FRIULINOX is established in Azzano Decimo (PN) as a
company specialised in the production and sale of
professional refrigeration.
FRUILINOX joins ALI GROUP, one of the most important
world market leaders of systems and equipment dedicated
to the catering market. The same year it inaugurates the
new, more modern and productive Villotta plant, thus
expanding its product range
The first Multifunctional equipment is conceived,
which paves the way to a new way of managing the
kitchen, becoming the crucial tool of production
processes.
FRUILINOX markets the first blast chilling systems,
starting their distribution together with training
sessions, accompanying users towards a new way of
thinking and managing production processes
With the acquisition by the METOS Group, it has the
possibility to supply the technology to a wider audience.

Of hermetic type, high-starting torque.
Semi-hermetic for model 122.
Condensate
evaporation

It allows, during compressor operation, the water coming from the condensate
collection bowl installed under the evaporator, to evaporate.
Air
condenser
Ventilated condenser, it allows the system to work regularly with a maximum
temperature of 43°C. Proper equipment performance is not guaranteed beyond
this value, and the safety pressure switch (AL4) may trip.
There is a filter in front of the condenser which must be regularly cleaned at
least once a month.
Water
condenser
High-efficiency brazed plate type.
Managed water temperature range: from 7 to 20°C.
Maximum water hardness 17.8°F (French degrees) corresponding to 10°dH
(German degrees).
Maximum conductivity of 150 μS/cm.
Pressure
valve
Modulates the water flow to the condenser.
Minimum water inlet pressure of 1.5 BAR.
Maximum water inlet pressure of 4 BAR.
Condensation pressure calibration: from 13 to 15 BAR.
Liquid
receiver
It acts as refrigerant reserve to correctly feed the thermostatic valve.
Pressure port
It allows connecting the pressure gauge for reading the condensation
pressure/temperature.
Safety

High-pressure safety device. It trips when the pressure exceeds 29.5 BAR.
Dehydrator

It eliminates any residual impurities and humidity inside the system.

It subcools the refrigerant entering the thermostatic valve.
It overheats the compressor suction gas to avoid liquid returns.

Positioned inside the evaporator unit, it is always equipped with MOP -10°C

Coated with cataphoresis, electrochemical treatment that gives the evaporator
excellent resistance to corrosion caused by products such as: eggs, chocolate,
food with acetic solution, yeasts, tomato sauce, fish, etc..
Pressure port
It allows connecting the pressure gauge for reading the evaporation
pressure/temperature.
Pressure
relief valve
It limits the intake pressure on the compressor during the hot gas
drying/defrosting cycles. Valve calibration 3.4 - 4BAR.
Not present on the supplied models.

3.2. Hydraulic system
Water filling
solenoid valve
The water filling solenoid valve allows water to flow towards the spray nozzle -
pipe 3.
Spray nozzle
It sprays water inside the cell.
Water collection
and evaporation
bowl
The column of water, which remains in pipe 3, is drained through the third way of
the solenoid valve on the condensate collection and evaporation bowl.
Shower hose
Optional connected on the front ventilation panel, allows cleaning the cell with
water.
CAUTION: do not direct the water flow directly on the motor of the evaporator
fans.

Mains
water inlet
The water inlet is 3/4” Female.
The inlet water must have the following features:
▪be drinkable;
▪have maximum temperature of 30°C;
▪have maximum conductivity of 150 μS/cm;
▪have a maximum hardness of 17.8°F (French degrees) corresponding to 10°dH
(German degrees);
▪have a pressure value between 150 and 400 kPa (recommended 250 kPa).
If the inlet water pressure is:
▪below the indicated value (150 kPa) ➔use a pump with adequate flow
(minimum flow 300 l/h);
▪above the indicated value (400 kPa) ➔use a pressure reducer.
CAUTION: damage to components, due to limescale deposits, is not
recognised under warranty.

Compressor
The M1 compressor is relay-controlled in card K12.
Compressor ON delay first switch-on, parameter Conf69.
Compressor ∆T ON-OFF, parameter Conf39.
Compressor minimum time OFF, parameter Conf40.
Compressor minimum time ON, parameter Conf41.
Minimum time between two switch-ons of the compressor, parameter Conf42.
Compressor ON delay with hot gas defrosting, parameter Conf62.
Locked compressor alarm delay, parameter Conf82.
Compressor switch-off delay (pumpdown), parameter Conf83.
Compressor “dead zone” ON during the cooking cycles, parameter Conf135.
Compressor ON time if cell temperature greater than “dead zone” + cooking
hysteresis, ice-cream tempering and continuous cycle, parameter Conf136.
On single-phase models, the compressor is managed by the “Q1” relay.
On three-phase models, the compressor is managed by the “K1” contactor.

