1.1 Introduzione
Questo manuale è un valido aiuto per conoscere ed usa-
re correttamente la Vostra macchina, occorre quindi leg-
gerlo attentamente prima di utilizzarla.
Il manuale di istruzioni viene realizzato dalla Ditta
CASTIGLIONI S.R.L. ed è parte integrante della
fornitura.
Ogni macchina viene commercializzata con il proprio ma-
nuale di istruzioni. L' Utente è responsabile della gestio-
ne del presente manuale per tutta la vita della macchina
e provvederà alla sua distruzione solamente allo sman-
tellamento della macchina stessa.
La Ditta CASTIGLIONI S.R.L. non risponde di
eventuali manomissioni del presente manuale o di even-
tuali modifiche apportate sulla macchina dall'Utente, dopo
la consegna della stessa, e non previste nel presente
documento.
La Casa Costruttrice si riserva i diritti di proprietà intellet-
tuali del presente manuale e ne vieta la divulgazione inte-
grale e parziale, in qualsiasi forma (stampa, fotocopie,
microfilms, o altri mezzi) e così pure l'elaborazione, la
riproduzione o la diffusione mediante sistemi elettronici,
a persone giuridiche o fisiche senza la sua approvazione
e registrazione.

1.3 Scopo del documento
Scopo del manuale è quello di fornire all'Utente le indica-
zioni e le informazioni alle quali attenersi scrupolosa-
mente per un corretto utilizzo della macchina e per
la salvaguardia e la sicurezza dell' operatore chia-
mato ad interagire con essa. Per questo motivo si invita
l'Utente:
- a rendere disponibile il presente documento
sul posto di lavoro ed a renderlo noto e ad
illustrarlo a tutti gli operatori,
- a trasmettere il manuale a successivi proprietari
della macchina.

1.1 Introduction
This manual is a valuable aid in understanding and
correctly using your machine. We recommend, therefore,
that you read it carefully before starting operation.
This operating manual has been realised by company
CASTIGLIONI S.R.L. and constitutes an integral
part of the shipment.
Each machine is sold with its very own operating manual.
The User is responsible for the care of the present manual
for the entire life of the machine, and shall proceed with
its elimination solely upon the destruction of the machine
itself.
CASTIGLIONI S.R.L. shall not be held
responsible for any tampering of the present manual, or
for any eventual modifications brought to the machine by
the User, following delivery of the machine, which are not
foreseen by in the present document.
The Manufacturer reserves the right of intellectual property
over the present manual, and forbids its distribution,
whether in whole or in part, in any shape or form (in print,
photocopy, microfilm, or by other means), along with its
processing, reproduction or distribution through electronic
systems, to corporate bodies or individuals without its
prior approval and registration.
1.2 Reference to norms
Indications contained in the following documents were
used in the compilation of the present manual:

1.3 Object of this document
The object of this manual is that of supplying the User
with indications and information to be followed
scrupulously for proper usage of the machine and
in ensuring the safety of the operator interacting
with the machine. For this reason, the User is urged to:
- ensure that the present document is made
available on the work site, making note of
its presence and illustrating its use to all
operators,
- transmit the manual to subsequent owners of
the machine.

1.4 Utilizzo e conservazione del manuale
Il presente manuale è indirizzato all'Utente della macchi-
na, ai responsabili incaricati dello spostamento, installa-
zione, uso, sorveglianza e smantellamento finale della
macchina.
Il manuale serve per indicare l' utilizzo della macchina
come previsto dalle ipotesi di progetto e considerando le
caratteristiche tecniche di base per lo sviluppo della pro-
gettazione, fornisce istruzioni per lo spostamento, l'in-
stallazione adeguata e sicura, il montaggio, la regolazione
e l'uso; fornisce informazioni per indirizzare gli interventi
di manutenzione, facilita l'ordinazione dei ricambi e forni-
sce indicazioni circa eventuali rischi residui.
In particolare deve essere costantemente consultabile in
merito alle seguenti informazioni:
- condizioni di utilizzazione previste per la macchina;
- posto di lavoro occupato dall'operatore;
- istruzioni relative a:
- messa in funzione;
- utilizzazione;
- trasporto;
- installazione;
- montaggio e smontaggio;
- interventi di regolazione;
- manutenzione e riparazione;
- eventuali istruzioni per l'addestramento.
Rispetto della legislazione
Oltre alle regole del presente manuale dovranno essere
rispettate le disposizioni legislative specifiche nel cam-
po della prevenzione degli infortuni sul lavoro.
Conservazione del manuale
Il manuale è considerato parte integrante della macchina
e deve essere conservato in buono stato fino allo
smaltimento finale della stessa.
Il manuale dovrà essere conservato in luogo protetto,
asciutto, al riparo dai raggi del sole e dovrà essere sem-
pre reperibile e disponibile, per la consultazione, nei pressi
della macchina.

