Always follow these safety precautions
when using your food processor, for your
own safety and to avoid damaging the
processor.
• This appliance is designed to
operate with an AC power supply.
Make sure your network voltage
corresponds to the voltage shown
on the rating plate underneath the
food processor
• Do not use the food processor if
the cord or plug is damaged, it must be
replaced by a special cord available
from Dualit or Authorised service
agent. For more information, call the
Dualit customer care line on

• Never use a plug without the fuse
cover fitted. Always make sure a
replacement fuse is the same rating as
the original
• Replacement fuses should be
approved to BS 1362
• NOTE: Any plug cut from its power
supply cord should be disposed of
immediately. Inserting any cut-off
plug into an electrical socket is
dangerous
• Unplug the unit when not in use,
before fitting or removing parts
and before cleaning.To unplug it,
hold the plug and pull it out of the
socket. Never pull it out by the
power cord
• Do not use the food processor
outdoors
• This product is for domestic use only
• Do not use the processor on a sloping

Unpack the box with care, keeping all the packaging materials until you are satisfied
everything is present and in working order. Once satisfied remove any tags from the food
processor and recycle the packaging appropriately.

• Never touch moving parts or insert
your hand or utensils into the bowl.
Use the food pusher provided to guide
ingredients through the feed tube
• The processor features an overheat
cut-out that cuts the power if it
becomes too hot for any reason. If
this occurs turn the control knob to the
off position. Once it cools down, the
safety cut-out will automatically reset
itself within 1 hour and the power will
be restored
• Do not submerge the motor housing,
cord or plug in water or any other
liquids
• Clean all parts after each use; please
refer to the cleaning instructions on
page 16
• If your ingredients include raw meat,
make sure the bowls and attachments
are cleaned thoroughly, immediately
after use
• When using a dishwasher, always set it
to the lowest setting (max 40ºC) and
keep bowls and accessories well away

GRATING & VARIABLE SLICING DISC
You will always need to use the large bowl first, no matter what other bowls and discs you
wish to use.
Select the fine or course side
of the grating/shredding disc
to suit your requirement.

PROCESSING TIPS
USING THE BOWLS
Always try and start with the tasks that require the smallest bowl first, so that you are
removing the used bowls instead of putting clean bowls inside dirty ones.
AUTO PULSE
Use this feature to achieve greater control for delicate foods or for a more even chop.The
Auto Pulse feature is perfect for mixing in foods without pureeing the mixture. When
selected the power light flashes, Press again to stop (or press pulse) If you press
START/STOP the processor will stop.
CHOPPING
For the best, most consistent results, you should try to process pieces of food that are
approximately equal in size. When you break, cut or tear food into uniform pieces before
you begin processing, the finished results will be more uniform. More consistent processing
results are achieved if the container is not overloaded.
MINCING
Pre-cut meat into cubes approximately 2cm square.
VEGETABLES
When processing vegetables such as onions, peel and quarter or cut large vegetables into
smaller evenly sized chunks.
MIXING
The quantities that can be processed within the processing bowls will vary with the density
of the mixture.
ADDING INGREDIENTS
When various recipes require dry ingredients such as flour, add them directly into the
bowl before processing.There is no need to sift ingredients when using your food
processor. Liquid ingredients may be added while the processor is operating
by pouring through the feed tube in the processor cover.
Note: When processing sauces or semi-liquid ingredients, stop the food processor and
scrape down the container sides with the spatula provided.
USING THE FEED TUBE
The most important factor for successful slicing and shredding is the way in which the food
is packed into the feed tube.
Note: Never use fingers to push food down the feed tube. Always use the food pusher.
For best results when slicing.The feed tube should always be packed firmly to allow each
piece of food to support the others.There will always be a small portion of food left
unprocessed between the food pusher and the blade. Preparing longer slices Pack food
items horizontally.
WHEN SLICING, SHREDDING AND GRATING
Cut all ingredients to a size that fits comfortably into the feed tube. Pack the feed tube and,
while holding food steady and upright with the food pusher, press down evenly until all
ingredients are sliced or shredded.The more firmly you push, the thicker the slices or
shreds. Do not use excessive force or you may damage the food processor.
PREPARING SHORTER SLICES
Pack the food items vertically in the feed tube, for best results when shredding and grating.
Remember that softer foods such as cheese (cheddar, mozzarella or Swiss) should be well
chilled before processing. Harder foods such as Parmesan or Romano cheese should be at
room temperature before processing. Note: When grating Parmesan cheese do not apply a
lot of pressure to the food pusher.
LIQUIDS
To maximize the capacity of the largest bowl when making soups use the Auto Pulse
feature rather than Start/Stop button when processing.To start, add the food chunks (e.g.
tomatoes) and use Auto Pulse, gradually adding the liquid through the feed tube. If mixture
overflows or fails to blend, stop processing, remove some of the ingredients and process in
smaller amounts.
DISASSEMBLY
When processing is completed.Turn off and dismantle the processor, clean and dry all parts.
Store the bowls, Medium blade and lid with food pusher assembled on the processor body.
Do not lock the bowl lid whilst in storage.This can damage the safety mechanism built into
the bowl. Note: Always wait for the processing blade to stop moving completely before
removing the cover. Warning: Use extreme caution, as blades are sharp.Always
handle the chopping blade by its central plastic section.

