LIMITED WARRANTY
• Subject to the ter s and conditions of this Li ited Warranty as herein stated, all Giles Enterprises,
Inc., Foodservice Equip ent and parts purchased new fro an authorized Giles Enterprises, Inc.,
representative are warranted as to defects in aterial or work anship for a period of 24 onths
fro the date of installation, provided, however, that with regard to labor costs in connection with
this warranty, see below. All installations ust be ade by a qualified installing agency in accor-
dance with all applicable codes and/or regulations in the jurisdiction in which installed. Li ited war-
ranty coverage is extended to the original owner only and is void if the unit is resold.
• During the Li ited Warranty period, Giles Enterprises, Inc. will replace or recondition, at its factory,
any part or parts of this unit which Giles Enterprises, Inc. inspectors judge defective, provided the
unit has been subjected to nor al usage, properly installed, operated and serviced. This Li ited
Warranty does not cover cos etic da age, and da age due to acts of God, accident, isuse, alter-
ation, negligence, abuse of the Giles Foodservice Equip ent or the use of unorthodox repair eth-
ods. All parts replaced under this Li ited Warranty carry only the unexpired ter of this Li ited
Warranty. Li ited Warranty service ay be furnished only by an authorized Giles Enterprises, Inc.,
representative.
• If Li ited Warranty service is requested, Giles Enterprises, Inc., will send factory-authorized serv-
ice representatives to repair, recondition, replace or inspect units of its anufacture with such labor
being rendered without cost to owner for 24 onths fro the date of installation. Otherwise, serv-
ice, including labor and transportation charges or other expenses, in connection with the re oval or
installation of any part or parts supplied under this Li ited Warranty, are specified on the original
sales contract between the purchaser and the authorized Giles Enterprises, Inc., representative.
•Failure to use Giles OEM parts and Giles OEM replacement Filters may void the Warranty.
• Giles Enterprises, Inc. reserves the right to change or i prove its equip ent and parts in any way
without obligation to alter such equip ent or parts previously anufactured.
• Giles Enterprises, Inc. akes no further warranties, express or i plied including i plied warranties
of erchantability or fitness for a particular purpose, and has no other obligation or liability not
specifically stated herein.
• Repair or replace ent as provided under this li ited warranty is the exclusive re edy. Giles
Enterprises, Inc., shall not be liable for any incidental or consequential da ages for breach of any
express or i plied warranty on this product, except to the extent prohibited by applicable law. Any
i plied warranty of erchantability or fitness for a particular purpose on this product is li ited in

• The electronic components of the Control P nel re somewh t imp ct-sensitive. Exercise due c re to void pos-
sible unintention l d m ge.
• After cle ning the EAC cell, DO NOT ttempt to dry it by inst lling it in the hood nd running the f n to force ir
dry it, or by running the ppli nce under the hood to he t dry it. This could potenti lly d m ge the EAC power
supply nd control system, le ding to m lfunction nd voiding the w rr nty. The EAC filter must ir dry t mbient
room temper ture, prefer bly overnight.
• When cle ning the Hood nd Hood Skirt:
•• DO NOT ste m cle n.
•• DO NOT spr y with w ter from hose.
•• DO NOT use products cont ining chlorine or other c ustic chemic ls.
•• DO NOT use br sive products, steel wool or scouring p ds.

NOTE:
• Upon delivery, the p lletized unit should h ve be thoroughly inspected. If d m ge is evident, the shipment should
h ve been refused nd d m ges promptly reported to the freight comp ny. It is generally the ustomer’s
responsibility to negotiate freight damage laims.
• As n id for electrici ns nd inst llers, n electric l wiring di gr m is provided with the unit. Refer to the wiring
di gr m during inst ll tion or while servicing.
• Comply with ll ppropri te st te nd/or loc l he th regul tions reg rding cle ning nd s nit tion of foodservice
equipment.
• Giles recommends the use of mild, bio-degr d ble, non-toxic degre sers, such s Clear Magi or Simple Green,
for cle ning p rts of the hood where excessive gre se film ccumul tion is present.
• Alw ys ensure the unit is inst lled nd electric lly grounded in ccord nce with loc l codes, or in the bsence of
loc l codes, in ccord nce with the National Ele tri al Code, NFPA 70.
• The sound level of the hood while oper ting is pproxim tely 65 dB.
•During some installations, it may be ne essary to onsult a HVAC spe ialist to onfirm
that proper room air ex hange is o urring and that the on-site air onditioning system
is apable of handling anti ipated heat load.
• Exh ust ventil tion is recommended for re s in which recircul ting hoods re oper ted. Giles recommends 50
CFM per line r foot of hood sp ce. This amount ould vary based on lo al odes and site-spe ifi situations.

