could get hot when in close proximity to the cooktop surface.
Only use pans of the type and size suitable for induction cooking
Users, employees, visitors and contract personnel must be informed of the potential hazards for
persons with pacemakers or metal implants. These persons must consult their doctor or the
appliance manufacturer.

SAFETY NOTES
To maintain stability and satisfactory heating it should be used with metallic cookware that has a magnetic
base suitable for use with induction:
oWok cookers are suitable for woks between Ø325mm/13” and Ø400mm/16” and the shape must
conform closely to the ceramic dish of the cooker
oFlat top induction zones require a minimum pan base diameter of 120 mm.
oCookware should not be placed in the tanks of fryers, steamers and noodle boilers, except for the use
of supplied baskets and ladles.
Never insert objects into the induction unit. Inside are highly dangerous voltages. Do not damage the
generator inductors, e.g. with pointed / sharp objects as this may lead to electric shock.
This appliance is only for commercial cooking and for indoor use. It is only to be used with induction capable
cookware. Any other use may result in unexpected hazards.
Do not place metal objects, e.g. kitchen utensils, cutlery, tools, jewellery etc, on the cooking surface as they
will quickly heat up if the appliance is turned on.
Beware that when using the induction unit, personal items such as rings, watches and similar objects could get
hot when in close proximity to the cooking zone.
Do not place aluminium foil on the cooking zone.
Do not use the ceramic glass surface as a work top.
Do not damage the cooking surface. It is not tolerant of being hit, struck or vibrated. If the cooking surface
shows visible signs of cracking, the appliance must be immediately disconnected from the mains supply.
Switch ‘Off’ the cooking zone after use. Do not rely on the Pan Detection Mode.
On completion of installation the installer must instruct the responsible person(s) of the correct operation and
maintenance of the appliance and leave these instructions on-site with the responsible person
Do not obstruct the air cooling inlet and outlet grilles on the underside and rear of the appliance. If filters are
fitted, clean these monthly and do not operate the appliance without filters or with wet filters.
Strip plastic coating and clean the appliance before use.
This appliance is only for professional use and shall only be operated by qualified persons who have who have
read the operating instructions
oChildren shall not play with the appliance.
oCleaning and user maintenance shall not be made by children without supervision
It is the kitchen supervisor’s responsibility to warn users of this appliance to wear suitable protective clothing.
During normal operation, parts of the appliance will become very hot by necessity. The user must take
suitable precautions to prevent accidental burns.
To ensure safe use of this appliance you must provide whatever information, instruction, training and
supervision is necessary to ensure the health and safety of all users as far as is reasonably practicable.
You must perform a risk assessment as part of managing your health and safety to and control any risks
identified by taking reasonable steps to prevent harm to users, the appliance and the environment.
In the event of a fault, the equipment must be turned off at the isolator and a competent person informed.
It is important, in the interest of safety and good performance to ensure that the appliance is regularly
maintained in accordance with the service checklist provided herein. Failure to do so can have a serious
impact on the appliances reliability and will invalidate any warranty or guarantee. You should ensure the
engineer provides a completed service record as evidence of having the appropriate work performed.

At the end of the appliance’s life, dispose of the appliance in a safe manner via licensed waste handler. Units
are designed for easy dismantling and recycling of all material is encouraged wherever practicable.

DESCRIPTION AND SPECIFICATION
Far East Kitchen Solutions range of commercial heavy duty, high efficiency induction cooking appliances are
constructed in easy clean stainless steel external finish except for certain parts such as the controls. They may be
supplied with either standard splashback or low back option and are available on industrial adjustable feet or with
caster wheels.
Induction generators are the result of intensive research and development work. In addition to their high safety
standard, they offer easy operation, the latest technology and maximum convenience. The system comprises an easy
clean ceramic glass hob surface with an induction coil beneath, which generates an alternating magnetic field. When
a pan with a magnetic base is placed on the cooking zone, eddy currents are created in the pan base causing
molecules within it to move in a regular pattern at high speed, this creates friction that generates heat. Because the
heat is made directly within the pan, less heat is lost the surrounding environment and it does not need to transfer
between the cooktop and pan surfaces. Therefore pan heats quickly and food is heated more rapidly, allowing meals
to be prepared in a shorter time.
There are no open flames, no hot plates or heating elements, no fumes and no dust. They can be made small, safe
and stylish, and complete most cooking tasks.
The quality of the cookware is important to the efficiency of induction cooking. On flat hobs, the pan base must be
flat with good heat distribution. On wok hobs, the pan profile should closely match the shape of the glass. Generally,
suitable pans are made from cast iron, enamelled steel and stainless steel with a magnetic base. Unsuitable pans are
glass, earthenware, aluminium, copper and non-magnetic stainless steel. Use pans of the size and type
recommended.
A pan detection feature ensures that no energy is flowing when there is no pan (eliminating any fire hazard). A
temperature sensor monitors the pan to prevent the pan boiling dry (no liquid in the pan), and switches ‘Off’ the
cooking zone immediately in the event of overheating.
It is normal for induction generators to make buzzing, whistling and clicking noises, especially on lower power
settings.
The range comes in numerous configurations; these instructions cover the models detailed overleaf.

