1 - INTRODUCTION

1.1 Introduction
We appreciate the condence you entrusted us with when buying one
of our products and we advise you to carefully read this guide, before
using the ovens.
This guide contains all the necessary information for a correct use and
maintenance of the oven.
The purpose of this guide is to allow the user, most of all the direct
user, to take all the measures and prepare all the equipment, human
resources and necessary materials for a safe and long-lasting use of
the oven.
This guide must be consigned to the person in charge of its use who
shall keep it in a suitable place in order to make it available for consul-
tation and for the ordinary maintenance of the oven. In case the oven
is resold, the guide must be consigned together with it.
This guide is also intended to be used by the technician when perfor-
ming the commissioning and extraordinary maintenance operations.
The intended use and available congurations of the machines are the
only ones approved by the producer; do not attempt to use the ma-
chines in a way which would not comply with the indications supplied.
The intended use indicated is only valid for machines having full struc-
tural, mechanical and system eciency.
The producer refuses to accept any liability deriving from improper
use or use by untrained personnel, from ‘do-it-yourself’ changes and/
or repairs or performed by unauthorized personnel and from use of
non-original spare parts or non-specic for the oven model.
1.2 Reference guide
Also please pay attention to the text in bold, with LARGER or underli-
ned fonts, because they refer to particularly important information or
operations.
The guide must be kept until the nal disposal of the machine in an
adequate place, making sure it is always available for consultation in its
best conservation state.
In case of loss or deterioration, the substitute document will have to be
requested directly to the producer or the reseller.
1.3 General remarks
• Carefully read the instructions contained in this guide in order to know
the things to watch out for when performing:
- the installation of the oven;
- its maintenance;
- its best use.
• These machines will have to be exclusively destined to the use for
which they have been expressly designed and that is for cooking or he-
ating food; any other use is to be considered improper and therefore
dangerous.
The oven is intended for professional use and must be used by qualied
personnel.
• Before exiting the premises of the producer, these machines were te-
sted and calibrated by expert specialized personnel, in order to guaran-
tee the best operation results.

Failure to observe these fundamental rules may compromi-
se the safety of the oven and therefore cause damage to the
user.
The producer company declines all responsibilities in case
of failure to observe the norms contained in this guide, both
by the user and the technician in charge with the installation
and no potential incident or damage caused by such non
compliance can be attributed to it.

• The installation and/or all repairs or calibration that might afterward
become necessary must be performed with maximum diligence and
attention by qualied personnel.
For this reason we advise you to always contact the Dealer who sold
you the machine and make sure you specify the issue, the model and
the serial number of your oven.
• In case o repairs and/or replacement of components, of extraordina-
ry maintenance, of fault or malfunction, only contact the authorized
personnel of the producer company holding the professional quali-
cations required.
• Only use original spare parts.
• Before the installation, make sure the power and water distribution
values are compatible with the values indicated in the technical data
plate.
• The electrical safety of the oven is ensured by means of a connec-
tion to an ecient grounding system (it is reminded that it must be
periodically inspected) and it complies with the National and local
regulations in force.
• The operation and supervision of the oven during its use must be
entrusted only to specically trained people.
• Avoid installing the oven next to heat sources such as: deep fryers,
open res, etc.
• Do not obstruct the exhaust openings for any reason, do not pre-
vent the dispersion of heat and do not obstruct the steam exhaust
of the oven.
Ask the installer for instructions for the correct use of water softener/
decalcier.
(Warning: a awed procedure of regeneration of the resins may
cause corrosion of the equipment).
• Before starting it for the rst time it is necessary to perform thorough
cleaning of the oven:
- externally it must be cleaned only with a wet piece of cloth;
- the inside of the cooking chamber must be cleaned with water;
- under no circumstances can wire wool be used to clean the oven.

We advise you to check whether the goods supplied correspond
to the specications of your order.
You are advised not to trail or tilt the oven for any reason.
The oven shall be lifted at a right angle to the oor, moved hori-
zontally, placed at a right angle to the oor.

