0 Safety instructions
◆Familiarity with the safety information and regulations is a
prerequisite for the safe and malfunction-free operation of the
meat mincer. The user information must be passed on if the
machine is resold.
◆This user information and the “Meat processing machines
accident prevention reg.s” (VBG 19) contain important
instructions for safe installation and operation of the cutting
mixer. Furthermore the locally applicable rules and regulations
for accident prevention and hygiene should be observed.
◆Everyone involved in the installation, starting up and
maintenance of the machine must carefully read and observe the
following user information. If someone is not in the position to
read and understand this information, then all instructions and
safety measures must be thoroughly explained to this person. It's
a question of your own safety!
Keep juniors, children and unauthorised persons away from
the machine!
◆The operator is obliged to allow only those persons to operate
the machine who:
−- are instructed in the operation of the machine and who are
familiar with the basic regulations concerning safety at work
and accident prevention.
- have read and understood this user information, especially the
chapter on safety.
◆As stated in “Meat processing machines accident prevention
reg.s” (VBG 19) § 59, the operator should produce operating
instructions in accordance with the user information. It is
recommended to keep written verification of the compliance with
the instructions in the user information and the operating
instructions.
Check the meat mincer for damage!
◆Before using the meat mincer, all safety equipment and moving
parts must be checked carefully for flawless functioning as
intended. All parts must be mounted properly as intended to
guaranty flawless functioning of the meat mincer.
◆The supervisor must immediately have dysfunctional safety
devices replaced or repaired and issue operating instructions to
ensure safe operation until their completion.
◆Defective safety devices, switches, cables or other parts must,
in so far as not otherwise specified in the user information, be
replaced by K+G Wetter customer service or another authorised
customer service.

◆The meat mincer is intended exclusively for the purposes
specified in chapter 2.10 (Area of Application). Any use differing
from or exceeding that specified is considered not to comply with
the intended use.
◆The meat mincer may only be operated with discharge guard and
protective grating or protective funnel. It is prohibited to reach
behind the discharge guard while the machine is running.
◆The locking ring may not be removed until the worm has come to
a stop and the main switch has been switched off and secured.
◆The use of accessories supplied or recommended by the
manufacturer and observance of inspection and maintenance
intervals is also part of proper use.
Take good care of your meat mincer!
◆Observe the cleaning and maintenance information and the
instructions for cutter assembly changing. Only sharp, clean tools
work cleanly and safely!
◆Always keep handles and controls dry, clean and grease-free.
Turning off the main switch!
◆Turn off the main switch when the cutting mixer is not required,
before cleaning and maintenance and when changing the cutter
head. Only the switches only the control panel may be used for
switching on and off during normal operation.
Check cables!
◆Protect power cable from heat and sharp edges and check it
regularly. If the cable is damaged, have it replaced by customer
service or a qualified electrician.
Wear suitable working clothes!
◆Do not wear loose clothing or jewellery. Loose clothing could
become trapped and drawn in. Wear cap or hair net and slip-free
footwear.

2 Transport, installation and commissioning
2.1 Declaration of conformity
The declaration of conformity to the EC machine guide lines is
included in the accompanying documents. The declaration of
conformity applies for machines delivered under contract and for
proper operation. It is no longer applicable if essential parts or the
mode of operation are changed without the consent of the
manufacturer
2.2 Obligations on the operaton
The operator must instruct personnel in proper use of the machine
in accordance with the operating instructions. It is recommended to
keep written verification of compliance with the instructions.
The operator is obliged to observe locally applicable regulations,
e.g.:
- acquisition of an operating licence,
- hygiene regulations,
- safety at work regulations and employment restrictions,
- supply and disposal provisions,
- emission and environmental protection provisions.
2.3 Instructions for handling, transport and storage
The machine is delivered with installed worm and cutter assembly.
It must be stored in a dry room. Further transport is best done with a
fork lift. The entire machine must be supported by the fork of the
fork lift.
2.4 Information about noise
The noise level of the meat grinder amounts 70 dBA, measured
according to ISO 3744.
2.5 Space requirements for operatio
The workplace is in front of the machine at the side. The machine
must be accessible from all sides for cleaning and maintenance
(approx. 50 cm at the sides and rear of the machine). Not including
the workplace for the operator, the space requirement is approx.2m
wide and 1,5 m deep.
2.6 Installation requirements
The machine should be installed on a firm, water-impermeable and
easily cleaned surface. The max. permitted slope is 3%, the per-
mitted floor loading must be at least 1000 kp/m². The installation area
must be in accordance with the locally applicable hygiene and
workplace regulations. The illumination intensity must be at least 300
Lux.

