CHECKING FOR GAS LEAKS
• Checkthatallconnectionsaretightandthatthegas
cylinderconnectionhasbeentightenedbeforeyouturnthe
cylindergasvalveon.
• NEVERcheckforleakswithaameorpilotlight.
• Usingsoapywater,coatallconnections,ifbubblesappearturn
thecylindergascontroloffandretightentheconnectionbefore
re-testing.
• Inspecttheapplianceregularlyforsignsofwear,leaksorincorrect
operation.Ifsymptomssuchasaringoftheburner,issueswith
lighting,damagestohosesorconnectionsorleaksfromsealsor
gascontrolsareidentieddonotattempttorepair,returntoyour
authorisedstockistforserviceandmaintenance.
• Tocheckifgasremainsinthecylinder,disconnectfromthe
applianceandholdthecylinderinaverticalpositionthen
shakefromsidetoside,ifthereisasoundorfeelofliquid
movementinside,thecylindercontainsgas.
• Whenchanginggascylindersensurethisisconducted
outsideinawellventilatedlocationfreefrompeople,animals
andignitionsourcessuchasnakedames,pilotlightsand
electricalequipmentwithheatersorelements
OPERATING INSTRUCTIONS
Pre-use procedures
Beforeyoucookfoodinyoursmoker,itisimportantto
“season”yoursmoker.Seasoningsealsthepaintandinterior
ofyoursmokertoenhanceavouring,durability;andoverall
performance.Thisisalsoreferredtoasthe“break-in”process.
Ifyoursmokerrequiresanytouch-uppaintontheinsideofthe
cabinet,theonlytimeyoushouldapplypainttotheinsideis
beforetheseasoningprocess.Paintshouldnotbeappliedto
theinteriorofyoursmokerafteryoursmokerhasbeenused.
Painttoxinsmaycontaminateyourfood.However,ifpaint
becomesnecessaryafteruse,seethesectioninthismanual
concerningAfterUseCareandMaintenance.
Toseasonyoursmoker,simplyuseitasyounormallywould;only
donotcookanyfood.Youwillneedtofollowalloftheoperating
proceduresinthenextfewsectionsofthismanual.
Usingyourdesiredavouringwoodsandmarinades,burnyour
smokeratlowtemperature(around125°F[50°C])for45-60
minutes.Letthesmokercool,andcleanouttheusedwater
andwood.
Onceseasoningiscomplete,yoursmoker’sinteriorwillhavea
durable,seasonedcoating.
Adding wood/charcoal
Toaddwoodchipsbeforecooking,simplylltheWoodChipBox
withyourchoiceofavouringhardwoodchips.Theamountand
typeofwoodyouuseisentirelyuptoyou.Onefullboxistypically
enoughforseveralhoursofsmoking.Oncetheboxislled,place
thelidontopoftheboxandsettheboxinthesmoker.
Toaddwoodchipswhilecooking,werecommendusingtongsorlong
handledplierstoremovetheboxlidandtoplacethepiecesintothe
WoodChipBoxwithoutremovingthebox.Itisnotrecommendedto
removetheWoodChipBoxwhilethesmokerisinoperation.
CAUTION: TheWoodChipBoxandlidgetveryhot.Avoid
handlingthemwhileinuse.Alwayswearprotectiveovenmitts
whenhandlinghotcomponents.
Cooking Tip – Flavouring wood:
•SmallwoodchipsworkbestinsidetheWoodChipBox.
•Usedryhardwoodssuchashickory,pecan,apple,cherry
ormesquite.
•Mostfruitornuttreewoodsproduceexcellentsmokeavouring.
•Donotuseresinouswoodssuchaspineorplywood.These
usuallyproduceunpleasantavouring.
•Letyourtastebeyourguide–experimentwithdifferenttypes
andquantitiesofwoodchunks,chips,orsticks.Youcaneven
mixwoods.
•Toproducemoresmokeandtopreventfastburning,pre-soak
thewoodchipsinaseparatebowlofwaterforatleast20
minutes,orwrapthechipsinperforatedaluminumfoil.
•Mostsmokeavouringoccurswithinthersthourofcooking.
Addingwoodchipsafterthersthouristypicallynotnecessary
unlessextrasmokeavouringisdesired.

