Thank you for purchasing the above machine from ABP ATLAS. We wish you many years of trouble
free use. To ensure this, please read the Operation and Maintenance Manual supplied with your
machine.
All new equipment/machines purchased from ABP ATLAS are subject to 12 months replacement
parts and labour warranty. This excludes belts, light bulbs, electrical switches and power boards.
Our warranty is for work carried out during normal working hours.
Normal Working Hours are between 8.00 am – 5.00 pm Monday to Friday – excluding Public
Holidays. If the Client cannot wait until what is considered ‘normal working hours’ for service
personnel, then any extra expense incurred for ‘after hours’ labour charge is the responsibility of the
Client.
1. ALL WARRANTY CLAIMS MUST BE REFERRED TO, AND APPROVED BY, ABP ATLAS PRIOR TO ANY WORK
BEING CARRIED OUT.
FAILURE TO COMPLY WILL RENDER ALL WARRANTIES NULL AND VOID.
2. FOR DOUGH DEVELOPMENT ATLAS PLANETARY MIXERS SHOULD ONLY BE USED ON LOW SPEED.
ANY DEVIATION FROM THIS WILL MAKE THE WARRANTY NULL AND VOID.
By purchasing this equipment from ABP Atlas the Purchaser accepts the following:
1. ANY WARRANTY CLAIM FOUND TO BE CAUSED, OR CONTRIBUTED TO, BY ABUSE, NEGLECT, OVERLOADING, INCORRECT USE OR
OPERATOR ERROR WILL BE CHARGED TO THE CUSTOMER AT CURRENT RATES.
2. ITEMS RETURNED TO ABP ATLAS WILL BE SUBJECT TO A HANDLING AND/OR RESTOCKING FEE OF 15%.
3. ABP ATLAS SHALL NOT BE RESPONSIBLE FOR ANY LOSS OF BUSINESS, DOWNTIME, GOODWILL, LATE DELIVERY, OR ANY OTHER
COMMITMENT INCURRED BY THE CUSTOMER WHICH MAY BE RELATED TO THE PURCHASE, USE, REPAIR OR WARRANTY FOR ANY
PRODUCT WITHOUT PRIOR WRITTEN AUTHORISATION FROM ABP ATLAS.
4. WARRANTY COMMENCES FROM DATE OF SALE
5. ABP ATLAS WILL NOT BE HELD RESPONSIBLE FOR DAMAGE CAUSED WHILST ITEMS ARE IN STORAGE AND NOT IN USE.
6. ABP ATLAS WILL NOT BE HELD RESPONSIBLE FOR DAMAGE INCURRED DURING TRANSPORT OR WHERE THE PURCHASED ITEM IS
FORWARDED ONTO ANOTHER DESTINATION BY THE ORIGINAL RECEIVER OF THE GOODS. ( I.e.: Reseller to customer )
7. DELIVERY DAMAGE CLAIMS MUST BE MADE AT TIME OF ACCEPTING DELIVERY FROM THE TRANSPORT COMPANY. NO CLAIMS
WILL BE ACCEPTED ONCE ORIGINAL CONSIGNMENT NOTE IS SIGNED AS “RECEIVED IN GOOD ORDER AND CONDITION”.
8. UNLESS THE CUSTOMER HAS INSPECTED THE GOODS AND GIVEN WRITTEN NOTICE TO ABP ATLAS WITHIN SEVEN (7) DAYS AFTER
COLLECTION OR ACCEPTANCE OF DELIVERY THAT THE GOODS DO NOT COMPLY WITH THE RELEVANT SPECIFICATIONS OR
DESCRIPTIONS, THEN THE GOODS ARE DEEMED TO HAVE BEEN ACCEPTED IN GOOD ORDER AND CONDITION.

PRELIMINARY
It is important to read this manual carefully before using the machine, and whenever the need arises
to consult it. Adhere to the technical instructions provided and follow all the indications scrupulously.
For the safety of the operator, the devices of the machine should always be kept in good working
order.
This manual, an integral part of the machine, must be kept in an accessible place known to ALL
OPERATORS, and made available to the authorised personnel for any eventual repairs and/or
maintenance.
DESCRIPTION
The SH500 Pizza Roller was designed in accordance with Australian regulations and has been
manufactured to protect the user from the risks associated with its use. For this reason, the machine
is equipped with special safety devices to avoid risks during contact with moving parts.
SAFETY
1. Before turning on the machine, and every time a doubt about its workings arises, every operator is
obliged to carefully read the Operation and Maintenance Manual. Ensure that the people involved
in using the machine know and adhere to the contents of the manual.
2. The installation must be carried out by authorised personnel only and must be in accordance with
the manufacturer’s instructions.
3. For any breakdowns and/or repairs contact ABP Atlas.
4. During breakdowns and/or repairs it is essential to take all necessary precautions to prevent any
harm or damage to either persons or things.
5. It is illegal to modify or alter any of the safety devices, protective devices, or controls of the
machine. All the protective and safety devices must be kept in perfect working order and
condition.
6. Switch off the mains via the isolating switch to separate the machine for the main power before
carrying out any maintenance, cleaning and/or repairs.
7. Once maintenance, cleaning and/or repairs have been completed ensure all safety devices,
protective devices and controls are reinstated back to original status, ensuring correct position and
effectiveness.

