Smith’s®Electric Knife Sharpener
Smith’sisproudtoofferaneasytouseandeffectiveelectricknifesharpenerthat
incorporates both mechanical and manual sharpening elements in one unit. This unique
combinationprovidesabroadcapabilitytoeasilysharpendullbladesandmaintainrazor
sharp edges.
The mechanical sharpening slots feature a diamond-coated sharpening wheel (COARSE)
and a ceramic sharpening wheel (FINE) and blade guides to hold your knife at the correct
angleduringmechanicalsharpening.Themicron-sized,monocrystallinediamonds
and ceramics used to coat the sharpening wheels are selected for their unique cutting

edge. Use caution when handling your knife after sharpening. Do
not test knife sharpness by running your fingers or any part of your
body along the edge of the blade. To avoid injury, handle sharpened

The Diamond Edge Elite Electric Knife Sharpener offers two stages of mechanical
sharpening, COARSE and FINE. This allows you to match the condition of the blade with
theappropriaterateofmetalremovalneededtosharpentheedge.Averydulledgeneeds
moremetalremovedtorestoresharpnesswhileareasonablywell-maintainededge
requiresaminimalamountofmetalremoval.Twostagesofsharpeninghelpsprolongthe
lifeofyourknifebyonlytakingoffenoughmetaltomakeyourknifesharp,whilegivingyou
professionalresultseverytime.
COARSE -Thissharpeningwheelisusedforknivesthatareverydullandrequiremore
metalremovaltorestoretheedgesharpness.
FINE -Thissharpeningwheelisbestforknivesthatarefairlysharpandjustneedaquick
touch-upwithlittlemetalremoval.Inmanycases,andparticularlyaftertheinitialreshaping
of your blade’s edge, use of the FINE slot, will be all the sharpening your blade will need.
SERRATED - This manual, pull-through slot should be used for sharpening most all types
of serrated blades or the serrated portion of your blade.