What do I do if my processor does not
turn on?
• Check the plug is correctly fitted in the
outlet and power supply is switch on.
• Check the fuse in the plug. Ensure the
new fuse is the same current value as
original.
• Ensure the bowl and lid are locked in
position.
• Check that the small bowl has properly
located onto the medium bowl. If not
the lid will not locate properly and the
processor will not turn on.
What if it switches itself off while I’m
using it?
• Check the lid or large bowl has not
become lose.
• The motor may have overheated.To
prevent damage, the motor has a safety
will thermal cutout, if it overheats for
any reason the motor will automatically
turn off.
If this happens: Press the main on/off
button to so no power light is visible,
unplug and allow the unit to fully cool.
Once cool the overheat safety feature
will reset and you can carry on using
the processor.
The main body is getting warm?
• You may have continuously processed
for more than 5 minutes or the mixture
may be too dense. Stop processing and
allow the processor to fully cool.
TROUBLESHOOTING
What if it doesn’t chop uniformly?
• Blades or discs may not be attached
properly.
• You may be exerting too much force
on the food while pushing down
the feeder tube.
What if my egg whites won’t
stiffen up?
• You may not be using enough eggs
(we recommend a minimum
of two eggs).
• You may be using the wrong accessory;
for egg whites you need the e-disc and
the large bowl.
• You may not be whisking for long
enough.
• Your bowl must be completely clean
and dry.
What if the drive shaft is sticking or
the motor is struggling to turn the
mixture?
• The mixture may be too dense,
remove some of the mixture and
process in batches.
RECIPE IDEAS
More home cooking means more control over what you feed yourself and your family.That
means no preservatives, additives or undesirable fats. And if the tedium of all that chopping,
slicing, grating and blending used to put you off cooking, it can now be done at the touch of
a button.
Mayonnaise – serves up to 8 people
1 egg – the freshest and best quality you can find
1 tbsp Dijon or grain mustard (or to taste)
the juice of half a lemon
300ml ground nut and extra virgin olive oil, mixed in a jug – see below salt and white
pepper
The ingredients will emulsify best if they are not cold.
Warm the egg a little by placing it (still in its shell) in a jug of warm water.
Stand the oils in a warm place to remove any chill. Use about 250ml ground nut and the
remainder olive oil, or more – if you prefer a stronger flavour.
Break the egg into the large bowl fitted with the E-disc and add the mustard and lemon
juice. Whiz until combined.
With your hand cupped over the feeder tube and the motor running, slowly and steadily
pour in the oils until the mixture becomes thick and shiny.
Season with salt and pepper, and add more lemon juice if you like.
Pulse briefly.
It will last for up to four days in the fridge.