1.4 Use and conservation of the manual
The present manual is addressed to the User of the
machine, to persons responsible for its handling,
installation, use, surveillance and final dismantling.
The manual serves to indicate the use of the machine as
foreseen by its projecting and design, in consideration of
its basic technical characteristics, supplying information
for its movement and handling, adequate and secure
installation, assembly, adjustments and usage; the
manual supplies information towards directing
maintenance operations, facilitates the ordering of spare
parts and furnishes indications on eventual residual risks.
In particular, it must be rendered constantly available for
consultation as concerns the following information:
- conditions of use foreseen for the machine;
- operator work post;
- instructions relative to:
- start-up;
- use;
- transport;
-installation;
- assembly and dismantling;
- interventions and adjustments;
- maintenance and repairs;
- eventual training instructions for personnel.
Respect for legislation
Other than the rules in the present manual, the User must
respect specific legislative directives aimed at preventing
injuries on work sites.
Conservation of the manual
The manual is considered an integral part of the machine,
and must be conserved in good condition until the final
demolition of the machine.
The manual must be conserved in a protected location,
dry and shielded from the sun’s rays, and must be
rendered always available for consultation in the machine’s
vicinity.

Informazioni all'Utente
1 - Il presente manuale rispecchia lo stato attuale
della tecnica della macchina e non può essere
considerato inadeguato solo perché aggiornato
in base a nuove esperienze.
2 - Il Fabbricante si riserva il diritto di aggiornare la
produzione ed i manuali, senza l'obbligo di
aggiornare produzione e manuali precedenti.
3 - Le caratteristiche dei materiali possono essere
modificate in ogni momento, in funzione della
evoluzione tecnica, senza alcun preavviso.
4 - Nel caso in cui la macchina fornita sia priva di parte
elettrica di controllo e protezione (quadro elettrico a
bordo macchina), il Costruttore non si
assume nessuna responsabilità circa problemi per
la sicurezza derivanti da parti elettriche non conformi
a quanto raccomandato e/o prescritto.In ogni caso il
rispetto di tutte le Leggi e Normative elettriche per le
apparecchiature di corredo alla macchina saranno
ad esclusivo carico del Cliente, che le realizzerà a
regole d'arte ed idonee al relativo utilizzo.
5 - Il Fabbricante si ritiene sollevato da qualsiasi
eventuale responsabilità nel caso in cui della
macchina sia fatto:
- uso improprio;
- uso da parte di personale non addestrato;
- uso non conforme a quanto stabilito dal presente
manuale;
- uso contrario alla Normativa e Legislazione
vigente;
- uso con alimentazione primaria impropia;
- uso con carenze gravi nella manutenzione
prevista;
- uso con modifiche o interventi non autorizzati
esplicitamente per nota scritta dal Fabbricante;
- uso con utilizzo di parti di ricambio non originali
o non specificatamente definite per modello;
- uso con inosservanza totale o parziale delle
istruzioni contenute nel presente manuale.
6 - La modifica dei parametri di lavoro (es. pressioni,
temperature, ecc.) al di fuori di quanto specificato
nel presente manuale, comporta la decadenza della
garanzia.
Eventuali richieste per ulteriori copie del presente docu-
mento dovranno essere regolarizzate con ordine di ac-
quisto inoltrato alla CASTIGLIONI S.R.L.