NOTE: Due to some handle designs, you may not be able to sharpen the entire length of the blade
using the mechanical sharpening wheel. Smith’s recommends using the manual sharpening slot in
these limited cases.
The speed at which you pull the blade through the sharpening slots will determine the amount of
metalremovedfromtheedge.Averyslowpasswillremovemoremetalthanaquickpass.When
drawing the blade through the slots, allow approximately one second for each one inch of blade. For
example, if sharpening a knife with a 6 inch blade, you should take approximately six seconds for
each pass.
5. Movetotheothersharpeningslotandrepeatthisprocesstosharpentheothersideofyourblade.
6. Continue alternating passes at the recommended speed, through either the COARSE or FINE
sharpeningslots,untilyourknifebladeissharp.Forbestresultsandtoreduceexcessivewheel
wear, do the same number of pulls on each side of your blade. Normally, 8 to 10 passes on each
sidewillsharpenadullknifeblade.However,knivesmadeofextremelyhardsteelmayrequire
additionalpullsonbothsidesoftheknifebladetoachievesharpness.Ifyoubeganthesharpening
processintheCOARSEslot,movetotheFINEceramicwheelandrepeatsteps4through6.Ifyou
started the sharpening process in the FINE slot, continue to Step #7.
7. Checkthesharpnessofyourbladebycuttingapieceofpaperorafruitorvegetable.Ifadditional
sharpening is needed, repeat process until sharp but make sure to clean your knife before
continuing. If not, turn off power to the unit.
Manual Sharpening of Serrated Blades
The manual slot has two specially-shaped, triangular ceramic stones that are designed to sharpen
serrated blades without damaging the serrations. The ceramic stone will follow the shape of the
serrations on your blade as you pull the knife through the slot. The characteristic scallops of a
serrated blade are usually only ground on one side of the knife blade. For this reason, it is not
recommended that serrated blades be sharpened on both sides using the mechanical sharpening
wheels. This will considerably alter the original geometry of the blade.
1.Holdthebladestraightupanddownand
center the heel of the blade in the bottom
of the crossed ceramic stones.
2. Starting at the heel of the blade, pull the blade
through the crossed ceramic stones while
applyinglight,downwardpressure(neverback
and forth). When pulling serrated portion of your
blade through the slot, allow the knife blade to rise
andfallastheserrationscrossovertheceramic
stones. (Fig. 3).
3. Repeat this process 8 to 10 times or until blade is
sharp.
Maintenance and Care
There is little maintenance required with your Smith’s electric sharpener. To clean the exte-
rior housing, unplug the unit from the electrical outlet and simply wipe with a damp cloth.
• Donotuseapowderedabrasivecleanertocleansharpener.
• To protect against risk of electrical shock do not put any part of appliance in water or
other liquid.
• Donotuseanylubricantorwatertocleantheabrasivewheel.
• Do not use a lubricant on any other component.
HOW TO USE
Electric Sharpening - Straight Edge Blades Only
1. Cleanallfoodordirtoffyourblade.Neversharpenadirtyknifebladeasthiscould
cause the sharpener to malfunction or damage to the sharpening wheel.
2. Inserttheplugontheendofthepowercordintoastandard120voltelectricaloutlet.
3. Place the unit on a flat, sturdy surface and turn the unit ON by pressing the ON/OFF
switch. You will notice two sharpening areas for mechanical sharpening. Select the sharpening
area you would like to use.
COARSE -Thissharpeningwheelisusedforknivesthatareverydullandrequiremoremetal
removaltorestoretheedgesharpness.
FINE - Thissharpeningwheelisbestforknivesthatarefairlysharpandjustneedaquicktouch-up
withlittlemetalremoval.Inmanycases,andparticularlyaftertheinitialreshapingofyourblade’s
edge, use of the FINE slot, will be all the sharpening your blade will need.
SERRATED - This manual, pull-through slot should be used for sharpening most all types of serrated
blades or the serrated portion of your blade.
NOTE: A reasonably sharp blade may only require light honing in the FINE sharpening slots. The
COARSE slots are intended for dull blades that require more maintenance.
4. Holdtheknifesecurelybythehandleasyouwouldinnormalusageandpositionthe
heelofthebladeovertheselectedsharpeningslot.Insertthebladeintotheupper
portion of the sharpening slot then rotate the handle of the knife down (slightly raising
the tip of the blade) until the heel of the blade contacts the sharpening wheel (Fig. 1). As soon
ascontactismadeandyouhearthedistinctive
grinding sound, pull the blade at a consistent
speed through the sharpening slot using light,
downward pressure. To sharpen all the way out
to the tip of the blade, lift up on the knife handle
slightlyasthecurvedportionofthebladeis
drawn through the blade guides. (Fig. 2)
CAUTION: Always sharpen your knife blade from the heel to the
tip of the blade. Never insert the tip of the knife blade into the
blade guide first or push your knife blade through the sharpening
slot. This could damage the knife sharpener and/or your knife.

Periodicaly, the clean out door on the bottom of the sharpener should be opened and
cleaned. Also try to clear any remaining particles from the collection area inside the hous-
ing before replacing the door.
Cleaning or Replacement of Ceramic Stones
Theceramicstonesshouldbecleanedperiodicallytorefreshtheirabrasivequalitiesusinga
scrub brush and common cleansing kitchen powder. If after cleaning you feel the ceramic
stones are still not sharpening properly, they should be replaced. For replacement stones

TROUBLESHOOTING GUIDE
Symptom: The sharpener will not start when initially plugged into electrical socket.
Cause: Sharpener or electrical cord could be damaged or malfunctioning.
Solution: Return your sharpener and receipt to the place of purchase for replacement.
Symptom: Sharpener stops running while in use.
Cause: Sharpener has a built in motor thermostat as a safety feature. It protects sharpener
fromoverheatingifleftonaccidentallyforalongperiodorifbeingusedimproperly.
Solution: If the thermostat shuts down the motor, unplug the sharpener and wait about one
hour for the motor to cool down, and the sharpener will restart. If motor still will not re-start,
return sharpener to place of purchase.
Symptom: DiamondWheelsstopremovingmetal.
Solution: DiamondBreak-InPeriod–TheinitialaggressivecuttingspeedoftheDiamond
SharpeningWheelswillslowwithuse.Atthesametime,theabrasivenishwillimprove.Do
not be confused by this break in process because it is normal and should be expected. The
diamond wheels are breaking in, NOT wearing out.
Symptom: Ceramic stones stop sharpening.
Cause: Theceramicstoneswilllosetheirsharpeningabilityovertime,thusreducingtheir
effectiveness.
Solution: Ceramic stones should be cleaned or replaced as described in “Cleaning or
Replacement of Ceramic Stones” section in this manual.

