1 - WARRANTY
Ascaso offers a 12-month warranty. This warranty does not cover any defects or
damage resulting from: accident, misuse, abuse, delivery damage, negligence,
abnormal physical, electrical or electromechanical stress, unauthorized modifications
by the client, or the use of improperly treated water (see section on Water Quality).

2 - WATER QUALITY
• In this section we want to stress the importance of water quality when it comes to
making coffee. Given that the water content of an espresso coffee is over 90%, its
quality has a huge influence on the end result and flavour of the coffee.
• The elements that have the greatest influence on water flavour are calcium
carbonate and chlorine. A high mineral content can also accelerate the build-up
of lime scale in the machine’s components, while a lack of minerals will give the
espresso an insipid taste and could even damage the boilers.
• As a general rule, the total dissolved solids in water (TDS) should be:
100-150 mg/l
• Of these solids, calcium and magnesium are the ones that indicate water hardness.
• We recommend that the water hardness falls between:
3 - 5° dH (German degrees) or
4 - 7° fH (French degrees)
• If you use ion exchange water descaling systems, these add sodium to the water
so you will need to install an active carbon filter to get rid of any impurities that may
subsequently affect the flavour of the coffee.
• The pH of the water should be as close as possible to neutral (pH = 7), as with a pH
value lower than 6.5 you might notice a touch of acidity in the espresso, while with a
pH value higher than 7.5 the espresso will start tasting insipid.
• The other element to be avoided in water used for coffee making is chlorine. This
element is highly corrosive when it comes into contact with the metal parts of the
machine and even stainless steel, and it also has a major influence on the flavour of the
espresso.
• All water treated with chlorine should be filtered through an active carbon filter pre-
installed in the coffee machine.

system and regular maintenance
are both essential for the product
warranty to remain in force and to
ensure the perfect operation of your coffee machine.

We recommend analysing the water to determine the correct filter system to in-
stall in the coffee machine, along with regular analyses to check that the machine
is working properly.

4 – GENERAL WARNINGS
• This manual includes full instructions on the installation, care and maintenance of
the coffee machine. It should be read by the installer and operator and kept in a safe
place for subsequent reference.
• Before installing the machine, check that the figures on the electric plate match
those of the power supply you will be using.
• The machine is completely safe when it is connected to an earthed power supply
that is compliant with current safety regulations. It is important to check this
requirement and, if in any doubt, ask for verification by a qualified professional. The
manufacturer cannot be held responsible for any damage caused by the wrong
earthing device.
• Do not use multiple adaptors or cable extensions.
• Check that the power of the electrical installation is sufficient for the maximum power
of the machine, which is given on the nameplate.
• Any incorrect installation or operation could damage the equipment and cause
personal injury or even death.
• The machine should only be installed by a qualified technician and must comply
with all local authority requirements and regulations.
• Before installing the machine, check that its intended location is compatible with the
size and weight of the machine.
• Do not handle the machine with wet hands or while barefoot.
• Do not install the machine close to sources of heat.
• Before carrying out any operation with the machine, make sure that the general
switch is off and the machine is not connected to any electrical power.
• The machine is designed for use in interiors. If it is installed outdoors, precautions
must be taken to protect it from damp and other atmospheric agents (rain, ice,
sand, etc.). Please consult Ascaso Factory.
• Do not allow children or anyone with disabilities to use the machine.
• To clean the machine, follow the instructions in the relevant section of this manual.
• Do not expose the machine to temperatures below 0 °C (32 °F) without having
previously emptied the water in the groups, boilers and the whole hydraulic system.

5 – INSTALLATION
• The water and steam expelled by the machine’s tubes are extremely hot and can
cause serious injury.
• Any failure to comply with the instructions and warnings given by the manufacture
may invalidate the machine’s warranty.
5.1 HYDRAULIC CONNECTION – DRAINAGE CONNECTION
• To install the machine you should make sure there is a source of water, electricity
and drainage. You should also ensure that the base on which you intend to place
the machine can withstand its weight during full operation; in other words, with the
boiler and coffee groups full of water (see each model’s weight in the technical data
section on P.9).
• The machine comes with a flexible 2-metre connection tube with 3/8” female
connections on both sides. Connect the angled end in the machine’s water inlet
coupling, positioning it in the optimum direction to avoid any twists in the tube.
• The other end is connected to the outlet of the water treatment system installed
previously.
• To connect the machine’s drain outlet, use the drainage tube, also supplied,
connecting it to the machine’s drainage bowl and affixing it with the metal flange.
The other end should be inserted into the pre-prepared drainage pipe of the
establishment.

