1INTRODUCTION
This manual describes assembly/disassembly, setting up, operation, transport, clearing and
maintenance of the LIRA and LIRA PLUS semi-automatic cutters made by CHOCOLATE
WORLD, Antwerp - Belgium.
The information given below meets the requirements of Directives 98/37/EC and 2006/42/CE on
machinery, and also of UNI 10893:2000 and UNI 10653:2000 technical standards.
Before operating the cutter for the first time, read all instructions in this manual. After reading, it is
advisable to keep it close at hand to consult it any time when necessary in order to operate the LIRA
and LIRA PLUS Semi-Automatic Cutters at their optimum condition and prolong their service life.
In case of loss further copies of this manual can be obtained from CHOCOLATE WORLD
CHOCOLATE WORLD holds no liability in case of damage due to misuse, neglect or non-
compliance with these instructions.
Only CHOCOLATE WORLD authorised personnel have to perform maintenance and repair of the
machine. CHOCOLATE WORLD has highly specialised personnel who are experienced in regular
cleaning and maintenance, which are essential for long service life and trouble-free operation of
your machine.
Designed in compliance with Directives 98/37/EC and 2006/42/CE on machinery, the cutter has the
CE conformity marking.
See Section 11 of this manual for reference to design, construction and testing regulations.
As a final quality test each machine is tested in-house for safety and reliability. However, upon
delivery the machine should be checked carefully for any transportation damage as outlined in
Section 7.3 of this manual.
All content, drawings and texts included in this manual are exclusive property of CHOCOLATE
WORLD, and cannot be reproduced, in whole or part, under any circumstances.
The court of jurisdiction for any dispute arising hereunder shall be the Court of Antwerp.

2CE DECLARATION OF CONFORMITY
In order to certify that our machine has met all EU consumer safety, health or environmental
requirements, CHOCOLATE WORLD, as a manufacturer and compiler of the technical
documentation, has drawn up the CE Declaration of Conformity (Annex 1) and affixed the CE
marking on the machine (Section 3).

4GENERAL DESCRIPTION
The LIRA and LIRA PLUS Semi-Automatic Cutters are intended for use in the food processing
industry to cut food and/or sweet products.
The cut width depends on the thickness of the cutting frames used. To this end, interchangeable
cutting frames are available.
Cutting is achieved by a reciprocating tray that moves the product past the stainless steel cutting
blades of the frame. Hence the cutting tools are static, whereas the tray on which the product to be
cut is placed goes back and forth.
The cutting speed is controlled manually, whereas the tray motion is controlled electronically.
The machine is powered by 230 V AC through a tripolar plug (including a ground terminal).
Besides the electric power circuit (230 V AC) feeding the electronic control card and the electric
engine through an inverter system, which moves the product past the cutting blades, the machine is
equipped also with an auxiliary circuit (12 V DC and 8 V DC) powering the safety and protection
relays, the control and operating unit through a transformer integrated into the motherboard.
The control panel is located on the front left side of the machine. Controls include power on/off,
cutting speed setting, return to rest position, emergency stop, and power supply indicator.
Equipment includes also a plastic top cover and a cutting frame rack.

The cutter can be placed on a worktable or on its own non-adjustable stand mounted on a base
structure with four small supporting feet.

5INTENDED USE
The Semi-Automatic LIRA and LIRA PLUS Cutters are intended for use in the food processing
industry to cut soft solid food and/or sweet products, products prepared with nut grains and having a
soft texture, or hard mixtures.
Both cutters are designed for use inside of a building. They can be placed on a flat surface or on
their own stands.

5.1 Risks associated with misuse
Follow the tips below to preserve your machine in good order and avoid any risks.

5.2 Residual risks and safety measures
The cutter should be used in suitable lighting conditions since it does not have a lamp.
Before pushing the start switch, make sure the cutting frame is properly mounted on the supporting
system in order to prevent uncontrolled displacement from the installed position.
Even if the machine is equipped with safety measures and emergency stop with power
disconnection, the operator must stand in front of the cutter so that he can have full view of the
control panel. At the end of each working cycle the cutter must be stopped by pushing the ‘stop’
button and the emergency mushroom push button. Then it has to be disconnected from the mains
power supply.
5.3 Danger and safety labels
The following danger and safety labels are applied on the machine:

6INSTRUCTIONS FOR SAFE USE
We are giving below some general instructions for safe use of the machine.
CHOCOLATE WORLD holds no liability in case of damage to property or injury to individuals
due to non-compliance with the instructions given in this section.
6.1 General safety and injury prevention rules
Please mind the warning labels shown in this manual and observe safety measures.
6.2 Operator safety measures
All personnel involved should be well informed and trained on the hazards associated with the use
of the machine.
6.3 Work environment
The cutter is not designed for use outside.
The work environment has to be adequately lit based on the task to be performed.
Water spray systems may cause damage to the machine; for this reason they should not be kept or
used in the work environment.
The mains power supply to which the cutter is connected has to be standard and suitable to the
technical requirements of the system.
6.4 Safe use of the cutter
Do not place products of unsuitable sizes and/or weights on the tray.
Do not use the cutter without prior careful reading of this user manual.
The cutter must not be used by personnel who have not been adequately trained in its use, are not
healthy or are not insured against employment injuries.
Before turning the cutter on, make sure that it functions properly.
Do not make a hole, cut or alter the machine.
Keep your hands off the cutting frames and do not rest them on the cutter while it is running.
In case of possible danger to persons or damages to the machine, press the emergency push button
to turn the cutter off.
7COMMISSIONING
7.1 Packing and unpacking
The cutter is delivered in the original packaging, which consists of:
−a base pallet;
−a polypropylene support bottom board;
−a side protection frame of collapsible pieces;
−a top deckboard.

