Repairs may become necessary over
time; these and all major servicing
operations must be entrusted exclusively
to a Lainox technician or a Lainox
authorized service agent.
1.1 • Carefully read the directions given in this
manual; they contain important information
on safety during installation, operation and
maintenance.
Keep this manual in a safe place for
future consultation!
1.2 • This appliance must be put only to the
use for which it is specifically intended:
cooking foods. Any other type of use is
improper and therefore dangerous.
1.3 • Only trained kitchen staff should be allowed
to use the appliance.
1.4 • The oven must not be left unattended during
operation.
1.5 • There are surfaces of the oven that become
hot during operation. Take care!
1.6 • Ask the installer for information on correct
operation and use of the water softener;
incorrect or incomplete maintenance is at
the origin of the formation of scale, which
would badly damage the oven.
1.7 • Should it become necessary to call out a
service technician, all essential identification
details of the appliance are shown on the
data plate, located at the right-hand side on
the bottom.
1.8 • Each appliance is equipped with a data
plate identifying the model and its main
specifications. An example is given below of
a dataplate for an electric oven and one for
a gas oven.
1.9 • In the event of technical assistance being
required, the trouble must be described
in as much detail as possible, so that a
service technician will be able straight away
to understand the nature of the problem.
1.10 • In the event of breakdown or faulty
operation, switch off the oven
immediately!
1.11 • The room, in which the oven is to operate,
must be well ventilated!

2.1 • Before any food is cooked in a new oven,
the interior must be thoroughly cleaned
(see “Daily Cleaning”).
2.2 • At the end of the working day, clean the
oven thoroughly inside and out; this will
ensure smooth operation of the appliance
and prolong its useful life.
2.3 • Do not use high pressure water jets
when cleaning the oven!
2.4 • For daily cleaning, use non-corrosive
products (alkali based) suitable for the
purpose. Abrasive materials and products
should not be used as they will damage
the surfaces. If the oven is equipped
with an automatic washing system, use
SOLELY products recommended by the
manufacturer (see “Daily Cleaning”).
2.5 • Always switch off the appliance when work
is finished, and shut off all energy supplies
(electricity, water, and gas if connected).
2.6 • Avoid any operation that might cause
cooking salt to be deposited on the steel
surfaces of the oven; if salt is accidentally
spilled, rinse off immediately and
thoroughly.
2.7 • After steam cooking, open the door
carefully to avoid being hit by the rush of
residual steam escaping from the oven.
Failure to observe this warning may be
dangerous for the operator.
2.8 • To ensure safe operation of the oven do
not obstruct the vents or any other
opening in the casing!
2.10 • Failure to observe basic safety
guidelines may jeopardize the smooth
operation of the oven and expose the
operator to serious danger!
The manufacturer will disclaim any
liability if the operation of the oven as
originally intended is altered either by
tampering or through failure to observe
the instructions contained in the
manuals.
2 • POINTS TO REMEMBER
2.11 • To ensure long term efficiency and
reliability of the oven, major servicing
should be carried out at least once
a year. With this in mind, customers
are recommended to sign a service
agreement.

ONOFF KEY 1
Turns on the control panel, activates self-
diagnosis.
Key light on: appliance ready for use.
Key light off: appliance powered, control panel off.
At the first start up of the day you will be asked to
save the HACCP Log onto a USB pen.
For the Log HACCP saving procedure please refer
to chapter 12.4.
CONVECTION (KEY 2)
CONVECTION cooking mode key.
STEAM (KEY 3)
STEAM cooking mode key.
COMBINATION (KEY 4)
COMBINATION cooking mode key.
SPEED SELECTION (KEY 5)
Ventilation speed selection key.
Press key and rotate knob until desired speed is
set (from 1 to 6) and confirm selection by pressing
the knob (in convection or convection + steam
mode, the key remains switched on for speeds 1-3
indicating that oven is working at reduced power).
START-STOP (KEY 15)
START-STOP key: to start and stop cooking in
progress.
• Key light on: START, cooking started.
• Intermittent key light: TEMPORARY STOP
obtained by opening the door. Cooking and
remaining time are stopped. Closing the door
restarts cooking.
• Key light off: PERMANENT STOP obtained by
pressing key 15: cooking stops permanently, as if
time had expired.

