WARNING
This unit is not intended to hold potentially hazardous foods such as uncooked meats.
WARNING IMPROPER GROUNDING COULD RESULT IN ELECTRICAL SHOCK
This appliance is equipped with a three-prong (grounded) plug for your protection against electrical shock hazard and
should be plugged directly into a properly grounded three-prong receptacle. Do not cut or remove the grounding prong
from this plug.
NOTICE: Local codes regarding installation vary greatly from one area to another. The National Fire Protection
Association, Inc., states in its NFPA 96 latest edition that local codes are “authority having jurisdiction” when it comes to
requirements for installation of equipment. Therefore, installations should comply with all Local codes.
CAUTION:
RISK OF FIRE AND SHOCK HAZARD.
Replace only with manufacturer’s cord set: Part #354818 for 50-amp 240-volt unit,
or #357542 for 20-amp 240-volt unit.
CAUTION:
These models are designed, built and sold for commercial use. If these models are positioned so the general public
can use the equipment, make sure that all cautions, warnings and operating instructions are clearly posted near each
unit so that anyone using the equipment will use it correctly and not injure themselves or harm the equipment.
CANADIAN INSTALLATION MUST COMPLY WITH CSA-STANDARD C.22.2 No. M1982 General Requirements -
Canadian Electrical Code, Part II, 109-M1981 - Commercial Cooking Appliances.
WARNING
Improper installation, adjustment, alteration, service or maintenance can cause property damage, injury or death.
Read the installation, operating and maintenance instructions thoroughly before installing or servicing this equipment.
WARNING
Check the data plate on this unit before installation. Connect the unit only to the voltage and frequency listed on the
data plate. Connect only to single phase as listed on the data plate.
WARNING
Disconnect electrical power supply and place a tag at disconnect switch indicating that you are working on the circuit.
WARNING
SHOCK HAZARD
Do not open any panels that require the use of tools.
CAUTION:
This cabinet is NOT intended to rethermalize cold foods. Make sure food and cabinet are at proper
temperatures before placing in the cabinet.

UNPACKING INSTRUCTIONS
Your cabinet assembly has been shipped on a pallet as one complete unit.
Your cabinet is equipped with removable wire slides; they are packed inside. Remove the slides
from the packing. Install the slides one by one on each side working from the bottom to top.
Using the hooked ends of the slides, place them in the slots on the vertical uprights from front
to back.
Be sure to record the Model and Serial numbers for future reference (they are important numbers
that you may need in the event service or replacement parts are needed). The Model and Serial
numbers can be found on the nameplate. The nameplate is on the back of the cabinet (just
above the power cord outlet).
Please complete and return the warranty card to Eagle Group within 15 days of receipt of your
cabinet.
OPERATING INSTRUCTIONS
Inputs
Power to the cabinet is 240VAC @ 60Hz. WARNING: DO NOT OPERATE AT 208VAC. With the main power switch off,
plug the cord for the CH6000 (NEMA 6-50P) into a 50 amp, 240-volt grounded receptacle, or the cord for the CH3000 (NEMA
6-20P) into a 20 amp, 240-volt grounded receptacle.
Located on the rear of the units are the cord and plug, main power switch, overflow tube and water supply with the quick
disconnect. Eagle recommends the use of a water filter on the water supply line (not included).
The overlay, shown below, has 5 input buttons—POWER, ENTER, UP, DOWN, and RECALL—and the connection for the
food probe (#357516). The overlay also has 5 LED indicators. They indicate the current mode: power, cooking, pre-heat,
food probe, and hold / ready.

Startup
Once power is applied the Power LED will light and the display will show “POWER FAILURE”. Whenever the unit is
powered off by the main power switch or by unplugging the cord, this will occur upon reapplication of electrical power.
Pressing the Enter button will clear this message and the display will show “BASELINE HEAT Cab Temp = XXF”. This
temperature is the current temperature being sensed by the cabinet probe. During this time, the cabinet will also begin to
preheat to 150F.
Pressing the POWER button on the front of the unit will turn the cabinet on and off. The power pack cooling fans will
continue to run until the power pack is sufficiently cooled.