2.7 Installation of the machine
Installation and commissioning should be done by K+G WETTER
customer service or a qualified contractor. The meat mincer is
delivered completely assembled and ready for operation. At the
location, the machine can be transported on a lift cart or a fork lift.
Before setting the machine down, remove the wooden transport
pieces and screw in the 4 machine feet. The gross weight of the
meat mincer is 810 kg.
To level the meat mincer, place a spirit level on the funnel and level
the machine by adjusting the height of the rubber feet. Finally, lock
the feet in place with the lock nuts.
2.8 Electrical connection
The machine may only be connected to the mains by a
qualified electrician.
The machine is delivered with a 4 m cable. The electrical equipment
is in accordance with EN 60 204-1 and is depicted in the enclosed
circuit diagram. The electrical connection should be carried out
according to the technical specifications on the identification plate
and in Chapter 1. The cable diameter must be determined
according to the fuse in the cable. Neutralisation, earthing, residual
current or overcurrent release protection should be installed
according to the conditions on site.
2.9 Tests before commissioning
The following tests are required before commissioning:
Checking mains voltage and frequency
Check the mains voltage and frequency by comparing the
indications on the electric company counter with the indications on
the machine plate. Inform customer service if they do not
correspond.
The voltage variations may not be larger than + 10% and - 5%.
Malfunctions and premature wear may be expected with larger
deviations. The guarantee provisions do not apply in this case.
The rotational direction of the worm must be checked as follows:
- Switch on meat mincer without cutter assembly or
worm using the the key.
- The worm drive pin must turn in the
counterclockwise direction when viewed through the
discharge guard and the worm housing.
- If the rotational direction of the worm is incorrect, the
poles of the conncting line must be reversed by a qualified
electrician.
- The prescribed daily safety inspection must also be carried out
(see chapter 3.3).
2.10 Area of application

2.10.1 Intended use
The meat mincer is intended for the mincing of meat, fat, meat
products, fish, cheese, fruit and vegetables for human consumption.
The maximum piece size for fresh meat is ca. 200 x 200 x 150 mm.
The products fed in must conform to local hygiene regulations.
2.10.2 Other applications
The machine can also be used for the reduction of products named
in Chapter 2.9.1, when these are not intended for human
consumption. The machine is not however equipped with devices
for preventing infections, which could emanate from the processed
product. Possibly additional measures will be necessary.
2.10.3 Prohibited use
The meat mincer may only be used for the purposes listed in the
area of application section. Mincing frozen meat is prohibited.
Switching between the uses listed in chapters 2.10.1 and 2.10.2 is
only authorised when in accordance with hygiene regulations
2.11 Assembling the meat mincer / commissioning
The meat mincer is delivered completely assembled. After
installation, inspection (see chapters 2.7 to 2.9), cleaning
(see chapter 5) and, if necessary, installation of the worm and
the cutter assembly (see chapters 4.3 and 4.4), the mincer is
ready for operation.

3 Safety measures
3.1 Safety devices and their safety functions
3.1.1 Main switch The main switch (Fig. 1, Item. 7) isolates the machine (with the
exception of the connection terminal and cable to the main switch)
from the mains and when switched off deactivates all functions. The
main switch should be switched to “I” before starting up and to “0”
when shutting down. It can be secured with a padlock. The push-
buttons on the control panel must be used for switching during
normal operation, since otherwise safety functions could be
deactivated.
3.1.2 Covering The drive side and the electrical parts are secured against access
by the housing and screwed down doors and covers. Before the
doors or cover are opened, the main switch must be set to “0”. The
machine may only be operated with a fully enclosed housing.
3.1.3 Protective grating
The protective grating (Fig. 1, Pos. 1) blocks access to the
dangerous regions in the funnel of the mincer. The mincer can only
be operated with the protective grating closed. A safety switch
monitors the closed position of the protective grating. The meat
mincer switches off if the protective grating is opened during
operation.
3.1.4 Discharge guard
The discharge guard (Fig. 1, Pos. 8) covers the discharge of the
mincer. The mincer can only be operated with the discharge guard
closed. A safety switch monitors the closed position. The meat
mincer switches off if the discharge
guard is opened. It is prohibited to reach into the discharge past the
discharge guard.
3.1.5 Worm ejector The worm ejector (Fig. 1, Pos. 11) pushes the working worm and

the cutter assembly forward for removal (after the cap nut has been
removed).

