prep r tion we recommend th t you be t the eggs nd sug r with n electric
blender prior to prep r tion, in order to incre se the volume of the ice cre m
• T ste nd consistency of the ice cre m very much depend on the chosen
ingredients: the more f t content, the firmer the ice cre m. A he vy cre m cont ins
t le st 36% f t, light cre m cont ins 10-18% f t.
• Try to use const nt mount of liquid every time, e. g.: the lightest ice cre m c n be
produced by using more milk th n cre m or milk only.
• You m y lso use low f t milk, lthough this ffects the consistency of the ice cre m.

- 34 -
• Sorbet’s t ste very much depends on the ripeness nd sweetness of the fruits nd
the juice. T ste the fruits before using them s ingredients. If they re too sour, dd
some sug r; if they re very ripe inste d, dd little sug r or none t ll. Ple se
remember th t cold reduces sweetness.
• In order to sweeten the ice cre m during the prep r tion/production process, do not
dd the sug r or sweetener directly into the ice cre m cont iner (it will not dissolve).
Inste d dissolve the sug r in bit of w ter or low-f t milk nd pour the syrup
(cooled) into the ice cre m cont iner.
• When using fruits in the recipe, they must lw ys be w shed nd dried before
prep r tion, pulses lw ys must be shelled nd pitted. Fix sep r te mix with

• When using eggs, m ke sure they re fresh.
• M ny recipes recommend cooking ingredients, so prep re them d y before
prep r tion in order to ensure they re cold.
