Read all instructions carefully, even if you feel
that you are familiar with the appliance
• To protect against the risk of electric shock,
DO NOT IMMERSE the appliance, cord set or

Always ens re ice-cream mixt re is in the Ice-
Cream Maker before pl gging it in to a power
o tlet. Ens re the freezer canister and cover are
fitted correctly before t rning on the Ice-Cream
Maker.
• Switch off the power o tlet, npl g the Ice-
Cream Maker and ens re the stirring paddle has
completely stopped before removing the cover.

If the s pply cord is damaged, it m st be replaced by
the man fact rer or its service agent, or a similarly
q alified person, in order to avoid a hazard.

Congrat lations on the p rchase of yo r new Mistral
Igloo Ice-Cream Maker.
Before first sing yo r new Ice-Cream Maker, it is
most important that yo read and follow the
instr ctions in this se and care booklet, even if yo
feel yo are familiar with this type of appliance.
Yo r attention is drawn partic larly to the section
dealing with IMPORTANT SAFEGUARDS. Find a safe
and convenient place to keep this booklet handy for
f t re reference.
This appliance has been designed to operate from a
standard domestic power o tlet. It is not intended
for ind strial or commercial se.
Before first use
Caref lly npack the Ice-Cream Maker and remove
all packaging materials.
Wash the freezer canister, cover and paddle in warm
soapy water and dry thoro ghly. These parts are not
dishwasher safe.
Use a damp cloth to clean the exterior of the motor
nit. Do not immerse the motor nit in water.
Step 1 – preparing the ice-cream
mixture
Refer to the recipes in the back of this booklet to
prepare ice-cream mixt re.
For best res lts, prepare the ice-cream mixt re one
day before making ice-cream. This adds vol me and
allows time for the mixt re to cool s fficiently.
Step – freezing the freezer canister
Note: It is essential that the freezer canister is
frozen properly
To freeze the freezer canister, wrap it in a plastic bag
and store it in the back section of yo r freezer,
where the temperat re is the coldest. The plastic
bag will prevent freezer b rn from occ rring.
Shake the freezer canister to check the progress of
the freezing process. If yo can hear liq id, replace
the freezer canister back into the freezer. When yo
can no longer hear the liq id when yo shake the
freezer canister, the freezing process is complete.
The table below indicates the amo nt of time
req ired to freeze the freezer canister.

Note: The canister must be used immediately
after being withdrawn from the freezer Do not

Step 3 – ice-cream making process
Note: During operation, the motor may be
quite noisy THIS IS NORMAL It may appear to
struggle and make a loud grating noise, but
continue with the operation as the unit will
provide well frozen and churned ice-cream

Before commencing, ens re the power cord is
npl gged and the control switch is in the (O)
position.
Slide the motor nit onto the cover ntil yo hear a
click (indicatingthe motor nit and cover are locked
into place. See Fig. 1).

Insert the paddle extender into the opening nder
the motor nit.
Remove the freezer canister from the freezer once it
is completely frozen.
Insert the paddle into the canister bowl (Fig. 2).

Place the motor nit and cover together above the
freezer canister so that all the locking tabs are
aligned and the paddle extender is inserted into the
paddle.
T rn the cover clockwise ntil yo hear the tabs lock
into place (Fig. 3).

Pl g the Ice-Cream Maker into a standard domestic
power o tlet and switch the o tlet on.
Switch the on/off switch to the on position to prevent
the paddle from freezing onto the freezer canister.
Go to the next step immediately.
Po r the prepared ice-cream mixt re into the
freezer canister via the mixing feeder.
The ice-cream making process takes approximately
20-40 min tes or ntil the desired consistency is
reached.
Note: Turning the Ice-Cream Maker off during
operation may cause the mixture to freeze and
restrict the movement of the paddle
This appliance sho ld not be operated for any longer
than 40 min tes at one time. Do not contin e se if
the ice-cream is not solid or is thawing o t after 40
min tes of mixing.
This may occ r if the freezer canister was not frozen
properly, the mixt re was too warm or the proportion
of ingredients was incorrect.
The mixing feeder can be sed to add ingredients
once the ice-cream making process has beg n. See
the recipes in the back of this booklet for additional
ingredients.
The direction of rotation will change if the ice-cream
mixt re becomes too thick. This will prevent the
motor from overheating. The ice-cream mixt re is
ready if the direction of rotation contin es to change.
Once this occ rs, t rn the appliance off immediately
.
DO NOT se sharp objects or tensils inside the
freezer canister. Sharp objects will scratch and damage
the inside of the freezer canister. A r bber scraper
or wooden spoon may be sed when the appliance
is t rned off.
Note: The Ice-Cream Maker will switch off
automatically when the mixture gets too thick
To avoid damage to the appliance or injury to
persons, ensure the appliance is switched off
and unplugged from the power outlet if it
automatically stops or stalls