1.5 - Handling, transportation and unloading
• The packaging of the oven is produced by the company in complian-
ce with the stipulated agreements or, however, depending on the
Country of destination, or the transportation means used.
• After the installation, the packaging may be used again or disposed
of in accordance with the regulations in force in the Country of the
buyer.
• The ovens must be transported in their packaging close to the in-
stallation place.
• For all the lifting and handling operations of the oven or of its auto-
nomously transported components, please refer to specialized per-
sonnel.
• The material that is shipped is accurately controlled before being de-
livered to the shipping agent.
• Upon reception of the oven, make sure that it hasn’t been damaged
during transport or that the packaging has not been tampered with
and there has been no consequent removal of components from the
inside.
• In case any damages or missing parts are detected please inform the
carrier and the producer immediately, producing photographic evi-
dence.
1.6 - Compliance with the standards and directives
• The ovens comply with the safety provisions and requirements indi-
cated in the following European Directives and their associated spe-
cic norms:
- Machinery Directive 2006/42/EC
- Low Voltage Directive 2006/95/EC
- EMC Directive 2004/108/EC
CEI EN 60335-1, CEI EN 60335-2-42; CEI EN 55014-1, CEI EN 55014-2;
CEI EN 61000-3-2, CEI EN 61000-3-3; CEI EN 61000-6-2;
CEI EN 61000-6-4; CEI EN 50366
• As a consequence to the compliance of the above-mentioned regu-
lations, the producer declares that his products comply with the Eu-
ropean legislation in force and therefore bear the regular EC marking
that allows their sale in the European countries.
• Furthermore, the operational components of the oven have a noise
emission which does not exceed 70 dB (A).

CAUTION
The installation and ordinary or extraordinary maintenance of
the oven must be performed exclusively by authorized techni-
cians or, in any case, by qualied personnel and in compliance
with the safety regulations and/or local provisions.
FOR THE EXECUTION OF THESE OPERATIONS IT IS NECESSARY
TO HAVE ALL THE MEASUREMENT INSTRUMENTS NEEDED IN
FULL EFFICIENCY AND PERIODICALLY CALIBRATED
(see Paragraph 1.4).
The producer declines all responsibility in case of failure to
meet these requirements.

Make sure to keep a distance of at least 30 cm from the ceiling
if it is made of ammable material or if it is not thermally insu-
lated.
2.1- Place of installation and placement
• The oven must only be installed in properly ventilated spaces, prefe-
rably under an exhaust hood that can extract the cooking steam out
of the room.
Before starting the oven, remove the protective lm from its external
walls; any potential residue that might remain on the surfaces shall be
removed using an adequate solvent.
The ovens may be installed on a xed countertop (feet) or on an ade-
quate support trestle delivered by the producer as an accessory.
• In any case:
a) the oven must be perfectly stable;
b) the oven is not suitable for installation as a built-in oven or in series.
c) During the installation on the countertop, level the oven by means
of its adjustable feet (see g. 4)

• In order to allow the installation and maintenance operations to be
performed, please maintain a distance of at least 500 mm (see g. 3)
between the left side of the oven and the wall or any adjacent
equipment.

2.2 - Electrical connection
Connection to the power grid
• The connection to the power supply grid must be performed in com-
pliance with the international, national and local regulations in force.
• Before connecting the oven make sure that the voltage and the fre-
quency of the power grid correspond to the values specied on the
technical data plate of the oven (g. 1) placed on the lower part of the
back panel.
It is reminded that a variation of the maximum voltage of ±10 % is ad-
mitted.
• The oven must be permanently connected to the power grid with an
H07RN-F type cable (heavy duty poly-chloroprene rubber) or or higher
with the section of the leading wires based on the maximum charge ab-
sorbed (see paragraph 1.4).
• Between the oven and the power grid there must be a general omni-
polar switch with a contact distance of at least 3mm, having a capacity
close to the load and equipped with the appropriate protection devices.
• It is necessary to provide the appropriate high-sensitivity automatic dif-
ferential protection devices, able to guarantee protection against direct
and indirect contact with the live parts and the ground fault currents
in accordance with the applicable Regulations; the maximum leakage
current admitted is of 1 mA/kW.
• This switch must be installed in the permanent electrical system of the
room where the oven is installed and in the immediate proximity of the
oven itself so that its operators can have easy access to it.
• For the dimensions of the power supply line, of the general switch and
the cable, refer to the data given in the technical data table (see para-
graph 1.4).
2.3 Grounding
• The oven must be connected to an ecient grounding system.
• The yellow/green power supply cable must be secured in the clamp
marked with the grounding symbol (see g. 5).
• The oven must be included in an equipotential system the connec-
tion of which will have to be performed using a cable with a minimum
section of 10 mm ² connected to the clamp (A - Fig. 5) marked with the
symbol placed on the backside of the oven.
• It is recommended to connect the supply cable to the oven inside a
metal tube adequately freed of shard edges or in a tube made of suita-
ble rigid plastic material.