Quick and Easy Loaf – makes a 500g loaf
This basic bread recipe is quick and easy and can be adapted to your own taste.
Why not have fun and experiment with your choice of ingredients to vary the flavour and
texture.You can add seeds, nuts, curry pastes, dried fruits or herbs but always use good
quality organic flour from local mills as this produces a much more nutritious and
high quality product.
250g strong white flour
or 250g strong wholemeal flour
12.5g butter
3/4 tsp salt
3/4 tsp fast action dried yeast
1 tsp sugar
150ml warm water for the white loaf or
175ml warm water for the wholemeal loaf
In the large bowl fitted with the large blade mix together the flour, salt, yeast, butter and
sugar.
Process well, slowly adding the water through the feeder tube until the flour forms a craggy
ball – this should take approximately 2 minutes.
Leave the dough in the food processor to rise for approximately 20-30 minutes. Keep the
lid on for this process.
Pulse 3-4 times to knock the air out of the dough.
Remove the dough from the food processor and place in a greased 500g bread tin or on
an oiled baking sheet and cover with a cloth.
Allow to rise in a warm draught free place for another 1-2 hours or until doubled in size.
Bake in a preheated oven 220ºC/Gas Mark 7 for 25-30 minutes or until golden brown.
Tomato Ketchup – makes 600ml
Glistening and smooth, this homemade ketchup is made with the best of summer toma-
toes.The amount of sugar depends on the quality and sweetness of the fruit, and you could
get by with less. Serve with burgers, barbecues, chips, poached eggs, or what you will.
1.8kg ripe red sweet tomatoes
salt
200g onions, peeled, and chopped using the large bowl fitted
with its chopping blade. Feed the peeled onion down the feeder
tube onto the whirring blades
1 finger ginger, peeled
1 tsp blade mace
1 tsp black peppercorns
2 bay leaves
1/2 tsp allspice berries
100ml white wine vinegar
60g golden caster sugar (according to taste)
Cut the tomatoes into thick slices and place in a wide saucepan, sprinkling with salt as you
go.
Sprinkle the chopped onion on top.
Chop the ginger, using the medium bowl fitted with its chopping blade and tie in a bag
(muslin or a new j-cloth) with the spices. Nestle the bag between the tomatoes and cook
on a medium heat until a thick spicy pulp. Remove the bag,
Put the mixture into the large bowl fitted with its chopping blade and whiz quickly.
Rub through a sieve. Return to a rinsed out pan, and stir in the vinegar and sugar.
Cook gently, stirring regularly, until the consistency of double cream.
Pour into clean bottles, and store in the fridge, where it will keep for months.

Fresh Beef Burgers
with Mint and Parsley – serves 6
These quarter-pounders are quickly made from the finest British beef and traditional herbs.
Enjoy them in the fresh air on a barbecue or rustle them up for a quick meal indoors.
Buy the trimmings of prime steaks from your butcher or at the farm gate.
680g rump, sirloin or fillet or use a mix, chopped into chunks,
trimmed of gristle
1 egg yolk
1 small bunch (5g) parsley leaves
1 small bunch (5g) mint leaves
salt and pepper
Tip all the ingredients into the large bowl fitted with its chopping blade, and pulse until a
coarse mince.
With wetted hands, shape into equal sized patties, using a kitchen scale to divide them into
112g burgers.
Place on a non-stick tray and chill until ready to cook.
Heat a non-stick pan with a smidgen of oil, and when smoking hot, season one side of the
burgers, pressing them well down each side with a fish slice to achieve a wonderful dark
colour. Flip over, season again, and cook as before. If you like them cooked all the way
through, turn down the heat, and cook for about 3-4 minutes each side.
Serve with fresh Tomato Ketchup.
Homemade Game Chips
and Straw Potatoes – serves 6
600g large potatoes, peeled
salt
1-2 litres groundnut or vegetable oil for deep-frying
a culinary thermometer is a great help when deep-frying
You will need a large deep pan.The oil should come less than half way up the sides.
Shape or cut the potatoes lengthwise to go down the feeder tube as snugly as possible.
Using the large bowl fitted with the slicing disc adjusted for the thickness of crisp you would
like, push the potatoes down the feeder tube with the food pusher.
Wash the slices, and if you have time soak the sliced potato for 15 minutes or so this will
make them light and airy. Drain and dry thoroughly on tea towels or kitchen paper. Frying
wet chips makes the oil rise and bubble up and over the sides of the pan.
Heat the oven to 50ºC/Gas mark low, cover an oven tray with several sheets of paper
towel, and place inside.
Heat the oil on full heat, and when it reaches 190ºC add a handful of sliced potato.When
the oil has stopped bubbling, stir the chips gently to stop them sticking. Keep the pan on full
heat – and don’t worry, the temperature of the oil falls dramatically when you add cold, raw
potatoes.
When golden, in about 5-7 minutes, lift them with a skimmer, and drain on a bed of
crumpled paper towel.They will rustle as you lift them, showing they are cooked. When
drained of all oil, transfer the chips to the oven, where they can be kept warm, uncovered.
Wait until the oil returns to 190ºC before frying the next batch. Sprinkle the chips with a
little salt before serving.
Straw Potatoes
Fit the shredding disc in the large bowl and use the larger holes to make fabulous little
straw potatoes.These are lovely served with hot and grilled seafood and fish.
Heat the oil to 120ºC and fry the chips for 5-6 minutes.They should be very pale and
crush easily with the back of a spoon. Leave draining on crumpled paper towel. Serve while
still hot and crisp.

