Unpacktheelectricfryerimmediatelyafterreceipt.Ifthemachineisfoundtobedamaged,savethepackaging
materialandcontactthecarrierwithinfteen(15)daysofdelivery.ImmediatelycontactGlobeoryourlocaldealer
oftheequipment.You have no recourse to damage after fteen (15) days.

PROPER GROUNDING
THIS MACHINE IS PROVIDED WITH A THREE-PRONG GROUNDING PLUG. THE OUTLET TO WHICH THIS
PLUG IS CONNECTED MUST BE PROPERLY GROUNDED. IF THE RECEPTACLE IS NOT THE PROPER
GROUNDING TYPE, CONTACT AN ELECTRICIAN. DO NOT, UNDER ANY CIRCUMSTANCES, CUT OR
REMOVE THE THIRD GROUND PRONG FROM THE POWER CORD OR USE ANY ADAPTER PLUG (Fig. 5-1
and Fig. 5-2).

Note: Double Fryers (i.e. PF32E) have individually controlled heating elements, and dual power supply
must be provided.
INSTALLATION AND ASSEMBLY OF THE ELECTRIC FRYER
1. Readthismanualthoroughlybeforeinstallationandoperation.DONOTproceedwithinstallationand
operationifyouhaveanyquestionsordonotunderstandanythinginthismanual.Contactyourlocal
representativeorGloberst.
2. Removetheelectricfryerfromthebox.Onceyourfryerhasbeenremovedfromthe
packaging,becertainthatallprotectiveplasticsandresiduesareremovedfromallsurfaces.
3. Inspectthefryertoensureallpartshavebeenprovided.
4. Selectalocationforthefryerthathasalevel,solid,nonskidsurfacethatisnonammableandaway
fromwaterhazardsorsinks,andisinawell-lightedworkareaawayfromvisitors.
5. Installthefryerinitslocationwithatleast6''betweentheapplianceandthewallsorotherobjects.
6. Properconnectionsandpowersupplyareessentialforefcientperformance.
7. Makesurethatyourfryerisinstalledinawellventilatedarea.Alsomakesuretotakecareinplacingthefryer
inanareathatisopenandnotunderneathacabinetoranyotheroverhangotherthanaventhood.

COMMISSIONING:
Commissioningofyournewelectricfryerisoftheutmostimportance.Commissioningisthethoroughand
methodicaltestingoftheequipment,subsystems,andsystemstoensurethatthenalproductfunctionsproperly
andsafelyattheworksite.Byidentifyinganypotentialproblems(i.e.:equipmentlocation,ventilation,localre/
electricalcodes,installation,operatortrainingandcertication)priortoequipmentbeingplacedintoservice,costly
outagesandpotentialdamagesmaybeavoided.