Toaddwaterbeforecooking,simplyremovethewaterbowlandll
itwithwaterupto1”(2.5cm)belowtherim.Thenreplacethebowl
tothebottomoftherack.Toaddwaterwhilethesmokerishot,DO
NOTpullthewaterbowloutbeyondtherack.
Cooking Tips:
Linethewaterbowlwithaluminumfoilbeforeeachuse.Thiswill
makeiteasytocleanandhelpyourwaterbowllastlonger.To
makeaddingwatereasierandsafer,useacleanwateringcan
withalongspout.
LIGHTING PROCEDURES
Igniter lighting system
1.PerformleaktestafterconnectingLPGascylinder.Checkall
connectionsforleaksusingthe“soapywater”testasexplained
onpage10.
2.Openthesmokercabinetdoor.
3.Checkforanyblockagetotheburner.Removeanyforeign
objectsormatter.
4.Besuretheburnercontrolknobisinthe“OFF”position.
5.OpentheLPGascylindervalvebyturningcounter-clockwise.
6.Tolightunitwiththeigniter,pushinandturntheBurnerControl
Knobcounter-clockwisetothehighsetting.
7.ImmediatelypressthePiezobuttonandyouwillhearitclick
severaltimes(youshouldseeasmallsparkjumpingfromthe
endoftheelectroderodtothesideoftheburner).Iftheburner
doesn’tlightwithin5seconds,turntheBurnerControlKnob
offandwaitveminutesforgastoclearbeforerepeatingthe
stepsagain.
8.Oncetheburnerislit,thenclosethedoortoallowheatto
accumulate.
Shutting the smoker off
CAUTION: Thesmokercanbecomeveryhotwhileinuse.Donot
touchanyportionofthesmokerexceptforthedoorhandleand
burnercontrolknob.Itmaybenecessarytouseprotectivegloves.
• Turntheburnercontrolknoboffbypushinginandrotating
clockwise.Theburnerameshouldthengoout.
• TurnofftheLPGascylindervalvebyturningtheknobclockwise
untilitstops.
• Followallwarningsandsafetyprecautionsbeforeremoving
meatfromsmokerorpreparingtheunitforstorage.Please
seepage13forproperstorageproceduresandtheimportant
warningsandsafeguardsonpage2.

COOKING INSTRUCTIONS
IMPORTANT: Beforeeachuse,cleanandinspectthehose
andtheconnectiontotheLPGascylinder.Ifthereisevidenceof
abrasion,wear,cutsorleaks,thehosemustbereplacedbefore
thesmokerisused.Refertothe“leaktest”instructionsintheLP
Gascylinderconnectionportionofthismanual.
• FilltheWoodChipBoxwithavouringwoodchipsandplacethe
boxinsidethesmokerasinstructedintheassemblysectionof
thismanual.Also,refertoCookingTipsforFlavouringWoodin
OperatingInstructionssection.
• Placethewaterbowlinsidethesmokerinthelowestrack
positionasexplainedintheassemblysectionofthismanual.
Carefullyllthewaterbowlwithwaterormarinadeupto1inch
belowtherim.Afullbowlwilllastforapproximately2-3hours.
Donotoverllorallowwatertooverowfromthewaterbowl.
• Insertoradjustthecookinggrillsintothedesiredrack
positions.Forbetteraccesstothefoodwithtongsorspatulas,
makesurethegrillwiresrunfronttobackasexplainedinthe
assemblysectionofthismanual.
• Youarenowreadytolighttheburner.RefertotheLighting
Procedureonthepreviouspagesofthismanual.Theheat
fromtheburnerwillallowthewoodchipstoburn,causingthe
avouringsmoketoaccumulate.
• Placethefoodonthecookinggrillsinasinglelayerwithspace
betweeneachpiece.Thiswillallowsmokeandhotmoistureto
circulateevenlyaroundallthefoodpieces.
• Forbestresults,smokefoodsataconstanttemperatureof225°
to250°F(110°to120°C)asmeasuredbythetemperature
gaugemountedonthefrontofthesmoker.Formoretenderand
heavilysmokedmeat,alowertemperaturemaybepreferred.If
timeiscritical,ahighertemperaturerangeisrecommended.
• Checkwaterlevelperiodicallyandaddwateriflow.Forbest
resultsandtoretainheat,avoidopeningthedoorofthesmoker
whileinuse.Whenthedoormustbeopened,onlyopenitbriey.
Thesmokerwillquicklyresumecookingtemperatureafterthe
doorisclosed.
• Alwaysuseameatprobethermometertoensurefoodisfully
cookedbeforeremovingitfromthesmoker.
• Aftereachuse,andafterthesmokeriscooled,carefullyremove
thegreasepanfromthebottomofthesmoker,emptythe
grease,andcleanthegreasepan.