B) ELECTRICAL CONNECTION
The electrical supply connection point is located at the rear of the appliance; each heating zone has its own
supply. When connecting this electric appliance to the mains supply, ensure that the following is carried out:-
✔An all-pole isolating switch is fitted within 2m of the appliance, but not on the appliance and in such a
position that the user does not have to reach across the cooking surface.
✔Supply cord shall be oil-resistant, sheathed flexible cable and not lighter than ordinary polychloroprene or
other equivalent synthetic elastomer sheathed cord (as per AS IEC 60245-IEC-57)
✔The branch supply line shall be individually overload protected to the correct current rating and the supply
cord shall be protected against any mechanical or thermal damage.
✔A grommet is fitted around the wiring entry hole into the appliance.
✔All wiring connections must be tight.

Refer to the appropriate wiring stand for the size of cable that is to be supplied to an appliance for the current
drawn on that line. This will typically be 4 mm2per conductor for 400V and 2.5mm2per conductor for 230V.

INSTALLATION
WARNING! The appliance must be installed by an electrically qualified person in line with the national
regulations in force.
A) UNPACKING AND ASSEMBLY
1) Remove all packaging and transit protection from the appliance including all protective plastic coating from
the exterior stainless steel panels.
2) Check equipment and parts for damage. Report any damage immediately to the carrier and distributor.
3) Report any deficiencies to the distributor who supplied the appliance.
4) Check that the available electrical supply is correct to that shown on the Rating Plate attached to the
appliance.
5) The legs must always be fitted ,if the legs are of detachable type ensure they are securely attached
B) LOCATION AND POSITIONING
6) The appliance should be installed on a level and fireproof surface in a well lit and draught free area. It is not
suitable for installation atop heated cabinets, hot cupboards or other surfaces that may become warm.
7) A clear space of 200mm behind the appliance, 600 mm in front of the appliance and 1000mm above the
appliance is required. The sides can be installed flush to non-flammable surfaces, otherwise a clear space of
100mm is required.
8) There must be allowance for sufficient fresh air flow for cooling. Air for cooling is supplied from underneath
the appliance; the area below and around the intake grill must remain at least 50mm clear of any
obstructions. The hot air is exhausted out the rear; these vents must also remain unobstructed. It is
important that hot exhaust air cannot be drawn back into the inlet filter, as this recirculation will degrade
the performance of the induction system, leading to an overheat shutdown.
9) Determine the route of electric to the appliance (also water and waste pipes if so equipped). They should
give access to the user for cleaning the walls and floor and not obstruct walkways.
10) Ensure the floor and wall are cleaning before positioning the appliance
11) Remove all packaging and approximately position the appliance, leaving room to connect the services
C) ELECTRICITY SUPPLY
NOTE The appliance should be connected to an adequately protected power supply and an all-pole
isolation switch mounted adjacent to, but not behind the appliance. This switch must be clearly marked and
readily accessible in case of fire.
12) Check that the electricity supply is correct as shown on the Rating Plate on the appliance.
13) The supply terminal connections are located at the rear of the appliance. Refer to ‘Electrical Connections’ in
the ‘Description and Specification’ section of the manual.
14) Bring the supply cable up through the compression type gland provided on the rear of the main electrical
switchgear panel.
15) Connect the mains supply to L1, L2 and L3 connections as required. Refer to the 'Electrical Supply
Requirements' section.
16) Connect Earth conductors to Earth stud.
17) For all connections ensure that conductors are secure and appropriately terminated.
18) Tighten the cable gland to secure against tension on the cable.
19) Correctly locate the appliance into its final operating position and using a spirit level, adjust the legs so that
the appliance is level and at the correct height.
20) Connect the power supply to the appliance.

