STEP 1
Insert Lid Vent Bold (2) through the Lid
Vent (I) and the Top Lid (A). Thread the
Lid Vent Lock Nut (5) onto the Lid Vent
Bolt (2). Tighten with a screwdriver and
adjustable wrench. Place Temperature
Gauge (T) into the Top Lid (A) and use the
preassembled hardware to secure it into
the Top Lid.
STEP 2
Insert the Handle Bolts (4) through the
Metal Washers (8), Top Lid (A), and Fiber
Washers (10). Then thread the Handle
Bolts (4) into the Handle (M) and ghten
with a screwdriver.
Repeat this process to aach the Handle
(M) to the Boom Bowl (B).

STEP 3
Insert Bolts (1) through the Large Metal
Washers (9), Boom Bowl (B), Leg Bowls
(L) and thread into the Staonary Legs
(G). Repeat this process to aach the
Wheel Legs (H) to the Boom Bowl (B).
STEP 4
Align the leg holes with the ends of the
Wire Shelf (K). Slide the longer threaded
ends of the Wire Shelf through the holes
in the Wheel Legs (H). Slide the Plasc
Washers (11) and Wheels (J) over the
ends of the Wire Shelf. Thread Wheel
Lock Nuts (7) onto the Wire Shelf ends
and parally ghten. Slide the shorter
Wire Shelf ends through the holes in the
Staonary Legs (G) and Plasc Washers
(11). Then thread Wheel Lock Nuts (7)
onto the Wire Shelf ends. Check align-
ment of legs, nong that the holes on the
Staonary Legs for the Condiment Rack
should face inward, and securely ghten
the Wheel Lock Nuts (7) with an adjust-
able wrench.

STEP 5
To aach the Upper Right Hinge (N) and
Upper Le Hinge (O), insert the Hinge
Bolts (3) through the Metal Washers (8),
Upper Hinge, Top Lid (A) and Fiber
Washers (10). Thread the Wing Nuts
(14) onto the Hinge Bolts. To aach the
Lower Right Hinge (Q) and Lower Le
Hinge (P), insert the Hinge Bolts (3)
through the Metal Washers (8), Lower
Hinge, Boom Bowl (B) and Fiber
Washers (10). Thread the Hinge Nuts
(6) onto the Hinge Bolts.
Note: hinges should point straight back
when assembled correctly.
STEP 6
Align holes in the Upper and Lower
Hinges by placing the Top Lid (A) on top
of the Boom Bowl (B). Note that the
Upper Hinges should t inside of the
Lower Hinges. Insert Hinge Pins (12)
through aligned holes in both hinges.
Insert Coer Pins (13) through holes at
the end of each Hinge Pin.

STEP 7
To assemble the Ash Catcher (F), insert 2 Handle Bolts (4) through 2 Metal Washers (8),
Ash Catcher (F), 2 Fiber Washers (10) and thread into the Ash Catcher Handle (S). Slide the
assembled Ash Catcher into the slots on the right side of the Boom Bowl (B). Aach
Warming Rack (E) to the Top Lid (A) and Boom Bowl (B) by inserng the ends at the back
of the Warming Rack into the holes on each side of the Top Lid (A) and the wire handles at
the front boom of the Warming Rack into the holes on each side of the Boom Bowl (B).
Place the Charcoal Grate (D) in the boom of the Boom Bowl (B) and place the Cooking
Grid (C) on the support edge of the Boom Bowl (B). Aach the Condiment Basket (R) to
the Staonary Legs (G) by inserng the wire handles of the basket into the interior holes
on each Staonary Leg.

CARE & MAINTENANCE
• Wash cooking grids and charcoal grates with hot, soapy water. Rinse well and dry complete-
ly with a towel. NEVER allow grates to drip dry, or dry in a dishwasher, as rusng may occur.
• Aer washing and drying, lightly coat grates and grids with vegetable oil or vegetable oil spray.
• Clean the inside and outside of the grill by wiping it with a damp cloth. Apply a light coat of
vegetable oil or vegetable oil spray to the interior surfaces to prevent rusng.
• If rust appears on the outside of your grill, clean and bu the aected area with steel wool
or a ne grit emery cloth. Touch up spots with a good quality high-temperature, rust-resis-
tant paint.
• NEVER APPLY PAINT TO THE INTERIOR SURFACE. Doing so could cause a re resulng in
serious bodily harm or property damage.
• If rust appears on the interior surface of you grill, clean and bu the aected area with steel
wool or a ne-grit emery cloth. Coat the interior lightly with vegetable oil or vegetable oil spray.
OPERATING INSTRUCTIONS
Only use high grade charcoal briquees, lump charcoal, cooking wood or charcoal/wood
mixtures.
Wood chips and wood chunks may be used for a more robust avor. Wood chips are avail-
able in a variety of avors.
• Please make sure all labels, packaging and protecve lms have been removed from the
charcoal grill.
• Remove manufacturing oils before cooking on this charcoal grill for the rst me. Do this by
operang the charcoal grill for at least 15 minutes with the lid closed, prior to adding food.
This will “heat clean” the internal parts and dissipate odors.

