af er referred o as “Giles”) food service equipmen and par s purchased new from an au horized Giles rep-
resen a ive are warran ed as o defec s in ma erial or workmanship for a period of wen y-four (24) mon hs
from he da e of ins alla ion, provided, however, ha wi h regard o labor cos s in connec ion wi h his war-
ran y, see below. All ins alla ions mus be made by a qualified ins alling agency in accordance wi h all appli-
cable codes and/or regula ions in he jurisdic ion in which ins alled. Limi ed warran y coverage is ex ended
only o he original owner and is void if he uni is resold.
• During he Limi ed Warran y period, Giles will replace or recondi ion, a i s fac ory, any par or par s of his
uni which Giles inspec ors judge defec ive, provided he uni has been properly ins alled, subjec ed o nor-
mal usage, and opera ed and main ained in accordance wi h specified procedures. This Limi ed Warran y
does no cover cosme ic damage, and damage due o ac s of God, acciden , misuse, al era ion, negligence,
abuse, or use of unor hodox repair me hods. All par s replaced under his Limi ed Warran y carry only he
unexpired erm of his Limi ed Warran y. Limi ed Warran y service may be furnished only by an au horized
Giles service represen a ive.
• If Limi ed Warran y service is reques ed, Giles will dispa ch fac ory-au horized service represen a ives o
inspec , repair, recondi ion, or replace uni s of i s manufac ure wi h such labor being rendered wi hou cos
o owner for wen y-four (24) mon hs from he da e of ins alla ion. O herwise, service, including labor and
ranspor a ion charges or o her expenses, in connec ion wi h he removal or ins alla ion of any par or par s

•Failure to use Giles OEM replacement parts and Giles OEM filters may void this Warranty.
• Giles reserves he righ o change or improve i s equipmen and/or par s in any way wi hou obliga ion o
al er such equipmen or par s previously manufac ured.
• Giles makes no fur her warran ies, express or implied, including implied warran ies of merchan abili y or fi -
ness for a par icular purpose, and has no o her obliga ion or liabili y no specifically s a ed herein.
• Repair or replacemen as provided under his limi ed warran y is he exclusive remedy. Giles shall no be
liable for any inciden al or consequen ial damages for breach of any express or implied warran y on his

Safety Overview:
The instructions contained in this manua have been prepared to aid in earning the proper procedures for insta ing,
operating and servicing Giles Model OVH-10 & PO-VH Ve tless Recirculati g Hoods.
Throughout the manua , safety precautions are identified by a hazard a ert symbo and key words such as DANGER,
WARNING or CAUTION. A ert information precedes the tasks to which it app ies. Suggested, recommended, or
other noteworthy information is identified as NOTES, or wi be noted as IMPORTANT!. Additiona y, certain words
are used to indicate a specific meaning, or to add emphasis as fo ows:
Shall: understood to be mandatory.

May: understood to be permissive.

For your safety, p ease observe the fo owing precautions when operating or servicing the Model OVH-10 or PO-VH
Ve tless Recirculati g Hoods. Adhering to the fo owing important safety information wi he p to prevent persona
injury and/or damage to the equipment.
• Before c eaning or performing maintenance, p ace power switch in the OFF position. Unp ug power cord or turn
OFF power at the e ectrica pane supp ying power to remove a power from the app iance.
• Fai ure to have the Power switch in the OFF position during servicing or when rep acing fi ters, cou d resu t in
equipment damage, e ectrica shock and/or serious persona injury.
• DO NOT wash down the Hood interior or exterior with water from a spray hose.
• Fai ure to comp y with DANGER notices wi resu t in serious injury, even death; or damage to equipment and/or
property and may void the factory warranty.
• Prior to insta ation, consu t a qua ified e ectrician to ensure that insta ation wi comp y with a e ectrica
requirements and codes.
• The u it must be adequately a d properly grou ded. Improper grou di g may result i electrical shock to the
user. Always refer to local electrical code to e sure proper grou di g of this or a y other electrical equipme t.
• Check the rati g label o the u it to determi e the proper power supply required. Always co sult with a
electricia , or other qualified service tech icia , to e sure that circuit breakers a d wiri g are of sufficie t rati g
a d gauge to power this equipme t. A Wiri g Diagram has bee provided with the u it as a aid for
tech icia s. The u it must be i stalled a d electrically grou ded i accorda ce with local codes, or i the
abse ce of local codes, i accorda ce with the Natio al Electrical Code, NFPA 70.