A: Sharpenyourknifebeforeeachuseifyouwanttomaintainarazorsharpedge.Afterextensive
use,ifyouhavehonedtheknifebladeanditnolongerslicesfoodwithease,usetheelectricsharp-
eningwheelplusthemanualnishingslottoputanewrazorsharpedgeonyourblade.

A: Useittoslicefood.Iftheknifedoesnotslicefoodwithease,itneedsadditionalsharpening.
Q: MyknifeisnotsharpandI’vegonethroughthewholeknifesharpeningprocess.WhatamIdoing
wrong?
A: Althoughunusual,therearetimeswhenyouhavetorepeatthesharpeningprocessmorethan
once or make more passes through the mechanical sharpening slots. This may occur during the first
sharpening of a knife or if a knife was sharpened incorrectly by another process. It may also occur
when sharpening blades made of tempered steel, which are extremely hard, such as some hunting
knives.
YoucanusetheSmith’selectricknifesharpenertosharpenthesetypeofknives,butyoumayhave
torepeattheprocessseveraltimesormakenumerouspassesthroughthemechanicalsharpening
slots (in excess of 20 times or more for extreme cases). This extended process will only be necessary
the first time you use the sharpener for this type of blade. Thereafter, you will be able to sharpen the
blade following the normal sharpening procedures.
Q: Sometimes the sharpening wheel stalls when I am drawing the knife through the blade guides.
Whatcausesthis?
A: Theknifesharpenerisdesignedsothatverylittleeffortisneededtodrawthebladethroughthe
sharpeningslots.Ifexcessivedownwardpressureisappliedtotheknifeasitisbeingpulledthrough
the sharpening slots, the sharpening wheel will stall.
Q:HowdoIgetanevenedgeonmyblade?
A: Always do an equal number of strokes on both sides of the blade for best results. Always sharpen
fromheeltotip,neverbackandforth.Remembertoliftupslightlyonthehandleasthecurvedpor-
tion of the blade is drawn through the sharpening slots.
Q:OccasionallyIseesparkswhensharpeningmyknives.Whatcausesthis?
A:Ataprofessionalknifesharpeningservice,certainbladeswithhighcarboncontent(usuallyhigher
qualityknives)sometimeswillsparkorproduceastreamofsparkswhentheycomeincontactwith
the sharpening wheel. Your Smith’s Electric Knife Sharpener uses the same type of sharpening wheel
that the professionals use. Therefore, you can expect to see similar sparking when you sharpen
blades with high carbon content. This is normal.

7.Vérierlanettetédevotrelameencoupantunmorceaudepapieroud’unfruitouunlégume.Si
davantagelanettetéestnécessaire,répéterleprocessusjusqu’àcequeforte,maisassurez-vous
denettoyervotrecouteauavantdecontinuer.Sicen’estpas,coupezl’alimentationàl’unité.

Lafentemanueladeuxformesspéciales,triangulairespierresencéramiquequisontconçuspour
aiguiserleslamesdentelées,sansendommagerlesdents.Lapierrecéramiquesuivralaformedes
striessurvotrelamequevoustirezlecouteauàtraverslafente.Lacaractéristiquepétonclesd’une
lame dentelée ne sont généralement sol sur un côté de la lame de couteau. Pour cette raison, il
n’estpasrecommandéqueleslamesdenteléesêtreaiguiséedesdeuxcôtésàl’aidedesroues
mécaniques d’affûtage. Ce sera considérablement modifier la géométrie d’origine de la lame.
1. Maintenezlalamedroiteetcentrezsontalondansla
partie inférieure des pierres de céramique croisées.

