The Birko Meat Slicers are designed for slicing a variety of Meats .The meat slicers are not suitable for cutting dairy foods or
foods with a high moisture content e.g. Tomatoes; Lettuce; Cucumber; Onions; Carrots or other fruits and vegetables.
Frozen meats must be thawed before slicing.
Because of their robust construction,the meat slicers are ideal for use in most commercial applications e.g. Restaurants;
Delicatessens and small shops.
INSTALLATION:
-Unpack the appliance and securely fit all safety guards and components.
-Ensure the Slicer is placed on a secure, horizontal working surface capable of supporting a Min. 25Kg.
-The Meat Slicer must be connected to a standard 230 V 10 amp general purpose outlet, in accordance with AS/NZS3000.
SAFETY:
-Read all instructions and precautions before operating the Meat Slicer.
-The Meat Slicer is designed for indoor use only and must not be located in an area that may be cleaned by a water jet.
-This appliance is not intended for use by persons (Including Children) with reduced physical, sensory or mental capabilities,
or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance
by a person responsible for their safety.
Children should be supervised to ensure they do not play with the appliance
-If the power cord and plug is damaged it must be replaced by Birko or a qualified technician.
-When maintaining the appliance and when removing any parts, ensure the power is turned off.
-Do not operate the appliance with wet hands.
-After cleaning the Meat Slicer ensure it has been dried before use.
-Keep hands and fingers away from the rotating blade.
-Wear protective gloves when cleaning the blade.
-Wear protective eye glasses when sharpening the blade.
-Do not touch the blade until it has come to rest and the power has been turned OFF.
Read these Warnings first
Caution: Ensure the appliance is Earthed. To avoid the possibility of electric shock, a 3 pin plug, with
earthing pin, must be fitted to an approved, earthed socket. Do not operate when wet.
Caution: The slicer operates automatically, keep hands and fingers clear of the blade and any moving
parts.
Caution: When cleaning or sharpening the blade take extreme care. The blade is very sharp and may cause
injury. Use protective gloves when cleaning the blade.

-Do not operate the Meat Slicer without the blade cover in place
-Do not operate the Meat Slicer if the blade cover, carriage, slicing controls and any moving parts, are loose or damaged.
-Do not cut Meat with a temperature below -6 C.
-Turn the Meat Slicer OFF when not in use.
Once you have familiarised yourself with the Meat Slicer and the machine has been correctly installed, follow the instructions
below:
1) Turn the switch ON and a pilot light will be illuminated, the blade will rotate in an anti-clockwise direction.
2) Check the Meat Slicer and ensure all of it’s components work correctly. Turn OFF after a few minutes.
3) Rotate the Slicing Thickness knob (item 6) anti-clockwise, to determine the thickness of each cut.
4) Place the Meat to be sliced on the carriage.
4) Rotate the Knob on the positioning adjuster (item 5) clockwise until the positioning head is in contact with the back plate
(item 8).
5) Turn the switch ON and slide the carriage back and forward over the blade with a continuous motion, using the pushing
handle and the pusher knob.
6) When slicing has finished, turn the switch OFF.
7) Undo the positioning adjuster knob and allow the positioning head to move back to it’s original position.
8) Remove the sliced Meat from the machine.
-Cleaning must be performed daily and in between Meat changes.
-Turn OFF and unplug the Meat Slicer before cleaning.
-Turn the slicing thickness regulator so the blade is in the Zero gap position.
-Remove the central blade cover by unscrewing the black knob, from the back of the appliance.
-When cleaning the blade,use extreme caution. To avoid injury, wear safety gloves and do not touch the edge of the blade.
-To remove the blade, first remove the central blade cover (as above) and then attach the plastic blade removal tool, before
undoing the 3 Phillips headed screws.
-Do not use strong, corrosive, spray or abrasive cleaners.
-Clean the body of the machine and the blade with a soft cloth and use mild soap and water.
-Do not use scourers to clean the blade.
-Do not use a water jet to clean the machine.
-After cleaning and re-assembling, run the Meat Slicer for a few minutes and check for correct operation.
-This unit is intended for indoor use only and should never be installed outdoors
or exposed to the elements of nature.

1) Blade Rustproofing:
-Ensure the blade has been thoroughly dried. Clean with a dry cloth.
-Spread a little cooking oil on the edge of the blade.
-Sharpen the blade every day to avoid the appearance of rust.(ref: P6 - Blade sharpening).
2) Guide lubrication:
-Push the carriage to one side and remove any grease from the guides, with a dry cloth.
-Smear the guide with fresh grease.
-Grease the guides at least once a week.
3) Pushing axle lubrication:
-Clean the pushing axle with a dry cloth.
-Apply clean cooking oil to both of the axles and pull the pusher up and down to spread the oil evenly and to ensure smooth
operation.
-Lubricate the axles daily.
4) Sharpener lubrication:
-Clean the sharpener axle before sharpening.
-Apply cooking oil to the sharpener axle.
-Work the oil into the axle until the sharpener slides free.
5) Localising head lubrication:
-Turn the fixing positioner anti-clockwise to it’s maximum length.
-Clean the localising head and re-apply some cooking oil to lubricate it.
-Return the fixing positioner back to it’s original position.
-Use a minimal amount of oil on the localising head, once a week.

Blade Sharpening:
The blade will need sharpening when the slicing thickness becomes uneven, or when the sliced Meat starts to break up. The
blade is sharpened in two stages. Before commencing, the blade must be cleaned (ref: page 3).
Warning: Wear protective eye coverings to protect from loose sharpening stone grit.
Stage 1:
1) Release the sharpener (ref: item 1), by undoing the knob at the back and rotate the head until the sharpening stones are
on both sides of the cutting wheel. Secure the sharpener assembly, by tightening the knob at the back and ensure the axles
are lubricated so that the sharpening head moves freely.
2) Press down the stone on the right hand (Rear) side to place the sharpener into the working position.
3) Ensure the surface of the stone has been adjusted so it is in close contact with the chamfer on the right hand side of the
blade.
4) Turn the switch ON and work the stone against the rear chamfer of the rotating blade for aprox. 5-10 seconds.
5) Turn the switch OFF and wait for the blade to stop rotating.
6) Check the blade has been sharpened evenly, if not repeat the process.
Stage 2:
1) Press down the stone on the left hand (Front) side to place the sharpener into the working position.
2) Ensure the surface of the stone has been adjusted so it is in close contact with the left hand cutting side of the blade.
3) Turn the switch ON and work the stone against the front face of the rotating blade for aprox. 2-3 seconds to remove any
Burrs.
Note: The left hand (front) side of the cutting blade should remain flat and not chamfered.
4) Turn the switch OFF and wait for the blade to stop rotating.
5) Check the blade has been sharpened evenly and all burrs have been removed, if not repeat the process.
6) Replace the sharpener back to it’s original position and secure it by tightening the knob at the back. Ensure the stones are
positioned away from the blade and clean as necessary.
7) Clean and oil the blade (ref: page 3) in preparation for use.