Introduction
Thank You for purchasing the OVH-10-FB or OVH-11-FB Ventless Recirculating Hood manufactured by Giles
Foodservice Equipment. These are Limited Type-1 Hoods designed for pairing with specific appliances, such as the
Cleveland Convotherm 6.10 Oven.
ith proper care and maintenance, this unit will provide years of trouble-free service. To help protect your
investment, we recommend taking a few moments to familiarize yourself with the installation, operational, cleaning,
and maintenance procedures described in this manual. e urge you to read this manual before installing or
operating the hood. Adherence to these recommended procedures will minimize future potential for costly
downtime and equipment repairs. Please retain this manual for later reference.
1. Introduction

The Hood and Skirt are constructed of 18 to 20-ga stainless steel.
1-03. Optional Features
Control Panel
•LED lights indicate the status and condition of the Electronic Air Cleaner (EAC) cell.
•Appliance Powered light indicates that power is being supplied to the interlocked appliance operating under the
hood.
•Charcoal or Baffle Filter Missing light indicates that the Baffle Filter and/or the Charcoal Filter is missing or not
properly installed.
•Charcoal or Baffle Filter Clogged light indicates that the Baffle Filter and/or the Charcoal Filter is possibly clogged
and restricting airflow through the Hood to a level below the minimum required.
Filters
•Baffle Filter - captures and collects the largest particulate entrained in the air stream.
•Electronic Air Cleaner (EAC) - captures and collects fine particulate contaminates.
•Charcoal Filter - activated carbon filter helps to eliminate cooking odors from the recirculated air.
Inter-Locked Start (ILS)
This is a “Push to Start” feature that prevents the Hood and, consequently, the served appliance from restarting
after a power interruption without being attended by the user. This is a code requirement in certain states and/or
cities.
Fire Suppression
The Hood is pre-plumbed to accept installation of a fire extinguishing system. It includes factory installed piping,
discharge nozzles, fusible link brackets and conduit. The external system must be purchased separately by the
user and be installed, charged and certified by a authorized fire protection company.
Plug and Receptacle
The Hood is equipped with a power cord and plug, and a built-in, interlocked, power receptacle for connecting the
power cord of the served appliance. Provides quick installation without the inconvenience and work of hard wiring.

2. Installation
This section summarizes the procedures necessary to install the OVH-10-FB or OVH-11-FB Hood. Before installing
and attempting to operate, please read the contents of this manual thoroughly. Following these procedures will help
ensure safe and proper installation.
The unit is shipped on a wooden skid with protective framing, secured to the skid by high-tensile plastic strapping
and wrapped with machine applied stretch-wrap. erform the following steps to unpack the unit:
1. osition the palletized unit in an area with sufficient space for unpacking.
2. Cut and remove stretch-wrap and all strapping.
3. Use appropriate tools to remove the wooden crate from around the unit.
3. Remove any packed accessories and/or parts from the skid and set aside.
4. The unit is extremely heavy. Using suitable lifting equipment, or adequate manpower, lift the unit and remove it
from the shipping skid. See Section 1-4.3, Hood Weights.

2-01. Unpacking
• The unit is very heavy! Exercise due caution when handling to avoid personal injury, or damage to the
equipment.
•Exercise care when removing the wooden framing from around the unit to avoid any exposed nails or staples.
•DO NOT A TER, ADD ATTACHMENTS OF ANY KIND, OR OTHERWISE MODIFY THIS EQUIPMENT.
• Failure to comply with these CAUTION notices may result in minor to moderate injury, damage to equipment or
property, and void the warranty.

!! IMPORTANT NOTE:
If the palletized unit showed any signs of damage, you should have immediately inspected the equipment and any
other packed accessories, and promptly notified the freight company of any and all damages. Typically, it is the
customer’s responsibility to negotiate freight damage claims.

NOTE:
•The Hood does not cool or condition the air exhausted into the space. In some
installations, it may be necessary to consult a HVAC specialist to confirm that proper
room air exchange is occurring and that the on-site air conditioning system is capable of
handling the anticipated heat load created by any additional cooking equipment.
• Exhaust ventilation is recommended for areas in which recirculating hoods are operated. Giles recommends 50
CFM per linear foot of hood space. This could vary based on local codes and site-specific situations.
• The Hood and it’s companion appliance must be positioned in a suitable indoor location on a level floor, and placed
as near as possible to the power source (wall receptacle, disconnect box, etc.), which will be supplying the Hood
and appliance power.
• Consider that the sound level of the Hood while operating is approximately 65 dB.
•DO NOT block or obstruct the discharge area around the exhaust Air Diverter on the Hood top. Doing so may
restrict airflow through the Hood and significantly reduce capture performance. It is recommended that a
sufficient clearance be maintained between the top of the Air Diverter and ceiling to facilitate easy movement,
should the need arise, or for removal of the Hood when directly mounted to the appliance.

2-04.1. Electrical Connections
• All electrical installation should be performed by a qualified electrician or technician.
•I mproper installation or poor work practices could result in serious injury or even death, damage to equipment or
property, and void the warranty.
!WARNING
1. Install appropriately sized circuit breaker in main breaker panel.
2. Remove rear Service anel and hole plugs as needed, see Section 2-04.2.
3. Connect appropriately sized wire from breaker panel to Hood. Allow sufficient cord length to allow movement of
unit, if necessary, for future service or maintenance. Installation materials, such as wire, flexible conduit and
connectors shall be supplied by customer.
4. Connect Hood and Appliance wiring to Hood terminal blocks. Adhere to all local electrical code. Several different
wiring configuration options are possible depending on specific installation situations. See Section 2-04.2 for
specific details of these options. If you have questions call Giles Technical Services (800.554.4537) for
assistance.
5. Replace all anels and Covers.
6. Turn main breaker ON.
7. lace the Hood ower Switch in the ON position; Hood fan will start.
If the I S Option is installed in the Hood, press and hold the “ ush to Start” button on the Control anel for
approximately 5 seconds to start the fan.
If using remote contactor for the installation (Section 2-04.2), it must be a UL Listed, definite purpose, AC
resistive, air heating type contactor, suitably sized for the appliance load. Installation and connections shall be in
accordance with the National Electric Code, NFPA 70.
