• Subject to the te ms and conditions of this Limited Wa anty as he ein stated, Equipment and Pa ts
pu chased new, f om an autho ized ep esentative, a e wa anted by the Manufactu e as to defects in
mate ial o wo kmanship fo a pe iod of twenty-fou (24) months f om the date of installation, p ovided,
howeve , that with ega d to labo costs in connection with this wa anty, see below. All installations must
be made by a qualified kitchen equipment se vice agent in acco dance with all applicable codes and/o
egulations in the ju isdiction in which installed. Limited wa anty cove age is extended to the o iginal owne
only and is void if the unit is esold.
• Du ing the Limited Wa anty pe iod, units will be eplaced o econditioned, at manufactu e ’s facto y, any
pa t o pa ts of this unit which manufactu e ’s inspecto s judge defective, p ovided the unit has been
p ope ly installed, subjected to no mal usage, and ope ated and se viced p ope ly. This Limited Wa anty
does not cove cosmetic damage, and damage due to acts of God, accident, misuse, alte ation, negligence,
abuse of the unit o the use of uno thodox epai methods. All pa ts eplaced unde this Limited Wa anty
ca y only the unexpi ed te m of this Limited Wa anty. Limited Wa anty se vice may be fu nished only by
an autho ized se vice agents.
• If Limited Wa anty se vice is equested, facto y-autho ized se vice ep esentatives will be dispatched to
epai , econdition, eplace o inspect subject units with such labo being ende ed without cost to owne fo
twenty-fou (24) months f om the date of installation. Othe wise, se vice, including labo and t anspo tation
cha ges o othe expenses, in connection with the emoval o installation of any pa t o pa ts supplied unde
this Limited Wa anty, a e specified on the o iginal sales cont act between the pu chase and the autho ized
ep esentative.
• Failure to use manufacturer OEM replacement Parts and Filters may void the factory warranty.
• The Manufactu e ese ves the ight to change o imp ove its equipment and pa ts in any way without
obligation to alte such equipment o pa ts p eviously manufactu ed.
• The Manufactu e makes no fu the wa anties, exp ess o implied including implied wa anties of

Safety Overview
The ins ruc ions con ained in his manual have been prepared o aid you in learning he proper procedures for
ins alling, opera ing and servicing your new KD-EAL Series Electric Fryer.
Throughou his manual, safe y precau ions are iden ified hrough he use of he safe y aler symbol and hree

Specific Safety Precautio s
• Prior o ins alla ion, consul a qualified elec rician o ensure ha ins alla ion will comply wi h all elec rical
requiremen s and codes.
• The u it must be adequately a d properly grou ded. Improper grou di g may result i electrical shock to the
user. Always refer to local electrical code to e sure proper grou di g of this or a y other electrical equipme t.
• Check the rati g label o the u it to determi e the proper power supply required. Always co sult with a
electricia , or other qualified service tech icia , to e sure that circuit breakers a d wiri g are of sufficie t rati g
a d gauge to power this equipme t. A Wiri g Diagram has bee provided with the u it as a aid for
tech icia s. The u it must be i stalled a d electrically grou ded i accorda ce with local codes, or i the
abse ce of local codes, i accorda ce with the Natio al Electrical Code, NFPA 70.

•DO NOT for a y reaso sta d or step o to the top of the applia ce, a d DO NOT allow other
perso s to do the same. Cooking oil in he fry po can be in excess of 330°F (166°C) and bodily
con ac will cause ex remely serious injury. Covers used o cover cooking va s/po s are no
designed o, and WILL NOT, suppor he weigh of a person.

• The appliance mus remain in an uprigh (ver ical) posi ion.
• Exercise care when removing wooden cra e framework, and he uni from shipping palle .
• DO NOT opera e he appliance, unless i s componen s and heir in ended func ions are fully unders ood (see
Sectio 3). Once you have read and fully unders and Sectio 3, follow he manual ins ruc ions precisely in order
o preven equipmen damage or malfunc ion.
• Par s of he Fryer become very HOT during opera ion! Tempera ures inside he cabine may exceed 150°F
(65.5°C). Exercise cau ion when opera ing, loading/unloading food produc s, and cleaning/servicing. I is
recommended ha hermal pro ec ive gear (gloves or mi s) be worn while a ended he appliance o avoid
personal injury.
• Before opera ion, be sure he Fryer is posi ioned in a s able, safe loca ion wi h he cas ers in he locked posi ion.
Some jurisdic ions may require special anchoring for his ype appliance; check local code.
• Allow he appliance o cool down a leas 15-20 minu es before cleaning or servicing.
• This appliance is no in ended for use by persons (including children) wi h reduced physical, sensory, or men al
capabili ies, or lack of experience and knowledge, unless hey have been given adequa e ins ruc ion and/or
supervision concerning i s use by a person responsible for heir safe y. Children should no be allowed o play
wi h, or around, his appliance.

accordance wi h governing heal h regula ions.

2. Installation
This section provides a summary of procedures for proper insta ation of the Mode KD-EAL Series E ectric Fryer. To
prevent persona injury or equipment damage, p ease ensure these steps and procedures fo owed precise y.
Please retain this Manual for future reference.
2.1 Location
1. Keep the app iance and surrounding area free and c ear of combustib e materia s ... 3” (7.6 cm) minimum
c earance.
2. A wiring diagram for this app iance has been provided and shou d be attached inside the cabinet door. Be
sure that it corresponds with the Fryer mode and e ectrica specifications (vo tage, phase, Hz).
3. Ensure that the app iance is e ectrica y grounded in accordance with oca code, or in the absence of oca
code, with the current National Electrical Code, ANSI/NFPA 70.
4. A ow adequate space for future servicing and proper operation of the app iance. Provide adequate
venti ation in the operating area, as required.
5. A ways consu t with a certified e ectrician, or other qua ified service technician, prior to insta ation to be
certain that the vo tage and amp rating of the avai ab e e ectrica supp y are adequate to power the
app iance.
6. Make sure the unit is insta ed in a stab e position and wi not unintentiona y move. The unit features
ocking casters ... be sure they are ocked. Some jurisdictions may require specia anchoring of the unit.
7. This app iance is to be insta ed, used and maintained in accordance with the Standard for Ventilation
Control, and Fire Protection of Commercial Coo ing Operations, NFPA 96.

The app iance is shipped on a wooden pa et; secured with high-tensi e p astic strapping and enc osed by a wooden
framework. The entire unit is wrapped in machine-app ied stretch wrap.
•The app iance must remain in an upright (vertica ) position during the unpacking process.
•Exercise care when removing the wooden framework from around the unit.
•Exercise care when ifting and moving the unit.
•Fai ure to comp y with these CAUTION notices may resu t in minor or moderate injury, equipment or property
damage, and void the factory warranty.
1. Carefu y cut and remove the p astic shipping wrap and strapping. Remove and set aside a auxi iary items
packed with the unit. Some items are packed inside the Fi ter Pan, which is inside the app iance cabinet.
Remove and p ace a of these items in a safe p ace for future use.
2. Use safe work practices, and appropriate too s, to remove the wooden crating from around the unit.
3. Carefu y remove the app iance from the shipping pa et. The unit is very heavy and great care shou d be
taken when ifting and moving it to prevent persona injury or damage to the app iance or property. A ways
use appropriate hand ing equipment and sufficient manpower.
IMPORTANT!
If crate exhibited evidence of damage or mishand ing, immediate y inspect the unit and a accessory items and
notify the freight carrier of any damages. Typica y it is the purchaser’s responsibi ity to fi e and negotiate
freight damage c aims.

2.3 Electrical Require ents
•Fryers must be properly grounded. Improper grounding may result in electrical shoc to the user. Always refer
to local electrical code to ensure that proper grounding techniques are used for this or any other electrical
equipment. Always consult with a certified electrician, or other qualified service technician, to ensure that the
electrical circuit is of sufficient rating for supplying power to this appliance.
•Fryers are avai ab e from the factory for the various vo tage, phase and Hz shown in Table 2.3 be ow. To determine
the correct power supp y for the app iance, check the seria abe found on the rear pane of the Fryer, or inside the
cabinet.

2.4 Electrical Connections
1. As needed, insta appropriate y sized circuit breaker in e ectrica service pane . See Table 2.3.
2. Connect 1-1/4” f exib e conduit from e ectrica pane to the Fryer. Attach conduit to rear of the Fryer with
appropriate fittings. A ow enough ength so that the Fryer can be moved for c eaning and servicing. See
Figure 2.4.1.
3. Open Fryer Cabinet Door and remove Service Entrance Box Cover. See Figure 2.4.2.
4. Route appropriate y sized power wires from the circuit breaker in the service pane through the cabinet side
wire-run to the front Service Box.
5. Connect power wires to the appropriate Termina B ocks in the Service Entrance Box. See Figure 2.4.2.
6. Reinsta Service Entrance Box Cover and c ose the cabinet door.
