Heating Elements
• Use only ry pothol ers. If moist or amp pothol ers are use , steam
from pothol ers coul cause a steam burn. DO NOT let pothol ers
touch hot heating elements locate un er the rawer. DO NOT use a
towel or bulky cloths in place of pothol ers.
• Use care when opening the rawer. Let hot air or steam escape (open
vent) before removing or replacing foo .
•DO NOT place foo in unopene containers in the rawer. Pressure

Plast cs can melt onto the drawer f they are n d rect contact. If melted onto
the drawer, they can be very d ff cult to remove.
CAUTION
DO NOT use any clean ng agent w th chlor ne or chlor ne compounds on
sta nless steel f n sh. Chlor ne and chlor ne compounds are corros ve to
sta nless steel.
CAUTION
All spec al ordered brass parts are coated w th an epoxy coat ng. DO NOT
use brass cleaners or abras ve cleaners on any brass parts. All brass body
parts should be w ped regularly w th hot soapy water. When hot soapy
water w ll not do the job, use every day household cleaners that are not
abras ve.

Before Using Drawer
All pro ucts are wipe clean with solvents at the factory to remove
any visible signs of irt, oil, an grease which may have remaine from
the manufacturing process. Before using, clean the rawer thoroughly
with hot, soapy water. There may be some burn off an o ors on first
use of the appliance—this is normal.

Operation
Your warming rawer works in two ways:
1. Seals moisture within the rawer to keep foo moist.
2. Allows moisture to escape an keep foo crisp.
The purpose of the warming rawer is to keep hot, cooke foo s at
serving temperature. Always start with hot foo ; col foo cannot be
heate in the warming rawer.
Warming Element
Turn the control knob clockwise to the esire setting. The element
will cycle on an off to maintain the esire heat setting. When
finishe turn the control to “OFF.”
Note: The majority of foods are held at a medium setting to maintain
a serving temperature.
To use Moist Heat unction (VEWD models only)
1. Place low racks in warming rawer.
2. Fill the moisture cup with 1/2 cup water an place the cup in the
rear center opening of the low rack.
3. Place the foo or cookware with
foo irectly on the rack.
4. Turn the control knob to the esire
heat setting an close the rawer.
5. Sli e the moisture control to the
right to close the vents which seals
in the heat.

The rawer in icator light is locate on the front panel of the rawer.
The rawer in icator light will glow re when the rawer element is
heate . The light will cycle on an off as the temperature is maintaine .
Optional Accessories or Moist or Dry Heat

Temperature Control Settings
The knob is use to select the temperature of the
rawer an is locate on the right si e of the
control panel. The “1” setting represents low, “2”
represents me ium, an “3” represents high. The
majority of foo s are hel at a me ium setting to
maintain a serving temperature. However, your own
preference may be for hotter foo s.
To keep several types of foo hot for serving, key the temperature
setting for the meat. For example, to hol rare roast beef, select a
lower setting, cover the other foo s that otherwise woul be kept at a
higher setting.
Repeate opening of the rawer allows the hot air to escape an the
foo to cool. The rawer shoul not be opene unless a ing or
removing foo .
Proo ing
Yeast ough can be proofe in the warming rawer. Place the ough
in a bowl. Place the bowl on the low rack in the rawer. Fill the
moisture cup half full with water an place in the opening in the rear
center of the low rack. Turn the temperature control to the lowest
setting to facilitate the fermentation time. A towel shoul be place
over the ough to minimize surface rying. The ough shoul remain
in the warming rawer until it has ouble in size an a slight
epression remains when the surface is touche gently with a finger.
Warming Plates
To warm serving bowls an plates, place temperature control on a low
setting. Place the empty ishes on the low rack to raise them off the
bottom of the rawer. If you want hotter ishes or want to heat fine
china, please check with the manufacturer of the ishes for their
maximum heat tolerance.
Power “ON” Light
The power “ON” light is locate above the temperature control knob
on Professional mo els an below the temperature control knob on
Designer mo els. It turns on when the control knob is set an cycles
on an off with the heating element as temperature is maintaine .
Moisture Selector Control (VEWD models only)
The moisture selector control is locate at the top of the warming
rawer. To keep foo s moist, move the han le to the right. This closes
the vents an seals the moisture insi e the rawer. For crisp foo s,
move the han le to the left. This opens the vents an allows the
moisture to escape. The moisture selector can be place in any
position between “-” (open for less moisture) an “+” (close to retain
moisture) to maintain any egree of moisture.
In the close position, the rawer is completely seale which keeps
the hot foo s moist an soft. In this setting, con ensation may be
notice aroun the insi e e ge of the rawer. If the rawer is not full,
there may be some rying on the surface of the foo . If this happens,
simply cover the foo with a li or aluminum foil.
When in the open position, the rawer is vente , which lets moisture
escape. This ry heat keeps the foo s exterior ry an crisp. With the
vents open, it is normal for moisture to collect on surfaces above the
warming rawer. Simply wipe up the moisture with a ry cloth.

maintaine properly an kept clean. Cooking equipment is no
exception. Your warming rawer must be kept clean an maintaine
properly. Make sure all controls are in the “OFF” position.
1. Allow warming rawer to cool completely.
2. It is important to keep the sli e rails clear an free from ebris.
Perio ic cleaning of sli e rails an other a joining parts is
necessary to assure smooth rawer operation.
3. If nee e , the warming rawer pan support can be remove for
cleaning. Pull the warming rawer out until fully exten e . Sli e
finger along right an left si e rail until you reach han latches
(locate at the front of rails). Pull up on both right an left latches.
Pull rawer support completely out.
4. When installe out oors, annually inspect the silicon seal aroun
the flange of the appliance. Re-seal as nee e to assure this seam
is waterproof.
Control Knobs
MAKE SURE ALL CONTROL KNOBS POINT TO THE “OFF” POSITION
BEFORE REMOVING. Pull the knobs straight off. Wash in etergent an
warm water. Dry completely an replace by pushing firmly onto stem.
Stainless Steel Parts
All stainless steel bo y parts shoul be wipe regularly with hot soapy
water at the en of each cooling perio an with a liqui cleaner
esigne for that material when soapy water will not o the job. DO
NOT use steel wool, abrasive cloths, cleansers, or pow ers. If necessary,
scrape stainless steel to remove encruste materials, soak the area with
hot towels to loosen the material, then use a woo en or nylon spatula or
scraper. DO NOT use a metal knife, spatula, or any other metal tool to
scrape stainless steel. DO NOT permit citrus or tomato juice to remain
on stainless steel surface, as citric aci will permanently iscolor stainless
steel. Wipe up any spills imme iately.
