warning:When operating, portions of your Fuel Outdoor Pizza Oven get hot enough to cause
severe burns. Never leave children or pets unattended when oven is in use and never allow anyone
to sit or stand on oven. Also do not try and remove any portion of the oven, including the hood,
when oven is on or while it is cooling down.
note:The Fuel Outdoor Pizza Oven produces intense heat. If not properly installed or operated,
the risk of accidents or potential injuries is increased. Please use extreme caution and carefully
follow all instructions, including the following:
To reduce the risk of damage to the oven or injury to yourself, please read this Manual thoroughly. Properly
install the oven based on the instructions provided. Do not repair or replace any part of the oven yourself
unless it is specifically recommended in this Owners Manual. All other service must be carried out by a
qualified gas technician.
Children should never operate the pizza oven and always stay at an appropriate distance when oven is in
use. Never place items that are of interest to children in or around the oven.
Never place unopened food containers in the pizza oven since the build up of pressure from the heat may
cause the container to burst.
Never lean on any part of the oven when oven is in use or not in use. Make sure to pay special attention when
you are lighting the oven and be aware of which burner you are attempting to light. Always be sure you are
pushing the ignition button on side of oven when you attempt to light each burner.
Always light the oven with the doors open to be able to get a clear view of the flames. While you can preheat
the oven with the doors closed, always be cautious of the areas surrounding the handles including the glass.
These areas can become very hot.
The exterior and interior oven areas become extremely hot and can cause severe burns. When the burners
are on or the oven is still hot, never touch the cooking deck, any part of the oven’s interior or any surface
near the front of the oven, including the doors. Also be cautious of the roof of the oven, especially near the
vent at the back of the roof, as these exterior areas become the most hot during operation.
Do not use any type of cleaner, including water, on a hot oven. Never use any liquids directly on the cooking
deck when cleaning.
Place both knobs in the OFF position and allow the oven to fully cool before using any aerosol cleaner on it
or near it. The chemical used for aerosol propellant could ignite in the presence of heat. Remember to never
use cleaner on the ceramic cooking deck.
Always use dry pot holders when touching or removing hot items from the oven. Damp pot holders or gloves
may cause steam burns. Never use a towels or cloths in place of pot holders. Pot holders should never
touch hot portions of the oven or get near the open flame.

Only use the oven in a well ventilated area. Do not operate the oven under an unprotected combustible
construction. The oven is for outdoor use only.
Do not obstruct any of the openings on the oven or obstruct the flow of combustion and ventilation air. Do
not build the oven into any structure that is closer than 6 inches from the sides and back, and 12 inches
from the top.
Keep all gas hoses away from any hot surfaces of the oven, internal or external.
Keep all electrical cords away from the hot surfaces of the oven.
Have your oven installed by a qualified technician. Have the installer show you where the gas supply shut
off valve is located and instruct you in its operation so that you can shut off the gas to the oven.
If you smell gas, there could be a problem with the gas installation to the oven. If the gas connections are
not perfectly sealed, you can have a small leak resulting in the faint smell of gas. If you think you may have
a leak, close the gas supply shut off valve and call a qualified technician to locate and resolve the leak.

The burning of gas cooking fuel generates some by-products
that are on the list of substances which are known by the state
of California to cause cancer or reproductive harm. California
law requires businesses to warn customers of potential
exposure to such substances. To minimize exposure to these
substances, always operate the oven according to this use
and care guide and ensure you provide good ventilation when
cooking with gas.

note:A liquid propane cylinder should never be “overfilled” beyond the cylinder filling capacity.
“Overfilling may create a dangerous condition. “Overfilled” tanks can build up excess pressure. The
standard safety device on tanks is the safety relief valve. This valve ventilates propane gas vapors
to relieve excess pressure. These vapors are combustible and can be ignited.
lp tank safety information
SAFETY PRECAUTIONS TO HELP AVOID RISK OF FIRE OR EXPLOSION
Never replace the liquid propane regulator or hose with a different type than the model supplied.
Never use a rusty, dented or otherwise damaged LP tank.
Never connect the oven to anything other than the fuel source indicated on the serial plate. Factory conversion
kits are available for switching fuel sources. Contact John Michael kitchens or an authorized dealer for details.
Conversion kit installation must be done by a qualified technician.
The LP-gas cylinder must include a collar to protect the cylinder valve from damage.
Ensure proper ventilation of the cylinder. The cylinder supply system must be arranged for vapor withdrawal.
DANGER:
1. do not store aspare gas cylinder under or near this appliance.
2. never fill the cylinder beyond 80 percent full.
3. if instructions 1and 2are not followed exactly, afire causing
serious injury or death may occur.

