•Radiused stainless well 180 mm. (71/16”) deep (for a maximum 85 mm. (33/8”) water level) flush with the top and with
an 8 mm. (5/16”) reinforced base.
•Peripheral gulley to recover any splillages connected to drain.
•Well drain and overflow connected to drain outlet.
•Manual fill via taps on the front facia with hot or cold water.
•Standard supplied with 100 mm. (315/16”) deep perforated containers in gastronorm 1/3 and 2/3 sizes.
•Heating is external to the well and has integral overheat protection.
•Fitted with a frame to support gastronorm containers (with divider bars) and a flush stainless cover.
•Control and heat adjustment by thermostat and indicator light.
•Cast brass control knob and backing plate set back from the top.

2.1.CONTROLS
2.1.1. THE HOB POWER
ÀHEATING
•Heating is controlled by a single control for each
hob (heating area) :
1 on MUS.CM2 and MUS.CM3.
2 on MUS.CM4, MUS.CM5 and MUS.CM6.
ÁTEMPERATURE ADJUSTMENT
•Turn the control knob to obtain the required setting.
•The heating is controlled by a thermostat that
regulates the temperature according to the setting
from 1 (low temp) to 10 (high temp).
•An indicator light indicates that the hob is heating
and it is in position to locate the hob concerned by the
control. LOW TEMP HIGH TEMP
ÂTO STOP
•Turn the control knob to “l” position (on the cast
back plate) to switch off the heating.
2.1.2. THE WATER SUPPLY
CONTROLS
•The water supply of well is controlled by a mixer tap
in hot / cold water with manual controls on the front on
facia.
•The consumption is increased by rotation of
controls in the anti-clockwise.

2.2.DIFFERENT FUNCTIONALITIES
This cooker offers several mode of cooking and putting in temperature :
•The function of water Bain-marie is to hold in position in temperature already hot products:
The bain-marie functions with a weak height of water to previlege the vapour exchange.
To execute a function of maintenance in temperature, the elements already hot must be placed in stainless steel
Gastro water bath, which must be in position on the multifonction frame by combination (one (or several) Gastro
bar is provided to position the water baths by combination of under multiples of Gastro reference 1/1) :
•The heating of pocket under vacuum :
The cooker functions at a high power and a maximum volume of water.
The containers of feedstuffs must be placed by an immersion in the intern of well of cooker, to privilege the
exchange of water temperature.
•Vapour cooker:
The cooker functions at a high power and a medium volume of water.
The feedstuffs must be placed in the gastro perforated containers, with individual lids, or a lid which is with the
cooker. We find the same posiibilities of organization of containers above.
•Water cooker:
The water cooker functions at a high power and a maximum volume of water.
The feedstuffs are put in the stainless steel pack to skim the starch which are in surface (cooking of paste, put
water in the well in order to they are overflowing of over full. This operation can do sometimes, but the tap must
be opened with a minimum consumption of water.
Notice that the specific accessories for each cooking are not delivered with the large cooking pot.
2.3.USING
•Fill the well with hot water to the required level in function of the required function.
•Heat water and put in position the thermostat on the maximal position, covering the well with its lid (saving of
time for the rising in temperature).
•Reduce the boiling point if necessary turn the control knob with the required power.
•Keep the water level.
WARNING: BAN THE HEAATING WITHOUT WATER !
2.4.CLEANING
The Multifonction Cookers permit thanks to their rounded forms an easy and prompt daily cleaning with a damp
sponge.

3. MAINTENANCE AND AFTER SALES
3.1.TECHNICAL ACCESS ACCESS TO CONTROLS
1- Remove the stainless facia strip or panel (Moderne range) or
the cover (Classic range) that supports the hob’s controls (see
procedure
paragraph 5 in the
general instructions).
2- Access to thermostat(s) and heat indicator light.
ACCESS TO HEATING COMPONENTS
1- Remove the stainless facia strip (Moderne range) or the
cover (Classic range) located in front of the hob (see
procedure
paragraph 5 in the
general instructions).
2- Access to the hobs and the fixing clamp(s).
3- Remove the clamp which supports the hob, by undoing
the 2 M5 screws that hold it in place. 4- Access to the hob, the control thermostat bulb and to the
fixing clamp.