Condenser fan
The condenser fan is managed by relay K10.

Evaporator fan
The evaporator fans are managed by the G5 fan control card.
The start of the fan during the cooling cycles is managed by parameter Conf78.
When the evaporator probe (B2) reads the temperature set by parameter, it
enables its operation.
During storage, the fan is ON for the time set by parameter Conf47 and OFF for the
time set by parameter Conf48.
Delta fan Temperature stop after a defrost, parameter Conf64.
Fan start delay time from door closure, parameter Conf97.
Fan operation (0=parallel to compressor; 1 = always ON) during: Defrosting cycle,
parameter Conf86;
Stop phase, parameter Conf114;
Storage phase, parameter Conf115;

Transformer
It is used to feed the power board (terminals 1|2) at 12VDC and to heat the core
probe by means of the K9 relay consent. The probe heating function is managed by
parameters Conf36, Conf37, Conf38.
R1
Frames heater
The heater is controlled by the K6 relay.
It activates when the cell temperature is below the Conf33 parameter and
deactivates when the temperature rises above the Conf33 value + 2°C.
R4
Heating element
The heating element is managed by the K13 relay and is mainly used to increase
the cell temperature during the low-temperature cooking, defrosting, rising
functions.
The heating element works for the time given by a proportional band that
considers the temperature set by cycle, the actual temperature, and parameters
Conf120 and CL34.
With parameter Conf60=1 the heater works together with the hot gas defrosting
(solenoid valve V2) for the special drying function and cooking at low R.H.%.

Liquid solenoid
valve
The V1 liquid solenoid valve is installed on the 12 and 16 baking tray models with
condensing unit on board, is managed by the K5 relay and activates in parallel to
the “M1” compressor with delay time set by parameter Conf84.
The solenoid valve is immediately deactivated.
Present on all models set-up for the remote unit.
V2
Hot gas solenoid
valve
The V2 hot gas defrosting solenoid valve is managed by the K3 relay.
Installed on all models, it is not present in the version set-up for remote unit.
Defrosting type selection, parameter Conf60.
With Conf60 = 1 (hot gas) the following are possible:
▪to defrost the evaporator through the passage of hot gas:
odefrosting at blast chilling start Conf56;
odefrost end temperature, parameter Conf57;
omaximum defrost duration Conf58;
ointerval between two defrosts (in storage) Conf59;
odripping time Conf61;
ohot gas defrost start compressor ON delay Conf62;
ocell temperature for defrost cycle start Conf63;
▪perform low-humidity cooking cycles (e.g.: meringue cycle) with combined
operation of “R4” heating elements + “M3” evaporator fans;
▪perform “special” drying cycle of the cell – parameters AS01,02,03,04,05,06.
With Conf60 = 0 (air) the standard cell defrost and drying cycle is managed with
evaporator fans M3 only.
With Conf60 = 2 (electrical) the standard cell drying cycle is managed with heating
elements “R4” and evaporator fans “M3”. Standard drying cycle parameters
AV01,02,03,04,05,06.
With Conf60 = 0 or 2 it is not possible to perform low-humidity cooking (e.g.:
meringue cycle disabled).

Water filling
solenoid valve
The V3 water filling solenoid valve is managed by the K8 relay.
Its activation allows inserting spray water in the cell to ensure correct humidity in
every cycle phase.
Solenoid valve management:
▪during the cooking cycles:
owater spray time during humidification Conf121;
otime between water sprays Conf122;
ohumidification delay from cycle ON Conf123;
▪during the defrosting cycles:
owater spray time during humidification Conf124;
otime between water sprays Conf125;
ohumidification delay from cycle ON Conf126;
▪during the retarder proofer cycles:
owater spray time during humidification Conf127;
otime between water sprays Conf128;
ohumidification delay from cycle ON Conf129;
▪during the rising cycles:
owater spray time during humidification Conf132;
otime between water sprays Conf133;
ohumidification delay from cycle ON Conf134.
The parameters that manage the time interval between water injections, vary
according to the humidity level preset or selected by the user. The higher the
required humidity level, the more the time between one spray and the next is
reduced.

The power board is supplied by the “T” transformer at 12VDC.
In case of power failure:
▪interruption of cycle in progress after the time defined by parameter Conf89;
▪behaviour of the electronics when the power supply is restored, parameter
Conf90.

