clockwise to decrease the temperature.

Preheating
You should allow the u it to preheat for a mi imum of 30 mi utes before loadi g it with product. The
recomme ded i itial setti g for the well thermostats is 7 a d for the upper ca opy heaters is 7.
Temperature Ad ustment
After placi g the product i to the hot bar, it may be ecessary to adjust the thermostat setti gs i order to
mai tai the proper i ter al temperature for the product o display.
Measure the product i ter al temperature every 30 mi utes by i serti g a food thermometer i to the food.
The i ter al temperature of the food should be o less tha 140°F [60°C]. Most areas of the cou try have
regulatio s gover i g the mi imum temperature for hot foods. Make certai to check with your local
authorities.
If ecessary adjust the thermostat setti gs to mai tai the proper i ter al temperature of the food product.
The thermostats should be set to the lowest possible setti g that will mai tai the proper product
temperature.
Operational Guidelines
Foods should be a mi imum of 175° F [80° C] before bei g placed i the u it.
Keep food thermometer o ha d. Check the food temperatures every 30 mi utes
Rotate the food products. Foods loaded i first should be served first as much as is practical.
Foods held for lo g periods of time are more difficult to mai tai at proper temperature. Also, fresh ess a d
product quality dimi ish if foods are held too lo g. Most areas of the cou try have sa itatio regulatio s
gover i g how lo g foods ca be held. Make certai to check with your local authorities.
Unit Shutdown
Remove all food pa s holdi g the food product from the u it. Move the rocker switch to the OFF positio to
tur the power to the heaters a d lights off. After the temperature has cooled below 120°F (50°C), remove
a y residue from the well a d clea the equipme t thoroughly.

Installation
Serious i jury, equipme t damage or death could result if attempti g to i stall
this u it yourself. E sure that a authorized BKI service age t i stalls the u it.
Unpacking and Handling
The compa y taki g delivery of this equipme t is respo sible for fili g all freight claims with the deliveri g
truck li e. I spect all carto s a d crates for damage as soo as they arrive. If damage to carto s or crates is
fou d, or if a shortage is fou d, ote this o the bill of ladi g (all copies) prior to sig i g.
If damage is fou d whe the equipme t is ope ed, immediately call the deliveri g truck li e a d follow up the
call with a writte report i dicati g co cealed damage to your shipme t. Ask for a immediate i spectio of
your co cealed damage item. Packagi g material MUST be retai ed to show the i spector from the truck
li e.
Do ot walk o top of the equipme t or damage to the equipme t a d serious
perso al i jury could occur. The equipme t is ot structurally desig ed to support
excessive exter al loadi g such as the weight of a perso . Do ot place heavy
objects o the equipme t.
Move the u it as close as possible to its perma e t locatio before movi g the u it off of the shippi g pallet.
Make certai there are o separately packed accessories before discardi g packagi g.
Location
The u it must be located o a level surface. After movi g the u it, be sure to lock all 4 casters o the u it.
Wiring Connection and Grounding
Electrocutio , equipme t failure or property damage could result if a u lice sed
electricia performs the electrical i stallatio . E sure that a lice sed electricia
performs the electrical i stallatio i accorda ce with local codes, or i the abse ce of
local codes, with the Natio al Electrical Code, ANSI NFPA 70-20XX.
Cord e try k ockouts are provided o the top a d bottom of the u it. Refer to the Mecha ical Specificatio s
sectio of this ma ual for the locatio of these k ockouts.
Refer to the Wiri g Diagrams i this ma ual for the proper 1 or 3 phase co ectio s for the specific model
bei g i stalled. I stall the provided termi al block jumpers i the termi al block that the field wiri g
co ectio s are bei g made to as show i the appropriate wiri g diagram.

Daily User Mobile Hot Bar Clea the e tire u it. Refer to the clea i g
procedure below.
Cleaning
This u it should be clea ed at the e d of each day. Use the followi g procedure:
Failure to remove power from this u it may cause severe electrical shock. This
u it may have more tha o e disco ect switch.
1. Tur the u it OFF a d allow it to cool dow .
2. Remove a y food from u it.
3. If so equipped, u plug the cord from the receptacle.
4. Allow the equipme t to cool to room temperature.
Usi g abrasive clea ers may damage the cabi et fi ish. Use o ly a mild soap a d
water solutio .
Never steam clea or get excess water i the i terior of the cabi et as this ca
damage u it.
This applia ce is ot i te ded to be clea ed with a water jet.
Never use clea ers co tai i g ammo ia (Wi dex, 409, etc.) o the clear plastic
parts of the u it. Ammo ia will damage these parts.
Never use a dry cloth or your ha ds to remove dirt a d dust from the clear plastic
parts. This will scratch the parts.
Use a mild soap a d water solutio or products specifically i te ded for clea i g
plastic (Novus #1, Brillia ize, etc.) a d a soft cloth to clea the clear plastic parts.
After clea i g, ri se the clear plastic parts with clea water. Dry with a soft cloth
to preve t water spotti g.
5. Clea the stai less steel well a d exterior surfaces with warm water, a spo ge a d a clea er that is
approved for use o food surfaces.
NOTE: For ease of clea i g the solid back pa el ca be removed from the u it. Refer to the Solid
Back Pa el Removal diagram below.
6. Wipe the stai less steel well a d exterior parts dry with a soft, clea cloth.
7. Clea a y clear plastic s eeze guards a d e d pa els as described above.