The ice-cream mixt re can be frozen f rther by
placing the freezer canister into the freezer for no
more than thirty min tes.
To store yo r ice-cream for long periods of time,
place it in an air tight container in the freezer.
Switch off and npl g the Ice-Cream Maker from the
power o tlet.
Disassemble and wash the freezer canister in warm
water with mild detergent.
Rinse well and dry thoro ghly.
Note: Do not place any part of the Ice-Cream
Maker in the dishwasher
Wipe the exterior of the motor nit with a soft damp
sponge or cloth. Dry thoro ghly.
Note: Sharp utensils, scouring pads or abrasive
detergents may harm your appliance

Easy vanilla ice-cream
300ml milk
250ml cream
1⁄2c p castor s gar
pinch salt
1⁄2teaspoon vanilla essence
Combine all ingredients and stir ntil s gar dissolves.
Po r into freezer canister and allow to ch rn and
freeze.
Old fashioned vanilla ice-cream
300ml milk
pinch salt
1⁄2c p castor s gar
5cm piece vanilla bean or 1 teaspoon vanilla
essence
1 egg, beaten
250ml cream
Combine milk, salt, s gar and vanilla bean in a
sa cepan. Cook over medi m heat, stirring freq ently
ntil mixt re nearly boils. Red ce heat to low.
Grad ally stir abo t half of the milk into the egg. Add
egg mixt re back into remaining half of milk. Cook
over low heat, stirring constantly ntil mixt re
slightly thickens.
Remove from the heat and allow to cool. Refrigerate
and chill thoro ghly – preferably overnight.
Remove vanilla bean and add cream, mixing with a
wire whisk. Po r into the freezer canister and allow
to ch rn and freeze.
Creamy chocolate ice-cream
120g chocolate bits
1⁄2c p castor s gar
250ml milk
2 egg yolks
250ml cream
Place chocolate, s gar and half the milk in a
sa cepan and heat gently ntil chocolate melts.
Combine remaining milk and eggs; add to chocolate
mixt re. Bring mixt re gently to the boil, stirring
constantly. Remove from the heat and allow to cool.
Refrigerate and chill thoro ghly – preferably
overnight.
Add cream and mix with a wire whisk.
Po r into the freezer canister and allow to ch rn and
freeze.
Strawberry ice-cream
250g fresh strawberries, washed and h lled
3 egg yolks
3⁄4c p castor s gar
350ml cream
200ml milk
Place all ingredients in a blender or food processor
and process ntil smooth.
Po r into the freezer canister and allow to ch rn and
freeze.
Note: Retain 3 – 4 strawberries from the
pureeing process, chop into pieces and add at
the final churning stage This will give a
chunkier ice-cream
Ice-Cream Recipes