lp tank safety information CONTINUED
The LP-gas supply cylinder to be used must be constructed and marked in accordance with the specifications
for LP-gas cylinders, U.S. Department of Transportation (DOT) or the standard for Cylinders, Spheres and
Tubes for the Transportation of Dangerous Goods, CAN/CSA-B339.
When the oven is not in use, the gas must be turned off at the supply cylinder.
The oven may be stored indoors, but only if the cylinder is disconnected and removed from the oven. NEVER
STORE YOUR LP TANK INDOORS.
Cylinders must be stored outdoors out of the reach of children and must not be stored in a building, garage
or any other enclosed area.
The pressure regulator and hose assembly supplied with the oven must be used. Replacement pressure
regulators and hose assemblies must be the type specified by John Michael Kitchens. For replacement parts,
contact John Michael Kitchens customer service at 1.877.799.3199.
DANGER:
• avoid routing the gas supply hose or placing apropane cylinder
in aposition where it may create ahazard for people walking
by.this can create atripping hazard and may pull the oven off
the counter or tip it over creating aserious risk of injury and/
or fire.

requirements (LIqUID PrOPaNE)
check the type of gas your oven has been configured for by the factory by checking the
serial plate on the back of the oven. ovens configured for liquid propane gas are orificed
differently than ovens configured for natural gas. ovens configured for use with 20-pound
liquid propane cylinders are shipped with aliquid propane regulator hose assembly attached.
To connect the LP regulator hose assembly to the LP tank, first make sure the main valve on the tank is
completely closed. Make sure that the control valves on the front of the oven are turned to OFF.
Thread the regulator inlet over the tank valve. Use care to ensure proper alignment of the threaded coupler
and avoid cross-threading or damaging the coupler. Turn the black coupler clockwise until tightened up
but do not over-tighten.

adapter. (both included)

IMPORTANT NOTE: After connecting a fresh
LP tank, you may need to purge air from the system.
Before lighting, open the main valve on the tank.
IMPORTANT NOTE: Always close the main
valve on the tank before disconnecting or transporting
the tank.
Turn the control valves on the oven to the HIGH position
for about 15 seconds to purge air from the system. Turn
the control valves on the oven OFF and wait 5 minutes
for any gas to clear.
Finally, continue with the normal lighting procedure.
The installation must conform with local codes. In the
absence of local codes, the installation must conform
with the National Fuel Gas Code, ANSI Z223.1/NFPA
54; Storage and Handling of Liquefied Petroleum Gases,
ANSI/NFPA 58; Natural Gas and Propane Installation
Code, CSA B149.1; or Propane Storage and Handling,
NEVER USE A DENTED OR RUSTY LP TANK.
NEVER USE A CYLINDER WITH A DAMAGED
VALVE. ALWAYS CHECK FOR LEAKS AFTER
CONNECTING AN LP TANK.

requirements (NaTUraL Gas)
check the type of gas your oven has been configured for by the factory by checking
the serial plate on the back of the oven. ovens configured for natural gas are orificed
differently than ovens configured for liquid propane gas. ovens configured for use with
natural gas are shipped with agray hose with aquick-connect fitting.
IMPORTANT NOTE: Always close gas supply shutoff valve before disconnecting the ovens gas
supply hose.
IMPORTANT NOTE: An installer-supplied safety shutoff valve MUST be installed on the natural gas
supply line for the oven. The valve should be easily accessed and located between 3 and 20 feet away
from the oven.
All gas connections should be made by a qualified technician. The installation and all installer-supplied
parts must conform to local codes. In the absence of local codes, the installation and all parts should
conform to the National Fuel Gas Code, ANSI Z223.1/ NFPA 54 or Natural Gas and Propane Installation
Code, CSA B149.1. All pipe sealants must be an approved type.
IMPORTANT NOTE: The installer must ensure
proper delivery of gas to the oven or it will not operate
properly. Diameter and length of the gas supply pipe may
limit the pressure and BTU delivery of gas to the oven.
The appliance and its individual shutoff valve must be
disconnected from the gas supply piping system during
any pressure testing of that system at pressures in
excess of 1/2 psi (3.5 kPa). During any pressure testing
of the gas supply piping system at test pressures equal
to or less than 1/2 psi (3.5 kPa), the appliance must be
isolated from the system by closing its individual manual
shutoff valve.