3.1

OVEN LIGHT KEY KEY 21
Pressing this key switches on the oven
light, permitting the operator to check the
progress of the cooking. The light goes out
automatically when the door is opened;
with the door closed, press the key again
to switch off (see light switch timing
chapter 23 “PARAMETERS”).

RAPID COOLING KEY OVEN DOOR
OPEN KEY 20
This function is activated only with the oven
door open. Pressing the key activates the
fan, which rapidly lowers the temperature in
the oven to 50 °C. “COOL” This function is
particularly useful if one cooking operation
at high temperature is to be followed by
another using a much lower temperature, or
when the oven needs cleaning immediately
after a cooking operation (see “Daily
Cleaning”).

OPEN OVEN VENT KEY KEY 23
This function is activated only in convection
mode. Pressing the key opens the oven
vent, allowing the escape of excess
moisture that collects within the cavity. The
vent is closed manually (LED on = vent
open; LED off = vent closed, flashing LED
= vent in operation).
The position of the vent can also be saved in
a program (see “Clima” setting).

OVEN MOISTURE INLET KEY
KEY 22
This function is useful for foods that require
added humidity when cooking. Press the
key and hold for as long as it is wished to
let moisture into the oven.
Note: “COOL” The appliance is fitted with
an automatic system for lowering the
temperature, that operates in all cooking
modes. If the temperature exceeds the
display setting by 30 °C, the humidifier
automatically directs cold water into
the oven and the temperature is rapidly
lowered. This precludes the possibility
that food could start cooking with too high
a temperature in the oven. In addition,
the added moisture prevents foods from
drying up.

This section sums up the meaning of some
important functions that frequently recur in the
following explanation.
• TIME OUT*: when setting the cooking program
functions, especially in the early days of learning
to use the appliance, after a time of 10 sec. has
passed since the last setting, the data are saved
automatically, thus avoiding any unfortunate “loss
of programming”. The display stops blinking to
signal the exit due to TIME OUT. The temperature
display indicates the actual oven temperature.
To return to setting, press the key of the required
function. For programs with two or more cycles,
press key 19 and search for the required cycle with
the SCROLLER.
• PROGRAM*: in the condition of a
PERMANENT STOP (START STOP
key light off) key 18 is used to
search for the programs saved and
sorted alphabetically automatically.
Pressing key 18 and then key 17 “PLUS” takes
you to the submenus COPY program and EXIT.
• PLUS*: key providing access to
additional functions.
• ENTER*: confirms the selected
control.
• BACK: To return to the menu/
previous page.
• AUTOM.COOKING: section of memory containing
the optimized cooking recipes and added by the
manufacturer who provides a series of them at
your disposal. Having the manufacturer’s recipes
available is helpful when dealing with new foods
for which you want the cooking to be successful.

SWITCH ON
Press key 1. If display 9 signals a fault code,
see “Self-diagnosis and fault identification”.

SELECT PREHEATING MODE
Press key 2 (CONVECTION).
A standard setting is automatically displayed
with the following values:
oven temperature: 130 °C
time: Infinite “inf”
If the standard settings meet your needs, the
oven is ready for starting with START key
15.