• Disposeofcoldashesbywrappingtheminheavydutyaluminum
foilandputtingtheminanon-combustiblecontainer.Besure
therearenoothercombustiblematerialsinornearthecontainer.
• Ifyoumustdisposeoftheashesinlesstimethanittakesfor
themtocompletelycool,removetheashesfromthesmoker,
keepingtheminheavydutyfoil,andsoakthemcompletelywith
waterbeforedisposingoftheminanon-combustiblecontainer
• Cleanthewaterbowlandcookinggrillswithhot,soapywater.
Rinseanddrythoroughly.Youmayprefertocoatthewaterbowl
andcookinggrillslightlywithcookingoilorcookingspray.
• Frequentlycheckandcleantheburnerforinsectsandinsect
nests.Acloggedtubecanleadtoreoutsidethesmoker.
Alsomakesurethesmokerdoesnothaveanyforeignobjects
obstructingtheowofcombustionandventilationair.
• Ifyourtemperaturegaugeseemstobeoutofcalibration:
Removetheheatindicatorfromthedoorofthesmokerby
looseningandremovingthemountingnutfromtheinside.There
isasecondnutmountedonthebackoftheheatindicatorthat
canbeturnedtoadjusttheheatindicatorneedle.Settheneedle
tothecurrentoutdoorambienttemperatureandre-mountthe
heatindicatortothedoorofthesmoker.

• Tocleantheinsideandoutsideofthesmokercabinet,simply
useadampcloth.Spray-washingwithawaterhoseisnot
recommended.Allmoistureshouldbewipedawayandnot
allowedtostandinsideorontopofthesmoker.Carefully
removethegreasepan,disposethegrease,andwash
thoroughly.Oncecleaned,youmayprefertolightlycoatthe
interiorofthesmokercabinetwithcookingoilorcookingspray.
• Ifrustispresentontheexteriorsurfaceofthesmoker,cleanthe
areawithsteelwooloremeryclothanduseheavyduty,heat
resistantpaint.
• NEVERapplyadditionalpainttotheinteriorofthesmoker.If
rustispresentontheinteriorofthesmoker,cleanitthoroughly
withsteelwoolandlightlycoattheareawithcookingoilor
cookingspraytohelpminimizerecurringrust.
• WhenanLPTankisnotconnected,andtohelppreventdirtor
otherforeignparticlesfromcloggingthehose/regulator,hang
theendofthehose/regulatorfromthesidehandleusingthe
suppliedS-hook.
• Toprotectyoursmokerfromweather,alwayskeepyoursmoker
coveredwhilenotinuse.
• Inspecttheamesattheburnerbylookingthroughthefront
accesshole.Agoodameshouldbebluewithayellowtip1”
to2”inlength.Ifamesareexcessivelyyellowandirregular,
oilresidueandfooddepositsmaybecollectingontheburner.
Trycleaningtheburnersurfaceandtheholestoimprovethe
ames.Badamesmayalsobecausedbypoorgasvalve
orice-to-burnerattachment.Alwaysletthesmokercoolbefore
cleaningorcheckingtheassembly.
BEFORE STORING YOUR GRILL:
•Cleanallsurfaces.
•Whencoolandnotinuse,storeyoursmokerindoorsinadry
locationtoprotectagainstrusting.
•Ifstoringthegrilloutdoors,coverthegrillwithagrillcoverfor

TROUBLESHOOTING
PROBLEM CAUSE CORRECTION
Burner will not light
1. Check LP Gas cylinder fuel level.
2. Bad electrode spark.
3. Burner may not be properly seated.
4. Burner may be obstructed.
5. The cylinder valve may be closed.
6. Regulator is not properly seated on
cylinder valve.
1. Replace LP Gas cylinder.
2. Check to see if the grill will match light.
