COOKING EQUIPMENT
QUICK GUIDE TO INSTALLATION
Here are a few tips on installing and maintaining your cooking equipment. More in-depth installation and
operation techniques are provided in product’s owners manuals.
1) Installation of commercial cooking equipment should be done by qualified installation and service personnel
only.
2) Examine delivered product to ensure that all components are there, and no damage is noticed.
3) Install on a level floor.
4) Install underneath a proper ventilation hood system. Commercial ovens and ranges require a Type I hood.
5) Ensure clearance requirements are met. Required space should be located on product page, operations
manual, or spec sheet.
aConvection Ovens: Minimum clearances from combustible construction are 1” on sides, 3” rear,
and 8” above the floor.
bRanges: Minimum clearances from combustible construction are 12” on sides, 10” rear, with 40”
front clearance.
6) Be sure your kitchen has the proper electrical connections necessary. Check the voltage and plug type for your
unit. A 5-15P plug goes into a 15-amp outlet, a 5-20P plug goes into a 20-amp outlet & a L-14-20P plug
(230/115 V) needs an electrician to hardwire the outlet to accept this plug type. These units should be plugged
directly into their own, dedicated outlet.
7) When installing a gas model, be sure your kitchen has the proper gas lines and connections. The gas supply line
must be the same size or greater than the oven inlet line.
8) Attach adjustable legs or movable casters before putting oven or range upright and connecting lines.
9) Before any food preparation, wash thoroughly to remove any residue, dust, or debris then rinse out and wipe
dry. Also wash any accessories before use.
10) Don’t forget daily, weekly, and monthly maintenance will greatly prolong the life of your unit!
