
If the cleaning program is initiated
by mistake, it can be cancelled by
turning the key switch back to
"Service" and pressing the STOP/
SHIFT button. The machine is then
ready for normal operation.
The pre-rinse starts as soon as
button 5 is pressed.
NOTE: The cleaning program can still be cancelled during the pre-rinsing stage (indicated
on the display) as described above. This is done by pressing the STOP/SHIFT button once.
The above display appears again after the movement of the piston has been completed.
Continue then as described above.
♦
After the pre-rinse, the display changes to:
The filler cover (13) opens.
Place 1 Cafina cleaning tablet
(Order No. 2900018) in the filler
(13).Do not use any other cleaning
agent. Now start the. cleaning
program by pressing button 5.
NOTE: The filler cover closes
again automatically, if the program
is not started within 20 sec It can be
reopened by pressing the button
indicated.
♦
Once started, the cleaning program is fully automatic.
♦
The key switch can now be placed in the "Service" position, if you want the machine to start
again after the cleaning program has finished, otherwise the machine switches itself off at
the end of the program and "Cafina c60" appears on the display.

DAILY COUNTER
♦
The daily counter registers all the beverages dispensed. Double orders count as two cups.
The number of single and double orders are totalled for the various beverages. Measured
output of hot water is also registered.
♦
To access the counter place the key switch in the "Manager" position and select the daily
counter function from menu I. The following is an example of the display which then
appears:

The totals in cups for each beverage are shown in descending order.
♦
Press the button marked "next" to see the totals for the next four beverages.
♦
At the end of the list, the query "delete?" appears in place of "next".
♦
Press button 5 (delete?) to reset the counter after which the display changes to:
>resets the daily
counter to zero.
>jumps back to the first
total.
NOTE: The delete button resets the complete counter; no provision is made for deleting
individual totals.

CHANGE WATER QUANTITY
♦
This menu item enables you to vary the quantity of water for each beverage to suit the size
of cup.
♦
With the key switch in the "Manager" position, select the function "water quantity" from the
menu. The following is an example of the display which then appears:

CHANGE HOT WATER/STEAM FLOW TIME

This menu item enables you to vary the flow time to suit the size of cup and to program the
output mode (manual control or measures).
♦
With the key switch in the "Manager" position, select the function "water quantity" from the
menu.

Press either (6) for hot water or (7) for steam.
♦

Select the output mode using button 3. The display toggles between "Portion" and
"manual".

In the case of Portion, the flow time is programmed with the aid of the START/STOP
button.

Place a cup under the spout. Press button 4 (START) to start the flow and press button 4
again (STOP) to stop it when the cup is sufficiently full. The flow time is displayed on line 3.
This procedure can be repeated any number of times.
♦
After all the changes have been made, press the STOP/SHIFT button to confirm and save
them. The machine then permanently saves the new settings and returns to the menu.

CHANGE COFFEE QUANTITY

This menu item enables you to either increase or decrease the quantity of ground coffee for
each beverage by up to 1 gramme.
♦
With the key switch in the "Manager" position, select the function "coffee quantity" from the
menu.

The following is an example of the display which then appears:
