The Magimix Deep Fryer
The Magimix Stainless Steel Deep
Fryer is built to professional quality.
It has two stainless steel bulb thermostats
for very accurate temperature control,
ensuring cleaner, crisper food.
Unlike a conventional domestic
deep fryer, the Magimix fryer has a cool
zone between the heating element and the
bottom of the oil reservoir so the oil
remains cleaner and lasts for up to 30
fryings - twice as long as ordinary fryers.
It’s also easy to clean; just put it in
the dishwasher.

ELECTRICAL INSTRUCTIONS
for UK and the Republic of Ireland
WARNING : a plug with a bared flexible cord is hazardous if engaged in a live
socket. If the fitted plug has been cut from the power supply cord, it should be
destroyed and replaced with a three pin plug in accordance with the following code :
BLUE: neutral
BROWN: live
GREEN/YELLOW: earth
The wire which is coloured BLUE must be connected to the terminal in the plug which
is marked with the letter « N » or coloured BLUE or BLACK.
The wire which is coloured BROWN must be connected to the terminal in the plug
which is marked with the letter « L » or coloured BROWN or RED.
The wire which is coloured GREEN/YELLOW should be connected to the terminal
marked with the letter « E » or by the earth symbol or coloured GREEN or
GREEN/YELLOW.
Always replace the fuse cover of the fitted plug, never use the plug with the fuse
cover omitted. If a replacement fuse cover is required, ensure it is the same as the
one visible on the pin face of the plug (i.e. RED or ORANGE).

IMPORTANT SAFEGUARDS
1.Read all instructions and keep in a safe place for future reference.
2.Keep away from children.
3.Never use the fryer with the lid on, when the oil is heating up or cooling down
or while frying. This can be dangerous as condensation can form on the underside
of the lid which in turn may drop into the hot oil causing it to spit or boil over.
THE
LID IS ONLY TO BE USED TO COVER THE FRYER FOR THE STORAGE OF COLD OIL.
4.ALWAYS USE AN OIL WHICH IS SHOWN AS SUITABLE FOR DEEP FRYING.
5.Never switch on the fryer when the oil container (7) is empty or when the oil
level is under the minimum level marked by the indicator.
6.Never immerse the following parts in the water or any other liquid : the control box
(5), the heating element (8), the electric cord (9). These are only to be cleaned with
a damp cloth.
7.Do not move the fryer when it is hot, spilt oil can cause severe burns. Wait until
the oil is cold. The fryer can then be moved using the side handles.
8.When cooking, never leave the Fryer unattended.
9.Be sure the cord (9) does not overhang the countertop edge and is not in
contact with any part of the fryer that becomes hot.
10.Do not put the appliance near or in contact with any heat source (e.G. cooker
hotplate, oven)
11.As used by catering « professionals », this is an <open>, fryer. The lid must be
left off during cooking to ensure that the food being cooked becomes crisp. The
user’s attention is drawn to 3 above.
12.Do not use appliance for any other purpose than frying food.
13.Never use a worn lead.
14.Unplug the deep fryer when not in use.
15.The use of solid fat (in the deep fryer) is not recommended, It will dammage the
appliance.
16.This appliance should not be used for anything other than domestic use.

17.Always ensure that the two bulb thermostats are firmly fixed onto the element
and are not hanging loose.
18.FRYERS FITTED WITH A TIMER : THE TIMER DOES NOT TURN THE FRYER
ON OR OFF, BUT ACTS AS AN INDICATION OF COOKING TIMES. HOLD THE FRYER
FIRMLY WHEN SETTING THE TIMER TO ENSURE THE FRYER DOES
NOT MOVE.
INSTRUCTIONS FOR USE
1.Before using your Magimix deep fryer, rinse out the oil container (7) and the
basket (3) with warm water and detergent. Dry carefully. Clean the electric element
with a dramp cloth, but importantly, do not use detergent.
2.Fill the oil container (7) with oil that is suitable for deep frying to the right level,
which is between the maximum and minimum marks. (The quantity will vary by
model).

3.Once the appliance is connected, turn the thermostat knob (4) clockwise to
choose the required temperature. The red pilot light (6) will come on and remain
on until the fryer reaches the required temperature : it will then go out. Your fryer
is then read to use.
4.To avoid steam and spitting, ensure that the food to be fried is dry. Do not fill
the basket more than two thirds full. Slowly lower the basket into the oil to allow
any water that the food may contain to evaporate.
5.To fry chips, first blanch them (4 to 6 minutes) at 170°C then increase the
temperature to 180°C and lower the basket into the oil and continue to fry until
the chips are brown (approximately 2 minutes).
6.Meat, fish and pieces of poultry can be placed directly into the oil without using
the basket.
7.When cooking deep-frozen food, only fry small quantities at a time. The sudden
evaporation of the water contained in frozen food might make the oil boil over.
8. In order to keep your oil clean for as long as possible, do not add salt or spices directly
into the oil during cooking.

9.If the oil smokes or bubbles a lot : either the temperature is too high or too low,
or the oil has deteriorated and has to be changed. Do not add new oil but renew
it entirely.
10.When cooking, never leave the Fryer unattended.
11. Fryers fitted with a timer : to wind the timer, turn clockwise to at least half way (15
minutes). For shorter times, return anti-clockwise to the desired position. Hold the Fryer
firmly when setting the timer to ensure the Fryer does not move.
AFTER FRYING
1. Take out the basket and hang it on the hook (10) to drain off the oil. Turn the thermostat
knob back to ‘0’ and disconnected the appliance.
2.Wait until the oil is cold before covering it with the lid (2).
3.Do not move the deep fryer until the oil is cold .
IMPORTANT : THE TIMER DOES NOT TURN THE FRYER ON OR OFF, BUT ACTS AS AN
INDICATION OF COOKING TIMES.
OIL FILTERING
1.The frying residues which float on the oil’s surface can be removed with a
strainer.
2.The other residues settle down in the « cool zone », under the heating element,
avoiding any flavour and smell transference between the different dishes.
3.It is not not necessary to filter the oil after each use, even when you have cooked
different types and flavours of food one after the other. However oil lasts longer when it
is regularly filtered. To do this, first wait until the oil is cold, then pour into
a clean bowl or bottle and wash the oil container by hand or in a dishwasher, rinse and
dry thoroughly.
4.Pour the oil back into the container through a strainer. Check the oil level.
CLEANING
1.The basket, outer casing (1) and oil container can be washed by hand or in a
dishwasher.
2.Do not put the thermostat in water. This may be cleaned with a damp cloth
containing no detergent.

FAULTS
1.If the fuse blows out, check the fuse value and fit a new one.
2.Your fryer is fitted with a safety cut-out. If the thermostat fails to work and the green
pilot light goes off, it is possible that the cut-out has come on.
3.Firstly, unplug the fryer from the mains
switch. In order to reset the cut-out, gently
press a skewer or small screwdriver into the
hole on the back of the thermostat control box as
indicated on the diagram below.
4.If the thermostat fails again, it will need to be
repaired by a Magimix Service Agent. For

Tie fish strips into single knots. Place breadcrumbs, coriander
and lime rind in a small bowl and mix to combine. Dip each
knot in milk, then in flour, egg and finally in the breadcrumb
mixture. Place knots on a plate lined with cling film, cover
and chill for at least 30 minutes.
To make dip, place stock and saffron threads in a bowl and
set aside to steep for ten minutes. Strain stock mixture. Place
stock mixture, mayonnaise, turmeric, lime juice and black
pepper to taste in a bowl and mix to combine. Cover and
chill until ready to serve.
Heat oil in deep fryer to 190°C and cook knots in batches for
2-3 minutes or until golden. Take out the basket and drain
knots on absorbent kitchen paper. Serve with dip.

RECIPES - a few ideas to start you off
FISH KNOTS WITH LIME DIP
• 750 g/1.5 lbs of firm
white fish fillets cut into
strips 3 ins long
• 60 g/2 oz dried
breadcrumbs
• 2 tsp chopped fresh
coriander
• 1 tsp finely grated lime
rind
• 120 ml/4 fl oz milk
• 60 g/2 oz flour
1 beaten egg
• oil for frying
Lime dip
• 1 tbl hot fish or chicken
stock
• 4 strands saffron
• 1 85 ml/ 6fl oz
mayonnaise
• qtr tsp ground turmeric
• 1 tbl lime juice
• freshly ground black
pepper

To make sauce, heat the vegetable oil in a small saucepan
and cook onion and garlic for 4-5 minutes or until onion is
soft. Add curry powder and cook, stirring for 1 minute
longer. Stir in plum sauce, soy sauce, water, lemon juice and
sugar, bring to simmering point and cook, stirring occasio-
nally, until sauce is reduced by half. Remove pan from heat
and set aside to cool. Stir in coriander and season to taste
with black pepper.
Toss calamari in cornflour. Heat oil in deep fryer to 190°C
and cook calamari a few at a time for 2-3 minutes or until
lightly browned. Lift basket, remove calamari and drain on
absorbent kitchen paper. Serve immediately with sauce for
dipping.
Serves 6
CALAMARI WITH CURRY SAUCE
To make filling, place pork, bean sprouts, cabbage, spring
onions, cornflour, soy sauce and sesame oil in a bowl and
mix to combine.
Place a tablespoon of filling in the centre of each wrapper,
fold one corner over.
SPRING ROLLS
• 500 g/1 lb Calamari
rings
• 60 g/2 oz cornflour
• oil for deep frying
Curry Sauce
• 1 tbl vegetable oil
• 1 small onion finely
chopped
• 2 cloves garlic, crushed
• 3 tsp curry powder
• 2 tbl plum sauce
• 2 tsp soy sauce
• 125 ml/2 fl oz water
• 1 tbl lemon juice
• 2 tsp brown sugar
• 2 tbl chopped fresh
coriander
• freshly ground black
pepper
• 12 spring roll or
wonton wrappers each
5 in. square
• oil for deep frying
Pork and Vegetable Filling
• 125 g/4 oz lean pork
mince
• 30 g/1 oz bean sprouts
• qtr small cabbage,
chopped
• 2 spring onions,
chopped
• 1tbl cornflour
• 1 tbl soy sauce
• 1 tsp oil same
