Daily Sanitizing –Soft Serve Side (1)
Sanitizing:
1. Prepare 100PPM sanitizingsolution. Use warm water
and follow manufacturer’s specifications
2. Pour sanitizing solution into hopperand allow it to flow
into the freezingcylinder

3. Install the pump assembly at the rear of the mix hopper.
To position the pump on the drive hub,align the drive hole
in the piston with the drive crank of the drive shaft. Secure
the pump in place by slippingthe pump clipover the collar
of the pump, making sure the clip fits into the groovesin
the collar
4. Install the pump end of the mix feed tube and secure with
the cotter pin
5. Prepare another pail of an approved100PPM sanitizing
solution. Use warm waterand follow the manufacturers
specifications
6. Pour the sanitizingsolutioninto the mix hopper
7. Brush the exposed sides of the hopper. Wait at least5
minutes before proceeding with these instructions

8. Touch the Wash symbol. This will cause the sanitizing
solution in the freezingcylinderto be agitated
9. With a pail beneaththe door spout, openthe draw valve
and touch the Pump symbol. Open and close the draw
valve 6 times. Open the draw valve and draw off the
sanitizingsolution
10. Touch the Wash and Pump symbols and close the draw
valve
11. Place the agitatoron the agitator drive shaft housing
12. Remove the cotter pin from the pump. Stand the mix feed
tube in the corner of the mix hopper. Place the cotter pin
in positioninthe outletfittingof the pump

1. Prepare a pail of approved 100PPM sanitizingsolution.
Use warm water and follow the manufacturers
specifications
2. Install syruphole plugs in the syrup ports in the freezer
door
3. Pour the sanitizingsolutionoverall parts in the bottom of
the mix hopper and allow it to flow into the freezing
cylinder
4. Prepare two more pails of an approved100PPM sanitizing
solution. Use warm waterand follow the manufacturers
specifications
5. Install the air-mix pump assembly at the rear of the mix
hopper. To positionthe pump on the drive hub, alignthe
drive slot in the piston with the drive crank of the drive
shaft. Secure the pump in place by slippingthe pump clip
over the collar of the pump, makingsure the clip fits into
the groovesin the collar

6. Install the pump end of the mix feed tube and secure with
the cotter pin
7. Using the white hopperbrush, clean the mix level sensing
probes, the mix hopper, mix inlet hole, the outside of the
agitator drive shaft housing,the agitator, the air-mix
pump, pump clip, mix feed tube and cotterpin
8. Pour the two pailsof sanitizingsolution intothe mix
hopper. The sanitizing solution should be within 1”
(25mm) of the top of the hopper
9. Using the white hopperbrush, scrub the exposedsides of
the hopper. Wait at leastfive minutesbefore proceeding
with these instructions
10. Place the powerswitch inthe On position
11. Touch the Wash symbol. This will cause the sanitizing
solution in the freezingcylinderto come in contact withall
areas of the freezingcylinder

12. With a pail beneaththe door spout, openand close the
draw valve 6 times
13. Touch the Pump symbol to sanitize the inside of the
air/mix pump and the mix feed tube
14. Open the draw valve and draw off all the remaining
sanitizingsolution
15. Touch the Wash and Pumpsymbols to stop the Wash and
Pump modes and to close the draw valve
16. Place the agitatoron the agitator drive shaft housing

17. Remove the cotter pin from the pump. Stand the mix feed
tube in the corner of the mix hopper. Place the cotter pin
in positioninthe outletfittingof the pump
18. Remove the restrictorcap and the syrup hole plugs
19. Returnto the freezerwitha small amount of sanitizing
solution. With a pail below the door spout, dip the door
spout brush intothe sanitizingsolution and brush clean
the syrupports in the freezerdoor, door spout, bottom of
the driven spinnerand spinnerblade, and syrup line
fittings
20. With the syrup port brush, brush each syrupport hole 10
to 15 times.Dip the brush insanitizingsolution before
brushingeach port
21. Fill the squeeze bottle with sanitizingsolution. With a pail
beneaththe door, insert the tube end of the squeeze
bottle into the syrup port, and squeeze the bottle firmly.
This action will force solution out of the adjacent port and
down around the spinner. This procedure shouldbe
performedforat least 10 seconds per port
22. Install the syrup valvesand the restrictorcap