1.Éliminezlanourritureoulessaletésdelalame.N’affûtezjamaisunelamedecouteausale,
en effet un fonctionnement défectueux de l’affûteur ou des détériorations sur la roue d’affûtage
pourraient se produire.
2.Insérezlapriseàl’extrémitéducordond’alimentationdansuneprisenormalede120V.
3.Placezl’unitésurunesurfaceplaneetrésistante,etmettezl’unitéSOUSTENSIONenappuyant
surl’interrupteurMARCHE/ARRÊT.Vousnoterezqu’ilexistedeuxzonesd’aiguisagepourl’affûtage
mécanique.Choisissezlazoned’affûtagequevousdésirezutiliser.
GROSSIERS - Cette roue d’affûtage est utilisé pour les couteaux qui sont très terne et nécessitent le
déménagement beaucoup plus de métal pour rétablir la netteté des bords.
FINE -Cetteroued’affûtageestlemieuxpourcouteauxquisontassezforteetjustebesoind’un
rapidetactileavecenlèvementdemétalpeu.Dansdenombreuxcas,etnotammentaprèsla
réorganisationinitialedeborddevotrelame,utilisezdelafenteFINE,serad’autantaiguiservotre
lameaurezbesoin.
DENTELE-cemanuel,tirez-àtraverslafentedoitêtreutiliséepouraffûterlaplupartdestousles

REMARQUE :Unelameraisonnablementtranchantepeutseulementnécessiterunlégeraiguisage
dans le guide-lame FIN. Le guide GROSSIER est destiné aux lames émoussées nécessitant un plus
grand entretien.
4.Maintenezlecouteauentoutesécuritéparson
manche, comme pour une utilisation normale,
etpositionnezletalondelalameau-dessusdu
guide-lamechoisi.Insérezlalamedanslapartie
supérieure du guide-lames et faites ensuite
tournerlemancheducouteauverslebas(enrelevantlégèrementlapointedelalame)jusqu’àce
que le talon de celle-ci repose sur la roue d’affûtage (Fig. 1). Aussitôt que le contact est réalisé et
aprèsavoirentendulebruitcaractéristiquedel’aiguisage,tirezsurlalameàvitesseconstante
àtraversleguide-lameenappliquantunelégèrepressionverslebas.Pourunaiguisagedetoute
lalamejusqu’àsonextrémité,relevezlégèrementlemanchelorsquelapartieincurvéedecelle-ci
traverselesguides-lames.(Fig.2).
REMARQUE :UnelameraisonnablementfortenepeutexigerderodagedelalumièredanslafenteFINE
affûtage. Les fentes GROSSIERS sont destinés à des lames émoussées qui nécessitent plus d’entretien.
PRÉCAUTIONS : Vous devez toujours affûter une lame de
couteau depuis le talon jusqu’à son extrémité. N’insérez jamais
en premier la pointe de la lame de couteau dans le guide-lame ni
ne poussez la lame dans ce dernier. Ceci pourrait endommager
l’affûteur et/ou votre couteau.

Votre affûteur électrique Smith’s ne nécessite qu’une légère maintenance. Pour nettoyer le boîtier
extérieur,débranchezl’unitédelapriseélectriqueetnettoyez-lesimplementavecunchiffonhumide.
• N’utilisezaucunnettoyantabrasifenpoudrepournettoyerl’appareil.
• Pour se protéger contre le risque de choc électrique, ne pas mettre n’importe quelle partie de
l’appareil dans l’eau ou autre liquide.

Symptôme: L’affûteur ne démarre pas lorsqu’il est branché.
Cause: L’affûteuroulecordonélectriquepourraitêtreendommagéoudéfaillant.
Solution: Rapportezvotreaffûteuretreçudecaisseàl’endroitoùvousl’avezachetépourqu’ilsoit
remplacé.
Symptôme: L’affûteur cesse de fonctionner alors qu’il est en fonctionnement.
Cause: L’affûteur a un thermostat intégré au moteur comme fonction de sécurité. Cela protège
l’affûteur contre une surchauffe s’il est laissé allumé accidentellement pendant longtemps ou s’il est
utilisé de manière inappropriée.
Solution: Silethermostatéteintlemoteur,débranchezl’affûteuretattendezuneheureenvironpour
quelemoteurrefroidisseetl’affûteurredémarrera.Silemoteurneredémarrepas,rapportezl’affûteur
àl’endroitoùvousl’avezacheté.
Symptôme: Les roues diamant cessent de retirer du métal.
Solution: Périodederodagedudiamant-Lavitessedecoupeinitialeagressivedesrouesd’affûtage

Symptôme: Les pierres en céramique cessent d’affûter.