Cell probe
PTC probe range -55°C →150°C installed between the evaporator and the fan
door, it detects the chamber temperature.
Probe calibration, parameter Conf10.
°C or °F setting, parameter Conf09.
Set “continuous cycle” cell temperature, parameter Conf130.
Set pre-cooling cycle cell temperature, parameters PR01 and PR02.
A fault of the probe or of the analogue input of the card displays the alarm
Chamber Probe.

Evaporator probe
PTC probe range -55°C →150°C installed on the evaporator.
Evaporator probe enabling, parameter Conf87.
Evaporator temperature below which the “M3” evaporator fans work during the
cooling cycles, parameter Conf78;

A fault of the probe or of the analogue input of the card displays the Evaporator
Probe alarm.

Core probe
PT1000 probe range -80°C →210°C.
It controls the cooling processes based on the product temperature.

Through parameter Conf22, the automatic recognition of the core probe can be
enabled during the cycles.
It is connected to the power board via a “JST” connector
The four reading points are connected on the terminals J1, J2, J3, J4 respectively,
while the common is connected on the JC terminal.
The core probe, to facilitate its extraction from the product –especially if frozen,
can be heated. The probe heating function is managed by parameters Conf36,
Conf37, Conf38.
A fault of the core probe or of one of its reading points, or of the analogue input of
the card, displays the Needle Probe alarm.

Door microswitch
Detects whether the door is closed or open during the equipment operation.
Its intervention displays the Door Open alarm.
Door microswitch polarity, parameter Conf17.
Door open alarm signal delay Conf18.
Effect caused by the door microswitch, parameter Conf119.
A fault of the door microswitch or of the digital input of the card displays the Door
Open alarm.

Alarm/Light
The alarm output, K1 relay, 3|4 terminals is a potential-free contact that is
activated whenever an alarm occurs and deactivated when the same alarm is
resolved.
The output that enables the cell light operation (not present on reach-in models) is
managed by the K2 relay, 5|6 terminals.
The output is enabled whenever the door is opened.

Pressure switch
High-pressure safety pressure switch. It trips at 29.5BAR, resets at 24.5BAR.
Its intervention displays the High Pressure Switch alarm and stops the machine
(the M1 compressor outputs, M3 evaporator fans, R4 heating elements are
immediately deactivated).
Alarm detection time, parameter Conf24.
Pressure switch contact digital input polarity, parameter Conf25.
Effect caused by the pressure switch activation, parameter Conf26.

High temperature
safety thermostat
Electro-mechanical thermostat, intervenes when the cell temperature is greater
than 105°C.
Its activation disconnects power to the “R4” heating elements, the M1 compressor
outputs and M3 evaporator fan deactivate, the safety thermostat alarm appears
on the display.
Alarm detection time, parameter Conf30.
Thermostat contact digital input polarity, parameter Conf31.
Effect caused by the thermostat activation, parameter Conf32.

Circuit breaker
The three-phase models are equipped with circuit breaker “Y1” to protect the
compressor.
Tripping of the circuit breaker Y1, enabled by parameter Conf29, displays the
Compressor Thermal alarm and stops the machine (the M1 compressor outputs,
M3 evaporator fans, R4 heating elements are immediately deactivated).
G2
Control card

The G2 control board is fed by the power board by terminals 33,34,35,36.
Below the power supply voltage on the control board terminals:
GND|VDC = 15VDC;
VDC|+ = 15VDC
VDC|- = 15VDC

Evaporator fan
control card
This card, equipped with phase cutting control, manages operation and speed of
the M3 evaporator fans.
Terminals +|- receive the 0-10VDC signal from the power board (terminals 31|32)
to manage the speed of the M3 fans.
The power supply at 230V arrives directly to the board terminals F|N.
The power supply for the M3 evaporator fans comes from the FanA|FanB
terminals.
Evaporator ventilation management via inverter or PWM, parameter Conf92.
Fan speed managed by parameters Conf70,71,72,73,76,77 and parameters
Conf92,103,104,105,106,107.
USB
USB port
The USB output allows:
•the HACCP data download on USB stick;
•the software update.

Buzzer
It sounds to signal the alarm and the cycle end. Managed by parameters
Conf19,20,21.

UV Lamp /
Sterilox
UV lamp or Sterilox are OPTIONAL.
The utility is managed by the K7 relay.
Sterilisation enabling and selection between UV lamps and Sterilox, parameter
Conf108.
Minimum temperature to start sterilisation, parameter Conf35.
Sterilisation with UV lamps duration, parameter Conf34.
Sterilisation with Sterilox duration, parameter Conf113.
A possible door opening or blackout immediately end the sterilisation cycle.
The sterilisation cycle cannot be performed with chamber probe in error.