InstallfeetbyscrewingeachfootintothethreadedopeningsonthebottomoftheFryer.Failuretousefeetwillvoid
warrantyandcouldcauseunsafeconditions.
Leveling
Levelunitbyadjustingthefourfeetandtightensecurely.Theadjustablefeethaveanadjustmentofoneinchfor
lineupwithotherCommercialProcountertoplines.Checkthefeetregularlytoensuretheyaretight.Alsoensure
theworksurfacesofthebench/tablethefryerssitsonarekeptcleanandmaintainedtoavidanyaccidents.Ensure
thebench/tableisadequatelybuilttoholdtheweightofyourfryer.Empty(withoutoil/shorteningadded)PF10E=
16.8lbs,PF16E=19.2lbs,PF32E=29.2lbs.
IMPORTANT:
Suitable Pans:Useonlythefrybasketsandfrypotprovidedwithyourfryer.DONOTsubstitutethe
basketsorfrypotwithanyothercontainer.
Thefryerelectricalheadhastwolocatingbuttonsthatneedtobealigned,(seeg7-1).
Ensuretheoilpanisplacedintothefryerbodyevenly,andlowertheelementintothe
fryingpotbayfollowingthe2simplestepsin(g.7-2andg.7-3).PointsA,cradlesand
guidestheheadtothefryerbody.
Easypushbuttonstolockandunlocklocatedontheoperatorright-side;liftand
lowerheatingelementforcookingorcleaning.PointAisthecradlepinguide.PointB
determinesthepositionoftheheadineithertheworking(DripOil)positionorcleaning
(RemovePot)position.
PlacetheelectricalheadintothesupportingcradlebracketsplacingPointsAinto
theelementcradlepinguide;thengentlypullthefryerelectricalheadforwardto
lockPointBintotherstposition.
PointBallowsyoutokeepthefryerheadintheraised(DripOilorRemovePot)
position,orbypushingand/ordepressingthebuttonandholdingtheinsulated
elementhandle,youcanalsolowertheelementintothepananditsoperating
position.
These steps can be repeated in reverse for cleaning purposes.
NOTE:PointBhastwoleveloptions:Fullyraised90°(RemovePotposition),allows
pantoberemoved;raisedto75°(DripOilposition),allowsforcleaninganddraining
oil/fatfromtheelement.
Makesurethefryerisoff.Itisnowreadytobelledwiththeappropriateoil/
shorteningrequired.Forshortening,itisadvisedtobreakdownrstlytoavoid
overheatingoftheelement.
NOTE:Inthe“Off”position,thefryerpotcanbelledwiththeheatingelement
upordown.Oncethepotisfullwithappropriatecookingoil,carefullylowerthe
heatingelementintothepotifup.Ensuretheelementisalwayssubmerged.Once
theelementissubmerged,thefryercanthenbeturned“On”.Seetheoperating
instructioninthismanualtoproperlystartandoperatortheelectricfryer.

• Unplugunitwhennotinuseandbeforecleaning.Allowunittocoolbeforemovingorcleaning.
• Theuseofanyaccessoriesorcookingpans,whicharenotrecommendedbythemanufacturer,maycause
reorinjuries.
• Donotuseoutdoors.Forindooruseonly.
• Donotallowpowercordtohangoveredgeoftableorcounter,ortotouchhotsurfaces.
• Donotplacethefryerin,on,ornearopenames,electricburners,heatedovens,orotherhigh
temperatureequipmentorsurroundings.
• Todisconnect,turnoffallcontrols,thengentlyremoveplugfromwalloutlet.
• Donotusefryerforanythingotherthancooking,withsuitablefryerbasket(s)andsubversion.
• Donotimmersefryerinwater,asthiswillcausepermanentdamagetounit.
• DoNOTpull/yankonanycordtodisconnect
• Thefryerdoes notcontainanyuser-serviceableparts.Globedealersorrecommendedqualiedtechnicians
shouldcarryoutrepairsifnecessary.Donotremoveanycomponentsorservicepanelsonthisproduct.
• Globetakeseverycaretoensurethatallproductsaresafe.Steelcuttingproceduresusedtomanufacture
theseitemsresultsinsharpedges.Thesesharpedgesareremovedtothebestofourabilityhoweverwe
insisttheoperatortakescarewhenincontactwiththispieceofequipment.
• Duringoperationthefryerreachesveryhightemperaturesintheoilpan,inturn,heatingthestainlesssteel
surfaces.Takeextremecarewhenoperating.
• BeforeCleaning–Switchoffthepoweranddisconnectfromthemainsourcewhilstcleaning.Unitmustbe
unpluggedandcooltotouch.Allowtimefortheoil/shorteningtocoolaswell;theunitwillbetoohottohandle
immediatelyafteruse.