D) WASTE DRAINAGE CONNECTION (IF EQUIPPED)
21) The connection to waste drainage must be in accordance with national regulations. A trap should be fitted to
prevent odours arising from the foul water in the drains. The appliance drains by gravity so the waste pipe
will need a sufficient fall to carry waste water away. A method for dealing with grease and oil that may be
present in drained water should be present before the waste water flows into the sewer network, this would
typically be a fat, oil and grease (FOG) interceptor/trap or chemical dosing unit. They are typically sized
Ø40mm.
22) Adjust the level of the appliance if required to ensure water moves towards the drain on the appliance
E) WATER SUPPLY (IF EQUIPPED)
23) The connection to potable cold water must be in accordance with EN1717 and national regulations in force.
The supply pressure must be between 0.5 and 3.5 bar; if pressure exceeds 3.0 bar a pressure reducing valve
(PRV) set to 3.0 bar should be fitted before the appliance. The appliance is not to be connected to the mains
water supply with a flexible hose. An isolating cock should be fitted into the supply line close to the unit, for
emergency shutdown or servicing purposes.
F) COMMISSIONING
BEFORE TURNING ON All services must be connected and tested for leaks and the appliance unpacked
and fully assembled as detailed in the above sections before proceeding with the commissioning procedure.
IF AN ERROR OCCURS Consult the Troubleshooting section, page 15. If the unit still does not operate
correctly, isolate the electrical supply and contact a qualified service person.
24) Before leaving the new installation, check the following functions in accordance with the operating
instructions specified in the ‘Operation’ section of this manual:
a) Check the current draw and loading for the equipment. Refer specification section for correct electrical
requirements.
b) Check that all the connections are correct and that all cover panels have been re-fitted.
c) Ensure that any cooking pots are removed from the cooking zone.
d) Adjust the cooking level to ‘Zero’ by moving slider or rotating knob fully left.
e) Switch ‘On’ the mains supply.
f) The Green and Red Indicator lamps must not flash.
g) Increase the cooking level to any number, on the display:
i) For single numerical display: The Green Indicator lamp must blink regularly every second (Pan
Detecting Mode). On the display, Pan Detection Symbol U must blink (Pan Detecting Mode).
ii) For colour display: Error code E1 should be displayed, along with Pan Detection orange U symbol in
bottom left and red No Pot also in bottom left. Red failure text in bottom right and orange cog
symbol.
h) No Fault must occur. Red fault indicator lamp must not illuminate.
i) Place a water filled induction pan on the cooking zone, or for steamers, boilers and fryers fill the main
tank with liquid.
j) The Green or Blue Indicator lamp must be ‘On’ continuously.
k) Adjust power to Maximum.
l) After a few seconds, the fan must turn ‘On’
25) Show the user and/or responsible person how to operate and clean the appliance in accordance with
Operation on page 11 onwards and on page 14 onwards. Ensure that the electrical isolator location is known
to user and that the procedure to follow in event of emergency is demonstrated.

26) This manual must be kept by the owner for future reference and as a record of Date of Purchase, Date of
Installation and Serial Number of Unit recorded and kept with this manual. (These details can be found on
the Rating Plate attached to the inner R/H side panel. Refer to the ‘Dimensions’ section for rating plate
location).

OPERATION
WARNING!
Never leave the appliance unattended whilst any cooking zones are powered on.
This appliance is only for professional use. To maintain stability and satisfactory heating it should be use with

oFlat top induction zones require a minimum pan diameter of 150 mm. Stockpot ranges are supplied
with suitable pots.
oMetallic objects such as kitchen utensils should not be placed in the tanks of fryers, steamers and
noodle boilers, except for the use of supplied baskets and ladles. Nor should they be placed on
cooking zones. They may begin to heat up.
Do not drain water from the appliance without the waste filter in position. Otherwise food debris may enter
the drain.
BEFORE TURNING ON
✔For appliances with a tank, ensure this has been filled with liquid to the operating level
✔Ensure kitchen air ventilation or Extraction is operating at full power
✔If wheels are fitted, ensure the brakes are engaged
A) WATER
ADVICE
✔The wok cookers are “dry top” they do not require water for cooling and can be used dry
1) Ensure that there is water to the appliance. Close any drain valves and run water until it reaches the operating
level before operating the appliance. Appliances with a tank have autofill so the water supply should be left
turned on during cooking to maintain the water level.
2) Ensure any waste filters are in position whenever waste water is drained; during operation the filter may fill with
food debris and require emptying over a bin, whilst this is being done water should not be drained from the
appliance.
B) FLOOR STANDING INDUCTION APPLIANCES WITH ROTARY OR SLIDING CONTROLS

