EXHAUSTCANOPY
Openhearthbroilersinherentlycreateagood
dealofheatandsmokeandshouldbeinstalled
underanefficientexhausthoodwithflameproof
filters.Averticaldistanceofnotlessthan48"shall
beprovidedbetweenthetopoftheapplianceand
filtersoranyothercombustiblematerial. Exhaust
installationmustconformtolocalcodes.
AIRSUPPLY
Provisionsforadequateairsupplymustbe
provided.

GASPIPING
Gaspipingshallbeofsuchsizeandsoinstalledasto
provideasupplyofgassufficienttomeetthefull
gasinputoftheappliance.Iftheapplianceistobe
connectedtoexistingpiping,itshallbecheckedto
determineifithasadequatecapacity.Joint
compoundshallbeusedsparinglyandonlyonthe
malethreadsofthepipejoints.Suchcompounds
shallberesistanttotheactionofL.P.gases.
WARNING:Anyloosedirtormetalparticleswhich
areallowedtoenterthegaslinesonthisappliance
willdamagethevalveandaffectitsoperation.
Wheninstallingthisappliance,allpipeandfittings
mustbefreefromallinternalloosedirt.
GASPRESSUREREGULATOR
Aconvertiblepressureregulatorisprovidedwith
eachcharbroiler.Itshouldbeconnectedtotheinlet
pipeattherearoftheunit.Thegassupplyisthen
connectedtoit.Itisshippedsetfor6"water
columnmanifoldpressureforusewithnaturalgas.
Allow6"clearancefrombackofunittowallfor
servicingandinstallation.
MANUALSHUTOFFVALVE
Amanualshutoffvalveshouldbeinstalled
upstreamfromthemanifoldandwithinsixfeetof
thecharbroiler.
PROPANEGAS
Thischarbroilerisequippedwithfixedorifice
hoodsandisshippedfromthefactoryforusewith
naturalgas.Toconverttopropanegas,installthe
burnerorificehoods,locatedinthegreasedrawer,
asfollows:
1. Removegrill,radiantsandburners.
2. Removetheburnerorificehoodsandinstall
theorificehoodssupplied.
3. Replacetheburners,radiants,andgrill.
4. Setmanifoldpressureto(10)inchwatercolumn.
A1/8"pipeplugontheburnermanifoldcanbe
removedforattachingapressuregauge.
Removetheslotted,orhex-threadedplugfrom
thepressureregulator. Inverttheplugand
re-install. Theletters"LP"shouldnowbevisible
ontheplug. Theregulatorisnowsetfor10"
(25.4cm)watercolumn.Attachtheconversion
label,suppliedwiththeunit,closetothe
nameplate.
CHECKINGFORGASLEAKS
Checkentirepipingsystemforleaks.Soapand
watersolutionorothermaterialacceptableforthe
purpose,shallbeusedinlocatinggasleakage.
CAUTION
Matches,candleflameorothersourcesof
ignitionshallnotbeusedforthispurpose.
PILOTLIGHTINGINSTRUCTIONS
Thecharbroilerisequippedwithstandingpilots, and
shouldbelitimmediatelyafterthegasisturnedon.
1. Turnoffmainvalvetounit.
2. Turnoffallknobsandpilotvalvesandwait5
minutestocleargas.
3. Thepilotlightsonthisbroilerhavebeenturned
offatthefactory.Turntheadjustablescrew3-4
timescounterclockwisetoopen.
4. Turnonmainvalveandlightallpilots.
5. Adjustpilotlightflamesassmallaspossible,but
highenoughtolightburnerimmediatelywhen
burnervalveisturnedonhigh.
6. Turnburnerknobstodesiredsetting.
7. Toturnburnersoff,turnknobsoff.
CONNECTINGGASSUPPLYLINE
Thegasinletofthecharbroilerissealedatthe
factorytoprevententryofdirt.Donotremovethis
sealuntiltheactualconnectionismadetothegas
supplyline.

radiantsaboveeachburner.Installeachradianton
3pinsoftherearwallandon1pinofthefrontwall
ofthelinerweldassembly.Refertotheexploded
viewinthismanualfororientationoftheradiants.
BURNERIGNITIONANDADJUSTMENT
1. Toigniteburnersturnburnervalveknobto"HI"
position.
2. Slowlydecreaseopeningsofairshuttersto
giveasoftblueflamehavingluminoustips,
thenslowlyincreaseopeningstoapointwhere
theyellowtipsdisappearandahardblueflame
isobtained.
BURNEROPERATION
Eachburneriscontrolledbyanindividualhigh-low,
on-offvalve.Aninfinitenumberofbroiling
temperaturesmaybeobtainedbyturningthe
burnervalveknobtoanypositionbetweenhighand
low. Itispossiblethroughthisarrangementtohave
ahighheatorsearingsection,whilehavingalow
heatfinishingorholdingsection.Forthesearing
operation,setthevalvesforthesectionata
positionof"HI"orclosetoit.Forholdingor
finishing,setthevalvesclosertothe"LOW"
positiononthedial.Youselecttheheatpatternyou
like,andsetthevalvesaccordingly.
OPERATINGINSTRUCTIONS
WATERPAN
Thewaterpanislocatedatthebottomoftheunit,
andiseasilyremovedfromthefrontoftheunit.
Watershouldbeaddedtothewaterpanand
replacedasnecessary.Thewaterpanhelpsprevent
flareupsandcatchesgrease.
LIGHTING
Whenbroilerisfirstlit,itwillsmokefor
approximately20-30minutesuntilthepreservation
oilsandimpuritiesareburnedoff.
BROILING
Turnvalvesonandpre-heatuniton"HI"before
attemptingtobroil.Youwillhavetoexperiment
withthegrillsettingsandthevalvesettingsforyour
particularfoodproducts.Werecommendthatyou
setthegrateatthefulltiltpositiontostart.This
positionallowsthegreasetorundownthegrate
intothegreasetray,reducingflareups.Check
waterpansfrequentlyandaddasufficientamount
ofwaterwhennecessary.Hotwatervaporsrising
fromthewaterpansandthroughthecombustion
chamberhelpsreduceflareups.Exercisecare
whenusingyourbroiler.
TILTINGTHEGRATE
Raiseorlowerthegratetothenextstepbylifting
thegrateatthebackofthecharbroilerwherethe
graterests.Usepotholdersorglovestoreposition.

detergentandacloth.Anon-abrasivecleanercan
beusedoncakedareas.