ofrece una amplia capacidad para afilar cuchillas desgastadas fácilmente y mantener los bordes
nítidos.
Las ranuras mecánicas afilado cuentan con un disco de diamante recubierto de afilar (grueso) y una
ruedadealardecerámica(FINA)yguíasdelahojaparamantenersucuchilloenelángulocorrecto
enmecánicadealar.Lasmicrasdetamaño,diamantesmonocristalinosycerámicasutilizadaspara

¡ADVERTENCIA! Este afilador de cuchillos eléctrico produce bordes
muy afilados. Tenga cuidado cuando maneje el cuchillo después de

NOTA: a causa del diseño de algunos cuchillos, es posible que no pueda afilar la longitud completa
del cuchillo usando la rueda mecánica de afilado. Smith’s recomienda usar la ranura de afilado
manual para estos casos limitados.
Lavelocidadalaquepaseelcuchilloporlasranurasdealadodeterminarálacantidadde
metalremovidadelborde.Silopasalentamente,elaladorremoverámásmetalquesilopasa
rápidamente.Cuandopaseelcuchilloporlasranuras,hágaloaunavelocidadaproximadadedos
pulgadasdecuchilloporsegundo.Porejemplo,sivaaalaruncuchilloconhojade6pulgadas,cada
pasadadeberíatomarleaproximadamenteseissegundos.
5. Pase a la otra ranura y repita el proceso para afilar el otro lado del borde.
6. Continúealternandopasesalavelocidadrecomendada,yaseaatravésdelaGRUESAoFINA
afilado de las franjas horarias, hasta que el cuchillo está afilado. Para obtener los mejores
resultadosyparareducirexcesivodelasruedasdesgaste,hacerelmismonúmerodetironesen
cada lado de la hoja. Normalmente, de 8 a 10 pases por cada lado afilar una hoja de cuchillo sin
filo. Sin embargo, los cuchillos de acero extremadamente duro puede requerir adicional tira en
ambosladosdelahojadelcuchilloparalograrnitidez.Siustedcomenzóelprocesodealado
enlaranuraGRUESO,moveralaruedadecerámicanayrepitalospasos4a6.Sihainiciadoel
procesodealadoenlaranuradeFINE,continúeconelpaso#7.
7.Compruebelanitidezdelacuchillacortandountrozodepapelounafrutaoverdura.Si,además
dealaresnecesario,repitaelprocesohastaquefuerte,peroasegúresedelimpiarsucuchillo
antesdecontinuar.Sinoesasí,apaguelaunidad.
Manual de afilado de los cuchillos de dentado
La ranura manual tiene dos formas especiales, piedras triangulares cerámicos que están diseñados
paraalarcuchillasdentadassindañarlasestrías.Lapiedradecerámicaseguirálaformadelas
estríasenlahojaaltirarelcuchilloporlaranura.Lacaracterísticavieirasdeunacuchilladentada
sonporlogeneralsólosueloenunladodelahojadecuchilla.Porestarazón,noserecomienda
que las cuchillas dentadas ser afiladas en ambos lados con las ruedas mecánicas de afilado. Esta
considerablementealterarlageometríaoriginaldelahoja.
1. Sostenga el cuchillo con el filo hacia abajo y
centre la base del borde en la parte inferior
delaspiedrascruzadasdecerámica.
2. Comenzandoconlabasedelcuchillo,
tiredeélatravésdelaspiedrascruzadas
de cerámica a medida que aplica una presión
levehaciaabajo(nuncalomuevahacia
adelanteyhaciaatrás).Levanteelcuchilloal

Afilado eléctrico: sólo para cuchillos de borde recto
1. Limpielosalimentosylasuciedaddelcuchillo.Nuncaaleuncuchillosucioyaquepodríacausar
fallas del afilador o daños a la rueda de afilado.
2.Introduzcaelenchufedelcordóneléctricoenuntomacorrienteestándarde120V.
3. Coloque la unidad en una superficie plana y firme y ENCIENDA la unidad oprimiendo el interruptor
“ON/OFF” (encendido/apagado). Notará dos áreas para el afilado mecánico. Seleccione el área de
aladoquedeseautilizar.
GRUESO-Estaruedadealarseutilizaparaloscuchillosquesonmuyaburridosyrequierenmásde
remocióndemetalpararestaurarlanitidezdelosbordes.
FINA - Esta rueda de afilar que es mejor para cuchillos que son bastante fuerte y sólo necesita

PRECAUCIÓN: Siempre afile el cuchillo desde la base hasta
la punta. Nunca introduzca la punta del cuchillo en la guía para
cuchillos o empuje el borde a través de la ranura de afilado. Esto
podría dañar el afilador de cuchillos y/o el cuchillo.

