UNPACKING
Unpackthegriddleimmediatelyafterreceipt.Ifthemachineisfoundtobedamaged,savethepackagingmaterial
andcontactthecarrierwithinfteen(15)daysofdelivery.ImmediatelycontactGlobeoryourlocaldealerofthe
equipment.You have no recourse to damage after fteen (15) days.

PROPER GROUNDING
THIS MACHINE IS PROVIDED WITH A THREE-PRONG GROUNDING PLUG. THE OUTLET TO WHICH THIS
PLUG IS CONNECTED MUST BE PROPERLY GROUNDED. IF THE RECEPTACLE IS NOT THE PROPER
GROUNDING TYPE, CONTACT AN ELECTRICIAN. DO NOT, UNDER ANY CIRCUMSTANCES, CUT OR
REMOVE THE THIRD GROUND PRONG FROM THE POWER CORD OR USE ANY ADAPTER PLUG (Fig. 6-1
and Fig. 6-2).

1. Readthismanualthoroughlybeforeinstallationandoperation.DONOTproceedwithinstallationand
operationifyouhaveanyquestionsordonotunderstandanythinginthismanual.Contactyourlocal
representativeorGloberst.
2. Removethegriddlefromthebox.Onceyourgriddlehasbeenremovedfromthepackaging,becertainthatall
protectiveplasticsandresiduesareremovedfromallsurfaces.
3. Selectalocationforthegriddlethathasalevel,solid,nonskidsurfacethatisnonammableandaway
fromwaterhazardsorsinks,andisinawell-lightedworkareaawayfromchildrenandvisitors.

4. Inspectthegriddletoensureallpartshavebeenprovided(i.e.-catchtrayandfeetx4).
5. TheinstallationoftheGriddlemustconformtotheNATIONALELECTRICCODEANDALL
LOCALELECTRICCODESANDORDINANCESANDALLTHELOCALELECTRICALCOMPANYRULES
ANDREGULATIONS.Additionally we recommend that the Griddle is allowed a 4'' spacing
surrounding the unit in order to provide adequate ventilation.
NOTICE:Localcodesregardinginstallationvarygreatlybyarea.TheNationalFireProtectionAssociation,
Inc,statesinitsNFPA96latestedition(seeNFPApageatthebeginningofthismanual)thatlocalcodesare
“authorityhavingjurisdiction”whenitcomestorequirementsforinstallationofequipment.Therefore,
installationshouldcomplywithalllocalcodes.
6. Foryourprotectionwerecommendthataqualiedelectricianinstallthisgriddle.Theyshouldbe
familiarwithelectricalinstallationsandallelectricalcodes.
7. Properconnectionsandpowersupplyareessentialforefcientperformance.
8. Theexternalwiringshouldbeinconduitoranapprovedtypeofexiblecablesuitableforoperationat
temperatureindicatedattheconduithole,andinapropersizetocarrytheload.
9. Thesupplycircuitshouldbeproperlyfusedandequippedwithameansofdisconnecting,asrequiredbythe
localelectricalcode.Forgriddlewithplugsandleadsset,simplyprovideasuitablepowerpoint
andconnect.
ThisequipmentgetsEXTREMELYHOTsomakesureallammable/combustible
materialsaresetawayfromthisequipment.
Feet
InstallfeetbyscrewingeachfootintothethreadedopeningsonthebottomoftheGriddle.Failuretouse
feetwillvoidwarrantyandcouldcauseunsafeconditions.
Leveling
Levelunitbyadjustingthefourfeetandtightensecurely.Theadjustablefeethaveanadjustmentofoneinchfor
lineupwithotherGlobecountertoplines.Checkthefeetevery60daystoensuretheyaretight.
Assembly
Takethecatchtrayandslideintotherunnersbelowtheelementsandplaceintotherack.Onceinposition,the
catchtraywillcatchanyfoodproductcrumbs,greaseordrippings.
COMMISSIONING:
CommissioningofyournewGriddleisoftheutmostimportance.Commissioningisthethoroughand
methodicaltestingoftheequipment,subsystems,andsystemstoensurethatthenalproductfunctionsproperly
andsafelyattheworksite.Byidentifyinganypotentialproblems(i.e.:Equipmentlocation,ventilation,localre/
electricalcodes,installation,operatortrainingandcertication)priortoequipmentbeingplacedintoservice,costly
outagesandpotentialdamagesmaybeavoided.

panelsonthisproduct.
• Globetakeseverycaretoensurethatallproductsaresafe.Steelcuttingproceduresusedtomanufacture
theseitemsresultinsharpedges.Thesesharpedgesareremovedtothebestofourability;however,we
insisttheoperatortakecarewhenincontactwiththispieceofequipment.
• Duringoperationthegriddlereacheshightemperatures,inturn,heatinganystainlesssteelsurfaces.
Takeextremecarewhenoperating.
• Switchoffpowertoanddisconnectfromthemain/plugfromwallforcleaning.
• Allowthegriddletocooldownafteruseandbeforedismantlingforcleaning;theunitwillbetoohotto
handleimmediatelyafteruse.
• TheGlobegriddleisequippedforthevoltageindicatedonthenameplatemountedontherearof
theunit.Thisgriddleisdesignedforuseonalternatingcurrent(AC)only.

