Manual Dough Divider
The Dutchess BMIH Dough Divider is simple to operate, and very
accurate. The removable divider head assemblies can be cleaned daily,
either by hand washing, or by placing into a dish or pan washer.
Instructions for removal of the divider assembly are found inside this
manual. Removal takes only seconds, and without the need for tools.
This Dough Divider will divide a single large piece of dough into either
36, 18 or 9 equal pieces, the weight of each piece being determined by
the weight of the large piece placed into the pan initially, and the head
assembly being utilized.
DOUGH DIVIDING PROCEDURE
A simple formula for determining the size of the initial piece of dough is
to decide what each piece of dough should weigh. Multiply this weight by
36, 18 or 9 depending on head assembly, then divide by 16 (ounces),
and you will have the weight (in pounds) of the initial piece of dough
needed to be placed into the pan.
Example: Each piece needs to weigh 2 ounces.
2 ounces x 36 (pieces) = 72 ounces
72 (ounces) ÷ 16 (ounces) = 4 lbs. 8-ounces.

OPERATING INSTRUCTIONS
Step 1: Place the large dough piece to be divided into a lightly dusted
Pan then place the Pan into the Machine. Note: Before placing the Pan
into the Machine, press the dough by hand so it completely covers the
bottom of the Pan.
Step 2: After placing the Pan into the Machine, pull down on the
Handle and exert a firm pressure for 3-4 seconds to uniformly flatten the
dough inside the Pan.
Step 3: Slightly relax the pressure on the Operating Handle and push
down on the Trip Lever to release the Cutting Knives from the Head
Assembly. Next, push the Operating Handle all the way down, and the
Knives will cut the dough into evenly divided pieces.
Raise the Operating Handle to the start position, remove the Pan and
dump out the divided dough pieces. You are ready to repeat the
procedure.
Tip: For sticky dough products, line the bottom of the Pan with a
circular piece of parchment paper. The paper can be used repeatedly.

----- HEAD ASSEMBLY REMOVAL AND DISASSEMBLY PROCEDURES -----
Figure 1: Remove pan, completely loosen both
Black Knobs. Do not Drop the Divider Head as
damage may occur!
Figure 2: Push downward on the Trip Lever and
hold while pulling the handle down which will
separate the Head Assembly from the Trip Plate.
Figure 5: If you wish to disassemble completely,
place the Head Assembly into the Pan, loosen both
Black Knobs and lift off Cover Plate.
Figure 6: Slide the Locking Plate in the direction
to allow Stems to move to the opposite end of the
Slots and remove the Locking Plate.
Figure 9: To disassemble the Divider from the
Divider Plate, remove the six screws and
separate these parts.

Divider (fig. 8) is removed. Notice the three different
circles of Plugs and the pattern they are in.
TO REASSEMBLE HEAD ASSEMBLY
Step 1: Place Plugs into bottom of Pan (see fig.
10). Be sure to form the Plugs into this pattern + for
the 36-Part Head, or this pattern - for the 18-Part
Head.
Step 2: Take the proper Divider Assembly and
place over the Plug Pattern you’ve formed and gen-
tly push down on Divider Assembly while at the
same time using a shaking motion until the Blades
fit into Plugs completely to the bottom of the Pan.
Step 3: Continue to reassemble by reversing steps
7-6-5.
Figure 3: While holding the Handle down with one
hand, use your other hand to rotate the Head
Assembly 1/4 turn until the Head Assembly releases.
Figure 4: Return the Handle to the upper position
and remove Head Assembly for cleaning or
interchange with Optional Head Assembly.