User information
1 -The present manual represents the current state of
the machine’s technical features, and cannot be
considered inadequate merely because it is
updated based on new experiences.
2 - The Manufacturer reserves the right to update its
production and manuals, without any obligation to
update previous production or manuals.
3 - The characteristics of the materials can be modified
at any time, in relation to technical evolution, without
prior notification.
4 - In the case that the machine supplied is devoid of its
electrical controls and safety measures (electrical
panel on board the machine), the Manufacturer
assumes no responsibility whatsoever regarding
problems relative to safety deriving from electrical
parts not conforming to that which is recommended
and/or prescribed. In any case, the respect of all Laws
and Norms concerning the electrical aspects for
ancillary equipment on the machine shall be
exclusively at the Customer’s expense, to be realised
according to norm and in conformity with the
machine’s relative use.
5 - The Manufacturer declines any eventual responsibility
should the machine be:
- subjected to improper usage;
- used by unqualified personnel;
- used in a manner which is contrary to what is
established in the present manual;
- used in a manner which is contrary to Norms
and Legislation in force;
- used with defects to its primary power source;
- used with serious deficiencies in foreseen
maintenance;
- used with modifications or interventions which
are not explicitly authorized in writing by the
Manufacturer;
- used with non-original spare parts, or not
specifically defined for this model;
- used through total or partial non-observance of
the instructions contained in the present
manual.
6 - The modification of operating parameters (e.g.
operating pressures, temperatures, etc.) beyond that
which is specified in the present manual, shall have
the effect of rendering the warranty void.
Eventual requests for further copies of the present
document must be effected through purchase order
addressed to CASTIGLIONI S.R.L.

1.5 Condizioni di garanzia
I macchinari e gli impianti costruiti sono coperti dalle
seguenti garanzie:
- mesi 12 per le parti meccaniche non soggette ad
usura.
- mesi 6 per le parti elettriche non soggette ad usura.
La garanzia decade automaticamente qualora vengano
apportate modifiche al macchinario senza preventivo
consenso del costruttore che declina, ora per allora,
qualsiasi reponsabilità per l’insorgere di eventuali
incidenti, danni e infortuni che si dovessero verificare a
persone e/o cose.
La garanzia è intesa per parti difettose riconosciute dal
costruttore, che saranno sostituite franco fabbrica, con
spese di trasporto a carico del cliente.

1.5 Warranty conditions
Machinery and installations manufactured are covered
by the following warranty:
- 12 months for mechanical parts not subject to wear.
- 6 months for electrical parts not subject to wear.
The warranty shall be declared automatically void
should modifications be brought onto the machine
without the prior consent of the manufactruer, who shall
decline, from that moment, any responsibility for
eventual accidents, damage and injuries which may
occur to persons and/or things.
The warranty is intended for defective parts recognized
by the manufacturer, which shall be replaced ex works,
with shipping expenses being charged to the customer.

La macchina mod. D 250 N è stata progettata e
costruita per esclusivo uso alimentare e destinata alla
produzione di cappelletti, ravioli e tortelloni in diverse for-
me e dimensioni secondo il tipo di stampo montato.
Può essere utilizzata in modo autonomo oppure inserita
in una linea di produzione.
Tutte le parti a contatto con pasta e ripieno sono realiz-
zate in acciaio inox ed altri materiali atossici adatti al-
l’impiego alimentare.

Machine mod. D 250 N is designed and built to be
employed exclusively for the food industry, specifically
for the production of cappelletti, ravioli and tortelloni in
various shapes and sizes, depending on the type of mould
assembled.
The machine can be operated on its own or as part of a
production line.
All machine parts coming in contact with pasta and
filling are built in stainless steel and other non-toxic
materials suitable for the food industry.

La macchina è composta dalle seguenti parti:
-Struttura portante
- composta da due spalle portanti sulle quali sono fissa-
ti tutti gli organi meccanici di movimentazione della mac-
china. Sul lato destro della struttura trova alloggiamento
il quadro elettrico, mentre sulla parte anteriore è stato
predisposto il pannello di comando.

The machine comprises the following parts:
-Structural framework
- The STRUCTURAL FRAMEWORK is composed of two
supporting members, on which all of the machine's
moving mechanical units are fixed. The electrical panel
is located at the machine's right side, while the control
panel is situated at the front.

- composto da una coppia di rulli a spessore regolabile
realizzati in acciaio inox con motorizzazione indipen-
dente esterna con trasmissione ad ingranaggi tempra-
ti ad alta resistenza.