•
CHANGE
If the displayed temperature of 130 °C
needs to be changed, press key 10,
within 10 seconds set the required cooking
temperature using the scroller (to the
right increases, to the left decreases) and
confirm by pressing the scroller or key 19.
Note: Approximately 10 sec. after the
knob has been released (TIME OUT*)
the display will revert to the actual oven
temperature, in this way the set value has
been saved.
5.4
•
START
Press key 15. The LED associated with the
key remains permanently alight (“START”).
On reaching the set temperature, an
intermittent beep will signal that oven
preheating is over and “LOAD” will be shown
on display 9.
5.5 • DISPLAYING AND CHANGING THE
PREHEAT TEMPERATURE DURING
OPERATION
If the setting needs to be checked during
preheating, press key 10.
If the temperature displayed is incorrect,
adjust with the SCROLLER and wait for
10 sec. (TIME OUT*) to save the new
setting automatically.
Note: Steam or combination cooking are
not recommended as the steam in the
oven escapes when the door is opened.
5 • PREHEATING THE OVEN

Before cooking it is always vital to
preheat the oven while empty in order to
shorten the cooking time and ensure a
good result.
The preheating temperature depends on
the type of product, size and quantity; as
a rule you set a preheating temperature
15-25% greater than the cooking
temperature.

SWITCH ON
Press key 1. Any faults are signalled after
“self-diagnosis” on display 9 see “Self-
diagnosis and fault identification”.

SELECT
The backlit keys of the cooking modes all
blink: press CONVECTION, STEAM or
COMBINATION cycle. The light comes
on steady to confirm the selection.
6.3
•
SET THE TEMPERATURE
The display 9 shows “MANUAL”, the
temperature displayed is the one inside
the oven, press key 10, the temperature
display 6 blinks, display 9 shows “COOK
TEMP”, within 10 seconds set the required
cooking temperature using the knob (to the
right increases, to the left decreases) and
confirm by pressing the knob or key 19.
6.4A • SET THE TIME
The time display 7 shows [ InF ] infinite, press
key 11, the time display 7 blinks, display 9
shows “COOKING TIME”, within 10 seconds
set the cooking time by turning the knob to
the right to set the cooking time and confirm
by pressing the knob or key 19.

6.4B • SET CORE PROBE
See “Setting the core probe”.
Note: The settings are saved approx.
10 seconds after the last action (TIME
OUT*), you can exit programming quickly
by pressing the lit key of the last setting
again.

STARTING THE COOKING PROGRAM
Place the food in the oven. Refer to the
“Practical Advice” heading for more
information.
If the core probe is to be used, refer to
“Setting the core probe” and “Hints on using
the core probe”.
6.5 •
START
Press key 15 START to start cooking: the
key light stays on steady.
At this point...
the temperature display 6 indicates the
actual oven temperature.
The time display 7 indicates the time
remaining to complete cooking.
The luminous dot alongside the value
indicates:
blinking = cooking in progress;
permanently alight = cooking suspended.
Note: When igniting the appliance for the
first time each day, the steam generator
discharges the water it contains, activates
the timed steam generator wash, then,
after loading with water, it runs the steam
generator AUTOMATIC PREHEATING.
When starting a program with steam or
combination cooking cycles, the program
is activated automatically as soon as
the steam generator has reached the
preheating temperature, so the program
will not start if there is no steam. The
message “BOILER COLD” indicates that
the steam generator has not yet reached
the preheating temperature.

END OF COOKING
If infinite time has been selected, stop
cooking by pressing key 15 PERMANENT
STOP for 3 seconds.
Five minutes before the end of cooking or
5 °C before the probe temperature it is
reached at the core, the display “7” (time
and core probe temperature) blinks in order
to advise the user in advance. When the
time is up or the set core probe temperature
has been reached, an intermittent beep will
signal that cooking has concluded.
To interrupt the signal, simply open the
oven door. Remove the food from the
oven, following the directions given under
paragraph 2.7 of the “Points to remember”
heading.
If you want to turn on cooking a second
time with the same settings, after putting
the food in the oven, just press key
15 (START) without having to do the
settings again.
Displaying and changing saved values
If, during cooking, you want to check or
change the settings of: temperature, cycle
time or core probe, Clima, on pressing the
corresponding key 10-11-12-13, the display
will blink for 10 sec. indicating the setting.
Use the SCROLLER to make the new
setting which will automatically be saved at
the end of TIME OUT*.