2.4 - Water supply connection
• Connect the water supply tube to the G 3/4”
connection piece of the oven screwing in the
pipe union (A - g. 6). Insert an appropriate me-
chanical lter and a shut-o valve in the circuit.
• For a proper operation of the ovens the maxi-
mum hardness of the water must not exceed 3°F
in order to prevent limescale from building up
inside the tubes and the cooking chamber.
If necessary, install an adequate water decalcier
before the water circuit.
• The admitted water supply pressure is of a mi-
nimum of 200 kPa, maximum of 300 kPa.

2.5 - Disposal of used products
• The product was designed and assembled
with high-quality materials and components
that may be recycled and reused.
• If on a product there is the symbol of a whe-
eled bin, covered by an x, it means that the
product meets the requirements of the Com-
munity Directive 2009/96/EC.
• Get informed on the modality of collection
of the electric and electronic products in for-
ce in the area where you intend to dispose of
the product. g. 7
• Observe the local regulations on waste disposal and do not dispose of
the used products in the general household waste containers.
An adequate disposal of the products helps to prevent the environmen-
tal pollution and potential damages to the health.
2.6 - Startup
Check:
• The correct installation of the oven, its stability and perfect levelling.
• The proper realization of the electrical connection, compliance of the
electric cable, existence and eciency of the omnipolar switch of the
electric system.
• The eciency of the water supply system and of the steam exhaust
system (no leakage).
• The eciency of the cooking steam disposal system, for instance the
exhaust hood.
At this point, start the oven following the operation instructions and
check the proper operation of the various functions (dierent cooking
programs, core probe). If necessary, refer to the paragraph on faults.
2.7 - Safety devices
The oven is equipped with the following protection and safety devices:
• Cabinet safety thermostat: in case of overheating of the cooking cabi-
net, it intervenes by cutting o the power supply.
• The door switch, if equipped, interrupts the operation of the oven
when the door is open: both the heating system and the cabinet fan
motor are turned o.
• Fuse for protection of the electronic board 250V - 200mA FAST. The
fuse is located in the dedicated slot on the electronic board. Before re-
placing the fuse, disconnect the machine from the power supply grid.
2.8 - Diagnosis of certain faults

2.9 - Replacement and adjustment of certain components
CAUTION!
The replacement and adjustment of components are extraor-
dinary maintenance operations, therefore they shall be perfor-
med by an authorized installation technician. Before starting
any repair or maintenance operation you must disconnect the
general switch so as to cut o the power supply to the machine.
Also make sure that you close the water supply faucets.
Remember to put back the gaskets, the sealings and the insula-
tions inserted before nishing the work.
2.9.1 - Replacement of the safety thermostat

2.9.4 - Fan and motor
• From inside the oven remove the motor protection, unscrew the
screw that sets the fan loose, pull the fan out after having removed
the panel on the left side of the oven.
CAUTION!
Do not bend the fan while removing it and reassembling it.

The thermostat bulb is placed to the right of the cooking cabinet, be-
hind the tray rack:
1) Open the right side of the oven;
2) Unscrew the bulb inside the oven cabinet;
3) Pull out the thermostat wires and un-
screw the thermostat xing device (B -g.8)
attached on the back side of the control pa-
nel;
4) Place everything back in the original posi-
tion, the probe xing device and the electri-
cal connections.
2.9.2 - Oven lamp
Proceed as follows:
1) Open the oven door (A - g. 9).
2) Turn the plastic locks (B - g. 9) blocking the internal glass and lay it
open (like opening a book).
3) Replace the light bulb (C - g. 9).
4) Reassemble everything in reverse order.
2.9.3 - Door gasket
• The gasket is pressed in, therefore it must
be extracted by pulling it out and inserted
by pressing it in again.
This operation must be performed ma-
nually so as not to damage the gasket.

3 - INSTRUCTIONS FOR USE
It is strictly forbidden to wash the cooking chamber or the
door glasses with jets of cold water when their temperature is
still higher than 70 °C.
• The installation and all the extraordinary maintenance operations
must be performed only by authorized personnel possessing the ne-
cessary professional qualications. It is advisable to have the oven che-
cked on precise due dates.
For repairs only contact the authorized Service Centers and ask for use
of original spare parts. In case of fault or malfunction, disconnect the
general power supply switch and close the water supply faucets pla-
ced upstream the machine.
Contact the authorized Service Centers for repair. The end user is
bound to the sole ordinary maintenance of the oven that is the control
of the general eciency of the oven and its daily cleaning.
Failure to observe these obligations causes disavowal of
all responsibilities of the producer.
• Read this guide carefully because it contains important information
and indications related to the installation, use and maintenance safety.
Keep it in a safe place for any further reference.
• Before starting the oven you must thoroughly clean the surfaces that
may come into contact with food.