- Gruppo di alimentazione ripieno.
- Il gruppo è composto da una scatola di iniezione
completa di vite elicoidale e cono di carico ripieno.
Nel cono è montata la pala di miscelazione ripieno
costruita nella forma adatta alle caratteristiche del
tipo di ripieno da utilizzare.
Il gruppo completo può essere facilmente staccato
dalla macchina e integralmente spostato per essere
sostituito con un’altro contenente ripieno diverso o per
essere direttamente immagazzinato in cella frigorifera
e per eseguire operazioni di pulizia e/o manutenzione.

- Filler feed group.
- The filler feed group comprises an injection box,
featuring a coclea feed screw and filler loading cone.
The filler mixing blade is assembled onto the cone,
and is designed to suit the specifications of the type
of filling being used.
The complete group can be easily detached from the
machine, and removed as an entire unit, to be
replaced with another filler group containing a different
filling; it can also be stored directly in a refrigerator
compartment, when carrying out cleaning and/or
maintenance operations.

- Gruppo formatura.
- Il gruppo formatura è costruito in modo che lo stampo
sia facilmente intercambiabile con altri stampi di
diversa forma per ottenere prodotti di caratteristiche
differenti. Il prodotto una volta formato confluisce
all’esterno tramite lo scivolo 1.

- Moulding group.
- The moulding group is built so as to easily remove
and replace the mould with other moulds of different
shapes and sizes, in order to obatin products with
different characteristics. Once moulded and shaped,
the product is directed outside the machine through
the chute 1.

- Gruppo sminuzzatore e scarico sfridi.
- E' formato da lame orizzontali per sminuzzare lo
sfrido del foglio di pasta dopo che è stata effettuata la
formatura.
E' inoltre presente un nastro trasportatore posizionato
sotto il gruppo sminuzzatore, dove gli sfridi ricadono
per essere convogliati all’esterno della macchina.

- Mincer group and scrap discarding unit.
- Features horizontal blades designed to mince the
pastry scraps after the moulding operation.
A conveyor belt situated below the mincer group
collects the scraps as they fall and directs them
outside the machine.

2.1 Protezioni adottate ai fini della
sicurezza
Per proteggere l'operatore da possibili infortuni causati
dal contatto con organi meccanici in movimento, o fili
elettrici percorsi da corrente, sono presenti le seguenti
protezioni:

1 N° 1 protezione mobile anteriore dotata di
microinterruttore di sicurezza, a copertura della
zona di formatura;
2 N° 2 protezioni fisse poste sul gruppo
sminuzzatore sfridi.
3 N° 1 protezione mobile, interbloccata dall'interrut-
tore generale e con chiave di chiusura, a copertu-
ra del quadro elettrico.

2.1 Protection and safety measures
In order to protect the operator from possible injury caused
by contact with moving mechanical parts or live electrical
wires, the following protective measures have been
adopted:

1 N° 1 movable safety guard at the front end of the
machine, featuring a safety microswitch,
covering the moulding area;
4 N° 2 fixed safety guards on the mincer scrap
discarding group.
3 N° 1 movable safety guard covering the electrical
panel; interblocked by the main switch and
featuring a lock-key mechanism.

Avvertenze
- Le protezioni presenti sulla macchina sono state
predisposte dal costruttore al fine di salvaguardare
l'incolumità dell’operatore durante lo svolgimento
delle sue mansioni.
Durante il funzionamento, le protezioni non
devono essere rimosse per nessun motivo.
L'operatore, anche se esperto, dovrà seguire le
istruzioni e le avvertenze riportate nel presente
manuale.
- L'operatore prima di avviare la produzione o
comunque far funzionare la macchina deve
assicurarsi del perfetto funzionamento e/o stato delle
protezioni.

Warnings
- The safety features present on the machine have been
designed by the manufacturer to ensure the operator's
safety during work operations.
During operation, the safety devices must not be
removed for any reason whatsoever.
The operator, even if trained and qualified, must at
all times follow the instructions and warnings
reported in the present manual.
- The operator, before starting production or starting
up the machine, must make certain that all safety
devices are perfectly operational.

