CHECKING FOR GAS LEAKS
• Checkthatallconnectionsaretightandthatthegas
cylinderconnectionhasbeentightenedbeforeyouturnthe
cylindergasvalveon.
• NEVERcheckforleakswithaameorpilotlight.
• Usingsoapywater,coatallconnections,ifbubblesappearturn
thecylindergascontroloffandretightentheconnectionbefore
re-testing.
• Inspecttheapplianceregularlyforsignsofwear,leaksorincorrect
operation.Ifsymptomssuchasaringoftheburner,issueswith
lighting,damagestohosesorconnectionsorleaksfromsealsor
gascontrolsareidentieddonotattempttorepair,returntoyour
authorisedstockistforserviceandmaintenance.
• Tocheckifgasremainsinthecylinder,disconnectfromthe
applianceandholdthecylinderinaverticalpositionthen
shakefromsidetoside,ifthereisasoundorfeelofliquid
movementinside,thecylindercontainsgas.
• Whenchanginggascylindersensurethisisconducted
outsideinawellventilatedlocationfreefrompeople,animals
andignitionsourcessuchasnakedames,pilotlightsand
electricalequipmentwithheatersorelements
OPERATING INSTRUCTIONS
Pre-use procedures
Beforeyoucookfoodinyoursmoker,itisimportantto
“season”yoursmoker.Seasoningsealsthepaintandinterior
ofyoursmokertoenhanceavouring,durability;andoverall
performance.Thisisalsoreferredtoasthe“break-in”process.
Ifyoursmokerrequiresanytouch-uppaintontheinsideofthe
cabinet,theonlytimeyoushouldapplypainttotheinsideis
beforetheseasoningprocess.Paintshouldnotbeappliedto
theinteriorofyoursmokerafteryoursmokerhasbeenused.
Painttoxinsmaycontaminateyourfood.However,ifpaint
becomesnecessaryafteruse,seethesectioninthismanual
concerningAfterUseCareandMaintenance.
Toseasonyoursmoker,simplyuseitasyounormallywould;only
donotcookanyfood.Youwillneedtofollowalloftheoperating
proceduresinthenextfewsectionsofthismanual.
Usingyourdesiredavouringwoodsandmarinades,burnyour
smokeratlowtemperature(around125°F[50°C])for45-60
minutes.Letthesmokercool,andcleanouttheusedwater
andwood.
Onceseasoningiscomplete,yoursmoker’sinteriorwillhavea
durable,seasonedcoating.
Adding wood/charcoal
Toaddwoodchipsbeforecooking,simplylltheWoodChipBox
withyourchoiceofavouringhardwoodchips.Theamountand
typeofwoodyouuseisentirelyuptoyou.Onefullboxistypically
enoughforseveralhoursofsmoking.Oncetheboxislled,place
thelidontopoftheboxandsettheboxinthesmoker.
Toaddwoodchipswhilecooking,werecommendusingtongsorlong
handledplierstoremovetheboxlidandtoplacethepiecesintothe
WoodChipBoxwithoutremovingthebox.Itisnotrecommendedto
removetheWoodChipBoxwhilethesmokerisinoperation.
CAUTION: TheWoodChipBoxandlidgetveryhot.Avoid
handlingthemwhileinuse.Alwayswearprotectiveovenmitts
whenhandlinghotcomponents.
Cooking Tip – Flavouring wood:
•SmallwoodchipsworkbestinsidetheWoodChipBox.
•Usedryhardwoodssuchashickory,pecan,apple,cherry
ormesquite.
•Mostfruitornuttreewoodsproduceexcellentsmokeavouring.
•Donotuseresinouswoodssuchaspineorplywood.These
usuallyproduceunpleasantavouring.
•Letyourtastebeyourguide–experimentwithdifferenttypes
andquantitiesofwoodchunks,chips,orsticks.Youcaneven
mixwoods.
•Toproducemoresmokeandtopreventfastburning,pre-soak
thewoodchipsinaseparatebowlofwaterforatleast20
minutes,orwrapthechipsinperforatedaluminumfoil.
•Mostsmokeavouringoccurswithinthersthourofcooking.
Addingwoodchipsafterthersthouristypicallynotnecessary
unlessextrasmokeavouringisdesired.