5.2 INSTALLATION – ELECTRICAL CONNECTION
• The details of the electrical power supply must match those given on the nameplate.
• The electrical power supply should be equipped with the appropriate multiple-pole
switch (circuit-breaker or differential) before the machine's main switch, with a
minimum contact opening of 3 mm.
• The connection of the machine to the earthing ( ) should comply with the electrical
regulations currently in force in the place where the machine is installed.
• Equipotential bonding: to comply with certain regulations, the machine is provided
with equipotential bonding to avoid any difference in the electrical potential of the
earthing between appliances installed in the same premises.
5.3 AUTOMATIC INSTALLATION
The machine is pre-set at the factory for the start-up operation to be done automatically.
a)Once the electrical and water connections have
been completed and the drainage connected,
you can turn on the machine by the main switch.

b)The tactile screen will offer you a choice of
languages and the option of changing the date
and time. When this has been done, click on Next.
c)A message will then appear with information
on the filling process of the coffee groups and
the steam boiler. This operation can take a few
minutes.
d)Once this process is complete, a message
will appear stating ‘Installation complete’ and
the machine will start heating the groups and
the boiler until they reach the established
temperatures:
Coffee groups: 95°C / 203°F
Steam boiler: 123°C / 253.4°F
!
IMPORTANT: During this process, check that the pump is correctly regulated to
9 bar by activating a group and observing the coffee pressure gauge.
5.4 REGULATING THE PUMP PRESSURE
If you need to adjust the pump pressure, turn the regulator
in the upper tray of the cup warmer with a flat-head
screwdriver.
• In a clockwise direction, the pressure will increase.
• In an anticlockwise direction, the pressure will drop.
Keep the pump pressure regulated at between
8.5 and 9 bar.


5.5 STEAM AND HOT WATER
Steam
The machine has two steam taps which are actioned manually by two levers at
the upper ends.
These taps have two positions: one fixed, moving the
lever fully upwards, and one mobile one which, when you
release the lever, returns to the initial position and closes
the tap.
Hot water
For hot water, press the two buttons at the side of the
display. The time of each button can be programmed.
To programme them, keep the button pressed until you
get the desired amount of water, and then stop pressing.
Repeat the same operation with the other button.
Using the control at the front of the machine you can
regulate the temperature of the hot water manually.

6 – MACHINE SETTINGS
6.1 SETTING THE TIME AND DATE
To change the time, date, month and year, simply press the figure you want to change and
set it accordingly.
6.2 ADJUSTING LIGHTS/LEDs
In this section, there are two options
for the LEDs.

COFFEE GROUP CONTROL LIGHT
These can be turned on or off.
To change the light intensity, press the intensity bar.
To change the colour: when you press the current colour, a scale of available colours
will appear.
Select the desired colour by pressing it.
SERVICE AREA LEDs
These can be turned on or off.
6.3 AUTOMATIC ON/
OFF PROGRAMME
If you want to programme the machine to
switch on or off automatically, press the hour
and minute indicator in the ‘ON’ tab to adjust
the start time of the machine.
Follow the same procedure to programme the
time you want to machine to shut down in the
‘OFF’ tab.

Once you have established the times you want the machine to turn on and off, select
the day or days on which you want this programme to run in the upper part of the
display.
Finally, enable the function by pressing the white dot.
!
IMPORTANT: For the function to work properly, the machine should not be
switched off by the general switch.
When the time on the display
matches the programmed time, the
following screen will appear:
You can hide this screen so that the appearance of the machine is the same as when it
is completely switched off.
To do so, go to:
Menu Display Screen type Screen light
You should select the ‘OFF’ option
on the ‘intensity’ bar and adjust the
length of time you want the screen to
be displayed.
After this time, the screen will switch
off completely.

6.4 TEMPERATURE SETTINGS
On the display you can manage the different
temperatures of:
The coffee groups. By pressing the
temperature shown, a new screen appears
on which you can change the temperature of
the water of the coffee group, increasing or
decreasing it by 0.1 °C, or by degrees.
The steam boiler. Press the figure shown
and on the new screen that emerges you
can change the temperature by increasing or
decreasing it by 0.1 °C, or by degrees.
Pressure-temperature equivalences:

Cup warmer. Repeat the previous procedure
to change the temperature of the element in
the cup warmer tray, which is intended to keep
the cups at the optimum temperature. This
varies by degrees.
TEMPERATURE DISPLAYS
Temperature mixer. Indicates the temperature of the water that feeds the boiler of the
coffee group.
Water temperature. Indicates the temperature of the hot water used for teas.
Steam temperature. Indicates the temperature of the milk inside the jug when you
steam it. (Not available in this model)

6.5 PROGRAMMING THE COFFEE DOSE AND PRE-INFUSION
When you press this icon, a screen
appears showing the three groups
available in the machine and the icon
for copying information from one
group to another.
You can manage the coffee dose
and pre-infusion for each group.
Press the icon of the group you want
to manage and a new screen will
appear showing two options:
• Dose
• Pre-infusion
PROGRAMMING THE COFFEE DOSE
On the display:
The four different coffee dose options appear with the cup volume setting by default.
(This parameter is pre-set at the factory).
To change the dose, press the current figure and when the new screen appears you
have the option of changing the volume of coffee per cup. Repeat the same procedure
for each dose you want to change.

Using the control pad:
To enter the programming phase, hold down the continuous distribution button for
3 seconds until the light starts flashing.
Then press the button of the dose you want to programme, starting the distribution
of the coffee.
When you have the required amount of coffee, press the same button again to end
the programme.
Repeat the same procedure for all the doses you want to programme.
PROGRAMMING THE PRE-INFUSION/TYPES
This machine has two types of pre-infusion: the standard one at 9 bar and what
we call the gentle one which uses practically no pressure, whereby the ground
coffee tablet is moistened evenly without pressure to avoid altering the organoleptic
properties of the coffee as well as the ‘channelling’ effect (rivulets created by the
initial pressure which channel the water and prevent the total extraction of the coffee
tamped in the filter holder).
