APPLICATION
SBH Series are self-leveling heaters and dispensers for
plates and heat retentive devices (our Diamond D-8000
wax base) used in tray make up systems. An adjustable
thermostat makes the unit compatible for low and high
heat applications.
Only Piper's equipment has the advantage of
technology and certification. This ensures that your food
is kept "out of the DANGER-ZONE." Food spoilage occurs
mainly because of rapidly accelerated bacteriological
activity within the 40F-140F "DANGER-ZONE."
With hot food stays above 140°F longer and cold
food is kept below 40°F. Both are key factors in HACCP
compliance and the fight against foodborne pathogens.

CONSTRUCTION
The exterior shall be constructed of 304 high nickel 18-8
stainless steel with the frame constructed of 18-gauge, the
side and front panels constructed of 20-gauge, the back
panel constructed of 16-gauge and the base constructed
of 14-gauge with a “H” frame reinforcement of formed “U”
channel construction. Two (2) and three (3) silo models shall
be available. Each tube shall hold approximately 50 bases or
plates.
The fully insulated lids shall be constructed from 16-gauge
stainless steel with a gasketless design. Lids have no
hinges and can be hung on brackets during operation. The
dispensing system shall be a cantilevered design with seven
(7) heavy-duty field-adjustable springs to accommodate a
variety of bases, plates and special high heat plastic serving
ware.
The full perimeter “Bloc-Guard” bumper designed with a
bottom “L” stainless steel reinforcement bracket to allow
heavy long term use and 5” polyurethane non-marring swivel
casters (2w/ brakes) shall be standard.
The heating system shall be a forced air convection design
that circulates thermostatically controlled super heated air
evenly through the fully insulated cabinet. The dual voltage
unit shall be designed to draw 3200 watts at 240 volts with
13.5 Amps and 3000 watts at 208 volts with 14.5 Amps.
Control System: The programmable electronic system has
a large VFD Display and allows the operator to set the unit
for manual start or automatic start. The real time clock will
help the operator to set exact starting times for each cycle.
Each compartment is heated by an independent direct forced
hot air heating system which incorporates its own set of
thermostatic controls to maintain the bases at 225°F. The
heating system recirculate the hot air horizontally to ensure
rapid and efficient heating of the bases. Temperature control
is fully automatic, with no need for manual settings. Full
heating of the bases is accomplished in 75 to 90 minutes.
Initial heat-up of a fully loaded unit shall be approximately 2
hours or less with reheat cycles to be 1-1/2 hours depending
on wax base design.

APPLICATION
The Benchmark for food temperature maintenance in tray
delivery systems. The Diamond D-8000 will maintain 140°
food temperatures for 90 minutes plus when properly
heated and used in conjunction with a heated plate,
properly heated food, underliner and dome. Unit will
accommodate most narrow rim 9” plates for mealdelivery
systems.

CONSTRUCTION
The Diamond D-8000 shall be constructed from 20-gauge 304
high nickel stainless steel shells that are healyarch welded,
ground and polished to a mirror finish. Bottom shell shall
have 4-foot pattern to allow air flow through stack for fast
heat-up.
Core material shall be phase change compound. Internal
phase change material shall be capable of holding properly
heated food at 140° for 90 minutes plus when used in
conjunction with a properly heated plate, underliner and
dome cover. Diameter shall be 9-1/2 inches to accommodate
most 9” narrow rim plates.

SERIES AT(O)-STH-XH are heated, cabinet style, mobile
plate or platter dispensers. They are fitted with a high
wattage, forced air heating system for use when plates or
platters need to be brought to a higher temperature than
usual.
FRAME AND BODY
The body and top are of unibody design, constructed of
heavy gauge stainless steel panels formed to provide
rigidity. The unit is insulated on sides and top and lined
with zinc coated steel panels.
DISPENSERS
The unit is fitted with adjustable drop-in dish dispensers,
model AT for round plates (see catalog page D-9 for
specifications). Refer to the chart below for the dispenser
sizes available with these units.
CAPACITIES
The capacity of each model AT dispenser is approximately 28
to 36 bowls or 50 to 72 plates. The capacity of each model
ATO dispenser is approximately 50 to 72 platters.
HEATINg SYSTEM
The unit is heated by a forced air heating system designed
for rapid and even heating. A recessed control panel is fitted
with an on-off switch, a neon pilot light and an adjustable
thermostat. The system is rated 120 volt, single phase, 1500
Watts; and draws 12.5 Amps. A 4' long, three wire cord set
with NEMA 5-15P plug is included.
CASTERS
The unit is mounted on four 4" diameter heavy duty, double
ball bearing swivel casters.

