Pursuant to Directive 2012/19/EU on waste electrical and electronic equipment (WEEE)
The crossed-out “wheelie-bin” symbol on the dishwasher's serial number plate indicates that the product must be collected separately from
.other waste at the end of its useful life.
The separate collection of the dishwasher, at the end of its life, is organised and managed by the manufacturer.
A user who wishes to dispose of this equipment must therefore contact the manufacturer and follow the system adopted by the latter to allow
the equipment to be collected separately at the end of its life.
Adequate separate collection of the dishwasher for the subsequent start-up after being disposed of for recycling, treatment and
environmentally friendly disposal helps avoid possible adverse effects on the environment and health and favours the reuse and/or recycling
of the materials, which the equipment is composed of.
The unauthorised disposal of the product by the holder leads to administrative sanctions being applied according to the current laws.

SPECIAL
WARNINGS FOR THE OPERATOR
• Commissioningthemachine,theoperatormusthavecarefully
readthispublication andhave acquiredextensiveknowledge
of the technical specications and of the machine controls.
• Carefully read the warnings contained in this booklet
as they provide important information regarding safe
installation, use and maintenance. Keep this booklet
carefullyfor anyfurther consultationby the variousoperators
• After removing the packaging, check the integrity of the
equipment. If in doubt, do not use it and contact qualied
personnel. The packing elements (plastic bags, expanded
polystyrene, nails, etc.) must not be left within the reach
of children as they are potential sources of danger.
• Before installing the machine, check that the installation
site is compatible with the overall dimensions.
• If it is necessary to install or remove part of the machine,
use only lifting and handling means suitable for the weight.
• Do not allow unauthorised and unqualied personnel
to start, adjust, run or repair the machine. Furthermore,
refer to this manual for the necessary operations.
• Themechanicalpartsandtheelectric/electroniccomponents
inside the machine are protected by fully closed panels.
• Before cleaning and/or servicing the machine, make sure
thatthemainswitchissetto“OFF”O inordertodisconnect
power from the machine while the operator is working on it.
• Before connecting the equipment, make sure that the
data on the plate correspond to those of the electricity
and water mains
• The electric power system must be provided with an
automatic triggering device upstream of the main switch of
themachine and a suitable earthing system whichcomplies
with all the requirements of industrial accident-prevention
standards.
• If the need arises to work on the main switch or in its vicinity,
disconnect the power to the line that the main switch is
connected to.
• All inspections and maintenance operations which
require the safety guards to be removed must be
carried out under the full responsibility of the user.
It is therefore recommended that only specialised and
authorised technical personnel perform these operations.
• Check that all the accident prevention safety
devices (barriers, guards, casings, microswitches,
etc.) are not tampered with and are in perfect
working order before operation; if not, repair them.
• Do not remove the safety devices.
• In order to avoid personal risks, use only electrical tools
which are correctly connected to the earthing system and
are compliant with the national safety regulations.
• Do not tamper with the electrical system or with
any other mechanism for any reason whatsoever.
• Wear safety gloves when cleaning the machine.
• Do not use your hands or unsuitable instruments to locate
leaks from the various hoses. Pressurised or irritating air
could cause serious harm to persons and/or property. Do
not immerse your bare hands in the hot, detergent water
of the tanks. This could cause burns and skin irritations.
If this happens, rinse them immediately and abundantly
with running water.
• Do not use your hands instead of suitable tools
to operate the machine or to stop moving parts
• PAY THE UTMOST ATTENTION TO THE RATING
PLATES ON THE MACHINE WHENEVER
OPERATING ON IT OR IN ITS VICINITY.
• The user must keep all the rating plates legible.
• The user must also replace all rating plates which for
any reason have deteriorated or are not clearly visible,
requesting new ones from the Spare Parts Service.
• In case of malfunctioning of the machine or damage
to its components, contact the maintenance
manager without performing any further repairs.
• Itisstrictlyprohibitedforanyonetousethemachineforpurposes
other than those specically intended and documented.
The machine must always be used in the ways, times and
places required by good practice standards, by current
laws in every country, even though the specic country may
not have appropriate standards that regulate the sector.
• The manufacturer will not be held liable for
accidents or harm to persons or property
resulting from failure to comply with the safety
requirements and standards indicated herein.
• These requirements, together with standards relative
to machine installation and to electrical connections,
constitute an integral part of the Industrial Accident
Prevention Regulations of each individual country.

