GAS and GAS PRESSURE
This unit is factory supplied in Natural Gas.ThisunitcanbeconvertedtoL.P.gas
bya licensedandcertiedgastechnician.Documentationmaybenecessaryforwarranty
issues.Failuretocomplywiththisinstruction,willvoidwarranty.
See the included L.P. conversion kit for gas conversion parts and instructions.
Unit installationmustconformwiththeNationalFuelGasCode,ANSIZ223.1/NFPA54,the
National Gas Installation Code, CSA-B149.1, or the Propane Installation Code,
CSA-B149.2asapplicableandinaccordancewithlocalcodes.
The applianceandit’sindividualshutoffvalve(tobesuppliedbyuser)mustbedisconnected
fromthegassupplypipingsystemduringanypressuretestingofthatsystemattest
pressuresinexcessof½psi(3.45kPa).
Thesemodelsaredesigned,built,andsoldforcommercialuseonly.
Instructionsmustbepostedinaprominentlocation.Allsafetyprecautionsmustbetakenintheeventtheusersmells
gas.Safetyinformationcanbeobtainedfromyourlocalgassupplier.
UNPACKING
UnpacktheGriddleimmediatelyafterreceipt.RemovethegasGriddlefromthecrate;removeallpackagingonand
surroundingtheunitandbecertaintoremoveallprotectiveplasticsandresiduesfromallsurfaces.Makesurethat
allpartsprovidedincludingtheL.P.gasconversionkitarelocated.
Ifthemachineisfoundtobedamaged,savethepackagingmaterialandcontactthecarrierwithinfteen(15)days
ofdelivery.ImmediatelycontactGlobeoryourlocaldealeroftheequipment.You have no recourse to damage
after fteen (15) days.

1. Readthismanualthoroughlybeforeinstallationandoperation.DONOTproceedwithinstallationand
operationifyouhaveanyquestionsordonotunderstandanythinginthismanual.Contactyourlocal
representativeorGloberst.
2. SelectalocationfortheGriddlethathasalevel,solid,nonskidsurfacethatisnonammableandaway
fromwaterhazardsorsinks,andisinawell-lightedworkareaawayfromchildrenandvisitors.
3. Equipmentmustbeinstalledunderproperventilationasrequiredperlocalcode.
NOTICE:Localcodesregardinginstallationandventilationvarygreatlybyarea.TheNationalFireProtection
Association,Inc,statesinitsNFPA96latestedition(seeNFPApageatthebeginningofthismanual)thatlocal
codesare“authorityhavingjurisdiction”whenitcomestorequirementsforinstallationofequipment.Therefore,
installationshouldcomplywithalllocalcodes.
4. Screwlegsintothepermanentlyfastenednutsonthefourcornersoftheunitandtightenbyhand.Legsmust
beinstalledtoadequatelyprovideproperventilationtotheunit.
5. Levelunitbyadjustingthefourfeetandtightensecurely.Theadjustablefeethaveanadjustmentofoneinch
forlineupwithotherGlobecountertoplines.Donotslideunitwithlegsmounted,liftifnecessarytomoveunit.

removablethruthefrontifthegaslineisdisconnected.
10. Itmaybenecessarytoadjustthebalanceofgasvolumeandairsupplytoeachburner.Thismustbedone
byanauthorizedservicetechnician.
11. Pipethreadingcompoundmustberesistanttotheactionofliqueedpetroleumgases.
DONOTuseanopenametocheckforleaks.Checkallgaspipingforleakswithasoap
andwatersolutionbeforeoperatingunit.
COMMISSIONING:
CommissioningofyournewGriddleisoftheutmostimportance.Commissioningisthethoroughandmethodical
testingoftheequipment,subsystems,andsystemstoensurethatthenalproductfunctionsproperlyandsafelyat
theworksite.Byidentifyinganypotentialproblems(i.e.:equipmentlocation,ventilation,localre/electricalcodes,
installation, operator training and certication) prior to equipment being placed into service, costly outages and
potentialdamagesmaybeavoided.

operating and maintenance instructions thoroughly before installing, or operating this
equipment.
Instructionsmustbepostedinaprominentlocation.Allsafetyprecautionsmustbetaken
intheeventtheusersmellsgas.Ifyousmellgas,immediatelyshutoffthemaingasvalve,

Operating the Griddle - Pilot Lighting Instructions for MANUALLY CONTROLLED Griddles
BeforeoperatingGriddle,itshouldbecheckedtoseethatitissittinglevel.AdjustthefeettoleveltheGriddle.Be
surethecatchtrayhasbeenproperlyplaced.
Thepilotlightontheappliancehavebeensetatthefactory.Eachburnerhasapilotlight.
1. Makesureallknobsareinthe“OFF”position.
2. Themaingasvalveshouldbe“CLOSED/OFF”forve(5)minutespriortolightingpilotstoclear
anyexistinggas.(Maingasvalveissuppliedbyothers.)
3. Turn“ON/OPEN”themaingasvalvetotheunit.
4. Lightandholdanignitionsource(match)atthepilots.Whentheameisestablished,removethe
ignitionsource.Repeatthisstepforeachburneraseachburnerhasitsownindividualpilot.
Thepilotcanbereachedthroughtheholesinthefrontoftheunit.
5. Turneachburnerknob“ON”.Iftheburnersdonotignitepromptly,turntheknobs“OFF”.Fromthe
openinginthefrontpanel,useascrewdriverandturnthepilotvalvescrewcounterclockwisewhichwill
increasetheameheightandrepeatstep4.
Ifthepilotameappearslargerthannecessary,turnitdownandresetburnerignition.Thepilotame
shouldbeassmallaspossiblebutlargeenoughtoguaranteereliableignitionoftheburnerswhenthe
knobsareturnedto“ON”.Theholeslocatedinthefrontpanelarepilotvalveadjustments.Usea
screwdrivertoturnthevalvetoadjusttheameheighttoyourdesiredlevel.