To remove packaging, first unscrew the top deckboard, remove the side protection frame, and then
take the machine out.
The package includes:
−a cutter;
−a user and maintenance manual; and
−a demonstration CD.
At least two people are needed to carry the machine.
CHOCOLATE WORLD suggests that you keep the original packaging for safe shipping of the
machine should replacement/repair be required.
7.2 Installation and start-up
Have two people take the cutter out of the original packaging, then place it on a work surface that is
flat and wide enough to accommodate it safely, or on its stand.
7.3 Assembling
After installation, remove seals and apply the desired cutting frame.
The procedure can be seen also on the demonstration CD.
7.4 Setting and testing
The cutter cannot be set before starting up.
Before starting up:
−check the machine for any possible transportation damage;
−make sure the tray is free from any foreign body and no obstacle stand in the way when it is
running;
−make sure the tray, that is the machine, is levelled.

The following checks have to be carried out regularly on the protection and safety devices:
•emergency stop and cycle restart;
−start a new working cycle;
−push the EMERGENCY STOP BUTTON;
−make sure the machine stops;
−release the EMERGENCY STOP BUTTON;
−push the START switch;
−make sure the working cycle restarts;
•working cycle stop upon lifting the protection top cover from the tray:
−start a new working cycle;
−lift the protection top cover while the tray is moving;
−make sure the working cycle stops.
Repeat the above check-ups every six months.
7.5 Starting-up
Make sure the cutter is adequately connected to the mains supply, and that the following are met:
−the machine is plugged into a standard, single-phase 10 amp (minimum) wall socket with a
ground terminal;
or alternatively
−the machine is plugged into an industrial, single-phase 10 amp (minimum) wall socket with
a ground terminal;
−switch the machine on by pushing the general on/off button (green/red) located on the back,
next to the Emergency mushroom push button;
−push the start button on the control panel;
−make sure the green light (LIRA cutter) OR the blue light (LIRA PLUS cutter) on the
START button are on.
Now the machine is powered and ready for use.
7.6 Use
The procedure can be seen also on the demonstration CD.
Lift the protection top cover.
Apply the cutting frame.
Place the product on the tray.
Pull back down the protection top cover.
Set the cutting speed by rotating the speed/power control dial (LIRA cutter) or pressing the – and +
buttons (LIRA PLUS cutter) on the control panel.
Turn the mode selector dial right (LIRA cutter) or press the ⇒switch (LIRA PLUS cutter) on the
control panel. Cutting begins and goes on until the end stroke is reached as automatically signalled
by the control system.
Remove the cut product by lifting the product recovery tray.

Then bring the selector mode back to the initial position and then turn it left (LIRA cutter) or press
the ⇐switch (LIRA PLUS cutter) on the control panel. The cutting frame runs back until the end
stroke is reached as automatically signalled by the control system.
7.7 Emergency stop
Press the EMERGENCY STOP switch and disconnect the cutter from the mains supply.
7.8 Cleaning
The procedure can be seen also on the demonstration CD.
The cutter must be cleaned after every single use, that is at the end of each continuous sequence of
use, regardless of the time it has lasted. In short, under optimum temperature and moisture
conditions for bacterial growth, all food residues have to be removed within two hours.
Always disconnect the cutter from the mains supply before cleaning it as described above.
Use preferably a vacuum cleaner to remove coarse particles from the machine body and the
components.
Use standard clearing solutions to clean the machine.
7.9 Disassembling
The procedure can be seen also on the demonstration CD.

7.10 Disposal
The machine has to be disposed in compliance with local waste management and disposal
regulations.
8MAINTENANCE
Only CHOCOLATE WORLD authorised personnel have to perform maintenance and repair of the
cutter except for activities described in Section 8.1 below.

0746 491604.
8.1 Motherboard removal procedure on LIRA PLUS cutter
With machine standing and off the mains power supply, remove the control panel by unscrewing
the four screws that hold it down (see Figure Error! Reference source not found..2).
Then remove the motherboard.
9PERSONNEL TRAINING
Personnel have to be trained based on the instructions given in this manual.

11 WARRANTY
CHOCOLATE WORLD guarantees this cutter to have been checked thoroughly before leaving the
factory, and to be free from defects in both material and workmanship for one (1) year from the
original date of purchase.
This warranty does not apply to damage caused by service performed by anyone who is not a
CHOCOLATE WORLD authorized service provider; or to damage caused by use with non-
CHOCOLATE WORLD products; or to damage caused by a product or part that has been modified
to alter functionality or capability of the machine.
CHOCOLATE WORLD will not replace the cutter or provide any refund until the defective product
or parts are returned.
Replacement products may be new or second-hand items as long as they are as reliable as the
defective products.
This warranty does not apply to consumable parts subject to normal wear and tear; to damage
caused by negligence or by operating the cutter outside the permitted or intended use described in
this manual, or to damage that cannot be linked to conditions of normal use.
Service under warranty does not extend warranty.
The service personnel shall replace or fix consumable parts, parts subject to wear and tear only
upon request and payment of the relevant fee.
Repair and shipping costs will be charged for damage that cannot be related to defects in material
and workmanship.
Replacement products will be shipped F.O.B. our plant; all shipping costs shall in all cases be borne
by the client.
CHOCOLATE WORLD does not hold any liability in case of damage to property or injury to
individuals caused by misuse or by operating the machine outside the permitted or intended use
described in this manual.
The court of jurisdiction for any dispute arising hereunder shall be the Court of Antwerp, Belgium.