• NEVER perform rushed or makeshift repairs which
could compromise correct machine operation.

MANUFACTURER FROM ALL LIABILITY AND
MAKES THE USER SOLELY RESPONSIBLE

ACCIDENT PREVENTION AUTHORITIES.
• The appliance is not intended to be used by
persons (including children) with reduced physical,
sensory or mental capabilities, or lack of experience
and knowledge, unless they have been given
supervision or instruction concerning use of the
appliance by a person responsible for their safety.
• Make sure that children do not play with the appliance.

1.1 GENERAL DESCRIPTION
Modular execution in stainless steel with the possibility of linear and single angle conguration.
Colour code that identies each module. Insulated doors counterbalanced and equipped with safety hooks integrated in the
guides. Moulded tank bottom with multiple ltration (collection lter and pump suction microlter). Wash and rinse manifolds
in stainless steel. Central guide with stainless steel rack. Self-draining washing pumps. Electric or steam heating.

Optional: splash guard at the entrance, autotimer, proportional rinse (PRS), proportional wash (PWS), self-cleaning, drain
pump, RCD system, HPS EASY and HPS EASY PLUS, EOR (Emergency Over Ride), homogeniser RAH, sanitising system,
boiler for cold water, detergent and rinse aid dispensers.
Optional modules: 600mm DHM2+ intensive pre-wash, 600 and 800mm linear drying, drying on 90° or 180° curve, RC heat
recovery unit, drying with ARC recovery unit, ARC with WP heat pump, WP heat pumps.
1.2 TYPE OF USE AND CONTRAINDICATIONS FOR USE
The machines were designed and built to wash dishes in specic dish racks, using detergent and rinse aid.
• Dishes permitted: pans, baking trays, trays, plates, glasses, cups, cutlery, pans, baking trays, trays, inserted in the appro-
priate dish racks, made of material suitable for dishwashers and with small dimensions for the dish rack and the machine.
• The use of all commercially available detergents and rinse aids for commercial dishwashers for industrial use is permitted.
• Do not load dish racks with a weight that exceeds 10 kg.
ATTENTION
Any improper use of the machine relieves the manufacturer from all liability for accidents to property or persons
and terminates any warranty conditions.
1.3 TRANSPORTATION, SHIPPING AND STORAGE. (Fig. 2)
• The machine is normally shipped packed in a crate, covered by a bubble wrap protection and xed to the pallet with straps.
• Use a forklift truck or pallet truck to transport the packed machine, placing the pallet on the relevant forks.
• Do not leave the machine in environments with temperatures below 0°C.
ATTENTION
The machine must only be shipped and stored sheltered against atmospheric agents.
1.4 CHECKS UPON RECEIPT
When the supply is received, check that the packages are intact and visually not damaged.
If all is intact, remove the packaging (unless different instructions are given by the manufacturer) and check that the machine
has not been damaged during transportation.
Check for any structural damage, crushing or breakage.
If any damage or imperfections are found:
1. Immediately notify the carrier either by telephone or through registered mail with acknowledgement of receipt;
2. Inform the manufacturer through registered mail with acknowledgement of receipt.
IMPORTANT
Any damage or faults must always be promptly reported within 3 days from the data of receipt of the machine.
1.5 UNPACKING (Fig. 2-3-4)
The machine is packed in a wooden crate, with bubble wrap protection and straps.
Proceed as follows to remove the machine from the packaging:
1. Cut off the straps that block the cage (2).
2. Remove the nails securing the cage (2).
3. Remove the protective lm from the machine.
4. Remove the machine from the pallet, lifting it from the bottom of the body.
5. All packaging elements must be collected and not left within the reach of children as they are sources of danger. They

ATTENTION
Once the machine is unpacked, NEVER lift it by the electric components box.
Place the machine in a suitable place (as described above) and adjust the support feet (Fig. 4) to avoid possible
oscillations and make sure that the machine is completely level (use a spirit level).
Lift the machine from the bottom of the body. Place it on the forks of the forklift truck to transport it.