Operating the Griddle
Beforeoperatinggriddle,itshouldbecheckedtoseethatitissittinglevel.Adjustthefeettolevelthegriddle.Be
surethecatchtrayhasbeenassembledcorrectly.Pleaseseediagramgure9-1.
NOTE: Upon rst use, griddle may produce a metal-burning smell.
This is normal and smell will regress with use.
Wipe all petrulium jelly from the surface before use.
Season the surface:
1.Cleanthegriddlesurfacethoroughly.Afterthegriddlehasbeenthoroughly
cleaned,itshouldbeseasonedtopreventfoodfromsticking.Beforeusing,and
aftereachthoroughscouring,seasonthegriddlebyheatingthesurface
inthefollowingmanner:
2.Turnonthegriddlebydialing/adjustthetemperaturecontroldialfromOffto350°F
3.Usingacleancloth(notaspatula)spreadathicklmofcookingoilorfatoverthegriddlecookingsurface.
Thislmshouldremainonthehotgriddlefor30minutes.
4.Removetheexcessfatandwipeclean.(CAUTION-thegriddlesurfacewillbeHOT)
5.Applyanotherlmofcookingoiloverthehotcookingsurfaceforanother30minutesandagainremovethe
excessfatandwipeclean.Thegriddlesurfacewillbereadytouse.
EVEN WITH CAREFUL SEASONING, FOOD MAY STICK TO THE GRIDDLE COOKING SURFACE UNTIL THE
GRIDDLE PLATE IS “BROKEN IN”.
Temperature Control
Thetemperatureisthermostaticallycontrolled.Besurethetemperaturedialisturnedandadjustedtothedesired
setting.Thesetpointofeachthermostatismarkedonthefrontpanelwitha
–inthe9o’clockposition.Yourgriddleisequippedwithonethermostatpervariouscookingserviceinterval.
Forthe24”griddle/36”griddle/48”griddle-every12”,forthe16”griddle-every16”.
Cooking
Turnthetemperaturedialtothedesiredtemperature.Afterashortpre-heatingperiod,thethermostatwill
automaticallymaintaintheselectedtemperature.Whenthesettemperatureisreached,thesignallightwillgooff.

• ALWAYSunplugordisconnectthemainpowertothegriddlebeforecleaning.
• DO NOTuseanycleaninguidsthatcanbeharmfultohumans.
• DO NOThosedown,immerseorpressurewashanypartofthegriddle,excludingthecatchtray.
• NEVERuseascrubberpad,steelwoolorabrasivematerialtocleanthegriddle.
ALWAYS DISCONNECT OR UNPLUG THE ELECTRICAL POWER FROM THE GRIDDLE BEFORE
CLEANING.
RECOMMENDED CLEANING
IttakesverylittletimeandefforttokeeptheGriddleattractiveandperformingattopefciency.Ifgreaseis
permittedtoaccumulate,itwillformagummycakeandthencarbonizeintoahardsubstancethatisextremely
difculttoremove.Topreventthiscondition,pleasefollowthecleaningstepsbelow:
PART REQUIREDACTION FREQUENCY
Scraping Scrapethegriddlewithascraperorexiblespatulatoremoveexcess
fatandfood.Acatchtrayisprovidedforthescrapings.
Ifthereisanaccumulationofburnedfatandfood,thegriddleshouldbe
thoroughlyscouredandre-seasoned.
Usepumiceorgriddlestone,whilethegriddleiswarm,toremove
excessfatandfood.Do not use steel wool because of the danger of
steel slivers getting into the food.
AfterEachUse
Body Useacleanclothandanon-abrasivecleanertocleanthestainless
steelbodyofthegriddle.
Wipethepolishedareaswithasoftcloth.
Daily
Controls Unitshouldbeturnedoffwhennotinuse.
Itisrecommendedthattheunitbedisconnectedfromthepowersupply
byshuttingoffpowerdisconnectswitch.
Useacleanclothtowipedowncontrolsandknobs
Daily
Catchtray Oncetheunithascooled,removethecatchtrayformtheunitand
discardthewaste,debrisandcrumbs.
CAUTION:Ifthegreasedrawerispermittedtolltoohigh,theexcess

wheninstalledinaccordancewithourinstructionswithinNorthAmericaandsubjectedtonormaluse,isfreefrom
defectsinmaterialorworkmanshipforaperiodof1year.Thelaborwarrantyisoneyearfromoriginalinstallation
or 18 months from actual factory shipment date which ever date occurs rst. Warranty includes onsite service