Honey ice-cream
300ml milk
200g honey
2 egg yolks
pinch salt
200ml cream
Place milk and honey in a sa cepan and heat gently.
Whisk egg yolks and salt together and add to milk
mixt re. Stir contin ally over a medi m heat ntil
j st boiling, remove immediately and allow to cool.
Refrigerate and allow to chill – preferably overnight.
Add cream and mix with a wire whisk.
Po r into the freezer canister and allow to ch rn and
freeze.
Chocolate chip ice-cream
3 egg yolks
1⁄2c p castor s gar
200ml cream
350ml milk
pinch salt
100g chocolate bits
Beat the egg yolk and s gar together ntil fl ffy. Stir
in the remaining ingredients.
Po r into the freezer canister and allow to ch rn and
freeze.
Note: Any variation of chocolate bar finely
chopped can be used i e Cherry Ripe, Mars
Bar, Violet Crumble or Peppermint Crisp
Banana ice-cream
1 egg white
1⁄2c p castor s gar
100ml cream
150ml cream
pinch salt
3 medi m bananas, ripe and mashed
1 teaspoon lemon j ice
Whisk egg white ntil light and fl ffy, adding a small
amo nt of s gar d ring the final whisking.
Combine remaining ingredients and gently fold in
the egg white.
Po r into the freezer canister and allow to ch rn and
freeze.
Easy apricot ice-cream
1 ×425g can apricots, ndrained
150ml cream
100ml milk
1⁄4c p castor s gar
pinch salt
2 egg yolks
Place all of the ingredients in a blender or food
processor and process ntil smooth.
Po r into the freezer canister and allow to ch rn and
freeze.
Note: Any variation of canned fruits can be used

Praline almond fudge ice-cream
1⁄2c p brown s gar
pinch salt
350ml milk
1 egg, beaten
250ml cream
2 teaspoons vanilla essence
1⁄2c p slivered almonds
1 tablespoon b tter
1⁄3c p chocolate f dge topping
Combine s gar, salt and milk in a sa cepan.
Cook over medi m heat ntil mixt re begins to boil
aro nd the edges.
Grad ally add half the milk to the beaten egg,
stirring constantly. Po r egg mixt re back into
remaining milk and contin e to cook for 1 min te,
stirring constantly. Allow to cool.
Refrigerate and chill, preferably overnight.
Add cream and vanilla to chilled mixt re, stirring to
combine.
Sa te almonds in b tter over a low heat for 5
min tes, allow to cool completely before adding to
mixt re.
Po r into the freezer canister and allow to ch rn and
freeze. D ring final ch rning stage, po r chocolate
f dge into the canister and allow to combine with
the ice-cream.
Plum pudding ice-cream
1 c p dried mixed fr it
1 tablespoon sherry or brandy
2 egg yolks
1⁄2c p castor s gar
150ml milk
250ml cream
1 teaspoon mixed spice
1⁄4teaspoon cinnamon
1⁄4teaspoon n tmeg
pinch salt
Allow fr it to soak in sherry or brandy for 1 ho r.
Beat egg yolks and s gar together ntil fl ffy. Stir in
milk, cream, spices, salt and dried fr its.
Po r into the freezer canister and allow to ch rn and
freeze.
On completion serve on its own or spoon mixt re
into a foil-lined bowl, cover and place in a freezer for
4 ho rs before t rning the ice-cream o t onto a
platter and serving sliced with fresh berries.

Lemon sorbet
1 large lemon
300ml boiling water
1 c p s gar
1 egg white, lightly whisked
Using a vegetable peeler, remove a thin layer of rind
from the lemon and add the rind to the boiling water.
Allow to inf se for 30 – 40 min tes, strain.
Add the s gar and egg white and stir to combine.
Po r into the freezer canister and allow to ch rn and
freeze.
Strawberry sorbet
1⁄2c p s gar
1 c p water
21⁄2c ps fresh strawberries, p reed
2 teaspoons lemon j ice
Combine s gar and water in a small sa cepan.
Heat to boiling point and allow to simmer ntil s gar
dissolves. Remove from heat and allow to cool
completely.
Add strawberries and lemon j ice.
Po r into the freezer canister and allow to ch rn and
freeze.
Citrus sorbet
1 small orange
1 small lemon
1 lime
400ml boiling water
11⁄2c ps s gar
2 egg whites, lightly whisked
Using a vegetable peeler, remove a thin layer of rind
from the orange, lemon and lime. Add rind to the
boiling water and allow to inf se for 30 min tes.
Strain and add the s gar and egg whites.
Po r into the freezer canister and allow to ch rn and
freeze.
Frozen yoghurt
2 ×200g t bs yogh rt, plain or flavo red
200ml milk
1⁄4c p castor s gar
2 egg yolks
pinch salt
Thoro ghly combine all ingredients. Po r into the
freezer canister and allow to ch rn and freeze.
Note: Up to 1⁄cup chopped fresh or canned
fruit can also be added for a chunkier yoghurt
