Throughout this manual, you will nd the following safety words and symbols that signify important safety
issues with regards to operating or maintaining the equipment.

In addition to the warnings and cautions in this manual, use the following guidelines for safe operation of the
unit.
• Read all instructions before using equipment.
• Install or locate the equipment only for its intended use as described in this manual.
• Do not use corrosive chemicals in this equipment or to clean this equipment.
• Do not operate this equipment if it is not working properly, or if it has been damaged or dropped.
• This equipment should be serviced by qualied personnel only. Contact the nearest Duke authorized
service facility for adjustment or repair.
• Do not block any openings on the unit.
• A minimum clearance of 6″(152,4 mm) from the top of the unit to the ceiling must be provided.
• The IVS must be properly attached to the Duke oven that is secured to building structure (Restraining
Device Kit).

• Turn the FlexBake 5™ Control Power Switch off and disconnect external all poles mains supply
then allow unit to cool down before performing any service or maintenance on the unit.
• The procedures in this manual may include the use of chemical products. You must read the
Material Safety Data Sheets before using any of these products.
• All electrical connections must be in accordance with local electrical codes and/or any other
applicable codes.
• The unit should be installed according to local codes and/or any other applicable codes pertaining
to ventilation and exhausting the IVS blower outlet.
• Disposal of the unit must be in accordance with local environmental codes and/or any other
applicable codes.

STEP 1: UNPACKING
• Hammer • #2 Phillips Screwdriver
• Crowbar/Pry Bar • 5/16” Nut Driver
• Knife or Box Cutter
TOOLS REQUIRED (NOT PROVIDED) FOR THIS INSTALLATION
UNPACKING AND INSTALLATION INSTRUCTIONS
a. Carefully remove outer crating using
a hammer and crowbar/pry bar.
Remove carton top.

b. Remove the screws securing the Exhaust
Ring and IVS Cover and remove these
parts from the assembly (save parts and
screws). Remove the 4 wood screws (2
per side ange) securing the IVS assembly
to the wooden slats and pallet. Carefully
remove any blocking and lift the IVS out
of the carton and inspect for any shipping
damage.

c. Apply foam tape to underside of IVS on the anges
as shown. Foam tape is packed along with the IVS
unit.

STEP 2: REMOVE FAÇADE COVER & FACADE
a. Turn the FlexBake 5™ Control Power Switch off and disconnect external all poles mains supply.
b. Remove the façade cover by removing the 16 (#8-32) screws from the top and the 4 (#8-32) screws from
the back. SAVE SCREWS.
WARNING
ELECTRICAL SHOCK HAZARD.
TASKS MUST BE PERFORMED BY A QUALIFIED SERVICE TECHNICIAN OR
ELECTRICIAN.

c. Remove the 6 screws (Tek Screws). SAVE SCREWS.
d. Disconnect the façade cooling fan and carefully lift the façade off of the oven and save for potential future
use (if desired).

STEP 3: REMOVE THE MOTOR SHIELD
a. Remove the 4 screws (#10-24) securing the Exhaust Duct Extension.
b. Remove the Exhaust Duct Extension and both gaskets and save for potential reuse with the façade, if
desired.
NOTE: Do not exert excessive force on the cavity exhaust duct. This must remain rmly secured
and sealed to the cavity.

STEP 4: INSTALL THE IVS ASSEMBLY
a. Place the new Exhaust Duct Gasket
(supplied with the IVS assembly) onto the
Exhaust Duct ange.
b. Carefully set the IVS assembly on top of the oven
aligning the IVS duct with the oven Exhaust Duct
anges. NOTE: Make sure the gasket from a.
remains properly in place.
c. Install 4 screws (#10-24) to secure the IVS
duct to the oven exhaust duct.
d. Install the 6 screws (3 per side)(Tek screws
previously removed in Step 2 b.)
