WARNINGS
It is very important that this instruction manual is kept with the dishwasher for future
consultation.If the dishwasheris soldortransferred toanotheruser,makesurethatthe manual
stays with it to allow to new owner to be informed on operations and warning.
These warnings are supplied for safety reasons.
They must be read carefully before installation and before the dishwasher is used.
· CONNECTIONTOELECTRICANDWATER LINEFORWARE-WASHERINSTALLATIONSHALL
BE CARRIED OUT EXCLUSIVELY BYA QUALIFIED OPERATORS.
· The ware-washer shall be run only by adults. This is a professional machine and shall be used by
qualied personnel, and installed and repaired exclusively by a qualied assistance technician.
The manufacturer shall not be held liable for improper use, maintenance or repairs.
· The appliance is not to be used by children or persons with reduced physical, sensory or mental
capabilities, or lack of experience and knowledge, unless they have been given supervision or
instruction.
· Children being supervised not to play with the appliance.
· Gently open and close the door.
· Make sure that the ware-washer is not laying on electrical wires or load or unload tubes. Regulate
the machine support feet to place level.
· The ware-washer has been designed for washing confectionery/bakery/rotisserie objects
and utensils. Any other use shall be considered improper and forbidden. DO NOT wash
objects contaminated by petrol, paint, steel or iron parts, fragile objects or material which is not
resistant to the washing process. Do not use acidic corrosive chemical products or alkaline and
solvents or chlorine based detergents.
· Do not open the ware-washer door when running. The ware-washer is equipped with a safety
device, however, which will immediately shut down operation to avoid water outburst in case of
accidental opening.
· The ware-washer must be disconnected from the electrical supply after use, at the end
of the day or for any type of maintenance. Switch off the main switch located on the wall,
which shall be installed by an installer. Turn off the water supply tap.
· The user is forbidden to carry out repairs and/or maintenance. Contact qualied personnel.
· The ware-washer shall be serviced by authorized personnel.
N.B.Use original spare parts only. If non original parts are used the warranty shall be null
and void and the manufacturer shall not be held liable.
· A few important rules must be followed to operate this apparatus:
1) never touch the apparatus with wet hands or feet,
2) never use the apparatus barefoot,
3) do not install the apparatus where it can be exposed to water jets.
· The apparatus has been designed to work in temperatures of 35°C maximum, in a suitable
environment and at temperatures not below 5°C.
· DO NOT USE OLD LOAD PIPE, BUT ONLY NEW ONES.
N.B. There shall be no liability for accidents to persons or thing due to the disregard of the
above mentioned regulations.
ATTENTION: INTERNALCLEANING OF THE MACHINE SHALL BE CARRIED OUTAT LEAST 10
MINUTES AFTER IT IS TURNED OFF.

WARNINGS:
Once installation is complete, it is recommended to detach the installer’s guide section of
this manual for future reference.
1. MACHINE INSTALLATION
1.1 Receiving product
After removing the packaging, make sure that the apparatus was not damaged during tran-
sportation. If this should be the case, notify the seller of the defect. For packaging disposal
see chap. 9.
1.2 Water connection
Connect the machine water supply with a stop valve that can quickly and completely
turn off water ow.
Make sure that the water supply system is within the parameters reported in tab. 1.
If the water system pressure is above 4 BARS (400 KPa), a pressure reducer is recom-
mended.
It is compulsory to install a water-softner for water with average hardness above
10°f.
Dishes/objects will be cleaner and the machine will last longer.
Each machine is supplied with a rubber water load tube with a 3/4"F threaded connection.
It is recommended to connect the tube to water supply systems that do not exceed 55°C,
if connected to hot water.
Connectthe suppliedmachinedrainingtubetotheconnectorlocatedunderthetank,making
sure that the water ows freely (giving, therefore, minimum slope).
The drain tube shall always be connected to a siphon (Ø) in order to prevent the release of
odours. The MAXIMUM drain permitted height is 10cm.
1.3 Electrical connection
The electrical connection shall be carried out in accordance to the laws in force.
Make sure that the line voltage is the same as that written on the machine plate. Apply a
suitable magneto-thermic omni polar switch measured in accordance to absorption
and that is equipped with a contact opening of at least 3 mm (always turn the machine
off with this switch). This is the only switch which guarantees total electric supply
system isolation.
This switch shall be solely and exclusively used for this purpose and installed in the imme-
diate vicinity.
Make sure that the facility is equipped with efcient grounding.
Moreover, the machine has a clamp at the back indicated by the symbol (see g. 1) that is
used for equipotent connection among different apparatuses. The maximum power expresses
in watts (W) and amperes (A) is located on the serial number plate for line measurement,
cable and switches.
N.B.: for machines cable types H05RN-F or H07RN-F must be used or replace with
others which correspond to the regulations of the country where the ware-washer is
installed. A 4mm² section for voltage 380-415V3~, and a 6mm² section for voltage
220-240V3~. The replacement of the cable must be carried out by specialized
personnel only.
The seller/importer/installer must adapt the supply cable isolation class in function to the
work environment respecting the Technical Regulations in force.