Disassembly Instructions for Cleaning
Step 1: Remove the Pan and completely loosen & remove both Black Knobs. (Item 1, Figure 1)
Step 2: Push down on the Trip Lever with your left hand. (Item 2, Figure 1). While holding the Trip
lever down, pull the Operating Handle down with your right hand (Item 3, Figure 2) until the
Head Assembly (Item 4, Figure 2) is about 1/4 inch from the Base (Item 5, Figure 2).
Step 3: Let go of the Trip Lever with your left hand and grasp the Head Assembly (Item 4, Figure
2). Rotate the Head Assembly 1/4 turn until it drops to the Base (Item 5, Figure 2). Raise
the Operating Handle to the full upright position.
Step 4: Grasp the Head Assembly firmly with both hands and remove from the machine. The entire
Head Assembly can now be placed into a sink or dishwasher for cleaning. Hint: For best
results when placing into a dishwasher, extend the blades out of the head and place in dish
tray on its side. Because the Head is round, it must be cradled to prevent it from rolling or
tipping. This can be done using other dishes, bowls or cooking utensils.
Step 5: Wash the Frame of the machine (Item 7, Figure 2) using a damp cloth and mild soap.
Reassembly Instructions after Cleaning
Step 6: Place the Head Assembly onto the Base of the machine making sure the rectangular
opening in the top center is lined up in a left to right position as you’re facing the machine.
Step 7: Next, push down on Trip Lever with your left hand, (Item 2, Figure 1) and hold. While
holding the Trip lever down, pull the Operating Handle down with your right hand (Item 3,
Figure 1) until the Ram (Item 6, Figure 2) lowers into the opening in the Head Assembly.
You may have to adjust the Head alignment slightly to allow the Ram to fully lower into
the Head.
Step 8: Let go of the Trip Lever from your left hand and grasp the Head Assembly. Rotate the Head
Assembly 1/4 turn until it stops rotating. Raise the Operating Handle to the full upright
position which will lift the Head Assembly off the Base.
Step 9: Replace and tighten the two Black Knobs.

Instrucciones de Desmontaje para Limpieza
Paso 1: Remueva la Cacerola y completamente afloye & remueva ambos Bultos Negros (Item 1, Figura 1).
Paso 2: Empuje para abajo la Palanca de Tropezo con su mano izquierda (Item 2, Figura 1). Al mismo
tiempo que detenga la Palanca de Tropezo, abaje la Asa de Operación con su mano derecha
(Item 3, Figura 2) hasta la Asamblea Superior (Item 4, Figura 2) este acerca de 1/4 pulgadas de la
Base (Item 5, Figura 2).
Paso 3: Suelte la Palanca de Tropezo con su mano izquierda y agarre la Asamblea Superior (Item 4,
Figura 2). Girando la Asamblea Superior 1/4 polegadas hasta que caiga en la Base (Item 5,
Figura 2). Levante el Asa de Operación a posición completamente vertical.
Paso 4: Aguarre firmemente la Asamblea Superior con ambas manos y remuevala de la máquina.
La Asamblea Superior entera puede ahora ser colocada en una sumidera (lavabo) o máquina de
lavaplatos para limpieza. Sugestión: Para mejor resultado cuando coloque en la maquina de
lavaplantos, extienda las laminas fuera de la cabeza y coloque en la bandejas de utensilio en su
costado. Porque la cabeza es redonda, deve acunarse para prevenir rodar o ladearse. Este puede
hacerce usando otros platos, soperas, o utensilios de cocina.
Paso 5: Lave el Marco de la máquina (Item 7, Figura 2) usando un paño húmedo y uno jabón ligero.
Instrucciones de Remontaje Despues de la Limpieza
Paso 6: Coloque la Unidade Cortadora de Masa sobre la Base de la máquina asegurando que la abertura
rectangular en le centro arriba este alinãdo de posición izquierda a derecha
cuando usted esta mirando la máquina de frente.
Paso 7: Próximo paso, empuje para abajo la Alavanca de Tropezo con tu mano izquierdo (Item 2, Figura
1) y detenga. Mientras esta deteniendo la Alavanca de Tropezo abajo, estire el Asa de
Operación para abajo con tu mano derecha (Item 3, Figura 1) hasta la clave (Item 6, Figura 2)
abaje dentro de la abertura de la Unidade Cortadora de Masa. Puede ser que tenga que ajustar la
alineación superior um poco para permitir que la clave abaje completamente dentro de la cabeza.
(Asemblea Superior).
Paso 8: Suelte la Alavanca de Tropezo de tu mano izquierda y agarre fuertemenre la Asemblea Superior.
Gire la Unidade Cortadora de Masa 1/4 vueltas hasta que pare girar. Levante la Asa de
Operación hasta posición completamente vertical que levantara la Unidade Cortadora de Masa
fuera de la Base.
Paso 9: Repone y apriete los dos Bultos Negros .