SERIES STHR FRESH FOR COOK-TO-INVENTORY
AND HOT LINE SYSTEMS
For a cook-to-inventory system, Piper's Servotherm Series
STHR FRESH Carts provide temperature maintenance
of the cold food portions of the meals both before and
during the reheating of the hot food. After the re-heating
cycle is completed, temperature maintenance of both
the hot and cold portions of the meals continues
automatically. For a hot line system it provides hot and
cold temperature maintenance as required. Series STHR
carts are designed to maintain safe food temperatures at
all times, including during transportation.
DESCRIPTION
Series STHR carts are available in three different
capacities: 16, 20 or 24 meals.
Each model consists of two heated compartments and
one refrigerated compartment which is divided into two
sections by a stainless steel cold wall type accumulator.
The two heated compartments are fitted with thermo-
contact type heater shelves, each of which accommodates
the hot food portion of one patient meal. The meals can
be plated on any commercially available china dishes or
on high-temperature plastic containers. The refrigerated
compartment is sized for 12-13/16" x 20-7/8" trays.
The heated compartments employ a proven thermo-
contact technology which guarantees top quality results
by ensuring a direct heat transfer to the food. Each
thermo-contact shelf consists of a heating element
embedded in the cast aluminum shelf and are controlled
by a programmable electronic control system. This
design maximizes the quality of the finished product,
without overcooking or drying out the food. In addition,
the aluminum shelves help to retain the heat for several
hours after the heating cycle is completed.
The control system gives the operator superior control of
the process, is designed for ease and flexibility of use and
includes password protection. Programmable settings include
adjustment of time settings; selection of program mode
(manual or automatic start); reheating time parameters;
and daytime and night-time refrigeration settings. The
programming also provides a variety of diagnostic tests
to verify proper operation of the system. As an option the
unit can also be equipped with a printer to record the shelf
temperature, the cold air temperature, the date and the time.
The refrigerated compartment is designed to maintain
previously chilled food at safe temperatures, even if the
unit is unplugged for a short period of time (as during
transportation). The accumulator is mounted in the center
of the compartment and is filled with a non-toxic liquid ice
substitute cooled by copper refrigeration tubing. The system
is driven by a 1/3 H.P. condensing unit mounted on the
base at the side of the unit. The cold cavity temperature is
displayed by the controller.
SPECIFICATIONS
The cabinet’s base is constructed of reinforced 14-gauge
stainless steel. The balance of the cabinet’s exterior, the
interior of the heated compartments and the accumulator
are constructed of 18-gauge stainless steel. The base is fitted
with a full non-marking rubber bumper and is mounted on
six stainless steel casters with 8" diameter wheels. The four
end casters are all swivel type, two of which (at the control
panel end) are equipped with brakes. The two center casters
are rigid. Two vertical pull handles are also mounted at the
control panel end. The cold compartment is fitted with a
bottom drain for ease of cleaning.
Available options include a tow hitch assembly for linking
carts together and/or a mechanical towing system; and a
drop-down table mounted on one end.

SERIES STH FOR INDIVIDUALLY PLATED MEALS
Piper's Servotherm Series STH Carts provide re-heating
and/or rtemperature maintenance and are for use with
either a cook-to-inventory production operation or a
traditional hot line. The compact base allows for more
comfortable storage in cramped pantry areas. The design
provides two heated compartments on a narrow platform
with four swivel wheels. Handles are provided at both
ends. Both doors can be simultaneously held open at 270
degrees.
DESCRIPTION
Series STH Carts are available in four different capacities:
16, 20, 24 or 32 meals. Each model has two heated
compartments. Thermo-contact type heater shelves are
provided in each compartment. Each thermo-contact heater
shelf accommodates one patient meal. The meals can be
plated on any commercially available china plates or on high-
temperature plastic containers.
Series STH Carts employ a proven thermo-contact technology.
With this technology heat is transferred directly to the food
in order to ensure top quality results. The thermo-contact
shelves are fabricated of cast aluminum, with a separate
heating element embedded in each. They are controlled by a
programmable electronic control system. This design provides
high quality reheating which results in the preservation of
all nutritional qualities without overcooking or drying out. In
addition, the aluminum shelves help to retain the heat for
several hours after the heating cycle is completed.
The electronic control system provides superior control of the
heating process. It is designed for ease and flexibility of use
and includes password protection. Programmable settings
include adjustment of time settings, selection of program
mode (manual or automatic start) and re-heating time
parameters. It also provides a variety of diagnostic tests to
verify proper operation of the system. As an option it can also
be equipped with a printer to record the shelf temperature,
date and time.