Attention: some of the machine versions can disperse more than 10mA to earth.
Proceed to machine start-up and rinse aid dispenser calibration as follows:
1) Turn on the wall switch and the water tap.
2) Turn on the ware-washer by pressing key (B) (see par. 2). The relevant green led will
come on.
3) The machine begins to load water in the boiler and the tank (it is important to not open
the door).
4) Once water is loaded, it is heated in the boiler then subsequently in the tank.
5) It is already possible to verify correct pump rotation pressing the START key, since, being
tri-phase, it can rotate the other way. In addition to the orientation arrows, this is also
indicated by excess noise during the wash cycle (see g. 2).
Important: improper pump rotation can cause impeller unscrewing and rotary seal water
leakage.
6) The machine is ready for washing.
The machine’s sound level is LpA= 82dBA± 2.5. **

1.4 Rinse aid dispenser operation
Dispenser operation g. 3:
Use the rinse pressure pump to withdraw from the canister and inject the rinse aid into the
boiler during the wash phase.
Water connection (for replacement only):
1) Use the rubber tube installed on the machine to hook up the dispenser to its connector
(B) with the special connector located near the boiler (injector).
2) The green tube, on the other hand, which comes out of the suction connector (C), shall
be inserted with a small lter and relevant ballast, in the rinse aid product withdraw
canister (during use).
The connector “A” shall be hooked up to the rinse circuit with a “T” connection.
Initiation:
For initiation simply start the machine and carry out a few wash and rinse cycles.
Regulation:
During each cycle the dispenser withdraws an adjustable quantity of rinse aid product from
0 to 4 cm3equivalent to the suction length in the tube from 0 to 30 cm.
The minimum ow is obtained by completely screwing the regulation screw (D) (clockwise),
while maximum ow is obtained by unscrewing the regulation screw with about 20 rotations
(counter-clockwise).
For proper chemical product dosage see the product manufacturer notes (see also par.
7.4).
N.B.: for each screw rotation the rinse product dosage varies from 1,6 cm sucked into the
tube, equal to 0,2 cm3/rotation (about 0,21 g/rotation with product density of 1,05 g/cm3).
The rinse aid dispenser cannot function properly is there is a slope of over 40 cm
between the bottom of the machine and the canister.

1.5 Detergent dispenser installation
Electrical connection:
Consult the electric diagram enclosed with the dishwasher.
Water connection:
a) Properly assemble the injector (C), using the appropriate washers.
b) Connect the suction straw to the dispenser suction attachment (see g 5 point A).
c) Connect the ow straw to the other dispenser attachment and the ow connector (see
g. 5 point B).
d) insert the straw with lter into the detergent canister.
e) Prime the detergent and proceed with the dosage phase
Dosage:
The detergent dosage ow can be regulated with a screwdriver as indicated in g. 6. Every
2 cm of product sucked into the tube corresponds to 0,25 cm3 equal to 0,3 g (with 1,2 g/
cm3 density). See also par. 7.3.
N.B.: Adispenser with a conductivity probe in the tank is recommended.