II) TYPE II DISPLAY
3) Ensure the knob or slider is turned to its left most position, marked OFF or 0.
4) Turn on the mains electrical power at the isolator. The appliance will “beep” and the display will fully
illuminate.
5) Place a compatible pan on the heat zone and move knob or slider rightwards to increase power. Adjust
power up and down as required during cooking. If the pan is removed from the heat zone, it will cease
heating until a pan is placed on the heat zone again.
6) Positions 1 and 2 are intermittent heat. Positions 3-5/3-8 are continuous heating.
7) When not cooking for extended periods or after cooking has finished, remove all pans and turn the knob or
slider to left most position which will stop all heating. After 60 seconds the cooling fans will stop and you
may turn off the mains power.
III) POWERED BASKET LIFTS (IF EQUIPPED)
Some appliances are fitted with powered basket lifts, which each have their own control unit and include a
timer function
(1) Press ⌽on the lift’s panel, 0 will be displayed
(2) Press and hold ☼for two seconds
(3) 0 will flash. Press and to adjust desired cooking time. Then press ☼.
(4) Now press ⌽and lift will descend

CLEANING AND ROUTINE MAINTENANCE
WARNING!
Always turn off the electrical power supply at the mains before cleaning.
The appliance is not waterproof. Do not use water jets, pressure washes or hose guns for cleaning. Do not
immerse in water.
When removing heavy items to aid cleaning or maintenance particular care should be taken. A manual
handling risk assessment is the best way to determine the level of risk to anyone using or maintaining this
equipment from which a safe system of work can be developed.
For further help and information on manual handling and associated risk assessment refer to the Health
and Safety Executive, Manual Handling at Work INDG143 or guidelines provided by the relevant
government body in your country.
If using cleaning agents always follow the manufacturer’s instructions and precautions including personal
protective equipment.
ADVICE
✔All surfaces are easier to clean if dealt with before spill become “burnt in”. Daily cleaning is advisable.
A) STAINLESS STEEL AND CERAMIC SURFACES
WARNING!
Do not use water on ceramic surfaces whilst they are still hot as warping and cracking may occur, allow
the ceramic to cool after use before cleaning.
Do not use abrasive detergents, bleach strong solvents or caustic solutions as they could corrode or
damage the appliance.
Do not soak the controls and display panel with liquid, only use a damp cloth.
Use a plastic or wooden scraper tool with a quality glass cleaner to remove any baked on food debris and carbon
deposits. Plastic, aluminum foil and sugary foods should be scraped off ceramic surfaces immediately as if they
melt they can damage the surface.
All surfaces should then be wiped down with cloth lightly moistened with warm water or a mild detergent with
warm water, a soft scrubbing brush may also be utilised. Then dry thoroughly with a dry cloth and polish with a
soft dry cloth.
B) FLOOR
WARNING! Do not use a pressure washer or hose gun for cleaning underneath the appliance.
For cleaning purposes, access to the floor area under the appliance is from the front below the facia panel.
The electrical connection may be hardwired with some slack to allow limited movement of the appliance, in
other installations it may be my means of a disconnectable plug such as CEE17/IEC 60309 (Commando). If
connected to the water supply this will normally be by flexible water hoses, which allow a limited amount of
movement without needing to disconnect them.
However, if the appliance has a plastic waste water trap this will require the compression ring untwisting to
disconnect it from the waste water pipework. When moving the appliance in this manner take care not to place
excessive strain on the water or electrical connections. Once the appliance is back in position, apply any wheel
brakes and twist the compression fit on the wastetrap ensuring the rubber seals are in place and the pipe
correctly seated.
C) MONTHLY FILTER CLEANING
Once per month the grease filter should be removed and cleaned. This is located on the underside of the