immediately check for leaks if you smell gas. although gas connections on the oven are leak
tested prior to shipment, acomplete test should be performed after installation due to
possible mishandling during shipping or installation. periodic checks are also recommended.
before starting the test
extinguish all open flames. do not smoke while performing test.
leak testing
do not use an open flame to test for leaks.
You will need a spray bottle, a brush or a rag. For LP units using a 20-pound cylinder, a full cylinder should
be used.
Homeowners should only check for leaks on the gas connections that are external to the oven. If the
valves or other internal connections need to be checked, please call a qualified technician or JohnMichael
Kitchens Customer Service at 1.877.799.3199
conducting the test
Begin by making a soap solution of one part liquid dish soap and one part water.
Make sure both oven control valves are in the OFF position. Turn the gas supply ON. Use a spray bottle,
brush or rag to apply the mild soap solution to all connections from the supply line or LP cylinder to the
connection on the back of the oven. Check all connections.
Soap bubbles will appear at any connections with a leak. Turn OFF the gas supply and tighten any leaky
connections. Recheck by applying more of mild soap solution.
IMPORTANT NOTE:
do not use the oven unless all connections have been checked for
leaks.

the oven is designed for easy placement on anon-combustible outdoor counter top, table
or cart. things to consider when determining location of your oven are foot traffic, areas
where people congregate, and access to the gas supply.
oven location
The oven is not intended to be installed in or on a boat or recreational vehicle.
Do not place the oven on a table or cart that is unable to safely support the 100-pound weight of the oven
or may topple or tip over.
The counter top or other surface should extend 6 inches beyond the sides and back of the oven as a safety
clearance to protect people from injury.
Do not place the oven where it is likely to be bumped into or touched.
Do not place the oven on any surface that allows the oven to slide easily or change position.
Never place the oven where the gas hose creates a safety hazard. Tripping over an exposed gas hose may
create a gas leak and/or pull the oven off the counter while creating other serious safety hazards.
Do not place the oven in a building, breezeway, shed or other such enclosed areas.
important note:Do not build the oven into any type of enclosure that prevents circulation.
Proper air circulation in and around the oven is critical to its operation. At least 6inches of clearance
should be maintained around the sides and back of the oven, and 12 inches above the top of
the oven. Do not obstruct the open space below the oven. Never place the oven underneath an
overhead combustible surface.

the majority of the pizza oven has been pre-assembled for you. with your pizza oven you
should receive two large ceramic cooking stones, one small cooking stone, and two glass
panes for the left and right sides of the oven. if you did not receive one or all of the
following please contactjohnmichael kitchens customer service at 1.877.799.3199.
assembling your oven

place the oven
Place the pizza oven in its ideal location before proceeding
to the next step. Note the oven should be placed on solid
stable surface.
remove the top
Have someone assist you in lifting and removing the top of
the oven. Once this is removed it can be placed aside till
the end of the process. Be careful not to place the top on
a surface where it can damage it easily.

attention
The following steps should be completed in this exact order listed to prevent damage to the parts
and/or oven. A video instruction guide can be found at
1. Start with the two Metal Support Plates. Open the doors and set them in one at a time.
2. After the Metal support plates have been inserted place the pair of Wide Cooking Stones on top of
them one at a time. Make sure that the stones fit nicely within the pizza oven before moving to the next
step.
3. After placing the large cooking stones you may install the single Top Cooking Stone into the top center
space in the center top of the oven.
4. With all the support plates and stones installed you may now install the Side glasses
by sliding them down into the slot holders on the left and right sides of the oven.
The door glass should be installed by slide the glass down into the slots on the back side of each door.
NOTE: The door glass should only be installed after all the other internal parts have been installed to
prevent accidental damage.
5. The Crumb Tray should be inserted just below the front base lip of the pizza oven. Look under the front
lip to find the slot and insert the crumb tray.
6. At this point the stainless steel top cover can be reinstalled and you have completed the assembly of
your pizza oven.