• Exercise care when removing wooden crate framework and the unit from shipping pa et.
• DO NOT operate the app iance, un ess its components and their intended functions are fu y understood (see
Sectio 3). Once you have read and fu y understand Sectio 3, c ose y fo ow the instructions presented in this
Operations Manua in order to prevent equipment damage, or ma function.
• This app iance is not intended for use by persons (inc uding chi dren) with reduced physica , sensory, or menta
capabi ities, or ack of experience and know edge, un ess they have been given adequate instruction and/or
supervision concerning its use by a person responsib e for their safety. Chi dren shou d not be a owed to p ay
with, or around, this app iance.
• When working in the kitchen environment, take necessary precautions to avoid injury due to HOT cooking
app iances, utensi s, too s, etc. As app icab e, a ways wear therma protection, such as oven mitts or g oves,
when hand ing hot pans, utensi s or foods.
• Fai ure to comp y with CAUTION notices may resu t in minor to moderate persona injury, damage to equipment
or property, and potentia y void the warranty.
• Components exposed on the Contro Pane surface are impact-sensitive. To avoid damage and maintain proper
operation, exercise care to avoid damage and maintain proper operation.
• Hand e the E ectronic Air C eaner (E.A.C.) Ce carefu y. DO NOT bend the co ection p ates (fins) or break any of
the ionizer wires. Doing so wi significant y reduce the performance of the EAC and can eventua y cause power
to the app iance beneath the Hood to be shutdown.
• DO NOT attempt to dry the E.A.C. Ce after c eaning by insta ing it and running the hood or by running the
app iance be ow the hood to generate heat for drying. This cou d potentia y damage the EAC Power Supp y
causing improper operation and voiding the warranty. NEVER PLACE A WET E.A.C. CELL INTO THE HOOD.
• When c eaning the app iance:
- DO NOT steam c ean.
- DO NOT use products containing ch orine, or other corrosive chemica s.
- DO NOT use abrasive products, stee woo or scouring pads.
- DO NOT use oven c eaners.
• DO NOT a ter, add attachments, or otherwise modify this equipment!

foodservice equipment.
▪To c ean difficu t surface areas, having excessive bui d-up of grease residue, GILES recommends using a mi d, bio-
degradab e, non-toxic degreasing c eaner such as Simple Green®.
▪GILES assumes no responsibi ity in regard to code comp iance for insta ation and use of Vent ess Recircu ating
Venti ation equipment. The customer is responsib e for obtaining a of the necessary approva s from authorities
having jurisdiction concerning use of this equipment.

• Indicator lights show the status of various Hood syste s: Electronic Air Cleaner (EAC), power to the appliance,
and filters issing or clogged warnings.
3-Stage Filter System
• Baffle Filter: Captures and re oves large grease particulate fro the air strea .
• Electronic Air Cleaner (E.A.C.): Captures & collects s oke and fine grease particulate fro the air strea . A
HEPA Filter version of the Hood is available as an alternative.
• Charcoal Filter: Helps to eli inate cooking aro as fro the recirculated air.
Multiple Mou ti g Optio s
• For universal application, the Hood is suspended fro the ceiling above practically any listed and approved
appliance.
• Nu erous direct-mount Hood Skirts have been engineered for direct- ounting Hood onto a wide variety of
popular oven akes and odels.
PUSH-TO-START Power Switch
• Hood ust be restarted by pressing switch after any power interruption. Meets code require ents for certain
jurisdictions.
Pri arily constructed of Series 430 Stainless Steel. Certain internal parts are of alu inized ild steel.
•Fire Suppressio Plumbi g: The Hood can be factory pre-plu bed for connection to an approved fire
extinguishing syste . Includes piping, discharge nozzles, detector link brackets, and cable conduit. Purchase,
i stallatio a d field set-up of a listed fire exti guishi g system is the Customer’s respo sibility a d is ot
i cluded with the purchase; must be provided a d istalled by a authorized A sul®Dealer.
•Power Plug & Receptacle (OVH-10 ONLY):OVH-10 Hood can be equipped with a power cord and plug, along with
an interlocked appliance power receptacle. Makes unit co pletely “plug & pla ”.