2.9.5 - Handle and hook
Proceed as follows:
1) Open the oven door
2) Unscrew the screws (A - g. 11).
3) Replace and reassemble everything in reverse order.
4) If necessary, turn the screw (B - g.11) of the hook clockwise or
anticlockwise in order to adjust the correct closing of the handle,
paying attention to the proper positioning of the tip of the hook.
2.9.6 - Cooking chamber resistors
1) Operate from the right side of the oven in order to disconnect
the electrical connections from the resistors.
2) Remove the grill racks and the fan blade to have access to the
resistors of the cabinet.
3) Unscrew the screws that x the resistors to the cabinet.
4) Replace the resistors and reassemble everything in reverse or-
der, remember to restore the silicone where it is present (use sili-
cone that resists to a temperature of 300 °C).
3.1 - General remarks
• The equipment is intended for professional use and it must be used
by trained personnel.
• The oven must be exclusively used to cook food, any other use is con-
sidered improper.

Please Note = WHEN THE TIME IS ZEROED ALL THE
RESISTORS ARE AUTOMATICALLY TURNED OFF
STARTING THE OVEN AND COOKING TIME
The activation of the A timer starts the oven.
The light in the cooking cabinet is turned on.
The ∞ position allows the operation of the oven for an indenite pe-
riod of time.
To stop the oven it is enough to turn the A knob to its original posi-
tion.
The cooking time is set using the A timer.
This operation is also performed by turning the related knob clockwise
until the desired value is reached.
ADJUSTING THE COOKING TEMPERATURE
The cooking temperature value is set by using the B thermostat.
In order to perform this operation you have to turn the knob clockwise
and set the desired value indicated by the scale.
HUMIDIFICATION
The humidication regulator C allows you to increase, as you wish, the
humidity in the cooking chamber. If you turn the respective knob anti-
clockwise, towards the manual operation, it allows you to humidify the
chamber until you turn it back to the initial position.
If instead you turn it clockwise you can humidify the cooking chamber
at regular time intervals with an increasing intensity.
HUMIDIFICATION / DRYING KNOB
When the D knob is set on OPEN, the valve of the chimney opens in or-
der to exhaust the excess steam. When the knob turns back on CLOSED
the steam is kept inside.
3.2.2 - Pre-heating the cooking chamber
• Before starting to cook it is necessary to preheat the cooking chamber;
proceed therefore as indicated below.
1) Turn the A knob setting a time of about 10 minutes. In the ovens
equipped with a multifunctional selector choose the resistor type to
activate.
2) Turn the knob of the B thermostat and set the desired temperature
(for instance 150 °C).
3) Once the set time has passes, the machine stops automatically after
an acoustic signal.
This indicates that the oven is ready to start cooking.
3.2.3 - Cooking
• In order to perform the cooking operation proceed as indicated below:
1) Put the food inside the cooking chamber, in containers or on the gril-
les.
2) Set the cooking temperature, knob A.
3) Set the cooking time, B knob.
4) It is possible to humidify, in all the oven models, by adjusting the C
knob.
5) For the models equipped with the D knob it is possible to open and
close the chimney.

TURNING ON AND OFF
When power is supplied, the card displays for several
seconds the software version.
Then the oven goes to the OFF status and on the time
display the LED is turned on and it stays on hold.
By pressing ON/OFF:
you turn the card on;
you turn on all the displays waiting for the introduction
of the set point;
default temperature is 100 °C;
default timer is 000, default humidity is 0.
When the temperature is set by turning the relevant
knob the display continues to ash for 15 seconds and
then accepts the set value, unless another knob is tur-
ned which causes immediate acceptance of the value
and makes the display of the second knob ash while
waiting for the set point.
When the time is set by turning the relevant knob, the
display continues to ash for 15 seconds and then ac-
cepts the set value, unless another knob is turned which
causes immediate acceptance of the value and automa-
tically makes the humidity display ash.
When the humidity value is set by turning the relevant
knob the display continues to ash for 15 seconds and
then accepts the set value; the display continues to ash
for 15 seconds and then accepts the set value.
During the cooking cycle, at the stage of variation of the
set parameters, by turning the relevant knob (temperatu-
re, time, humidity) it is possible to change the parameters
either by waiting for 15 seconds or by turning a knob.
In case the oven is stopped and no operation is perfor-
med for more than 15 minutes, the oven turns o auto-
matically as if the OFF key were pressed.
The ON/OFF key is not active during the cooking cycle,
to activate it you must rst press the START/STOP key.
When you turn the oven o using the ON/OFF key or at
the end of the cooking cycle, the parameters last set are
stored for 5 minutes.
5 minutes after it was turned o the card returns, when
restarted, to the initial stage of value setting.
START/STOP KEY
By pressing the START/STOP key:
The cooking cycle starts, the internal light is activated.
The temperature display changes from visualization of
the set point to set chamber temperature and the rele-
vant LED turns on and stays on until the set point value
is reached;
the LED turns o above the set point value and it turns on
again below the set point value.
The timer display changes from time set point to
countdown time and the relevant LED ashes and beco-
mes permanently lit when the time is over.