3.1.6 Machine safety switch
Coded machine safety switches within the machine monitor the
position of the discharge guard and protective grating.
Switches with a personnel protection function may only be replaced
by K+G WETTER customer service or an authorised contractor with
identical switches.
3.2 Risks, which cannot be excluded inspite of integrated safety features
◆The cutter assembly is covered by the discharge guard in
accordance with regulations. With improper handling and a final
perforated disc with larger holes however, it is possible for fingers
to reach the knives. It is prohibited to reach under the discharge
guard.
◆The dangerous areas in the funnel are covered with protective
grating according to regulations. The closed position of the
grating is monitored by coded machine safety switches for
protection of persons. The protective grating may not be modified
or removed. If the safety switch malfunctions, the machine must
be put out of operation until the malfunction is corrected. It is
prohibited to operate the meat mincer without a functioning
protective grid.
◆The run-on time after the machine is switched off is ca.
2 seconds. It is prohibited to reach into the discharge until the
knives have come to a stop.
◆Operation with improperly installed cutter assembly.
The knives can be destroyed and the machine damaged. The
possibilities for assembling the cutter assembly described in
chapter 4.3 should be observed. The locking ring must not be
screwed in too tightly.
◆Loading with unauthorised material (e.g. frozen meat).
The working worm can become blocked and break. The meat
mincer can come to a stop and the motor can overheat.
◆The loading material can represent a danger to the operator, the
surroundings and the machine. Only those materials listed in
chapter 2.10.1 may be used.
3.3 Safety tests for each working day
The machine may only be operated with perfectly functioning safety
devices (see Chap. 3.1) The following tests must be carried out at
the start of each working day:
- Open the discharge guard (Fig. 1, Pos. 8) while the machine is in
operation. The machine must switch off.
- Open the protective grating (Fig. 1, Pos. 1) while the machine is in
operation. The machine must switch off.

The angled mincer is a self-supporting construction, which meets all
static and dynamic requirements. The hygiene requirements of the
EC machine guide lines and the EC guide lines for the handling of
meat and meat products are adhered to.
The external machine parts are made from corrosion-resistant
material. The machine surface as a whole is specially treated and
hence easily cared for. Large doors enable ease of access for
cleaning and maintenance work.
The working worm is driven by the main motor via V-belts and the
feed worm is driven by a geared motor via a roller chain.
4.2 Workplace The workplace for the operator is located in front of the machine.
4.3 Installing the working worm and the cutter assembly
- Switch main switch to "0".
- Lightly grease the 4-sided carrier piece (Fig. 2, No. 15) and the
knife pin (Fig. 2, No. 17).
- Insert the working worm with the 4-sided carrier piece (Fig. 2, No.
15) slowly while rotating. When the worm contacts the collar,
rotate the worm until the 4-sided carrier piece slides into the
carrier. Then push the worm in as far as it will go.
- The end face of the worm must be somewhat lower than the end
of the cutting space.
- Place the cutter assembly parts of the desired cutter assembly
onto the knife pin. Observe the prescribed assembly sequence.
See chapter 4.4, Cutter Assembly, or the instructions of the cutter
assembly manufacturer.
Caution: Only install knives and discs from the same
manufacturer!
- Insert support cross and/or properly-sized placement ring in such
a way that the cutter assembly extends somewhat from the worm
housing.
- Tighten the locking ring to cutting pressure by hand.
Excessive tightening causes a high level of friction, which leads to
increased wear on the discs and knives and increased warming of
the meat.
- Close discharge guard.
- The meat mincer is now ready for operation.
- Disassembly is carried out in the reversed sequence after the
locking ring has been removed.

4.4 Cutter assembly
The following cutter assembly combinations are examples. The
installation suggestions of the cutter assembly manufacturer should
be observed.

4.5 Controls and their functions

4.5.2 Switching on the working worm
Two worm speeds are available. They can be switched on with the
buttons 1 (Fig. 3, Pos. 1) or II (Fig. 3, Pos. 2) as desired. The feed
worm is always switched on with the working worm. The working
worm is switched off with the 0 button (Fig. 3, Pos. 3). For reasons
of safety, the meat mincer can only be switched on when the
protective grating and the discharge guard are closed.
4.5.3 Sorting device (optional)
The sorting device can only be used for fresh meat. It can be used
to sort out and separate tendons, cartilidge and hard pieces in the
meat. When working with the sorting device, the hard pieces exit
through the chute on the side of the housing (see Fig. 4).
A special worm housing is necessary for the sorting device.
Rebuilding is possible, but the worm housing must be replaced.

The construction of the sorting cutter assembly (Fig. 2) corresponds
to a double cutter assembly, only the knife in front of the finely
perforated plate (Fig. 2, Pos. 2) is replaced by a special sorting
knife (Fig. 2, Pos. 11). A plate with 8 or 13 mm bores should be
used as the first perforated plate. The discharge channels of the
sorting knife are designed for this diameter.
Construction of the sorting cutter assembly:
- for 2 and 3 mm grain
- Precutter
- Knife
- Perforated plate 8 or 13 mm

- Perforated plate 2 or 3 mm
It is recommended not to use the sorting device with a grain greater
than 3 mm. Larger grains are not possible with a standard
perforated plate. The sorting level is continually adjustable
according to the opening width of the regulating slide gate (Fig. 4),
which can be clamped in place by turning the star-shaped handle.
4.5.4 Worm ejector
Activating the worm ejector (Fig. 1, Pos. 11) separates the working
worm and the cutter assembly from the drive and pushes them
forward for removal (after the locking ring has been removed).