Priming –Shake Side
Priming:
1. With a pail beneaththe door spout, touch any Flavor
Select symbol to open the draw valve. Pour 2.5 gallons of
Fresh mix intothe mix hopperand allow it to flow intothe
freezingcylinder.This will force out any remaining
sanitizing solution. When full strength mix is flowingform
the door spout, touch any FlavorSelect symbol to close
the draw valve
2. When mix stops bubblingdown into the freezing cylinder,
remove the cotter pin from the outletfittingof the mix
pump. Insertthe outlet end of the mix feed tube into the
mix inlethole in the mix hopper. Place the inletend of the
mix feed tube into the outletfittingof the mix pump.
Secure with cotter pin
3. Install the shake cup holder
4. Selectthe Auto symbol
5. Fill the hopper withfresh mix and place the mix hopper
cover in position

Priming –SoftServe Side
Priming:
1. With a mix pail beneaththe door spout, open the draw
valve. Pour2.5 gallons of Fresh mix into the mix hopper
and allow it to flow into the freezing cylinder. This will
force out any remainingsanitizingsolution.Whenfull
strength mix is flowing form the door spout, close the
draw valve
2. When mix stops bubblingdown into the freezing cylinder,
remove the cotter pin from the outletfittingof the mix
pump. Insertthe outlet end of the mix feed tube into the
mix inlethole in the mix hopper. Place the inletend of the
mix feed tube into the outletfittingof the mix pump.
Secure with cotter pin
3. Selectthe Auto symbol
4. Fill the hopper withfresh mix and place the mix hopper
cover in position

Draining Productfrom the Freezing Cylinder (1)
Draining Product from the Freezing Cylinder:
1. Place the heatertoppingswitchesin the Off position by
touching the heater symbols.The symbols will not be
illuminatedwhen the heatersare off
2. Cancel automatic operation by touching the Auto symbol
3. Remove the hoppercover and agitator. Take these parts to
the sink to wash, rinse and sanitize
4. With a pail beneath the door spout, touch the Wash and
Pump symbols and open the draw valve. Drain the product
from the freezingcylinderandthe mix hopper
5. When the flow of product stops, touch the Wash and
Pump symbols, cancellingthe Wash and Pumpmodes. The
shake draw valve will automatically close when the Wash
operation is cancelled

6. Remove the lockingclip, mix feed tube, pump clip and the
assembly air/mix pump. Place the parts into the parts tray
7. Repeatsteps 2 through 6 for the soft serve side of the
freezer

Rinsing
Rinsing:
1. Pour 2 gallonsof cool, clean waterintothe shake mix
hopper. With the white hopper brush, scrub the mix
hopper, mix level sensing probes and the outside of the
agitator drive shaft housing. Using the double ended
brush, brush cleanthe mix inlethole
2. With a mix pail beneath the door spout, touch the Wash
symbol
3. Open the draw valve on the freezerdoor. Drain all the
rinse water from the door spout, close the draw valve, and
touch the Wash symbol, cancellingthe wash mode
4. Repeat this procedure using clean, warm water, until the
water beingdischargedis clear
5. Repeatsteps 1 through 4 for the soft serve side of the
freezer

Cleaning:
1. Prepare a pail of 100PPM cleaningsolution. Use warm
water and follow the manufacturers specifications
2. Pour the cleaningsolution intothe hopperand allow itto
flow into the freezingcylinder
3. Using the white hopperbrush, clean the mi hopper, mix
level sensingprobes and the outside of the agitator drive
shaft housing. Using the double ended brush, clean the
mix inlet hole
4. Touch the Wash symbol. This will cause the cleaning
solutioninteh freezingcylindertocome in contact with all
areas of the freezingcylinder
5. Place an empty pail beneaththe door spout

6. Open the draw valve on the freezerdoorand draw off all
the solution
7. Once the cleanerstops flowingformthe door spout, close
the draw valve and touch the Wash symbol, cancellingthe
wash mode
8. Prepare a pail of an approved100PPM sanitizingsolution.
Use warm water and follow the manufacturers
specifications
9. Repeatsteps 2 through 7 with the sanitizingsolution
10. Repeatsteps 1 through 8 for the soft serve side of the
freezer
