BEFORE INITIAL USE
• Remove all packaging materials and any labels on the device.
• Place the base unit on a stable, dry, and heat-resistant surface with at least 6 inches of clearance around the device.
• Stack all drying racks empty on the base station and place the lid on the top rack.
• Plug the device into a wall outlet and turn the temperature to the maximum temperature (160°F).
• Turn the unit on and run the device for approximately 30 minutes.
NOTE: There may be an unpleasant odor the first time the device is used. The odor should disappear after
repeated use.
• Switch the unit o and pull the plug.
• Rinse the drying racks and lid and let them dry. If necessary, wipe the base unit with a clean, damp cloth.
PREPARING FOOD FOR DRYING
• Make sure that food is fresh and fruit is ripe before drying.
• For herbs, remove the stalks before drying.
• Most food should be blanched before drying to make sure its appearance and taste changes as little as possible.
BLANCHING
Blanching means scalding the food for a short time with boiling water or hot steam for 10 to 30 seconds
(depending on the size of the food), then immediately rinsing the food in ice-cold water. The sudden temperature
change enables the food to retain its color during drying.
FRUITS, VEGETABLES, AND MUSHROOMS
NOTE: Only use fresh, ripened and undamaged fruits, vegetables and mushrooms.
• Wash the vegetables, fruits, or mushrooms thoroughly so they are free of any traces of chemicals.
• Remove any discolored, overripe, or damaged segments.
• Blanch the food and let it dry.
• Peel and remove the core from fruits and vegetables (if applicable).
• Cut large fruits, vegetables, and mushrooms into slices. Be aware that thin slices will dry faster but they will shrivel.
• If you would like to enrich fruit with vitamin C, place them in an ascorbic acid solution (ratio of 1 tsp. of ascorbic
acid to 1 liter of water) or lemon juice (ratio of 1 tsp. of lemon juice to 1 cup of water) for 15 to 30 minutes.
MEAT AND FISH
NOTE: Lean sirloin beef or venison is best for drying. Remove any fat from the meat before drying.
•Blanch the meat and cut it into strips. Season the meat to your taste.
•If drying fish, cut the fish lengthwise. Large fish must be filleted and cut into strips. Do not remove the skin
because they hold the strips together.

• Plug the device into a wall outlet. Make sure that the unit is o.
• Spread the prepared food evenly over the drying racks. Make sure that the food does not overlap. If you have
cut fruit in half, place the fruit on the drying rack with the cut surface facing upwards.
• Stack the filled racks on top of one another on the base unit and then place the lid on the top rack.
• Drying is most eective on the bottom rack, so it is recommended that you place the food that dries faster on
the upper racks. If all the food is the same, rotate the racks from time to time.
• Set the temperature and switch the device on.
• Check the drying process from time to time, rotating the racks if necessary to make sure that the food dries evenly.
