JSuggested ControlSettings for SurfaceElementsI
The size and type of cookware used and theamount and type of food being cooked will

vary, which will affect the needed controlsetting. The setting indicated should serve as

I Selecting Proper Cookware I
• Select heavy gauge cookpots. Usually heavy gauge cookpots will not change
shapewhen heated.
•Usecookpots with flat,smooth bottoms. Thetwowaystodetermineifcookpots

are notuniform,the bubbleswillindicatethe hotspots.
•Match the size of the cookpot to the size of the element. Ideally, thecookpot
willbe the same size or slightlylarger.
8
IImproper Cookware J
• Do not use cookware that extends more than 1 inch beyondthe edge of the
element.
•Donotuseasmallcookpotona largeelement.Notonlycan thiscausetheelement

•Do not usenonflatspecialty itemsthat are oversized, uneven or do not meet
propercookwarespecificationssuch as roundbottomwokswith rings, griddles,
rippledbottomcanners,lobsterpots, largepressurecanners, etc.
[ Home Canning I
Acceptable canning potsshould not be oversizedand must have a flat bottom. Note:
Canning element accessory, A145A, makes it possibleto use large oversized, flanged
or rippled bottom canners. (See p 11.) When canners do not meet these standards, the
use ofthe HIheat setting becomesexcessive and may resultin damage to the cooktop.
Inaddition, water may not cometo aboil and canners may not reach 10 lb. of pressure.
The acceptable canning procedure uses the HI setting just long enough to bring the
water to a boil, then lower the setting to maintainthe water temperature.
ICharacteristics of Cookware Materials I
Heavy gaugecookpotswithflat, smoothbottoms will usuallywork in a similarway.
However,thereare somedifferencesinthe cookingperformanceofvariousmaterials.
•Aluminum cookpotsheat quicklyand evenly. Bestsuitedforsimmering,braising,
boiling and frying.
•Stainless steel cookpots will evenly distribute heat if constructed of tri-ply or
combined with other metals such as aluminum and copper. Usefor cooking
functions similar to aluminum.
•Cast iron cookpots areslow to heat but cook moreevenly once temperatureis
reached. Use for long term low heat cooking or for browning and frying.
•Glass ceramic, earthenware, heat-proof glass or glazed cookpots can be used if
recommended by the manufacturer for cookpot cooking. Do not usewith trivets.
Best used on low to medium control settings.
•Porcelain enamel-on-steel or porcelain enamel-on-cast iron should be used
accordingto manufacturer'sdirections.Donotallow toboildry.
• For best results, always use recommendedcookware.
•Differentcookpotsand differentamountsoffoodbeingpreparedwillinfluencethe
controlsettingsneededfor bestresults. Forfastestcooking,startwiththe surface
controlon Hi for one minute;then turnthe controlto thelower desiredsetting.
Coveringpans, wheneverpossible,speedscookingand is moreenergyefficient.
•Do notallowpansto boildryas thiscoulddamage boththe cooktopand the pan.
•Do notdropheavycookwareon thecooktopsurface.
I Selecting Proper Cookware I
•Select cookware with flat bottoms. Flat bottom pans are the fastest and best
conductorsofheat and providethe mostconsistentand satisfactoryresults. The
entirebottomofthepanshouldtouchthe heatingelementevenly,Avoidusingpans
withconvex,concaveorirregularbottoms.Apanwhichisnotfiat receivesthemost
heat atthe pointof contact,whichcauses "hotspots"andunevenheatdistribution.
Hotspotscanresultinscorchingor burningofthe food. Unevenheat distribution

•To determineifpanisflat, laya straightedgeruleragainstthe bottom.(Seep.8)
•Do notusea panwithaturneddownflange aroundthe bottomoraripplebottom.
•Donotusea pansthatextendmorethan 1inchon eithersideofthe element. Use

and stockpotsbelow.)
•Do not use wire trivetsor any kind ofheat retardingpad betweenthe panand
element.Reduce the controlsettinginstead.
•Specialcookingequipmentwithoutflat bottoms,suchas the Orientalwok, should
not be used on the cooktop. Use the Jenn-Air wok accessory, Mode/A0142, on
the cooktop. It has a flat bottomand isdesignedto beusedonthe smallelement.

• When bastingmeats or applying sauces to foods, remember that excessive
amounts wind up insideyourgrill and do not improvethefood flavor. Apply sauces
duringthe last 15 to 20 minutesof cooking time unless recipe specifies otherwise.
Sugar-basedsauces, excessively used,will caramelize onthegrill-rocks and create
extra cleaning.
•Thereare many meat marinades which will help tenderize lessexpensive cuts of
meat for cooking on the grill,
• Certain foods, such as poultry and non-oily fish, may need someextra fat.Brush

• Usetongswith long handles orspatulasfor turning meats. Donotuseforksas these

• To help retain meat juices, salt after turning meat or after cooking is completed.
• Should grilled foods be prepared and ready beforeyou'reready to serve, turn