The set value is permanently lit on the humidity display
and the relevant LED is turned on when the humidica-
tion is activated.
If it is not activated the core probe display remains in a
xed position. Pressing again the STOP key during the
cooking cycle. the cooking cycle is suspended.
All the set parameters are maintained.
The cooking time will restart from the suspended time.
The cooking cycle is resumed by pressing the START/
STOP key again maintaining the set parameters (pos-
sibly changed).
At the end of the cooking cycle:
The bell rings for 10 seconds or until the oven door is
opened and the oven is put in the OFF status.
Opening the door during the operation of the oven is
equivalent to pressing the stop key, but, when the door
is closed again, the oven resumes its operation automa-
tically.
TEMPERATURE KNOB
Adjustable from 0 °C to 270 °C
Temperature default value: 100 °C
During a cooking cycle the set values can be changed by
turning the temperature knob; at this point the display
ashes and the value setting operation is repeated.
COOKING TIME KNOB
Adjustable from 0.00 to 9.59
default value: 000
Selects the cooking time value in hours and minutes.
By increasing the time above 9.59 you enter the innite
cooking mode and the display shows INF.
At this stage the oven works for an innite time.
Conversely, by decreasing the time from the innite coo-
king mode you return to the minimum time.
PREHEATING
By turning the knob anticlockwise below 0.00 you acti-
vate the preheating function.
Instead of the time the display shows the message “PRE”.
When you start the cooking by pressing the START key
the oven begins to work and once the set temperature
is reached, the oven bell rings until the door is opened,
the values are zeroed and the user is back at the initial
stage of value setting.
Turning the knob clockwise the value on the display
turns to 000, the preheating function is disabled.
HUMIDIFICATION / DRYING KNOB
Adjustable from 0 to 100
Default 00
The display ashes the default value 0, turning the knob
you set the value.
Turning the knob you turn on the humidication LED,
and you set the desired humidication percentage.
Turning the knob in the opposite direction once the va-
lue on the display is brought back to 0 the drying LED
turns on and the desired percentage of oven chimney
opening is set.
The higher the percentage, the more the chimney stays
open (100% total opening of the chimney).
HUMIDIFICATION KNOB
(only for the 523A model)
The display ashes the default value 0, turning the knob
you set the value. During a cooking cycle the set values
can be changed by turning the knob at this point the
display ashes and value setting is repeated.

CORE PROBE TEMPERATURE KEY
Pressing the core probe key:
the red LED is turned on and stays on. The time display
changes from three digits to two digits (00).
Set adjustable from 0 °C a 99 °C.
Default 0 °C.
The timed cooking function is excluded and the relevant
display shows three dashes (- - -).
Turning the core probe knob clockwise the set point is
set.
When the oven starts the time display shows the time
passed from the beginning of the cooking cycle.
When the core probe set point is reached the oven be-
haves as in the time mode when the timer reaches 0.
MULTI-SPEED KEY
To select the speed of the motor press the multi-speed
key, the time display shows the speed steps.
The time display ashes and if the knob is not moved af-
ter 10 seconds it returns to showing the time parameter.
When the speed values are changed the maximum tem-
perature is also checked.
If the limit is exceeded, the system automatically sets the
temperature to the maximum threshold and the tempe-
rature display ashes and the buzzer rings for 1 second.
The speed of the motor can be changed only if the oven
is ON or on STOP, during the cooking the speed cannot
be changed.
By setting the speed to 1 the oven will start at the maxi-
mum speed until it reaches the set temperature.
The speeds are:
1 = 2100/1800 rpm
maximum temperature 220 °C
2 = MAX 2800 rpm
maximum temperature 270 °C