Cuidado y mantenimiento
El afilador eléctrico Smith’s requiere muy poco mantenimiento. Para limpiar el exterior de la unidad,
desenchúfeladeltomacorrienteylímpielaconunpañohúmedo.
• Noutiliceunlimpiadorabrasivoenpolvoparalimpiarelalador.
• Para protegerse contra el riesgo de choque eléctrico no coloque ninguna parte del aparato en

GUÍA PARA RESOLVER PROBLEMAS
Síntoma: el afilador no arrancará cuando se enchufe inicialmente al tomacorriente.
Causa: el afilador o el cordón eléctrico pueden estar dañados o funcionando mal.
Solución: devuelvaelaladoryelreciboallugardecompraparasureemplazo.
Síntoma: el afilador se apaga mientras está en uso.
Causa: elaladortieneuntermostatoincorporadocomounacaracterísticadeseguridad.Este
protege al afilador de un sobrecalentamiento si es dejado encendido accidentalmente por un largo
periodo o si se está usando inapropiadamente.
Solución: si el termostato apaga el motor, desenchufe el afilador y espere cerca de una hora hasta
queelmotorseenfríe,despuésarrancaránuevamente.Siaúnasíelmotornoarranca,devuelvael
afilador a donde lo compró.
Síntoma: lasruedasdediamantedejanderemovermetal.
Solución: periododerompimientodeldiamante–lavelocidaddecorteagresivainicialdelasruedas
dealardediamantedisminuiráconeluso.Almismotiempo,elacabadoabrasivomejorará.Nose
confunda con este proceso de rompimiento ya que es normal y debe de esperarse. Las ruedas de
diamante se están rompiendo, NO desgastando.
Síntoma: las piedras de cerámica dejan de afilar.
Cause: laspiedrasdecerámicaperderánsuhabilidaddealarconeltiempo,reduciendoasísu
efectividad.
Solución: piedrasdecerámicasedebelimpiarocambiarcomosedescribeen“Limpiezao
sustitución de las piedras de cerámica” de este manual.

P:¿Conquéfrecuenciadeboalarmiscuchillos?
R: Afile el cuchillo antes de cada uso si desea que mantenga un borde afilado. Después de uso pro-
longado, si refinó el cuchillo y ya no corta bien los alimentos, puede usar la rueda eléctrica de afilar
además de la ranura de refinado para darle un borde bien afilado al cuchillo.
P: ¿Cómopuedosabersielcuchilloestáalado?
R: Utilíceloparacortaralimentos.Sielcuchillonocortalosalimentosconfacilidad,necesitaser
aladonuevamente.
P: Micuchillonoestáaladoyyapaséporelprocesodealadocompleto.¿Quéestoyhaciendomal?

por las ranuras, la rueda de afilado se detendrá.

R:Paraobtenerlosmejoresresultados,siemprealeambosladosdelcuchilloporigual.Siempreafí-
lelosdesdelabasehastalapunta,nuncahaciaadelanteyhaciaatrás.Recuerdelevantarlevemente
elmangodelcuchilloamedidaquepasalaseccióncurvadelbordeporlasranurasdealado.
P: Ocasionalmentesalenchispascuandoalomiscuchillos.¿Cuáleslarazón?
R:Enlosserviciosprofesionalesdealadodecuchilloshayciertostiposdecuchilloconalto
contenido de carbón (generalmente los cuchillos de mejor calidad) que emiten una gran cantidad de

P: ¿Puedo afilar cuchillos serrados, tijeras y otros tipos de bordes con mi afilador de cuchillos eléc-
tricoSmith’s?
R: Su afilador de cuchillos eléctrico Smith’s afila cuchillos de borde recto de aleación, carbón o acero
inoxidable en cualquiera de las ranuras (mecánicas o manuales). También afila cuchillos de borde
serrado, pero sólo en la ranura de afilado manual. No intente afilar tijeras ni los cuchillos que no

reparará o reemplazará, a nuestra opción y sin costo, cualquier producto o pieza
que se encuentre defectuosa en materiales o mano de obra si nos devuelve el