4.5.5 Main switch
The main switch (Fig. 1, Item. 7) separates the machine (with the
exception of the connection terminal and the cable to the mains
switch) from the mains and deactivates all functions when switched
off. The main switch should be set to “I” for starting up and to “0” for
shutting down. It can be secured with a padlock. For switching
during normal operation the push-buttons in the control panel must
be used, since otherwise the safety functions could be deactivated.
4.6 Operation
- Switch on main switch (Fig. 1, Pos. 7).
- Fill filling trough with cutting material (meat).
- Close protective grating (Fig. 1, Pos. 1).
- Switch on working worm with button I or II (Fig. 3, Pos. 1 or 2).
- For work interruptions, e.g. refilling meat. Switch off all functions
by switching the 0 button to red (Fig. 3, Pos. 3).
- Switch back on after work interruptions with button I or II (Fig. 3,
Pos. 1 or 2).
- Do not allow meat mincer to run without cutting material.
The cutting assemblies overheat quickly and become dull.
- Caution: Observe prescribed temperatures from hygiene
regulations. It can be useful to operate the meat mincer in a
refrigerated room!
4.7 Unauthorised operation
Do not fill the meat mincer with materials which are not listed in
chapter 2.10, especially no frozen cutting material colder than -2° C
and larger than 50 mm in diameter or other hard objects.
4.8 Risks resulting from particular applications
Use of special materials.
The permitted products are stated in Chap.s 2.10.1and 2.10.2The
use of other materials is not permissible and can result in injury to
the operating personnel and/or damage to the machine. No features
are provided for dust avoidance and for protection from infection.

5 Cleaning
Daily cleaning is required for reasons of hygiene, at the same time
ensuring that the polished metal surfaces are not damaged by
abrasive cleaning materials. To maintain the effectiveness of the
corrosion protection, the surface must be purely metallic. No
cleaning agents or aids may be used which corrode metal parts

−Lubricate if necessary, see lubrication schedule.
−Switch off main switch (Fig. 1, Pos. 7)
−Unscrew and remove locking ring.
−Loosen and push forward working worm with ejection lever.
−Loosen and remove parts of cutter assembly individually.
−Remove working worm.
5.2 Description of cleaning and disinfection
Safety instructions
◆Before starting cleaning the main switch must be turned off and
secured.
◆The meat mincer must not be cleaned with a high pressure
cleaner.
Procedure for cleaning
−Prepare the meat mincer as described in chapter 5.1.
−Preclean with brush and water jet or clean all parts thoroughly
with brush and luke-warm water or cleaning solution.
−Clean all machine parts and surfaces, especially the funnel and
worm housing, thoroughly with a brush and cleaning solution.
−Cover all parts and surfaces, with the exception of the control
panel, with foam cleaner (temperature ca. 40 - 60 °C) or clean
thoroughly with a brush and cleaning solution.
−After a reaction time of 5 - 10 minutes (Note the instructions of
the cleaning agent manufacturer) rinse thoroughly with warm
water, so that no dirt or cleaning agent residue is left behind.
−Clean the holes of the perforated plate by pressing onto a sponge
or with a high pressure cleaner (at a distance from the machine).
Push out meat remnants with a needle if necessary.
−Then clean and disinfect the parts of the cutter assembly in the
dishwasher (minimum working temperature 80 °C).
−Finally, grease the cutter assembly lightly with cooking oil.
−If necessary, apply spray or foam disinfectant solution to all

surfaces. Observe the product information sheet of the
disinfection agent.
−After a reaction time of 5 - 10 minutes (Note the instructions of

water, so that no dirt or cleaning agent residue is left behind.
−For rinsing the sealing at the worm drive, connect the water
hose to the water supply R 1/2“ (see picture 5) and rinse
whith potable water for about 15-20 seconts.
−Before commissioning, rinse off the entire meat mincer with
potable water from a hose. Rinse out filling openings and worm
housing!
−Dry off threads in worm housing with disposable paper towels.
−As cleaning agent, a mixture of drinking water and cleaning agent
in the concentration recommended by the manufacturer is
permissible.
−The following cleaning agents and disinfectants are
recommended: P3-topax 19, 2-3%, P3-topax 99, 1-2%. The
machine must be cleaned monthly or when a scale or protein
deposits must be removed with an acidic cleaning agent e.g. P3-
topax 56, 2-4%.
