OPERATIONAL WARNINGS
WARNING: Please read and follow the instructions below before operating product
• When using the machine, please conrm that you have read all the instruc-
tions within this manual.
• Beware of any child/children or any other persons who are near the ma-
chine before operating.
• Do not put hand near moving parts.
• Remove all obstacles, which may interfere with machine functions.
• Keep work area clean and clear of clutter.
• Do not sit or stand on machine
• Do not wear loose cloth or jewelry when operating machine as it may get
caught in moving parts and cause injury
• When the machine is abnormal or broken, you should stop using and check
it or have it checked by a professional.
• Disconnect from power source before performing maintenance on the
machine.
• When machine is not in use, please clean and store properly.
• Do not place any electrical parts or plug/cord in water.
• The cord should be away from the heat.
• Don’t hang out the cord on the desk or cabinet.
• Machine may have sharp or pointed edges, use caution when cleaning.
• This machine should only be operated by personnel who can read, under-
stand and respect warnings and instructions regarding this machine and the
manual.
• Keep this manual in a safe place for further and regular reference and
ordering parts.
• Please write model serial and date of purchase of your machine in the
space provided in case you will need to order parts in the future.
• Always work by security code of your country, state, province, city or com-
mittee of your work place.

• Keep the surrounding of the show case clean of clutters and papers to
avoid re
• Keep all heated showcases on a non combustible surface
• Keep all heated showcases out of reach of small children
• Always turn o thermostat at night or when show case is not in use
• Always allow time to cool down before cleaning or perform maintenance on
showcase

1. GENERAL
L-L. PURPOSE
The most widely used reversible sheeter, design to code of baking industry standard,
suitable for sheeting and stretching various kinds of the dough, such as: pu pastry,
Danish, donut dough, croissant dough, pie dough, cookie dough, strudel, marzipan
and other special dough.
1-2. GENERAL FEATURE AND APPLICATION
• The machine used heavy duty and long life sanitary conveyor belts.
• Protective safety guards on both side of rollers, preventing hands to be
caught by rollers.
• Automatic overload protective prevents motor from damage.
• Both side conveyor table are easily folded up in seconds to save space.
• Open with a limit switch to shut o power immediately to protect operator.
1-3. WARNINGS
• To warn against risks inherent in use of the machine due to failure to ob-
serve the safety regulations.
• The machine must be used only for the purpose for which it has been de-
signed. All other uses are considered inappropriate and therefore unreason-
able.

1-4. TRANSPORT INSTRUCTIONS
• Loading and unloading from the vehicle can be perfonned.
In particular the machine must not be placed on top of other
materials and vice versa either during transport or storage.
• During transport the machine must be positioned so that it cannot be
knocked by other materials loaded on the same vehicle.
• During unloading, place the machine carefully on the ground to prevent it
being knocked.

3. MOUNTING OF MACHINE
3-1. HOW TO MOUNT THE MACHINE
The machine must be installed on a horizontally-level oor. It should be pleased
in a location that is convenient for both operation and maintenance. The machine
safety features make it possible to stand close to the machine during operation.
Choose a suitable place for installing the machine, observing the minimum distances
from the walls as shown in the gure at the side. These spaces are necessary
for cleaning and routine maintenance operations and also ensure safe operating
conditions without the danger of dragging in and /or crushing.
The room must be provided with adequate lighting and ventilation.
3-2. CONNECTING OF POWER SOURCE
• Qualied personnel in accordance with applicable codes and regulations
should make electrical connections.
• The machine is provided with one single electrical connection with connec-
tion cable at the rear.
• Check that the rating plate voltage corresponds to the mains voltage.
• The machine must be connected to a manual control voltage disconnection
device tted in an easily accessible position so that the machine electrical
equipment can be separated from the mains when necessary.
• In particular, the system must be installed by a technically and profession-
ally qualied electrician listed in the appropriate register. The installer is
obliged to provide the customer with a declaration of conformity. Old sys-
tems should be checked in order to adapt them to the latest safety regula-
tions and state-of-the-art.