Creating a program
Enter the program mode by pressing and holding the ENTER button down for 5 seconds. The unit will beep once before
entering the mode. The unit will automatically exit the programming mode after 10 seconds of inactivity.
The display will show “COOK TEMP SETPT XXXF”. Press ENTER, the set point value will begin to flash, then UP or
DOWN to change the value to the desired set point. The set point is adjustable between 100F to 350F (37C to 176C). Press
ENTER again to store the value. The set point will stop flashing and will be stored. Press UP to move to the next parameter.
The display will show “COOK TIME XX:XX”. Press ENTER and the cook time will begin to flash. Use the UP arrow to
increase the minutes and the DOWN arrow to decrease the hours. The time is adjustable up to 24hrs. Press ENTER again
to store the value. The cook time will stop flashing and will be stored. Press UP to move to the next parameter.
The display will show “HOLD TEMP SETPT XXXF”. Press ENTER and the set point will begin to flash. Use the UP or
DOWN arrows to increase or decrease the set point. The holding temperature is adjustable between 100F to 350F (37C to
176C). Press ENTER again to store the value. The holding temperature will stop flashing and will be stored. Press UP to
move to the next parameter.
The display will show “PROBE TEMP SETPT XXX”. Press ENTER and the set point will begin to flash. Use the UP or
DOWN arrows to increase or decrease the set point. The probe temperature set point is adjustable from 100F to 350F and
OFF. Press ENTER again and the probe temperature set point will stop flashing and will be stored. When a probe
temperature is selected, this will override the cook time. The cabinet will cycle at the desired cook temperature until the food
probe reaches it set point. Press UP to move to the next parameter.
The display will show “HUMIDITY SETPT XX”. Press ENTER and the set point will begin to flash. Use the UP or
DOWN arrows to change the set point. The humidity set point is adjustable from 0 to 10. Zero being off, no extra humidity
will be added to the cabinet and 10 being the max. Press ENTER again and the value will stop flashing and will be stored.
Press UP to move to the next parameter.
The display will show “STORE MENU X”. Press ENTER and this value will begin to flash. Use UP or DOWN to change
this value. This will be the number used to identify the program when recalling it. The program can be stored under numbers
1 through 16. This allows for 16 different programs to be stored in the unit. If 0 is selected the program will not be stored.
Press ENTER again and the value will stop flashing and will be stored.
Press UP or DOWN to review or change the settings. Wait 10 seconds and the control will exit the programming mode.
Operation
Stored programs can be recalled by pressing RECALL, then UP or DOWN to the desired stored program. Valid locations
are only 1 through 16. Zero location is not stored. Follow the instructions in the Creating a Program section to create a
program.
Once a program is recalled, the unit will begin to preheat to the set cook temperature. This is indicated by the blinking
Pre Heat LED on the front panel. The display will show “PREHEAT” followed by the current cabinet temperature. Once the
cabinet reaches the desired cook temperature the unit will beep and begin the cook cycle.
If the food probe is selected, the display will show the food probe temperature. The Food Probe LED will light during this
cycle.Once the food probe temperature reaches the desired set point, the cook cycle will end and the unit will switch to the
hold mode.
If the food probe is not selected the display will show the remaining cook time and the cabinet temperature. The Cooking
LED will light during this cycle. When the cook timer counts down to zero the cook cycle will end and the unit will switch to
the hold mode.
Once in the holding mode, the Hold / Ready LED will light and the display will show a timer counting up from when the
hold cycle began.
During any of these modes, press and hold the UP arrow key to see the current humidity level in the cabinet.

Configuration Mode
Enter the configuration mode by pressing and holding the ENTER button down for 10 seconds. The board will beep
twice before entering the mode.
The display will show “TEMP UNITS X”. This will change the units of temperature measure. Selecting C will set the unit
to display in Celsius and F will set the unit to Fahrenheit. Press ENTER, then UP or DOWN to change the value, then
ENTER again to store the value. Press UP to move to the next parameter.
The display will show “CABINET TEMP CAL X”. The displayed cabinet temperature is offset by this amount. The value
can be from -30 to +30. Press ENTER, then UP or DOWN to change the value, then ENTER again to store the value. Press
UP to move to the next parameter.
The display will show “PROBE TEMP CAL X”. The displayed food probe temperature is offset by this amount. The value
can be from -30 to +30. Press ENTER, then UP or DOWN to change the value, then ENTER again to store the value. Press
UP to move to the next parameter.
The display will show “AUDIBLE ALARM XX” This will turn the alarm on or off. Press ENTER, then UP or DOWN to
change the value, then ENTER again to store the value. Press UP to move to the next parameter.
The display will show “HUMIDITY MODE XXXXX”. This can be set to AUTO or SENSOR. Auto is based off calculations
and sensor uses the humidity sensor to monitor and adjust the humidity based on measurements. Press ENTER, then UP or
DOWN to change the value, then ENTER again to store the value. Press UP to move to the next parameter.
Press UP or DOWN to review or change the settings. Wait 10 seconds and the control will exit the configuration mode.

Care and Maintenance
Recommended Monthly Cleaning
1. Turn off main power switch.
2. Unplug the unit from its power source.
3. Open the door.
4. Remove the slides, slide racks, and vertical air ducts.
5. When choosing a cleanser, make sure the cleanser manufacturer recommends its use on natural aluminum and
it is non-abrasive.
6. Clean all removed components and interior of cabinet. Do not use abrasive cleaners. For every cleaning method, best
results are always obtained when the cleaner and technique are matched to the soiled condition involved. Contact your
detergent representative to ensure the cleaning product being used is recommended for use on natural aluminum.
Follow the manufacturer’s directions on the cleaners. Never mix cleaners.
7. The cabinet and all its components must be thoroughly cleaned to remove any residue that may stain the materials.
8. Do not neglect to clean the under-chassis area, especially the area above the casters.
9. After cleaning, replace all components in the reverse order they were removed. Make sure the air ducts and
slide racks are seated on the shoulder rivets and screws properly or uneven warming or proofing results may occur.
Daily Cleaning
1. If unit is lightly soiled: Use a mild soap (non-abrasive) and warm water to wipe down unit.
2. If unit is heavily soiled: Use a solvent or emulsion type cleanser (non-abrasive) that can be applied with bare hands.
3. Rinse with clean water.
WARNING
Allow the unit to cool before cleaning, as the interior of the cabinet may be hot enough to burn. Also allow the
water in the pan to cool before removal.
CAUTION:
At no time should the power pack module or cabinet be washed or flooded with water or liquid solution. Never
steam clean. Severe damage or electrical hazard could result.
