The serial number rating plate affixed to the equipment has not been defa ed or
removed.

COVERAGE PERIOD
Warranty laims must be re eived in writing by BKI within one (1) year from
date of installation or within one (1) year and three (3) months from data of
shipment from the fa tory, whi hever omes first.
COB Models: One (1) Year limited parts and labor.
COM Models: Two (2) Year limited parts and labor. COM onve tion ovens also have
a two (2) year door warranty.
CO1 Models: Two (2) Year limited parts and labor. Five (5) Year limited door
warranty.
BevLes Produ ts: Two (2) Year limited parts and labor.
Warranty period begins the date of dealer invoi e to ustomer or ninety (90) days
after shipment date from BKI, whi hever omes first.

Introduction
The FS is single revolving mild air onve tion ountertop oven. It utilizes a single revolving rotor system to ensure
even produ t ooking. The unit ontains a single stage ook and hold omputer with 5 ustomizable ook
programs. Ele troni ontrols are provided for powering the unit, turning on inside lights, turning the rotors and
resetting the unit. The rotors are removable to allow for easy maintenan e and leaning.
The BKI name and trademark on this unit assures you of the finest in design and engineering -- that it has been
built with are and dedi ation -- using the best materials available. Attention to the operating instru tions
regarding proper installation, operation, and maintenan e will result in long lasting dependability to ensure the
highest profitable return on your investment.

Safe Work Practices
Wear Safe Clothing Appropriate To Your Job
Always wear your insulated mitts when handling hot ra ks or tou h any hot metal
surfa e. If you lose or damage your mitts, you an buy new ones at your lo al
restaurant equipment supply store or from your lo al BKI Distributor.
Always wear non-skid shoes when working around the oven or any other
equipment.
Never wear loose lothing su h as ne kties or s arves while operating this
equipment. Keep loose hair tied ba k or in a hair net while operating this
equipment.
Always wear appropriate personal prote tion equipment during the leaning
pro ess to guard against possible injury from hot leaning solution.
Beware of High Voltage
This equipment uses high voltage. Serious injury an o ur if you or any untrained
or unauthorized person installs, servi es, or repairs this equipment. Always Use an
Authorized Servi e agent to Servi e Your Equipment.

Be Prepared for Emergencies
Be prepared for fires, injuries, or other emergen ies.
Keep a first aid kit and a fire extinguisher near the equipment. You must use a 40-
pound Type BC fire extinguisher and keep it within 25 feet of your equipment.
Keep emergen y numbers for do tors, ambulan e servi es, hospitals, and the fire
department near your telephone.
Know your responsibilities as an Employer
• Make ertain your employees know how to operate the equipment.
• Make ertain your employees are aware of the safety pre autions on the
equipment and in this manual.
• Make ertain that you have thoroughly trained your employees about operating
the equipment safely.
• Make ertain the equipment is in proper working ondition. If you make
unauthorized modifi ations to the equipment, you will redu e the fun tion and
safety of the equipment.
Health And Sanitation Practices
BKI Rotisserie Ovens are manufa tured to omply with health regulations and are tested and ertified to NSF
standards. You must operate the equipment properly, using only quality produ ts and use meat thermometers to
insure meats are thoroughly ooked.
Food Handling
• Wash hands thoroughly in warm, soapy water after handling raw poultry or meats.
• Clean and sanitize all utensils and surfa es that have been in onta t with raw produ ts. Clean and
sanitize the meat forks or baskets between ooking.
• Never pla e ooked meats on the same surfa es used to prepare raw meats, unless the area has been
thoroughly leaned and sanitized.
Storage Of Raw Meats
• Designate an area or shelf stri tly for the storage of all raw meats to be used in the rotisserie.
• Raw produ t must always be stored at temperatures below 38° F. (3° C.).
• Never store or mix raw foods above ooked foods, as this is a health hazard. The drippings from raw
foods ontaminate ooked or pro essed foods.
• All hi ken and hi ken parts to be stored overnight must be thoroughly i ed down and refrigerated.
Coding Cooked Foods
All produ ts ooked during the day should be sold the same day.
NOTE: It is not the intent of the rotisserie program to have unsold mer handise at the end of the ooking day.
Follow your ompany’s pro edures for the handling of any leftover produ t.
Storage Of Prepared Foods
• Cold foods should be kept at or below 38° F. (3° C.).
• Hot foods must be maintained to meet lo al health odes, usually a minimum 145° F. (63° C.).

Serious injury, equipment damage or death ould result if attempting to install this oven
yourself. Ensure that an authorized BKI servi e agent installs the oven.
npacking and Handling
It is the owners’ responsibility to file all freight laims with the delivering tru k line. Inspe t all artons and rates
for damage as soon as they arrive. If damage to artons or rates is found, or if a shortage is found, note this on
the bill of lading (all opies) prior to signing.
If damage is found when the equipment is opened, immediately all the delivering tru k line and follow up the all
with a written report indi ating on ealed damage to your shipment. Ask for an immediate inspe tion of your
on ealed damage item. Pa kaging material MUST be retained to show the inspe tor from the tru k line.
Remove all pa king from the interior and exterior of the oven.
Location and Clearance
Underwriters Laboratories requires that the oven have at least 6" learan e from ombustible surfa es at the rear
of the ma hine.
Wiring
Ele tro ution, equipment failure or property damage ould result if an unli ensed
ele tri ian performs the ele tri al installation. Ensure that a li ensed ele tri ian perform
the ele tri al installation in a ordan e with lo al odes, or in the absen e of lo al odes,
with the National Ele tri al Code, ANSI NFPA 70-20XX.
This unit, when installed by an authorized BKI servi e agent, must be wired for use in a ordan e with all
appli able lo al, state, and federal odes. For spe ifi ele tri al requirements and onne tions refer to the wiring
diagram atta hed to the unit or provided in the Servi e Manual.