PROBLEM CAUSES AND REMEDY
Water leaks from rins aid suction tube The suction valves 10705/D and ow do not seal due to foreign bodies is
the clamping seats. Clean valves 10705/D, check if the rinse aid suction
lter is present. Make sure there are no crystals or solid pieces inside the
canister which could be due to old, dried-out product.
The dispenser does not suck up rinse aid a) The ow valve 10705/D does not seal due to foreign bodies in the
clamping seats. Clean the valve 10705/D, check if the rinse aid suction
lter is in place.
b) The piston washer does not seal because it is ruined. Replace the
washer with an original.
c) Check that membrane 10705/O is intact.

1.6 Increase pressure/rinse pump
After a period of inactivity of the ware-washer, check that the rinse pump rotates freely.
If it is blocked, move the pump shaft, by inserting a screwdriver in the notch, rotating
clockwise and counter-clockwise (see g. 9). This operation may be necessary when
the slow tank-loading alarm sounds (7) (chap. 11.2).
1.7 Emptying boiler and break tank
This function lets the boiler and break tank empty for any extraordinary maintenance or
emptying function.
• Press key “B” (Stand By) and make sure that the tank is empty.
• Simultaneously press keys “E” and “F” (granule cycle selection/water cycle selection)
for about 5 seconds; Boiler and break tank emptying is activated.
The display will show the message “Empty” during the entire emptying cycle.
•Once emptying is complete, the machine can be turned back on with key “B” (ON), but
is frozen until the tension is removed and replaced by the general wall switch.

reported below in accordance to operation modality.

4. MACHINE PROGRAMMING
The following is necessary to access programming:
• simultaneously press keys “A” and “B”, making sure to press key “B” just a little before,
for about 5 seconds after which the message “Key” shall be displayed;
• set the password parameter at “15” using keys “⇑” “⇓”;
• conrm the password by pressing key “A”; if the password is correct parameter access is
granted, if it is incorrect the message “Key Err” shall be displayed for about 4 seconds.
Note: to enter programming the machine must not be washing; if you try to enter program-
mingduringwashing,themessage(noPr)willbedisplayedandthedishwasherwillcontinue
the cycle.
The machine will automatically exit programming if no key is pressed for about 20 seconds.
Note: to reset the display, turn off the general wall switch for 10 seconds, and then
turn the main wall switch on again.
4.1 Parameter selection
Once parameter selection is accessed the message “Pr” shall be displa A” repeatedly to
dene the parameter “P” number (P1, P2, … P20).
It is now possible to:
• modify the parameter value with the “⇑” “⇓” keys;
• conrm the value or proceed to subsequent parameter programming by pressing key
“A”;
• return to parameter selection without modifying data by pressing key “B”.
4.2 Parameter programming
Once parameter programming is accessed the message “P” shall be displayed as well as
the blinking parameter number followed by the parameter value.
It is now possible to:
• modify the parameter value with the “⇑” “⇓” keys;
• conrm the value or proceed to subsequent parameter programming by pressing key
“A”;
• return to parameter selection without modifying data by pressing key “B”.

