2. OPERATION
2.1.CONTROLS

➀HEATING
•Heating is via a single control for each cupboard
controlling 1 or 2 blown air heating units:
2 units on MUS.ES PC (.C or .M).
1 on the rest of the range (see pages 2 and 3).

➁TEMPERATURE ADJUSTMENT
•Turn the control knob to obtain the required
setting.
•The heating is controlled by a thermostat that
regulates the temperature according to the setting
from 1 (low temp) to 10 (high temp).
•An indicator light shows that the cupboard is

•Turn the control knob to the “●” position
(indicated on the cast back plate).
2.2.CLEANING
The electric warming cupboards have a removable stainless steel central shelf as standard to hold stacks of
plates. The MUS.EV400 DP (.C or .M) and MUS.EV800 DP (.C or .M) may be fitted with optional runners to
take gastronorm trays or containers.
Daily cleaning
•Clean the inside of the door with a cloth.
•Also clean the door seal (on classic range) with a
cloth, to remove any greasy particles, that may burn
on during subsequent heating and damage the door
seal.
Complete cleaning
•Besides the daily cleaning, care should be taken
to avoid letting anything build up that may be
susceptible to concentration, or to turn corrosive.
Accordingly the electric warming cupboard should
be cleaned completely if it is not be reused
immediately. This can be done with proprietary
oven cleaning products.
•Always rinse thoroughly with a sponge to
eliminate all residues of the cleaning product.
•To gain access to the sides remove the shelf or
runners.
•Refit in reverse order.