Theseburnersarettedwithindividualstandingpilotsforeachburnerwhichallowsthemainburnerstobeturned
‘ON’-‘OFF’withouttheneedtomanuallyre-lighttheburnereachtimethatitisturned‘ON’,astheburnerwillbe
automaticallylititselfbythepilotburner.
FlameFailureProtectionisincorporatedforeachburnerbywayofathermo-electricsystemwhichwillshutoffthe
gassupplytothatburnerintheeventthattheburnergoesout,sothatun-burntgasisnotexpelled
1. Selecttheburnerrequired,depressandturnthecorrespondinggascontrolknobanti-clockwisetothe
‘PILOT’position.
2. Withthegascontrolknobdepressed,depressthepizeoigniterbutton,toignitethepilotburner.
3. Releasethegascontrolknobapproximately10-20secondsafterlightingthepilotburner.
4. Thepilotburnershouldstayalight.(Ifnot,repeatSteps2.to3.above.)
5. Rotatethegascontrolknobcounterclockwisetothedesiredtemperaturemark.
6. Themainburnerwillbenowignitedautomaticallybythepilotburner.
7. Turnthegascontrolknobclockwisetothepilotposition.Themainburnerwillextinguishandthepilot
burnerwillremainalight.
8. Toturn‘OFF’theappliancecompletely,turnthegascontrolknobfullyclockwisetothe‘OFF’position,
thepilotburnerwillextinguish.
Note:Pleasedonotrestarttheburnerinlessthan15secondsafterturningofftomaintainthebestfunctionof
thethermostaticvalve.

Igniting the Burner
Toignitetheburner,turnknobtothe“ON”position.Thenbackofftothedesiredamelevel.Therangeof
adjustmentisvirtuallyinnitebetween“ON”and“OFF”.
Thespacebetweenthelegsatthebottomadmitscombustionair.DONOTBLOCKTHISSPACE.
Allburnersarelitfromaconstantlyburningpilots.Turningthevalvetothedesiredameheightisallthatis
requiredtoputtheunitinservice.
Donotpermitfanstoblowdirectlyattheunit.Whereverpossible,avoidopenwindowsnexttotheunit’ssidesor
back.Avoidwalltypefanswhichcreateaircross-currentswithinaroom.
Itisalsonecessarythatsufcientairshouldbeallowedtoentertheroomtocompensatefortheamountofair
removedbyanyventilatingsystem.Otherwise,asubnormalatmosphericpressurewilloccur,affectingoperation
andcausingundesirableworkingconditions.
Aproperlydesignedandinstalledhoodwillactastheheartoftheventilatingsystemfortheroomorareainwhich
theunitisinstalled,andwillleavetheunitindependentofchangingdraftconditions.
NOTE:Itmaybenecessarytoadjustthebalanceofgas,volumeandairsupplytoeachburner.Thismustbedone
byanauthorizedservicetechnician.
Seasoning the Griddle
Heattolowtemperature(300-350F/150-180C)andpoursmallamountofcookingoiltothegriddleplate(aboutone
ounce(30cc)persquarefootofsurface).Spreadtheoilovertheentiregriddlesurfacewithaclothtocreateathinlm.
Wipeoffanyexcessoilwithacloth.Repeatthisprocedure2to3timesuntilthegriddlehasaslick,mirror-likesurface.
Operating the Griddle
Turntheburnersonabout15-20minutesbeforecookingforpreheating.Settheknobstothedesiredameheightor
temperature.Eachvalvecontrolsthegasowtotheburnertobringthatareaoftheunituptothesettemperature.
Ifdifferenttemperaturesettingsaretobeused,adjoiningareasshouldbesetatprogressivelyhighertemperatures
usingthelowesttemperaturesontheoutsideburners.Auniformandsystematicapproachtotheloadingoftheunit
willproducethemostconsistentproductresults.

• DO NOTuseanyabrasiveorammablecleaninguids.
• DO NOThosedown,immerseorpressurewashanypartoftheGriddle,excludingthecatchtray.
• NEVERuseascrubberpad(onallexteriorsurfaces,exceptthegriddleplate),steelwoolorabrasivematerial,
orcleanerscontainingchlorine,iodineandammoniaorbrominechemicalsasthesewilldeterioratethe
stainlesssteelandshortenthelifeoftheunit.
IF CLEANING ALL THE GRIDDLE’S SURFACES, THE MAIN GAS VALVE MUST BE SWITCHED TO
THE CLOSED POSITION. AFTER CLEANING, THE GAS LINE CAN BE SWITCHED BACK TO THE
OPEN POSITION. PLEASE FOLLOW THE LIGHTING INSTRUCTIONS IN THIS MANUAL TO RELIGHT
THE GRIDDLE’S PILOT LIGHTS AS NEEDED.
RECOMMENDED CLEANING
IttakesverylittletimeandefforttokeeptheGriddleattractiveandperformingattopefciency.Waituntilthegriddle
iscoolaftertheunithasbeenturnedoff.Pleasefollowthecleaningstepsbelow:

soapmaybeusedontheplatesurfacetohelpcleanit
•Removeallsoapanddebristhoroughly;wipewithaclean,damp
cloth.•Theplateshouldthenbecoveredwithathinlmofoiltoprevent
rusting.Cleanstainlesssurfaceswithadampclothandpolishwitha
softdrycloth.Toremovediscoloration,useanonabrasivecleaner.After

defectsinmaterialorworkmanshipforaperiodof1year.Thelaborwarrantyisoneyearfromoriginalinstallation
or 18 months from actual factory shipment date whichever date occurs rst. Warranty includes onsite service