• ALWAYSBEPREPAREDincaseofare,makesuretohavethecorrectratereextinguishernearby.
DO NOT attempt to spray or pour water on a fryer. This is EXTREMELY
dangerous as water and oil do not mix.
Operating Instructions
Operating the Electric Fryer
Ensureallfryerspartsarealwayscleanedthoroughlybeforeuse.Detergentscanbeusetobreakdown
cookingoilandensureadequatecleaning.Forfurthercleaninginstruction,refertothecleaningsectionofthe
manual.
Fryer Operation:
1.Fillthepanwithoil,fatorshorteninguntillevelindicatorlineisreached.
A. Yourchoiceofoil/fatwillinuencethequalityofproductscookedinthisfryer.Itwillalso
inuencethelifeoftheoil/fat.Pleasebesuretoregularlychangeoil/fattomaintainbestcooking
resultsandtoavoidthebreakdowndownofoil/fatwhichwilleventuallyleadtotheoiligniting.
-Anon-goldencolorordark,burntareasonfoodmayindicatethattheoil/fatneedstobechanged.
B. Ifsolidshorteningisused,packthefataroundtheheatingelementandsetthethermostatbetween
200°Fand250°F.Thiswillensurethefatheatsslowlyandcoverstheelement.Failuretodoso
willtriptheHi Limitprotectionswitch.
C.Itisrecommendedthatforpreparationheatup,eachday,fatisbroughtuptotemperaturesteadily,
particularwhensolidsfats/shorteningisused.
D. Ensureoil/fatlevelsaremaintainedaccordingtotheindicationmarksinthepan.Overllingtheoil
panswillresultinoverowfromsurgeboilingoncefoodproductisloweredintothepanfor
cooking.
SURGE BOILING CAN RESULT IN PERSONAL INJURY AND PROPERTY DAMAGE.
PLEASE TAKE CAR WHEN COOKING WITH OIL
2. Afterproperoil/fatlevelsareobtained,makesuretheheatingelementisloweredintotheoil,turntheunit
“On”andsetthethermostatdialfordesiredcookingtemperature.
-Whilepreheating,theamberlightwillstayon.Whentheselectedtemperatureisreached,the
indicatorlightwillgoout.
3. Oncetheoil/fathasreachedthedesiredtemperature,thebasketswithfoodproductcanbelowered
carefullyintotheoil/fat.
4. Onlyllthebasketshalfwaytoensurethebestcookingresultsandtoavoidsurgeboilingthatcanresult
ininjury.
Thefryeristhermostaticallycontrolledandwilloperateaccordingtothedesiredtemperaturesetting,
ensuringtemperaturesaremaintainedthroughcookingcycles.

Thisfryerdoesnotcomeequippedwithatimer;makesuretoobserveyourfryerwhilecookingeachproduct
everytimeorusearegularcookingtimer,recordandrepeatyourdata
forcookingofyourfoodproducts.
5. Oncethefoodiscooked,carefullyliftthebasketsfromtheoil/fat
andallowthebasketstorestonthesupportsasshowninFig.10-1.
Thiswillallowanyexcessoil/fattodrainbackintotheoilpan.
NOTE: Ifthetemperatureofthefatshouldgettoohighorifthe
elementsareleft“ON”intheraisedposition,orwhilstcleaning,the“HI
LIMIT”controlwillturnofftheunit.Ifthisoccurs,turnthethermostatto
“OFF”position,allowthefryertocoolandpresstheresetbuttononthe
backofthecontrolbox.Normaloperationcanberesumed.Fig.10-2
NOTE: IftheHiLimitcontinuallyturnsofftheunit,pleaserefertothe
troubleshootingguide.
Low Usage / Between Frying
IMPORTANT: Turnfryertemperaturedownto200°Fbetweenproductfryingtoavoidburningoilandcausing
thefryertobemanuallyreset.
Fornightlyshut-downornon-usestorage,makesure
toturntheunit“Off”anddialthethermostattothe“Off”
position.
Letthefryerandoilcool.
Oncecool,thefryermaybenecessarytocoverthetop
ofthefryerwithafryercover/nightguard.Fryercovers
areanaccessorythatcanbepurchasedseparatelythrough
yourfryersupplierordealer.