LIGHTING INSTRUCTIONS
• Stack charcoal briquees or wood into a pyramid-shaped pile on top of the charcoal grate.
We recommend using 2 lb (1 kg) (approximately 30 briquees) to start your re, adding
more as needed.
• If using starter uid, saturate the charcoal briquees with starter uid and let it soak in for
approximately 5 minutes. If using a chimney starter, electric starter, or other type of re
starter, light your re according to the manufacturer’s instrucons.
• Aer allowing the starter uid to properly soak in, light the pile of briquees in several
locaons to ensure an even burn. ALWAYS light the re with the grill lid open. Leave lid open
unl briquees are fully lit. Failure to do so could trap fumes from charcoal starter uid in
grill and may result in a ash re when lid is opened.
• Never add charcoal starter uid to hot or warm coals as ashbacks may occur causing injury.
• You are ready to begin cooking when the pile of briquees ashes over and produces a red
glow (approximately 12 to 15 minutes).
• Depending on your cooking method, either leave the briquees in a pile or spread evenly
across the charcoal grate using a long handle tool. ALWAYS use cauon when handling hot
coals.
DIRECT GRILLING
Grilling directly over hot coals is ideal for searing in juices and grilling food requiring less than
25 minutes of grilling me, such as steaks, hamburgers, hot dogs, chicken parts, vegetables
and fruit.
• Open lid and remove cooking grid.
• Load and light charcoal per “Lighng Instrucons” secon. Leave lid open.
• While wearing hand protecon, carefully spread hot coals evenly across charcoal grid with a
long handle tool.
• While wearing hand protecon, replace the cooking grid, close the lid and allow the char-
coal grill to preheat.
• While wearing hand protecon, open the lid and place food onto cooking grids above the hot
coals with a long handle tool.
• With lid open or closed, cook unl desired internal food temperatures are achieved.
• NOTE: If addional briquees are needed, remove food from cooking grid and while wearing
hand protecon remove the cooking grid and place addional briquees without disturbing
the hot coals. Carefully replace the cooking grid and food.
• Allow charcoal to burn out by closing lid and all vents.

INDIRECT GRILLING
Not cooking directly over hot coals is ideal for slow cooking and grilling foods requiring more
than 25 minutes such as most roasts, loins, chops, whole chickens, turkey, sh and baked goods.
• Open lid and remove cooking grid.
• Load and light charcoal per “Lighng Instrucons” secon. Leave lid open.
• While wearing hand protecon, carefully spread hot coals to the outside of charcoal grid
with a long handle tool.
• While wearing hand protecon, replace cooking grid, close lid and allow charcoal grill to
preheat.
• While wearing hand protecon open the lid. Use a long-handled tool to place the food onto
the cooking grids above the area without hot coals.
• With lid closed, cook unl desired internal food temperatures are achieved.
• NOTE: If addional briquees are needed, remove food from cooking grid, and while wearing
hand protecon, remove the cooking grid and place addional briquees without disturbing
the hot coals. Carefully replace the cooking grid and food.
• Allow charcoal to burn out by closing lid and all vents.

Flare-ups are a part of cooking meats on a charcoal grill and adds to the unique avor of
grilling.
Excessive are-ups can over cook your food and cause a dangerous situaon for you and
your charcoal grill. Excessive are-ups are result from the build-up of grease in the boom of
your charcoal grill.
If grease re occurs, close the lid unl the grease burns out. Use cauon when opening the lid as
sudden are-ups may occur.
If excessive are-ups occur, DO NOT pour water onto the ames.
• Trim excess fat from meats prior to cooking.
• Cook high fat content meats indirectly.
• Ensure that your charcoal grill is on a hard, level, non-combusble surface.

Cleaning & care
• To reduce are-ups, keep the charcoal grill clean, use lean cuts of meat (or trim fat) and
avoid cooking at very high temperatures.
• Place delicate foods like sh and vegetables in aluminum foil pouches and indirect-grill or
place on upper cooking levels (warming rack), if available.
• To avoid losing natural juices, use long-handled tongs or spatulas instead of forks and turn
foods over just once during cooking.
• When indirect-grilling roasts and larger cuts of meat, place meat onto a roasng rack inside
a heavy gauge metal pan.
• Try water pans to reduce are-ups and cook juicier meats. Before starng coals remove cook-
ing grids and place a heavy duty shallow pan directly on charcoal grid. Fill half way with water,
fruit juices or other avored liquids. Place coals around grid per “Lighng Instrucons”, replace
cooking grids and posion food over the loaded pan.
• Enhance food avors by using wood chips in smoker boxes or aluminum foil pouches. Follow
the wood manufacturer’s instrucons.
• Rosseries, charcoal grill baskets, vercal poultry holders and other accessories can enhance
your experiences, reduce cooking mes and aid in clean-up.
• Clean cooking grids and racks aer every use with a quality charcoal grill brush designed for your
grid material. Wear protecve hand gear and gently remove the build-up while grids are hot.
• Allow charcoal grill to fully cool aer every use. Then protect clean cooking grids with a light
coat of vegetable oil or vegetable spray, clean out all ashes, wipe outside surfaces with a
suitable kitchen cleaner and protect surfaces with a quality cover that properly ts your grill.
CLEANING & CARE
CAUTION!
All cleaning and maintenance should be done when charcoal grill is cool and with the fuel
supply removed.
NOTICES
• Abrasive cleaners will damage this product.
• Never use oven cleaner to clean any part of this charcoal grill.
• Wipe surfaces clean with mild dish-washing detergent or baking soda.
• For stubborn surfaces use a citrus-based degreaser and a nylon scrubbing brush.
• Rinse clean with water and dry immediately.

• Keep charcoal grill covered when not in use to help prevent rust.
• Applying a light coat of vegetable oil or vegetable spray to the interior surfaces of the charcoal
grill can help prevent rust. DO NOT coat charcoal grate or boom of bowl.