Traditional Victoria
Sponge Cake – 18cm, serves 8
There is nothing nicer than the simplicity of a Traditional Victoria Sponge cake.This all-in-one
method makes a perfectly light sponge for an indulgent afternoon tea - why not try a filling
of whipped cream, blueberry and lemon zest for a contemporary twist.The large bowl will
effortlessly take double the amount of ingredients to make an 8-egg sponge cake when
larger quantities are required.
175g soft butter or margarine (butter will produce a richer mix)
175g caster sugar
4 large eggs (weigh eggs in shells and then use same weight)
1 tsp baking powder
175g self-raising flour
1 tsp vanilla essence
4 tbsp strawberry jam (to decorate)
icing sugar to dust
Place the butter or margarine, sugar, baking powder and flour in the large bowl with its
chopping blade.
Remove the feeder tube to allow as much air into the mix as possible.
Pulse until the mixture is creamed together.
Break in the eggs and process for a further 10-15 seconds.
Pour into two 18cm cake tins.The tins should be well buttered and bases lined with silicone
mat or baking parchment.
Spread evenly and bake in a preheated oven 180ºC/Gas Mark 5 for 15-20 minutes or until
risen golden brown and firm to the touch.
Leave to cool.
Apply the jam to the top of one cake and sandwich together with the other.
Dust liberally with icing sugar and slice into generous helpings.
Vanilla Thins – makes about 20 biscuits
Homemade biscuits are always delicious, always impressive, and are much easier to make
than people think.These are thin and crunchy and are especially good to serve with
desserts. Give them a try – make them at the weekend, as the mixture likes a good rest
before baking. Keep any spare biscuit dough in the freezer for instant baking.
1 egg
2 tsp cream
1/2 tsp vanilla extract
125g unsalted butter, soft
100g caster sugar
25g icing sugar
150g self-raising flour
In a jug, lightly whisk the egg and then discard half of it, using a spoon. Stir in the cream and
vanilla extract.
Using the large bowl fitted with the large blade, whiz the butter and sugars until pale and
creamy. Add the egg and cream mixture, and then the flour, and press autopulse to mix until
you have a soft, paste-like dough.
On a lightly floured board, form the dough into a long roll of about 5cm diameter, and
wrap in foil or clingfilm. Put into the fridge until the next day.
Preheat oven to 190ºC/Gas Mark 5
Using a sharp, fine knife, cut the thinnest possible slices from the dough roll for the amount
of biscuits you require. Any spare dough will freeze well. Lay on a non-stick baking tray or
one lined with baking parchment.
Bake for 5 minutes, but watch! The biscuits should remain pale in colour.
Cool on a rack.
For special occasions, cut out each biscuit with a cookie cutter to achieve even shapes.