2.2 Rischi residui
Rischi residui relativi al Par. 5 "MOVIMENTAZIONE
E TRASPORTO"
- Il trasporto deve essere effettuato secondo le
modalità descritte nel par. 5
Rischi residui relativi al Par. 9 "USO DELLA
MACCHINA"
- Se per qualsiasi motivo fosse necessario arrestare
tempestivamente la macchina premere il pulsante
di emergenza.
- E' severamente vietato operare ed avvicinarsi alla
macchina con indumenti svolazzanti quali sciarpe,
cravatte, ecc. in quanto persiste il rischio di
impigliamento e trascinamento.
- Durante lo svolgimento del ciclo di lavoro, è obbli-
gatorio indossare indumenti igienico-protettivi, qua-
li mascherine, cuffie, copriscarpa ecc..
Rischi residui relativi al Par. 11 "MANUTENZIONE E
RIPARAZIONE"
- Non utilizzare le mani al posto di adeguati utensili
per operare sulla macchina.
- Non utilizzare le mani o altri oggetti per arrestare
parti in movimento della macchina.
- Non eseguire MAI riparazioni affrettate o di fortuna
che potrebbero compromettere il buon funziona
mento della macchina.
- Indossare guanti anti-taglio ogni qualvolta si
maneggino le lame di taglio.

2.2 Residual risks
Residual risks relative to Sect. 5 "TRANSPORT AND
HANDLING"
- Transport and handling operations must be carried
out in accordance with the modalities described
in section 5
Residual risks relative to Sect. 9 "OPERATING THE
MACHINE"
- If for any reason it should be necessary to urgently
stop the machine, press the emergency push
button.
- It is strictly forbidden to operate or come near the
machine wearing swaying or flapping clothing such
as scarves, neck-ties, etc., since there is a risk that
these articles of clothing may get caught up in and
be dragged by the machine's moving parts.
- During the work cycle, it is obligatory to wear safety-
hygienic clothing, such as half-masks, earmuffs,
shoe-coverings, etc..
Residual risks relative to Sect. 11 "MAINTENANCE
AND REPAIRS"
- Do not use your hands instead of suitable tools to
operate on the machine.
- Do not use your hands or other objects to stop the
machine's moving parts.
- NEVER carry out hurried or badly executed repairs
which may compromise the machine's proper
operation.
- Always wear safety cut-proof gloves when handling
the cutting knives.

2.2.1 Targhette monitorie
Sulla macchina sono presenti le seguenti targhette
monitorie in merito ai rischi residui:
- Targhette monitorie relative al rischio di schiacciamento
poste in prossimità della fessura d'ingresso della sfo-
glia.
- Targhetta monitoria relativa al divieto di aprire le
protezioni fisse con gli organi meccanici in moto.
- Targhette monitorie relative al rischio di folgorazione
poste sull'armadio elettrico e sulle cassette di
derivazione.
- Targhetta monitoria relativa al rischio di taglio sul grup-
po alimentazione ripieno.
- Targhetta monitoria relativa al rischio di schiacciamento
da organi in movimento sul gruppo di formatura.

2.2.1 Warning labels
The following warning labels are present on the machine,
relating to residual risks:
- labels warning of the risk of injury to hands in proximity
of the slot at the pastry dough entry point.
- warning label prohibiting the opening of the fixed safety
casings while the moving mechanical parts are in
operation.
- labels warning of the risk of electrocution, located on
the electrical box and bypass boxes.
- label warning of the risk of injury from hands being
cut in proximity of the filler feed group.
- label warning of the risk of injury from hands being
squashed in proximity of the moulding group.

Avvertenze
- Le targhette monitorie per i rischi residui non devo-
no essere rimosse o manomesse in nessun caso.
- E' fatto obbligo all'Utente di mantenere tutte le
targhette leggibili, al fine di garantire la completa
visibilità all'operatore.
- E' inoltre fatto obbligo all'Utente di sostituire tutte
le targhette che per qualunque motivo si siano de-
teriorate o che non siano chiaramente visibili, ri-
chiedendone eventualmente quelle nuove.

Warnings
-It is strictly forbidden to remove or damage the
warning labels for residual risks.
- The User must maintain all warnings labels so that
they are clearly legible, in order to guarantee their
complete visibility for the operator.
- The User must also replace any and all warning labels
that have become deteriorated for some reason and
are no longer clearly visible, eventually requesting
new labels.
