Débrancher toujours le four et le laisser refroidir avant toute ma-
nipulaon
La grille, la lèchefrites et la broche peuvent être ne6oyées au
lave-vaisselle.
Ne6oyer la porte avec de l’eau chaude et un peu de liquide vais-
selle.
Pour ne6oyer la pare inférieur du four, soulever légèrement la
résistance basse.
Pour les fours équipés de parois autone6oyantes ne pas gra6er
avec des objets tranchants et ne pas uliser de produits déter-
gents.
Les parois autone6oyantes sont recouvertes d’un émail poreux
ayant pour foncon d’absorber les graisses.
Les quelques projecons de parcules graisseuses sur les tubes
quartz sont normalement volalisées. Si toutefois quelques salis-
sures devaient persister, les ne6oyer avec un tampon ouaté im-
bibé d’alcool, après refroidissement complet du four.
Précauons
Afin d’éviter les projecons et les fumées, nous vous conseillons
de me6re un peu d’eau dans la lèchefrite.
La porte de votre four peut être chaude, il faut donc uliser la
poignée de porte pour ouvrir votre four et le tenir hors de portée
des enfants.
Si votre four est équipé de parois autone6oyantes, voici
quelques recommandaons vous perme6ant d’accroître leur lon-
gévité :
Après une cuisson grasse, laisser chauffer l’appareil à vide
pendant environ 15 mn en posion quartz venlé avec la porte
ouverte. Et thermostat maximum.
En cas d’éclaboussures importantes, essuyer les parois
avec une éponge humide après refroidissement du four.
Afin d’évacuer rapidement les condensas de cuisson, laisser tou-
jours refroidir le four avec la porte ouverte.

You have just purchased a Turbo Quartz oven. Caterers and grill-
room/cook-shop proprietors have known about the infrared quartz
technology for more than 30 years now. This technology allows
odour-free, smoke-free cooking of fish, poultry, steaks, gratins,
pastries, etc., just like wood charcoal.
For the first time ever, this technology has been used with con-
vection. The air is heated by a standalone heating element and
pulsed in by means of a fan; it is then uniformly distributed,
thereby allowing homogenous cooking of one or two dishes as
well as quick, thorough defrosting of frozen dishes and pizzas.
Infrared Quartz Cooking
The heat is transmitted to the food by means of rays from the
quartz tubes, which reach a temperature of 1,050° C, and emit
rays the same wave length as charcoal.
This technology makes it possible to go as high as 250° C in less
than 5 minutes, thereby eliminating all preheating and considera-
bly reducing power consumption.
This method of cooking maintains the nutritional qualities of
foods, as well as the taste, without any reduction in weight.
Convection Cooking
This technology is used in professional restaurant equipment. It
allows homogenous cooking through efficient distribution of the
heat in the oven. Several dishes can be cooked at the same time,
even if they are of different types, without the taste and smell go-
ing from one to the other.
It can also be used to gently defrost using warm air mixing.
The continuous hot-air flow around food makes it possible to ob-
tain quicker, uniform cooking at a lower temperature than in a
conventional oven. In addition, the low temperature maintains
the natural flavour and appearance of food without generating any
smoke.

Convection
The heat comes from the rear heating element built in to the venti-
lation system. It is completely distributed throughout the oven
and has finely tuned thermostat settings. The air is constantly re-
newed, so that it does not stagnate in the oven. Therefore, it does
not give off any odours. This setting is used to cook two different
dishes at the same time, and is also ideal for keeping dishes warm,
heating up leftovers or other dishes, or gently defrosting.
Ventilated pastry oven
On this setting, the bottom heating element works at full capacity
on a continuous basis; it is not thermostat-regulated.
This is the ideal setting for cooking savoury or sweet tarts and
pies or bread, or to start off cooking cakes that need to rise. You
can use the quartz tubes at the end of cooking, using the thermo-
stat regulation, to brown, glaze or crystallize or crisp. The venti-
lation allows better distribution of temperature as well as higher
accuracy of regulation.
Turbo Quartz
In this setting, the bottom and the quartz tubes function simultane-
ously and are thermostat-regulated. Your oven works exactly like
a conventional oven. Food is cooked from the bottom, by the bot-
tom heating element, and browned or grilled from the top, by the
quartz tubes. Ventilation provides better distribution of tempera-
ture as well as higher accuracy of regulation.
Quartz Grill
The quartz tubes are thermostat-regulated and the fan uniformly
distributes the heat.
Radiation cooking is in a cold environment. The extra-high tem-
perature of the tubes requires cooking in open air. It is therefore
advisable to leave the door half-open when roasting, grilling or
cooking au gratin. To grill, food should be placed as near as pos-
sible to the quartz tubes at maximum power (thermostat setting
10). You can use the roasting jack to roast all sorts of poultry.

Enamelled dripping pan
The dripping pan is placed on the grill to catch grease that meat
renders.
When using the grill quartz setting, it is advisable to put a little
water in the dripping pan.
Grill
The grill is reversible and can therefore be used to obtain four
different cooking heights.
Roasting jack
The roasting jack lets you cook delicious roast chickens, just
like over a wood charcoal fire, without any smoke.
Interior lighting
A lamp on the interior of the oven lights up as soon as the oven
is switched on and lets you monitor the food you are cooking.
The dimensions of your oven let you use pie dishes up to 30 cm
in diameter, as well as 40 cm rectangular dishes, or 2 kg chick-
ens.
Options

lamb or mutton marinated in onions and served shish kebab-

Your oven’s accessories

WARNING: the temperatures for the thermostat settings differ
depending on the method of cooking used.
The Turbo Quartz setting can go as high as 275° C.