7. OPERATION
7.1 General operation
The machine needs 3 connections to run:
• Electric;
• Water supply;
• Drain.
The machine is designed with a wash chamber inside which there is:
• A basket support, connected to a clutch equipped gear, where the rack is placed to rotate
during the wash cycle.
• Two interchangeable wash arms where water and water mixed with granules ow from.
• A rinse arm connected to a pump which withdraws from the boiler guaranteeing constant
temperature rinse ("Plus" system).
• A lter located under the chimney to prevent granules from rising and getting stuck in the
fan located at the end of the chimney.
A tank is found under the chamber which contains water in one part and water mixed with
granules in the other. The part containing water shall always be covered by blind chutes to
avoid granule contamination.
The part containing the granule water mixture shall always be covered by work perforated
lters or, in the granules recuperation phase, the collection strainer with special lateral
compensatory chutes (see chap. 7.7).
7.2 Machine preparation
• Prepare the right amount of granules by lling the strainer to the indicated level (see
photo 1).
• Pour the contents into the right-hand side of the tank.
• Place the overow tube in the dedicated seat, at the tank bottom.
• Insert the two chutes above the water-only area (left-hand side of the tank) and the two
perforated lters above the granule area (right-hand side of the tank).
• The lters shall be cleaned every 15-20 cycles and whenever necessary. Do not use
the machine without lters.
• Make sure that the wash and rinse arms are properly placed.
• Make sure that the rack support is inserted properly.
• If the machine is equipped with a detergent dispenser, insert the transparent hose into
the detergent canister.
• Insert the special green rinse-aid chemical container and check that the quantity is
sufcient for the workload of the day.
• Shut the door.
• Open the water valve, activate the main wall switch and proceed with turning on the
machine by pressing key “B” (see g. 7). The green led will come on. After a few seconds,
the lling stage shall begin.
• After water-lling, the machine will automatically activate the heating stage.
• The machine shall be ready for washing, only when the boiler and tank thermometers
indicate that the proper temperatures have been reached: 80-85°C for the boiler and
50-55°C for the tank.
• Insert the rack with the various objects to wash and shut the door.
• Before beginning the wash cycle, insert the proper detergent into the tank (if the machine
is not equipped with an automatic dispenser).
• Select the wash cycle time using the keys (C/D) and the type of wash cycle (only water
or water and granule) using the keys (E/F) (see g. 7). The green led shall come on in
correspondence to the selected cycle (1, 2, 3, 4, ∞).
• Start the cycle by pressing key “A” (see g. 7) Cycle start-up shall be indicated by a cycle
selected blinking light. At the end of the cycle the light stops blinking and the word END
appears on the display.
• The machine is ready for a new wash cycle.
• It is recommended to replace the tank water with new water at least after 30 wash cycles
or 2-3 times a day.

RINSE AID
DETERGENT
N.B.: The machine does not accept other cycles until the door is opened or the key (A) is
pressed twice (see g. 7).
The cycles (1, 2, 3, 4, ∞) with granules and (1, 2, 3, 4) with only water are pre-set by the
producer with times of 4-6-8-10-12 minutes for granule cycle, 4-6-8-10 minutes for only
water cycle. The cycle (∞) set for water only, can be regulated by the user from 100 to 720
seconds as follows:
• Select cycle (∞) using keys (C/D). Press the START key (A). Tin will blink on the left
display. On the right display select the desired time, increasing or decreasing, with keys
(C/D).
Min. 100s - Max 720s
Press the START key again to conrm cycle start.
• The set time will be stored to memory. To modify, repeat the process.
Note: to reset the circuit-board, turn off the main wall switch for 10 seconds, and then
turn the general wall switch on again.
7.3 Detergent use
The detergent shall be the NON SUDS type and suitable for industrial dishwashers. Liquid
detergent is recommended.
Thedetergentshallbeplaced inthetank.Followmanufacturerrecommendationsfordosage.
The ware-washer can be ordered with an adjustable automatic detergent dispenser.
Lack of detergent in this machine will cause bad wash results and clogging.
7.4 Rinse aid use
The machine has a standard rinse aid dispenser. The machine automatically sucks the
product.
The quantity can be regulated with the micrometric dispenser screw. The amount is decre-
ased with clockwise rotation and increased with counter-clockwise rotation.
N.B.: Excess product or suds reduce wash pump efciency.
7.5 Basket preparation
In order to obtain the best performance of the machine and optimise its running costs, we
do recommend to load the machine properly, also balancing weights as much as possible
on the whole surface.
The machine is equipped with:
a) a round basket;
b) rack/utensil pyramidal insert;
c) utensil rack;
d) pan stand;
e) pot stand.
f) a tray-stand for service trays;
g) four stands for cooking trays.
a) The round basket can contain: 6 GN 1/1 or 6 GN 2/3 or 6 GN 1/2 or 12 GN 1/3.

