To light th surfac burn rs, push and turn
th appropriat control knob count r
clockwis to any position. This control is both
a gas valv and an l ctric switch. Each
burn r will ignit at any “ON” position with
th automatic r -ignition syst m. If th flam
go s out for any r ason, th burn r will
automatically r -ignit if th gas is still
flowing. Wh n gas is p rmitt d to flow to th
burn r, th l ctric ignit rs start sparking,
cr ating a “clicking” sound. If not, turn off
th control and ch ck that th unit is
plugg d in and that th fus or circuit
br ak r is not blown or tripp d.

Simm ring is a cooking t chniqu in which foods ar cook d in hot
liquids k pt at or just bar ly b low th boiling point of wat r. Simm ring
nsur s g ntl r tr atm nt than boiling to pr v nt food from tough ning
and/or br aking up. Th siz of th pan and th volum of food can hav
a significant ff ct on how high or low a flam is n d d for simm ring.
For this r ason, Viking Prof ssional rang and rang top burn rs ar
ngin r d with a Vari Simm r s tting. Th Vari Simm r s tting is not just
on simm r s tting, but provid s a variabl rang of simm r s ttings.
This variabl rang of simm r s ttings allows adjustm nt of th flam
h ight to achi v th b st simm r d p nding on th typ and quantity
of food b ing simm r d. It is this ability that mak s th Vari Simm r
s tting th most accurat and trustworthy simm r on th mark t.
Surface Cooking Tips

poor conductors of h at, such as glass, c ramic, and cast-iron.

Note: When u ing big pot and/or high flame , it i recommended to u e
the front burner . There i more room in the front and potential cleanup at
rear of appliance due to taining or di coloration will be minimized.

Th optional 15,000 BTU griddl is construct d of machin d st l with

l ctronic th rmostat to maintain an v n t mp ratur across th
griddl onc th d sir d t mp ratur has b n s t. Th griddl has a
pow r “ON” indicator light which glows wh n th griddl th rmostat
has b n turn d on. This will cycl on and off as n d d to indicat
th th rmostat is maintaining th s l ct d t mp ratur .
Cleaning the Griddle Before the First Use
• R mov plastic film.
• Wash griddl with warm, soapy wat r. Rins off and dry thoroughly.
Th griddl is now r ady to b us d.
Griddle/Simmer Plate Operation
• Turn th griddl control knob count rclockwis to th d sir d

indicating th griddl th rmostat is on.

“OFF” position.

Griddle/Simmer Plate Clean Up & Care

• Aft r h avy cooking is compl t d and th griddl is still warm nough
to cr at st am, pour a small amount of club soda at room t mp ratur
dir ctly on th griddl . Using a h at r sistant or wood n spatula, pull
oils and food particl s toward th trough in front. Wip ntir surfac
with a pap r tow l.
• Non-stick cooking spray is not r comm nd d as it contains a high
wat r cont nt that has a t nd ncy to burn quickly.
• Corn oil is not r comm nd d as it has a high sugar l v l. It will
caram liz and burn on th surfac making it v ry difficult to r mov .
• Aft r using th griddl , always r mov th gr as trough locat d in th
front. Simply pull th trough towards you and lift out. Th trough or
tray trap n ds to b cl an d aft r ach us . A fir hazard may occur if
gr as is accumulat d in th trough.
• Important: N v r flood a hot griddl with cold wat r. This th rmal
shock promot s griddl warping and can caus th griddl to crack if
continu d ov r a p riod of tim .