Allow to fully dry before re-fitting. Do not operate the appliance without the grease filter present as dirt could be
drawn in to the electronics and impair safe operation. If the filter cannot be sufficiently cleaned it should be
replaced with a new filter.
TROUBLESHOOTING
A) COMMON PROBLEMS
No power supply on “beep” sound
oCheck power switch is on
oCheck power supply cable is properly inserted at plug and the conductors within the plug and
appliance are firmly connected
There is a “beep” sound at power on but the heat cannot be turned up
oPlace switch in the off position before turning the appliance on
Moving the switch between power settings does not change the number on the display

WARRANTY AND GUARANTEE
Far East Europe Ltd give a 12 month guarantee in respect of this appliance for the
repair or replacement of any faults or defects (save for fair wear and tear). The
guarantees above are subject to the terms and conditions outlined below:
1. The guarantee period commences from the date of invoice, delivery or installation, whichever came first.
2. Cookers installed by Far East Europe Ltd or Far East Industries Ltd (referred to collectively as Far East, herein) will receive a parts
and labour warranty. Cookers installed by other parties will receive parts only warranty thus labour costs will not be borne by Far
East. If your cooker was not purchased directly from Far East please contact the seller directly for guarantee and warranty details.
3. The cooker must have been installed and operated in accordance with the manufacturer’s instructions.
a. For example, if there is evidence of the appliance being operated with blocked grease filters, this will invalidate the
guarantee and you will be liable for any costs incurred by Far East in inspecting or repairing the cooker.
b. Similarly, if there is evidence of the cooker not being cleaned regularly, this will also void the guarantee. The cooker must
be cleaned in accordance with the manufacturer’s schedule as detailed in the manual.
4. Genuine spare parts, approved by Far East, must have been used for any repairs or servicing.
5. The appliance must not have been modified in any way.
6. This guarantee does not cover modifications or repairs performed by parties other than Far East, unless expressly authorised in
writing. Your guarantee is immediately void if any other party performs work on your cooker without our written consent.
7. Any faults or defects must be reported to Far East within 3 working days of coming to the attention of the purchaser or operators.
Far East will not entertain claims for issues which have been left to escalate after first being noticed.
8. If an engineer attends your cooker for service/repair under the guarantee and any of these terms and conditions have been
breached, the owner shall be liable for the costs of the engineer’s visit and any work performed or parts fitted.
9. At Far East’s discretion, you may be required to provide photographic evidence of any defects and also general cooker condition,
before Far East send spare parts or dispatch an engineer. If you are unable to provide the photographs requested, Far East reserve
the right to refuse any request under this guarantee scheme.
10. Not withstanding anything specified in this guarantee or elsewhere in these Terms and Conditions, Far East will be under no
liability to the purchaser in respect of damage to or defects arising in the cooker, for any of the following reasons:
a. Faulty or defective workmanship in installation or fixing.
b. Environmental pollution.
c. Falling objects.
d. Flood, fire or storms.
e. Transport, shipping or moving the cooker.
f. Any matter in which a prudent person would maintain a policy of insurance
g. Force majeure, including but limited to act of government, act of God or hostilities.
11. Far East will not under any circumstances be liable whatsoever in respect to consequential damage or loss of any kind.
12. Far East’s decisions relating to complaints are final. Any item which has been replaced under this guarantee or free of charge will
become the property of Far East.
13. Any third party or contractor selling or installing the cooker shall not be an agent of Far East and hence have no authority or right
whatsoever to make a representation on behalf of Far East with regard to this guarantee or to amend its terms.
14. Any dispute arising in respect of this guarantee shall be dealt with under the laws of England and Wales and under the jurisdiction
of the English courts.
15. This guarantee is not transferable; if ownership of the cooker is transferred to another party or the cooker is moved to different
premises, the guarantee is immediately voided. If a request for warranty or guarantee work is presented by a party or for a
location other than that originally invoiced by Far East, Far East shall not be liable to that party.
16. This guarantee is only applicable to appliances built after August 2012.
17. Cookers installed outside the United Kingdom will receive a 12 month parts only warranty only from Far East.
18. Only English language text in documentation and received in communications from us has legal standing. Any translations where
provided and wherever human or computer generated are provided for convenience only and are not legally binding. Corresponds
that Far East receives in languages other than English we may take to have legal standing and/or contractual agreement and
obligation where no English translation has been provided by the sender.