1. For ce l ng mount nstallat ons, be certa n that overhead structure s suff c ent to support the we ght of the
Hood.
2. Any obstruct on of the Hood’s exhaust a r outlet must be avo ded. The Hood s equ pped w th an a r d verter
wh ch d rects exhausted a r to the rear and s des. Zero [0”] clearance from top of d verter to ce l ng or
overhead obstruct on s allowed, however DO NOT block or obstruct the area around d verter open ng. Do ng
so can s gn f cantly mpact Hood capture, wh ch may result n unsat sfactory performance.
Giles recommends to have some clearance to allow for future moving, service or maintenance.
Th s sect on summar zes the procedures necessary to nstall your new PO-VH or OVH-10. Before nstall ng th s
equ pment, please thoroughly read the contents of th s manual and any accompany ng nstallat on nstruct ons.
Before nstall ng th s equ pment secure all necessary approvals from appropr ate author t es hav ng jur sd ct on
(electr cal/mechan cal, f re marshal, health department. etc.)
Follow ng these procedures and nstruct ons w ll help to ensure a safe and proper nstallat on.
DO NOT ALTER, ADD ATTACHMENTS OR OTHERWISE MODIFY THIS EQUIPMENT.
IMPORTANT!:
▪In some cases, it may become necessary to consult with a HVAC contractor and have them confirm that proper
room air exchange is occurring, and that the capability of current on-site air conditioning systems is sufficient
to handle the heat load of any additional cooking equipment.
▪Exhaust vent lat on s recommended for areas n wh ch rec rculat ng hoods are be ng operated. Giles
recommends at least 50 CFM a rflow per l near foot of hood space. Th s amount could vary based on local codes
and s te-spec f c nstallat on requ rements.
▪The sound level of the Hood when operat ng s approx mately 65 dB’s.
2. Installation
2.01 Lo ation

Un t s sh pped on a wooden pallet, secured by h gh-tens le plast c strapp ng and wrapped n mach ne-appl ed
stretch wrap. In most cases a wooden framework s bu lt around the un t for added protect on. Unpack un t as
follows:
1. Pos t on rece ved pallet n an area that prov des adequate space for unpack ng.
2. Remove the plast c stretch wrap, strapp ng and other packag ng mater als as necessary.
3. Carefully remove any wooden supports and/or framework that m ght be attached.
4. Locate and secure the envelope conta n ng Warranty Card, Operat on Manual, Mount ng Instruct ons and any
other hardware prov ded for nstallat on. In some cases, add t onal mount ng components may be wrapped
separately and packed w th the Hood (usually ns de the Soak Tank) ... secure any such tems and reta n for later
use.
5. Secure the sta nless steel Soaking Tank and set as de. Th s tem w ll be requ red when clean ng the Electron c A r
Cleaner Cell (E.A.C.). Often add t onal components requ red for nstallat on w ll be packed ns de Tank; be sure
check and remove.
HEPA Filter model Hoods will not ha e a Soaking Tank included.
IMPORTANT!
If there s ev dence of damage to the un t, or any of the accompany ng tems, mmed ately and thoroughly
nspect the un t and all components. Not fy the fre ght company of all damages. Generally, t s the
respons b l ty of the Customer to f le and negot ate fre ght damage cla ms w th fre ght carr ers.

2.03 Ele tri al Spe ifi ation
• Food service equipment must be properly grounded in accordance with local code, or in the absence of local
code, with the National Electrical Code, ANSI/NFPA 70.Improper grounding may result in electrical shock to
Users. Check local electrical code to ensure that proper grounding techniques are used.
• Always consult a certified electrician, or other qualified service technician, prior to installation to ensure that
electrical circuits are of sufficient rating for the Hood and Appliance load.

death, equipment or property damage, and could void the warranty.

2.04.1 Routing of Power Supply Wiring
1. Conf rm that the appropr ate c rcu t breakers are nstalled n the ma n electr cal panel supply ng power. Refer
to table n Section 2.03.
2. Connect appropr ately s ze w re at the ma n breaker. As appl cable, allow enough w re length so the un t may
be moved for clean ng and serv c ng.
3. Remove the Hood Serv ce Panel, see to Figure 2.04.1. Route the power w res to the un t n accordance w th
all local bu ld ng and electr cal codes.
4. If Hood s to be nstalled above a 208/240V appl ance connect appropr ate ncom ng power w res to the
proper term nal blocks. Use appropr ate stra n rel ef connectors or condu t f tt ngs (not provided) for rout ng
w r ng through knock-out holes. See Section 2.04.2 and the Label aff xed to Hood Serv ce Panel.
If the Un t s to be nstalled above a 480V appl ance, see Section, 2.04.3 and the Label aff xed to the Hood
Serv ce Panel.

P p ng and condu t are stubbed out and ready for connect on of an approved f re ext ngu sh ng system.
Purchase of the actual system, field installation, testing and certification must be performed by an authorized
Ansul® Distributor or Dealer and is the responsibility of the Customer.

To comply with the Hood listing, the fire extinguishing system used must be the Ansul R102 Restaurant Fire
Suppression System. Purchase, field installation, set-up and testing of the system is the responsibility of the
Customer and is not included with Hood purchase. All work must be performed by a an authorized Ansul®
Service agent.