The round basket can contain 2 GN 2/1 or 1 GN 2/1 and 3 GN 1/ 1.
b) The pyramidal stand xed to the centre of the basket supports the cutlery racks as well
as pots without handles.
c) All utensils can be placed on rack.
d) The pan rack stand allows washing pans of any size with handles. The upper telescopic
part offers easy insertion and removal.
e) The pot stand allows washing any pot with handles.
f) The tray stand allows the washing of 10 trays max 40mm depth. While using this stand,
other objects may not be intruduced, as they would interfere with the wash result.
This stand is not recommended for oven trays, but for service-trays with light dirt only.

g) The four tray-stands allow the washing of bakery trays of various depths.
It is also possible to prepare a basket mixing the above components.
Having a machine with lateral wash and rinse arms, an object must not be placed in front
of another or else the one behind will not be washed.
7.6 Final check
When the word END appears on the display the machine has nished the cycle and it is
possible to open the door and remove the basket.
ALWAYS CHECK WASHING RESULTS. MAKE SURE THAT NON GRANULES ARE ON
THE OBJECTS. IF SO, REMOVE THEM.
7.7 Granule cleaning and collection
To collect the granules in the tank:
• Remove the two lters.

7.9 H.A.C.C.P. and hygiene regulations
• The machines are equipped with temperature displays that indicate boiler and tank
temperature. It is recommended to wait until the set temperature is reached.
• Rinse all objects to be washed carefully to avoid obstruction of lters, nozzles and
piping.
• Drain the wash tank and clean the lters at least 3 times a day.
• Check that the detergent and rinse-aid dosage are correct (as recommended by the
manufacturer). In the morning, before using the machine, check that the quantity of
product in the canisters is enough for daily supply.
• Keep dish table clean.
• Extract the dishwasher basket with clean hands or gloves to avoid nger marks.
• Do not dry or polish the clean objects with cloths, brushes or rags that are not sterile.
7.10 Pressure increase/rinse pump
Aftera periodofinactivityoftheware-washer, thepressureincrease/rinsepumpcanbecome
blocked due to oxidation; should this problem occur the alarm sounds (7) (slow wash tank
load - chap. 11.2). Call a Service Technician to unblock (also check the water pressure and
quantity).
7.11 Energy-Saving function
If this function is enabled, it reduces boiler temperature when the machine is standing-by
for a subsequent cycle.This saves energy.
7.12 Thermostop function

7.13 Conditions that inhibiy the washing cycle
The washing cycle is annulled and brought to stop position under the following conditions:
• if fault is detected
• if the (B - ON/OFF) button is held for more than 2 seconds.

• Replace with the strainer and two lateral compensation chutes.
Once this operation is complete, simply select cycle 1 granule mode and with the door
shut press (START). One the cycle is nished, the granules shall be found in the collection
strainer. To clean, simply place the strainer in a sink and wash from above.
On this occasion, check granule consistency and quantity (see photo 1).
If they are too small and spherical, replace; if they are too few, add to level.
Excessive amount or lack of granule can result in unsatisfactory results, when using the
granule mode.
7.8 Chamber cleaning
Once the cleaning stage is nished, replace the overow, chutes and lters and proceed
with new lling (see 7.2).
Periodically remove the wash arms and clean under running water.
Periodically remove the rinse arms and clean the nozzles.
Reassemble the nozzles as originally assembled.

7.14 Conditions that inhibit the washing cycle start
The cycle is inhibited under the following conditions:
• if the door is open; in this situation the display shall read (Door) for 4 seconds;
• if water is lacking; in this situation the display shall read (H2O) for 4 seconds;
• when the alarm sounds;
• during tank loading.