4. OPERATION OF THE MACHINE
4-1. GENERAL OPERATION
1. Put an appropriate amount of dough on the conveyor and press dough atly
by hand.
2. By operating handle to adjust the gap between upper roller an lower roller as
large as possible according to dough measure. Then during the following rolling
process gradually adjust the gap smaller and smaller, until sheet dough reaches
the desired thickness. In the beginning, repeat spraying oil, folding, and rolling
for a few times, until sheet oil and sheet dough are evenly folded in layers.
3. Turn on the electric power.
4. The conveyor belts convey the dough to be rolled through the calibration
cylinders from right to left and vice versa. This right-left direction variation is
determined by the control lever as follow: When the lever is turned to the left,
movement is from right to left whereas if it is turned to the right, movement will
be from left to right.

WARNING-UNPLUG MACHINE BEFORE CLEANING OR SERVICING
• Alter each day’s use , clean the conveyor, our pan and surface thoroughly
with hot water and a mild soap solution and rinse with either a mild soda or
vinegar solution. Rinse thoroughly with a clean damp cloth.
• Clean under machine occasionally.

DOUGHXPRESS will automatically register the equipment on the date it was shipped, please
keep a copy of their sales invoice showing the serial number and date it was sold/shipped to
you with this warranty. We will use the distributor’s invoice date as the beginning warranty date.
STAPLE A COPY OF YOUR PROOF OF PURCHASE TO THIS WARRANTY and keep in a safe place
to provide verication of your warranty should a problem occur.

This warranty applies to equipment manufactured by the HIX Corporation (DOUGHXPRESS),
Pittsburg, Kansas, U.S.A. DOUGHXPRESS warrants to the original purchaser, the full line of
DOUGHXPRESS products against defects in workmanship and material, except for wear and tear
for a period of one year parts and labor limited warranty on most items, there are selected items
which may carry a two year warranty (refer to owners manual.) All dough press carts, compres-
sors, and accessories are warranted for 90 days from the date of purchase.
Repairs include parts and labor only, excluding is the following:
1. Overtime Labor Rates
2. Expedited Freight for Parts
3. DoughXpress assumes no responsibility for down time or loss of product.
All defective parts must be returned to DOUGHXPRESS for credit. Repairs must be pre-autho-
rized by DOUGHXPRESS prior to work commencing.
4. Travel time is not covered by DOUGHXPRESS, unless pre-authorized by
DOUGHXPRESS.
In the event of a defect, DOUGHXPRESS, at its option, will repair, replace or substitute the
defective item at no cost during this period subject to the limitations of insurance and shipping
costs stated below.
This warranty does not cover normal wear and tear, damages due to accident, misuse/abuse,
alterations or damage due to neglect, or lack of proper lubrication or maintenance. DOUGHX-
PRESS shall not be responsible for repairs or alterations made by any person without the prior
written authorization by DOUGHXPRESS. This warranty is the sole and exclusive warranty of
DOUGHXPRESS and no person, agent, distributor, or dealer of DOUGHXPRESS is authorized to
change, amend or modify the terms set forth herein, in whole or in part.
In the case of a problem with the equipment identied herein, DOUGHXPRESS should be
contacted during regular business hours to discuss the problem and verify an existing war-
ranty. DOUGHXPRESS personnel will assist the customer to correct any problems which can be
corrected through operation or maintenance instructions, simple mechanical adjustments, or
replacement of parts. In the event the problem cannot be corrected by phone, and upon the issu-
ance of a return authorization by DOUGHXPRESS, the equipment shall be returned to DOUGH-
XPRESS or an authorized service representative. All insurance, packaging and shipment/freight
costs are solely the responsibility of the customer, and DOUGHXPRESS shall not be responsible
for improper handling or damage in transit. DOUGHXPRESS customer service personnel may be
contacted for complete return authorization and reconditioning information.
This expressed warranty is given in lieu of any and all other warranties, whether expressed or
implied, including but not limited to those of merchantability and tness for a particular purpose,
and constitutes the only warranty made by DOUGHXPRESS.
In no event shall DOUGHXPRESS’ liability for breach of warranty extend beyond the obligation
to repair or replace the nonconforming goods. DOUGHXPRESS shall not be liable for any other
damages, either incidental or consequential, or the action as brought in contract, negligence or
otherwise.
This warranty gives you specic legal rights and you may also have other rights which vary from
state to state.