Manual cooking with a number of cycles in
sequence permits including preheating the
oven with no load, thus becoming the first
cooking cycle; let’s see an example:

11 to set a cooking time. In our example we want
to leave the COOKING TIME on [ inf ] to be able to
use cycle 1 as oven preheating. On reaching the
set temperature, an intermittent beep will signal
that oven preheating is over and “LOAD” will be
shown on display 9.

• SELECT CYCLE 2
Press key 18, display 9 will show
”CYCLE 1” blinking, turn the SCROLLER
to the right, it will show “CYCLE 2”.
The backlit keys of the cooking modes all
blink: press CONVECTION, STEAM or
COMBINATION. The light comes on steady to
confirm the selection.
Note: The data are saved automatically
10 seconds after the last setting, press key 18,
display 9 will show “CYCLE 1” blinking, turn
the SCROLLER to the right to search for the
cycle you want to view, and make any changes
as customary.
SET THE TEMPERATURE
The temperature display blinks with a preset
value of 130°C. Set the required cooking
temperature with the knob (to the right
increases to the left decreases) and confirm by
pressing the knob or key 19.
SET THE TIME
The time display 7 shows [ inf ] infinite, the
time display 7 blinks, display 9 shows “CYCLE
TIME”, within 10 seconds set the cooking time,
e.g. 45 minutes by turning the SCROLLER to
the right.
Or
SET COOKING WITH CORE PROBE
Refer to the “Setting the core probe” heading
and so on to set the required number of cycles
(9 at most).

Press key 13, press key 16 and display 9 will show
the current vent status “VENT CLOSED”.
NOTE: to set venting, set the “CLIMA” value to zero.
Turn the Scroller to the right to go to the additional
functions that are presented in sequence.
OPEN VENT
OPEN VENT FOR THE ENTIRE COOKING
CYCLE
Turn the Scroller to the right to permit setting the
vent opening before the end of the cycle.
If, for instance, using the Scroller we set OPEN
00.10, the vent will automatically open 10 minutes
before the end of the cycle; the following cycle will
be closed.
ENTER to save the settings.
(To quit the setting without saving, press keys 14 ).
START to start the cooking program, automatically
saving the settings.

Press key 15 START to start the first
cooking cycle: the key light stays on
steady.
At this point...
the temperature display 6 indicates the
actual oven temperature.
The display 9 indicates “MANUAL”
The display 9 indicates the current
cycle “1” (Second line, after asterisk).
The time display 7 indicates the time
[ inf ], on reaching the set preheat
temperature, a cyclic beep will signal it is
time to put the food into the oven.
Open the door and place the food in the
oven. If the core probe is to be used, refer
to “Setting the core probe” and “Hints on
using the core probe”. Close the door, the
cooking program will automatically switch
on with CYCLE 2, the time display 7 will
show the total remaining time till the end
of cooking. The passage from cycle 2 to a
subsequent cycle takes place automatically
and is signalled by a beep.
• END OF COOKING
Five minutes before the end of cooking or
5 °C before the probe temperature it is
reached at the core, the display “7” (time
and core probe temperature) blinks in order
to advise the user in advance. When the
time is up or the set core probe temperature
has been reached, an intermittent beep will
signal that cooking has concluded.
To stop the beeping, simply open the oven
door. Remove the food from the oven,
following the directions given under
paragraph 2.7 of “Points to remember”.
If you want to turn cooking back on
with the cycles in the sequence that
has just ended, simply press the START
key without having to make any other
settings.
Displaying and changing saved values
If, during cooking, you want to check or
change the settings of: temperature, cycle
time or core probe, autoclima, on pressing
the corresponding key 10-11-12-13, the
display will blink for 10 sec. indicating the
setting. Use the SCROLLER to make the
new setting which will automatically be
saved at the end of TIME OUT*.
To use the additional functions, see under
the headings referring to the function of the
PLUS key.
Note: Manual programs with one or more
cycles in sequence will automatically be
“DELETED” when switching off with key 1
(OFF).

INTRODUCTORY NOTE
Saving a cooking program consists in
attributing a standard name or an invented
one to the MANUAL program to then be
automatically saved in alphabetical order in
the user program list.