stainless steel. The base is fitted with a full non-marking
rubber bumper and is mounted on four stainless steel casters
with 8" diameter wheels. The casters are all swivel type and
two are equipped with brakes.
The balance of the cabinet’s exterior, as well as the interior
of the heated compartments, is constructed of 18 gauge
stainless steel. A total of 16, 20, 24 or 32 thermo-contact
shelves are mounted in the two separate sections. Silicone
joints are provided on all of the shelf heating elements.
The doors swing open 270 degrees and are lockable in the
open position. Available options include linkage with other
units, a mechanical towing system, attachments for a guided
transport system and a drop-down table mounted on one end
of the cart.

Piper's Model MTRS Rethermalization Cabinet
incorporates a powerful convection type heating system
for fast and efficient rethermalization of refrigerated food.
A sophisticated solid state control system offers easy
setting of six programs, along with accurate temperature
control and precise repeatability.
CONSTRUCTION
The body is constructed of fully welded 18 ga. stainless
steel on both interior and exterior. It is mounted on a
rust resistant steel base designed for rigidity and impact
resistance. The base is mounted on 6” casters and
provided with corner bumpers on Model MTRS 20 only. 6”
high stainless steel adjustable legs are optional in place
of casters and bumpers. The cabinet is fully insulated
with 2” minimum thickness high density insulation. The
entire cabinet is easily cleaned and the inside can be
pressure washed (up to 114 psi). The cabinet is designed
with all electrical, electronic and air moving equipment
mounted in the top for easy maintenance. Removal of the
top lid enables access to all components.
The cabinet is available in two configurations: (1) Fully
self-contained with integral guides; or (2) Modular with
removable insert rack.
SELF-CONTAINED WITH INTEgRAL gUIDES
The cabinet is equipped with angle slides for pans. The
slides are made of 16 ga. stainless steel and are welded
to the interior cabinet walls. The cabinet is sized to hold
either (2) 12" x 20” x 2-1/2", deep pans per level or (1) 18"
x 26" sheet pan per level. Two sizes are available: Model
MTRS-20 with ten levels or Model MTRS-10 with five
levels (see chart below).
MODULAR WITH REMOVABLE INSERT RACK
The Model MTRS-72-6 cabinet is open, without guides, so as
to accommodate one removable insert rack. One insert rack is
provided with each cabinet. The insert rack is all welded with
(4) 2" dia. heavy duty heat resistant rigid casters. The frame is
.105 stainless steel; the guides are 16 ga. stainless steel. The
insert rack is sized to hold a total of (72) compartmented hot
food trays. A latch is provided to keep the insert rack in place
within the cabinet. A self storing latching ramp is provided to
allow easy transfer of the insert rack to a separate transport
cart. Additional transport and storage carts are available as
part of this modular system (see chart below). Selection of
hot food tray (not included with system) needs to be specified
to verify fit.
DOOR
The double pan door is constructed of fully welded 18 ga
stainless steel, insulated with 1-1/2" thick high density
insulation and fitted with a replaceable high temperature
silicone gasket. It is mounted on heavy duty hinges that
provide 270º rotation, with door stops provided to hold it
in the fully open position. A heavy duty edge mounted door
latch is provided, with provision for padlocking available.
HEATINg SYSTEM & CONTROLS
Models MTRS-20 and MTRS-72-6 are heated by a 15 KW
heater combined with a high capacity convection fan and
electronically controlled through a temperature range of 200ºF
to 350ºF. The model MTRS-10 cabinet is heated by a 9 KW
heater. See chart below for available electrical configurations.
All controls are mounted on the front of the cabinet, left
of center, and are protected against tampering or damage.
Programming functions can be restricted. Touch-pad type
buttons offer easy programming for various meals, with
the capacity to store six programs in memory. The operator
needs only to select the program in order to start the cycle.
The controller is programmed (standard) to rapidly heat the
cabinet, then maintain the set-point temperature within
2ºF. Its functions also include a pulsing mode and a holding
mode, each of which can be programmed by the user.
PC CONNECTION (OPTIONAL)
The connection can be used with a PC running Windows
95/98 or NT. A complete operation, programming and data
download can be done from the PC for up to 32 cabinets.

