Hot Food Display
Thank you for purchasing this Vollrath Cayenne Hot Food Display. Before operating
this unit, read and familiarize yourself with the following operating and safety
instructions. SAVE THESE INSTRUCTIONS FOR FUTURE REFERENCE.
WARNING
RISK OF FIRE AND BURN INJURY
FIRE AND BURN INJURIES CAN OCCUR IF THIS EQUIPMENT IS NOT USED
PROPERLY. TO REDUCE RISK OF INJURY:
Unit should only be used in a flat, level position.
Plug only into electrical outlet matching the unit nameplate.
Let hot unit cool before cleaning or moving.
Do not spray controls or outside of unit with liquids or cleaning agents.
Do not operate unattended.
NOTE: Unit must be installed with a maximum 15 ampere circuit protection.
Function and Purpose:
This unit is intended to hold containers of hot food. This unit is not intended to
rethermalize food items. It is intended to be used in commercial foodservice operations
only. It is not intended for household use.
Before using this equipment it must be cleaned thoroughly. Clean all surfaces before
use. Failure to clean surfaces before using the unit could cause food contamination.

THE INSTALLATION OF THIS HOT FOOD DISPLAY MUST BE IN
ACCORDANCE WITH ALL FEDERAL, STATE AND LOCAL CODES.
FAILURE TO INSTALL THIS APPLIANCE
PROPERLY MAY RESULT IN INJURY.
Installing the Hot Food Display:
1. Remove all packing material and tape, as well as any protective plastic from the
unit.
2. Clean any glue residue left over from the plastic or tape.
3. Carefully unpack the safety glass. See glass installation instruction sheet for
assembly.
4. Place the unit in the desired location and level using the adjustable feet.
5. Plug unit into a properly grounded electrical supply matching the nameplate
rating. Damage to the unit can occur if incorrect power is supplied to unit.

WARNING
BURN HAZARD
HOT WATER AND STEAM IN THE WELL CAN BURN SKIN.
USE PROTECTIVE GLOVES, MITTS OR POTHOLDERS WHEN REMOVING
FOOD CONTAINERS OR COVERS. HOT FOOD CAN ALSO CAUSE BURNS.
HANDLE HOT FOOD CAREFULLY.
Using the Hot Food Display:
Wet Operation:
1. Fill unit with clean fresh water. The water level should be between the “H” (MAX)
and the “L” (MIN) fill line located in the front right corner of the water basin.
2. Turn the temperature control to the maximum setting. Preheat the unit for
approximately 30 minutes on the high setting.
3. When the unit is fully preheated, insert food pans of hot food into the
merchandiser. If fractional pans are used, it is highly recommended that adapter
bars are used for maximum efficiency and to minimize fogging of the glass.
4. Turn lights on using ON/OFF switch to enhance food presentation and to reduce
fogging of the glass.
5. Adjust heat setting to desired level to maintain proper holding temperature.
FOOD SAFETY PRECAUTIONARY NOTE
Monitor food temperatures closely for food safety. The United States Public
Health Service recommends that food be held at a minimum of 140
F (60
C) to
help prevent bacteria growth. Periodically (approximately every 2 hours) remove
container of food and check the water level. Add hot water if needed.
6. It is recommended that back doors be slightly open during operation to reduce
fogging of the glass.
Dry Operation:
1. Turn the temperature control to the maximum setting. Preheat the unit for
approximately 30 minutes on the high setting.
2. Insert food pans of hot food into merchandiser. If fractional pans are used, it is
highly recommended that adapter bars are used for maximum efficiency.
3. Turn lights on using ON/OFF switch to enhance food presentation.
4. Adjust heat setting to desired level to maintain proper holding temperature.

WARNING
ELECTRICAL SHOCK HAZARD
DO NOT SPRAY OUTSIDE OF THE UNIT OR CONTROLS WITH LIQUID OR
CLEANING PRODUCT. LIQUID COULD ENTER THE ELECTRICAL
COMPARTMENT AND CAUSE A SHORT CIRCUIT OR ELECTRIC SHOCK.
Cleaning:
1. Insure that the unit is unplugged and completely cool prior to cleaning.
2. Place a suitable container under the drain valve.
3. Carefully open drain valve to drain water from the basin.
4. Unit must not be cleaned with a water jet or immersed in water.
5. Use a damp cloth or sponge dipped in mild soapy water to wipe the interior and
exterior surfaces; thoroughly rinse.
6. Exterior of unit must be completely dry before plugging back in.
7. In areas of hard water, residue can build up in the basin or on the heating
element. De-liming agents must be used in accordance with manufacturer’s
instructions. BE SURE TO RINSE COMPLETELY TO REMOVE ALL CHEMICAL
RESIDUES. Chemical residue can cause the basin to corrode and can
contaminate the food.
8. Do NOT use chloride or chloride based products for cleaning. This will damage
the stainless steel surfaces.
Repair and Maintenance:

CUT INJURY HAZARD
WEAR PROTECTIVE GLOVES AND PROTECT YOUR
EYES WHEN REPLACING THE HEAT LAMPS. THE
LAMP COULD SHATTER WHEN REMOVING OR
INSTALLING.
Replacing heat lamp
1. The heat lamps in the appliance are standard 120V, 1000W tungsten halogen
lamps.
2. Allow the appliance and the lamps to fully cool down before attempting to replace
the lamps.
3. Disconnect the appliance from the electrical power source.
4. To remove the lamp, push the lamp towards one end to release the opposite end
and pull the lamp out. This may require some force as the lamp is held in position
with spring tension.
5. When inserting a new lamp, do not touch the glass with your fingers as this
reduces its life and efficiency. Use a clean, dry cloth or something similar to hold
the lamp while installing.
There are no other user serviceable parts within this food display. To avoid serious
injury or damage, never attempt to repair or replace a damaged power cord yourself.

WARRANTY INFORMATION
Warranty Policy for The Vollrath Company L.L.C
The Vollrath Company L.L.C. warranties all products it manufactures and
distributes against defects in materials and workmanship for a period of one
year - except as listed below:
Refrigeration compressors – 5 year warranty
Intrigue & Classic Select cookware – Limited lifetime warranty
Replacement parts – 90 (ninety days) on the part only
Fry pans and coated cookware – 90 (ninety days)
All warranties cover normal use and service only and are void if the product
has been damaged by accident, neglect, improper use or other causes not
arising out of defects in material or workmanship. The Vollrath Company shall
not be liable for loss of use of the product or other incidental or consequential
costs, expenses or damage incurred by the purchaser.
Warranty work must have prior approval from The Vollrath Company L.L.C.

All Vollrath equipment is repaired or replaced at the discretion of The Vollrath
Company L.L.C., in accordance with the warranty policy listed above. Should