lower burner control knob
Controls the height of the flame on the burner below the cooking deck.
upper burner control knob
Controls the height of the flame on the burner at the rear of the cooking deck. On HIGH, this flame is
visible above the Cooking Deck.
lower burner viewport
Allows visual confirmation of lower burner’s flame. This port is also used as the manual ignition port for
manual lighting procedure (SEE LIGHTING YOUR OVEN, Page 19).

perform aquick safety check before you use the pizza oven.
before cooking
Clean and inspect the gas hose for wear, cuts, and/or leaks and if found do not use the oven. The hose
should be replaced before attempting to use the oven if any defect is found. Replace the hose assembly with
the specified type by John Michael Kitchens.
Make certain the fuel supply hose is away from any heated surface(s).
Check and clear the area near the oven of combustible materials and vapors, such as alcohol, gasoline,
aerosol containers and dry goods. Route electrical cords from being in contact with the oven.
The oven requires 6 inches of clearance to the left, right and back of the unit and 12 inches above. Make sure
there are no obstructions to the ventilation around and under the unit.
Do not wear overly loose-fitting clothing such as loose sleeves, which may come in contact with the hot
surfaces inside the oven or near the door.
Have insulated gloves with long cuffs ready and available.

while cooking
Never attempt to move the oven while it is in use or when it is hot.
Never attempt to empty the crumb tray while the oven is on or still hot. The tray and its contents become very
hot while the oven is in use and can cause serious burns.
Do not touch the top of the oven, the front shelf or any surfaces inside or near the door opening while the oven
is hot. These surfaces can cause serious burns.
Take caution with hot food. Hot food can cause serious burns to yourself or those around you.
Use a long-handled brass bristle brush to clean the cooking deck. The handle should be long enough that
your hands remain safely outside of the oven.
The use of alcoholic beverages, prescription and/or non-prescription drugs may impair your ability to properly
assemble or safely operate the oven.

gas connections leak testing and safe operation instructions, which precede this page.
important note:Do not use the Pizza Oven if the odor of gas is present at any
time. Follow leak testing procedures before using the Pizza Oven.
lighting your oven
Open the oven doors before use. DO NOT LIGHT THE Oven WITH THE DOORS CLOSED.
Make sure the LOWER BURNER and UPPER BURNER control knobs are turned to the OFF position.
Turn the main gas supply on.
If lighting both burners, light the LOWER BURNER first. Keeping your face well away from the unit, sight
through the lower burner view port. Turn the LOWER BURNER control knob to the HIGH/START position.
Press and hold the electronic ignition button. Clicking should occur and ignition should take place within 15 to
20 seconds. Watch through the lower burner view port to confirm ignition. If the burner does not light within
this time, turn the knob to the OFF position and wait 5 minutes for the gas to dissipate before trying again.
To light the UPPER BURNER, you can sight through the open door of the oven, keeping your face well away
from the opening. Turn the UPPER BURNER control knob to the HIGH/START position. Press and hold the
electronic ignition button. Clicking should occur and ignition should take place within 15 to 20 seconds.
Watch through the lower burner view port to confirm ignition. If the burner does not light within this time, turn
the knob to the OFF position and wait 5 minutes for the gas to dissipate before trying again.

Turn the main gas supply on.
If lighting both burners, light the LOWER BURNER first. Insert a paper match into the clip on the end of
the provided manual ignition wand and light the match. Insert the match end of the wand through the
lower burner view port to a position above the lower burner. Turn the LOWER BURNER control knob to the
HIGH/START position. Ignition should take place within 15 to 20 seconds. Watch through the lower burner
view port to confirm ignition. If the burner does not light within this time, turn the knob to the OFF position and
wait 5 minutes for the gas to dissipate before trying again.
To light the UPPER BURNER, insert a paper match into the clip on the end of the provided manual ignition
wand and light the match. Insert the match end of the wand through the main door of the oven and past the
cooking deck backstop to a position above the upper burner. Keeping your face well away from the opening,
turn the UPPER BURNER control knob to the HIGH/START position. Ignition should take place within 15 to
20 seconds. If the burner does not light within this time, turn the knob to the OFF position and wait 5 minutes
for the gas to dissipate before trying again.