When “COPY” appears on display 9.
Press knob or key 19.
The manual program previously set is saved in the
first free position.
It is automatically named “PROGRAM”, shown on
display 9.
To change the name of the program proceed as
follows:
Keep key 16 pressed for two seconds; the name
shown is deleted (blinking will indicate the cursor
position).
Rotate the knob until you reach the desired
symbol.
Press the cycle key 18 or alternatively wait for
3 seconds (TIMEOUT), to change to the next
symbol.
Repeat the procedure until you obtain the desired
name.

Press key 19 ENTER to save the name of the
program.
Note: The name of the program must contain at
least two letters.
Key functioning whilst memorizing a program:
Press key 14 to get to the beginning of the word..
Press key Program 16 to delete the letter
positioned immediately before the cursor (Keeping
pressed down for 2 seconds deletes the entire
word).
Press key Cycle 17 to move on to the next letter.
Press key Cycle 18 to move on to the next letter.
If the chosen name is already existent in the
memort, blinking “NEW NAME” will appear: wait
for the time out or press “ENTER” to return to a
different name writing.
Press key 19 ENTER to save the name of the
program.
The new name is saved and inserted in
alphabetical order on the list. On displays 6, 7, 8
the set settings are displayed and on 9 the name
of the new program is displayed.
The saved program is activated by pressing key 15

SWITCH ON
Press key 1; display 9 will show “MANUAL”.
Press key 17, “MENU PROGRAM” will
display “AUTOM.COOKING”, confirm
by pressing the knob or key 19. Rotate
knob until reaching type of food chosen
and confirm by pressing the knob. Rotate
knob until the name of desired program
(e.g. Roast) appears; press key 15 to start
cooking.
If the retrieved program has two or more
cycles, display 9 will show [ 1 ], (second
line, after the asterisk) if the time indicates

Turning off preheating

after starting with key 15, to keep pressed
for 2 sec. Press key 18, the program will
automatically go onto cycle 2
Warning: The preheat stage should be
skipped only when the oven is already hot
from previous cooking. Viewing the settings
If during START cooking you need to check
the settings for the current cycle, press key
18. If you want to view the settings of the
following cycles, turn the SCROLLER to
search for the required cycle, the displays
will update with the values assigned to
the displayed cycle without affecting the
cooking in progress.

display “AUTOM.COOKING”, rotate knob
until reaching “RECIPE USER” and confirm
by pressing the knob or key 19. Rotate
knob until the name of desired program
(e.g. Roast) appears; press key 15 to start
cooking.
If the retrieved program has two or more
cycles, display 9 will show [ 1 ], (second
line, after the asterisk) if the time indicates

Introductory note
The appliance permits temporarily modifying
the saved program, that is for cooking in
progress only. The program selected for
editing must be on START key 15 with
light on. When the program is stored for a
product with a different size, for which it is
necessary to lengthen the cooking times, it
may be necessary to raise the temperature
or change any of the other parameters.
The temporary change will be signalled on
display 9 with after the program
name. The change will be deleted when the
cooking program has finished.

Retrieve the program and start cooking, as
described previously.
Changing the fan speed cooking mode
... press the key corresponding to the
cooking mode and/or the new fan speed,
the change is accepted automatically.
Increase/decrease temperature and/or
time, core probe
... press the relevant key 10-11-12, the
corresponding displays blink to indicate
entering setting mode, turn the SCROLLER
to set the new values that will be saved at
the end of the TIME OUT*.
Increase/decrease CLIMA, vent pre-
opening
... press key 13, display 9 blinks to indicate
entering setting mode, turn the SCROLLER
to set the new value.
If the program includes oven vent pre-
opening (see chapter 13), additional CLIMA
function, press key 13, press key 16, the
display will show, for example “OPEN
00.14”, use the SCROLLER to increase or
decrease the vent pre-opening time, the
new value will be saved at the end of the
TIME OUT*.
NOTE: to set venting, set the “CLIMA” value
to zero.