• The serial number and the data relating to the machine are written on the plate (3) positioned on the right
side of the electrical box.
IMPORTANT
To request technical support or to order spare parts, always include the model and serial number of the machine.
1.7 DESCRIPTION OF THE SAFETY DEVICES

2.1 BEFORE COMMISSIONING
Before use make sure that:
• the wall switch is on;
• the water and steam (*) gate valves are open;
• there is no water or steam (*) shortage;
• the tank and pump suction lters are in place;
• the overow is inserted;
• the curtains are positioned correctly;
• the inspection doors are closed;
• the temperatures are as prescribed, i.e. approx. 55°C for washing and approx. 85°C for rinsing;
• the detergent and rinse aid containers are full;
• the dimensions of the dishes to be washed do not exceed the useful washing dimensions;
• the crockery used is not old or otherwise cracked, as the roughness offers more grip for dirt and shelter for
bacterial ora.
• Knives and other sharp tools must be placed in the dish rack with the tips pointing downwards or horizontally
in order to avoid causing injury
(*) only for machines with steam heating.
2.2 OPERATION AND USE
2.2.a Powering on
Turn on the machine by turning the selector “Q2” into the
“I” position.
The light “H01” comes on. Tank lling will commence.
Coming on of the light “H02” indicates that the tanks are full.
The temperature regulation will be activated.
It is possible to view the temperatures on the display by repeatedly pressing
the “04”button.
Wait for the washing temperature to reach 55/60°C.
At this point the machine is ready to start the washing operations.
Using selector “Q2”, select the forward speed of the dish racks according to the type of dirt:
-pos.I: rst speed, for very dirty plates or dishes;
-pos.II: second speed; for normally soiled plates or dishes;
Press the “S1” button to start or stop the washing operations.
The “H03” light indicates that one of the motors has overheated, therefore
the intervention of a technician is required.
The machine is equipped with an automatic reset Autotimer: the dishwasher stops if it runs empty without
dishes. It restarts automatically with the insertion of the dishes.
The autotimer cannot be deactivated.

2.2.b Dishwashing
1. First remove solid leftovers and any oily mas-
ses.
This operation is not necessary for machines
equipped with DHM2+.
2. Perform prior soaking of the cutlery and also of
the dishes when they are being washed a long
time after use.
3. Arrange the dishes in the appropriate dish racks.
Knives and other sharp tools must be placed in
the dish rack with the tips pointing downwards or
horizontally in order to avoid causing injury
4. Push the dish rack towards the entrance of
the machine. The drive bar will automatically
advance it along the entire washing tunnel.
5. Make sure that the dishes in the dish racks
are facing the exit of the machine and that the
trays in the relative dish racks are parallel to
the direction of advancement of the drive bar.
6. If the operator is unable to remove the dish racks
from the outfeed shelf, a limit switch ensures
that the drive and rinsing stops. To resume
work, simply remove the dish rack from the limit
switch.
ATTENTION
When the items being washed have burned encrustations or an extended amount of
time has passed before washing, they must be soaked in water with an appropriate
emollient product.
Do not use manual washing products as they could generate foam inside the machine.

2.2.b.1 Machines equipped with automatic reverse osmosis rinsing (Optional)
The machines equipped with automatic reverse osmosis rinsing are fitted with various sensors which are used
to detect the stainless steel dish racks. When one of these dish racks enters the machine, the pre-wash is
deactivated and the rinse with osmotic water is activated.
2.2.c EOR function
(transfer of commands in the event of a fault on the electronic board)
In case of a fault with the electronic board, it is
possible to continue the washing operations
using the EOR function. On the left-hand side
of the control panel, start the dishwasher by
turning the key to position 1.
To stop the dishwasher, press the emergency
button or open one of the doors.
2.2.d Manual drain for machines equipped with drain pump (Optional)
Turn selector “Q2” to position “I” .
Press the "S26" button.
The “H26” light coming on indicates its activation.
At the end of the drain cycle, press the "S26" button again before turning
the Q2 switch to "O" to switch off the machine.