8. MAINTENANCE
WARNING: The machine is no protected against pressurized water jets. Avoid using
pressure cleaning system against the machine's body.
Itismoreoverrecommendedtocontacttheproductsellerforcleaning,inordertohave
detailed indications on methods and products for periodical machine sanitation.
Do not clean with bleach or chlorine based detergents.
8.1 Routine maintenance
Careful cleaning once a day is necessary to ensure that the machine runs perfectly and
shall be carried out as follows:
• Granule recuperation (see chap. 7.7).
• Turn the ware-washer off pressing key (B) of the panel (see g. 7) and put the ware-
washer on stand-by.
• Turn off the main wall switch off.
• Drain the water by removing the overow pipe.
• Extract the lters and chutes and clean with a brush under heavy water jets.
• Extract the wash and rinse pipes.Carefully clean the nozzles under running water.
• Reassemble the parts and reposition the wash pipes in place.
• Clean the tank and wash chamber very carefully, using a pressurized shower connected
to the water supply system.
• It is recommended to leave the machine door open at the end of the day.
N.B.: It is recommended to replace the tank water with new lling at least every 30 wash
cycles or 2-3 times a day. Do not use metal wool for cleaning and/or corrosive products that
can damage the machine.
8.2 Extraordinary maintenance
Once or twice a year have the machine inspected by a qualied technician to:
• Clean the solenoide-valve lter;
• Remove encrustation from resistance;
• Control the status of the seals;
• Control for component integrity and/or wear;
• Control dispenser functioning;
• Tighten electric connection clamps, at least once a year, by a service technician.
9. ENVIRONMENTAL ASPECTS
9.1 Packaging
Packaging is made up of the following components:
• a wooden pallet;
• a nylon sack (LDPE);
• a multi-layer carton;
• polystyrene (PS) strips;
• polypropylene (PP) banding .
It is kindly asked to dispose of the above materials in accordance with the laws in force.
9.2 Disposal
ThesymbolWEEE/RAEEusedon thisproductindicatesthatitcannotbetreatedasdomestic
waste. Proper disposal of this product contributes to protecting the environment. For more
information on product recycling, contact the local authorities, domestic waste authorities
or the dealer where the product was purchased.
For product or parts disposal, follow the Council directives 2002/95/EC and 2002/96/EC as
amended and/or application legislative decrees.
The present product or parts can not be disposed of as urban waste but shall be collected
in separate containers (see the waste bin on wheels symbol with an “X” on the product).
At the time of product disposal, the user shall refer to the waste electrical and electronic
equipment (WEEE/RAEE) specication.
The manufacturer guarantees the absence of dangerous substances in the EEA used in
conformity to the directive 2002/95/EC.

10. ECOLOGICAL ASPECTS
10.1 Recommendations for optimal use of energy, water and additives
Use the machine fully loaded when possible.
This shall prevent detergent, rinse aid, water and energy consumption waste.
Detergent and rinse-aids
Use detergents and rinse-aid chemicals with high biodegradability, to best respect the en-
vironment. Verify proper dosage in relation to water hardness at least once a year. Excess
product pollutes rivers and seas while an insuf cient dose results in unsatisfactory dish
washing and/or hygiene.
Boiler and Tank temperatures
The boiler and tank temperatures are set by the manufacturer in order to obtain the best
washingresultswithdetergentsonthemarket.Thetemperaturescanberesetbytheinstaller
in relation to your detergent.
Pre-washing
Carefully pre-wash with a moderate amount of water at room temperature to facilitate the
removal of animal fats.
To remove encrusted materials warm water soaking is recommended.
Note:
Wash objects as soon as possible to avoid deposits from drying and compromise effective
washing.
For effective washing routine dishwasher cleaning and maintenance is advised (see chap.
8).
The disregard of the points listed above and of any the information contained in this
manual can cause energy, water and detergent waste with a subsequent increase in
cost and/or performance reduction.
11. DETECTION AND DISPLAY OF ALLARMS AND FAULTS
11.1 50570/G dispaly detection
The following faults are managed and displayed:
• probes: when there is a short circuit or a break, or when the measured temperatures are
below 0°C or above 125°C;
• boiler overheating: when the boiler temperature exceeds 105°C;
• tank overheating; when the tank temperature exceeds 90°C;
• lack of boiler heating: if the set temperature in the boiler has not been reached after 30
min from activation;
• lack of tank heating: if the set temperature in the tank has not been reached after 1 hour
from activation;
• water load: if water loading is not complete by the set time (parameter 8);
• open door alarm: if the door is opened during the cycle;
• boiler load: if boiler loading is not complete by the set time (parameter 9).
If the user does not comply with the regulations he/she shall be subject to the penalties
foreseen by each member state.
Disconnect electricity and water before disposal.
Cut the electrical cable to ensure that further use is impossible.
All metal parts are recyclable as they are made of stainless steel.
Recyclable plastic parts are marked with the plastic material symbol.