MANUAL MODE
The unit operates as described above.
AUTOMATIC MODE
The unit is controlled by both the food temperature and
the air temperature probe. The food temperature probe
can be set for retherm temperatures between 140ºF and
185ºF.
INTEgRAL PRINTER
Will start printing at the beginning of a retherm cycle
and will print the selected probe temperature (either air
probe or food probe every five minutes). The controller
can also be set to activate the printer for a particular
meal.
ADDITIONAL FEATURES:

AIR CURTAIN TYPE, MOBILE OR STATIONARY
The model ACR-15 refrigerated cabinet offers refrigerated
storage and service for a variety of foods. The fully self-
contained refrigeration system provides a cold air curtain which
allows for extended operation with the front door open, while
maintaining food temperature and safety. Bulk foods, in pans
or on trays, are conveniently stored on the provided removable
tray slides.
FRAME
The frame is constructed of stainless steel, fully welded for
rigidity and for proper support of the components. The base is
formed to provide a rigid mounting surface for the casters.
LINER
The cabinet liner is constructed of stainless steel, welded
together and sealed to prevent leakage. It is fitted at the bottom
with a drain, leading to an electric condensate evaporator
mounted in the refrigeration compartment. The liner is mounted
to the frame, with breaker strips where needed to avoid
condensation.
EXTERIOR
The exterior is constructed of all welded stainless steel.
Stainless steel ventilation louvers are mounted on all four sides
of the refrigeration compartment. The front louver is removable
for service. The cabinet is fully insulated. Stainless steel grip
handles are mounted on the rear of the cabinet.
DOOR
The front door is double panel, constructed of all welded
stainless steel and fully insulated. It is mounted to the cabinet
with heavy duty stainless steel hinges which allow the door to
swing 270º. The standard door hinge is on the right. The door
has a full perimeter gasket and a heavy duty pull handle. A
heavy duty edge mounted door latch is provided with provisions
for padlocking available.
TRAY SLIDES
The provided fifteen pairs of tray slides are mounted on two lift-off
frames, one for each side. The frames may be easily removed for
cleaning. The slides are mounted on 3" centers and incorporate a
no-tip feature. The capacity is (15) 18" x 26" sheet pans; or (30) 14" x
18" trays; or (30) 12" x 20" 2-1/2" food pans.
REFRIgERATION SYSTEM
Re-circulating air is chilled as it passes through an evaporator/
blower unit. The air then passes through ductwork designed to
ensure full coverage of the food and to provide the efficient front air
curtain. Cooling of the air is provided by a 3/4 H.P., 208 volt, single
phase, fan cooled hermetic condensing unit mounted at the bottom
of the cabinet. A hot gas defrost system, including a condensate
evaporator, is included. A microprocessor control monitors the
entire system. It includes an LED display which is mounted on
the front of the unit along with a lighted main power switch. Total
amperage, including the condensate evaporator, is 8.0 Amps. The
5' long supply cord is fitted with a NEMA 6-15P plug. The cord exits
from the rear of the cabinet and a cord hook is provided. The coolant
is environmentally safe type R-404A.
CASTERS
The unit is mounted on four 5" diameter, heavy duty, double ball
bearing swivel casters. Includes a set of 4 corner bumpers.

The Piper Dome Storage Carts are a practical way to store
and dry plastic, plastic single wall and most insulated
style domes. The molded underbases can be stored in the
same fashion.
The storage carts have individual racks to hold dome
covers and underbases between warewashing, storage

CONSTRUCTION
Frame to be 1.5" square stainless steel tubing. The bottom
shelf frame will have four 1.5" square tube members and
one 1.5" angle to provide tow strength integrity. The top and
bottom shelf to be constructed of 14 gauge #304 stainless
steel and to be welded to all frame members.
Cart to have 1" diameter stainless steel handle welded directly
to frame. Cart to have four 6" diameter polyurethane casters,
two rigid and two swivel.
