Thank you for purchasing this Vollrath Countertop Convection Oven. Before operating
this unit, read and familiarize yourself with the following operating and safety
instructions. SAVE THESE INSTRUCTIONS FOR FUTURE REFERENCE.

Function and Purpose:
This unit is intended to be used for cooking fresh or frozen foods in commercial
foodservice operations only. It is not intended for household use.
Before using this equipment it must be cleaned thoroughly. Clean all surfaces before
use. Failure to clean surfaces before using the unit could cause food contamination.

CONVECTION OVEN
Installing the Convection Oven:
1. Remove all packing material and tape, as well as any protective plastic from the
unit.
2. Clean any glue residue left over from the plastic or tape.
3. Place the unit in the desired position, at least 6” from any adjacent wall.
4. Plug unit into a properly grounded electrical supply matching the nameplate
rating. Damage to the unit can occur if incorrect power is supplied to unit.
Model 40702 ONLY
This model is equipped with a water spray feature. To utilize the water spray feature
the unit should be connected to a suitable potable water supply with a pressure
between 3 and 30 p.s.i.
Note: Before using the appliance, clean the interior of the oven with hot water and
soap; rinse thoroughly. Set the bake control to 550°F and heat the oven for 30
minutes to eliminate any manufacturing oils.

BURN INJURIES CAN OCCUR IF THIS EQUIPMENT IS NOT USED
PROPERLY. NEVER TOUCH HOT SURFACES. ALWAYS USE HOT PADS
OR HOLDERS UNTIL THE UNIT HAS COOLED OFF.
Using the Countertop Convection Oven:
All Models
Baking Function – Used to bake or cook
1. Place the shelves in the desired positions inside the unit. Allow a space of at
least 2” between pans for proper air circulation.
2. Set the bake control to the desired temperature setting between 140°F and
570°F.
3. Set the timer control to the desired time between 0 and 120 minutes. The fan
and oven light will operate continuously however the heating elements will switch
off at the end of the timer cycle. The timer can be set to continuous use by
turning to the “ON” position.
4. The bake pilot light will indicate when the heating elements are energized and
will start to cycle on and off with the heating elements when the set temperature
is reached.
5. Place food into the unit and monitor.

CONVECTION OVEN
Models 40701 and 40703 ONLY
Grill Function – Used to grill or brown after the food is fully cooked
1. Place the shelf in the desired location for grilling. Assure the food product is not
too close to or touching the inside top or heater.
2. Switch the bake control knob to the grill function indicated by the icon on the
bake control knob.
3. Set the grill control knob to the desired temperature.
4. The grill pilot light will indicate when the elements are energized.
Note: The fan will not operate when in the grill function.
Model 40702 ONLY
Humidity Function – Used to provide a heavier crust on bread or rolls
1. Press the green push button to activate a spray of water into the cooking
chamber.
2. The humidity function works best if activated at the beginning of the baking cycle
when the oven has reached the set cooling temperature and the product has just
been placed into the oven.
3. Humidity should only be injected in 2-second pulses.
WARNING
ELECTRICAL SHOCK HAZARD
DO NOT SPRAY OUTSIDE OF THE UNIT OR CONTROLS WITH LIQUID OR
CLEANING PRODUCT. LIQUID COULD ENTER THE ELECTRICAL
COMPARTMENT AND CAUSE A SHORT CIRCUIT OR ELECTRIC SHOCK.
Cleaning:
1. Allow unit to cool completely before cleaning.
2. Do not immerse cord, plug or unit in water or any other liquid.
3. At the end of each baking cycle clean the unit with mild soap and water; rinse
thoroughly. Caustic based cleaners are not recommend and should not be used.
4. Shelves and sheet pans should be cleaned with hot soapy water or in your
dishwasher.
Repair:
Replacement of oven light:
1. Allow unit to cool completely before servicing.
2. Disconnect the appliance from the electrical power supply
3. Unscrew the oven light glass cover and replace the lamp with the correct
specification oven light. The oven light must be rated for the high temperature
within the oven and must match the nameplate voltage.

There are no other user serviceable parts within this food processor. To avoid
serious injury or damage, never attempt to repair or replace a damaged power cord
yourself. Contact a qualified professional repair service.

Warranty Policy for The Vollrath Company L.L.C
The Vollrath Company L.L.C. warranties all products it manufactures and
distributes against defects in materials and workmanship for a period of one
year - except as listed below:
Refrigeration compressors – 5 year warranty
Intrigue & Classic Select cookware – Limited lifetime warranty
Replacement parts – 90 (ninety days) on the part only
Fry pans and coated cookware – 90 (ninety days)
All warranties cover normal use and service only and are void if the product
has been damaged by accident, neglect, improper use or other causes not
arising out of defects in material or workmanship. The Vollrath Company shall
not be liable for loss of use of the product or other incidental or consequential
costs, expenses or damage incurred by the purchaser.
Warranty work must have prior approval from The Vollrath Company L.L.C.

Company L.L.C., in accordance with the warranty policy listed above. Should