IMPORTANT NOTICE:
Safety devices, protective devices, and controls of the machine are for the protection of the
operator as well as an essential part of machine function. These devices must be kept in
original working order and condition. Any alterations carried out to the machinery without the
manufacturers or importers authorisation may render the machine unsafe, and will result in
breach of the warranty conditions. Further, any other parts of a machine modified, or
otherwise altered from to the manufacturer’s specification, Australian Standards and O.H. & S.
Act could also render the machine unsafe. It is an offence under Australian workplace safety
Acts to use or keep non-compliant machinery to or in a workplace, and offenders are liable to
prosecution under the O.H. & S. Act.
OPERATING INSTRUCTIONS
1. Never use machine whilst wearing loose clothes, ties, scarves etc. which may have the potential
to be dragged into the roller.
2. Ensure TOP LID (53) is closed and SAFETY SWITCH is engaged, otherwise the machine will not
start.
3. Adjust TOP set of ROLLERS to desired gap, approximately 50% greater than BOTTOM ROLLER
gap. Adjustment for TOP ROLLER is by means of the left side adjustment handle. Ensure
HANDLE (190-192) is locked into place to eliminate movement under load.
4. Adjust BOTTOM ROLLER by the RIGHT LEVER by viewing ROLLER GAP in space directly
above the stainless steel plate.
5. PLEASE NOTE:WARNING The adjusting handle is tensioned by a spring inside the knob. If
knob is not pulled fully out when operator is moving it, knob head pin could damage the adjusting
arc. If the adjusting arc grooves are worn out for the above reason the rollers will not be able to
hold the required thickness.
6. Press START BUTTON.

6. FLOUR DOUGH ON BOTH SIDES and place the Dough Ball (slightly squashed) into TOP
STAINLESS CHUTE, this will then exit as a flat oval base. Note: Fingers or hands should
never be forced into this Chute as rollers are at the base which can cause harm.
7. Place oval base on top of stainless plate – after turning 90oand insert into second opening.
Note: Fingers must not be forced inside this space as the ROLLERS tend to pull anything
into the machine.
8. Pizza base is now delivered onto CONVEYOR BELT (202). Remove and place on pan.
9. Push STOP BUTTON to stop machine. By lifting TOP LID (53) the machine will automatically
stop.

INSTALLATION
Delivery
Delivery should be carried out by a qualified person and pay attention to the balance of the machine.
DO NOT allow an incline of more than 30°. Make sure the lifting strength of wire rope; hoist or forklift
is enough to lift the machine.
Before positioning machine, make sure the bearing surface is a horizontal level, without direct sunlight
and not near a heat source. Put the machine in a well-ventilated and dust-free area. The ambient
temperature should be from 5° - 45°C, relative humidity from 30 – 90%.
Connections
Connect the machine to the electric power supply, after having:
Ensured the frequency and the power supply correspond to that written on the plate.
Ensured the socket is connected to earth.
Take steps to have a proper plug 240V, 10 AMP, 3 PIN (active, neural, earth)
The machine is equipped with fixed suitable safety devices designed to avoid contact between parts
of the human body (upper limbs) and parts of the machine in movement during processing phases, in
order to eliminate risks of dragging, crushing and abrasion. Check the safety devices of the machine
are present and assembled before activating the machine.
TROUBLESHOOTING
If the roller does not work:
1. Check the power supply, including fuses and circuit breakers to ensure they are not blown or
tripped.
2. Ensure top lid is completely closed and the micro switch is not damaged.
3. Ensure the emergency stop button has been disengaged.
The motor stops:
1. The thermic motor protector safety device has discovered overheating of the electric motor.
Remedy: Wait about 30 min to allow the motor to cool; then restart the process.
If dough is tearing or is not rolling correctly:
1. Dough is NOT floured on BOTH sides
2. Dough is mixed incorrectly
3. Dough not rested long enough
If all the above have been checked and your Dough Roller still does not operate correctly contact ABP
ATLAS ON 03 9878 6900.

MAINTENANCE
1. Lift top panel, wipe rollers and internal section with damp cloth.
Note: NEVER drop or close the top lid of the machine with force, as this can
cause damage to the safety switch and the machine will not operate.
2. With a brush, remove dough and flour from scrapers. Ensure there is no dough left between
scraper and rollers. Close lid, push Start Button and immediately push Stop Button. Reopen lid
and clean remainder of roller and scrapers. Repeat this until full circumference of roller is cleaned.
Note: Scrapers can be rotated by a few degrees to make cleaning easier.
3. Number 4 scraper, on the bottom roller, is accessed from the Front Inspection Plate, which can be
removed by 4 thumbscrews.
Note: NEVER use machine with this plate removed.
4. Wipe machine daily with warm damp cloth to remove excess flour and dough. Chemical products
should NOT be used on ABS white sheet material.
Note: NEVER try to insert cloth/rag into the machine for cleaning as they not only damage the
machine but may also cause your hands to be drawn into the machine.
NEVER LEAVE THE MACHINE RUNNING