Helpful Hints - Oil Deterioration
Signs of Oil Deterioration:
• Oildarkenswithusebecausetheoilandfoodmoleculesburnwhensubjectedtohigh/prolongedheat.
• Themoreanoilbatchisused,thesloweritwillpour.Oilviscositychangesbecauseofitsmolecularstructure.
• Looseabsorbentparticlesaccumulateassedimentatthebottomofthefryerstoragecontainerorare
suspendedintheoil.
• Whensmokeappearsontheoil’ssurface(beforethetemperaturereaches190°C/375°F)theoilinthefryer
willnolongereffectivelydeepfryfoodproducts.
• Whentheoilinyourfryeromitsafoulodororiftheoilsmellslikethefoodfried/cookedinit,theoilshould
becarefullydiscarded
How to Safely Reuse oil:
• Strainoilthroughafewlayersofcheeseclothtocatchanyfoodparticles.Onlydothisoncetheoilhas
cooled.DONOTattempttodothiswhentheoilisinuseordirectlyafter.
• Shakeoffexcessbatterfromfoodbeforeputtingintothefryer.Thiswillreducetheamountofexcessfood
particles.
• Turnofftheheattothefryeroncecookingiscomplete.Exposingoiltoprolongedheatacceleratesthelifeof
theoil.
• Storeoilinacool,darkplace.Oncefryersareoffandhavecooled,coverthefryerwithaguard/cover.
• Avoidironorcopperpotsorpansforfryingoilthatistobereused.Thesemetalsacceleratethelifeoftheoil.

• ALWAYSunplugandallowtheelectricfryerandtheoiltocoolbeforecleaning.
• DO NOTuseanycleaninguidsthatcanbeharmfultoyou,othersaroundyou,ortheenvironment.

RECOMMENDED CLEANING
CLEANING & MAINTENANCE
Thisfryerwasdesignedforeaseofdisassemblyandcleaning.Thefryershouldbecleanedaftereachday’s
operation;however,itmayrequirecleaningmoreoften,dependingonthevolumeofproduction.Acleanfryer
performsbetterandmoresafely,produceshigherqualityproductandreducesmaintenancecosts.Whencleaning,
alwaysconsidersafetyrst.Ensureallpowerisoffandtheunithasbeendisconnectedfromthepowersource.
Allowtheelectricfryerandtheoiltocoolbeforecleaning.
1.Turnthethermostattothe“OFF”position,switchtheon/offswitchoff,anddisconnectfromthepower.
2.Allowtheoil/fattocooltoasafehandingtemperature.
3.Removefrybasketsandclean,usingstandarddishwashingdetergent.Besuretorinsethoroughly.
4.Usingtheinsulatedhandleontheelementassembly,raiseheatingelement(s)totherststop,allowingtheoil/fat
todrainforseveralminutesandthenraiseheatingelement(s)tothefullraisedposition.Besurethatthelatch
hasproperlyengaged.
5.Usingglovesorpotholders,removethefrytankanddrainthefat.Dependingontheoil/fatquality,thiscaneither
bereplacedoflteredforfurtheruse.
6.Fordetailcleaning,theelectricalheadcanbeentirelyremovedfromthefryerbody.
NOTE:Thebody,basketsandpansaredishmachinewashableorcanbesubmergedinwaterforcleaning.Ensure
thoroughdryingbeforereassembling.
7.Duringcleaningpleasebetakecaretoavoidanydamagetotheelementsorswitchontheelectricalhead.
-Regularlycheckthepowercordforanydamage.
-Forassistanceisdisassemblyorreassemblyofthefryerduringandaftercleaning,refertotheinstallationsection
ofthismanual.
NEVERrunwaterovertheunit.
AnAuthorizedServicershouldperformanyservicing.
Cleaning Instructions
NOTE: During the cleaning process, check the heating
element for crumbs/debris. If crumbs/debris are caught in
the heating element, it could give the thermal cut out a false
reading and cause the unit to shut down.
