IMPORTANT SAFEGUARDS
To reduce the risk of personal injury or property damage when using this Electric Appliance, basic safety precautions should always
be followed. You can get total satisfaction from your Manttra Chef-Xpress Electric Pressure Cooker if you follow the simple
instructions given below:
1. Read all instructions carefully, paying special attention to section on “How to use your Programmable Electric Multi Cooker”.
2. Do not touch hot surfaces. Use handles or knobs.
3. To protect against electric shock, do not immerse cord, plug, the electric unit (plastic base) and base of pot in water or any other
liquid.
4. Close supervision is necessary when this appliance is in use by or near children.
5. Disconnect from outlet when not in use and before cleaning the appliance. Allow to cool before putting on or taking off parts.
6. Do not operate this appliance with a damaged cord or plug or after the appliance malfunctions or has been damaged in any
manner. Call our toll free number for information, or return the appliance to the Manttra Inc. for examination, repair, or
adjustment.
7. The use of accessory attachments not recommended by the appliance manufacturer may cause fire, electric shock or injury.
8. Do not use the appliance outdoors.
9. Do not let the power cord hang over the edge of the table or counter, or touch hot surfaces.
10. Do not place the appliance on or near a hot gas or electric burner, or in a heated oven.

11. Extreme caution must be used when moving the pressure cooker (pot & lid) containing hot liquids and do not move the electric
unit when in use.
12. To connect, plug the power cord in the wall outlet. To disconnect, press CLR/OFF button, then remove the plug from wall outlet.
13. When finished, press CLR/OFF button until the indicator goes off and then remove the power cord from the wall outlet.
14. Do not use the Electric pressure Cooker for other than intended use.
15. This Electric appliance cooks under pressure. Improper use may result in scalding injury. Make certain the cooker is properly
closed and placed in position before operating.
16. Do not immerse the electric unit in water/wash.
17. Do not use any other cooking pot other than the cooker body/insert provided with the appliance.
18. Do not fill the cooker to more than two thirds of its capacity. For solids like rice, meat and vegetables, which expand during
cooking, do not fill the unit over half full. Overfilling may cause a risk of clogging the vent tube and developing excess
pressure. See section on “How to use your programmable electric multi cooker”.
19. Do not pressure cook foods such as applesauce, cranberries. pearl barley, oatmeal or other cereals, split peas, noodles,
macaroni, rhubarb or spaghetti. These foods tend to foam, froth and sputter and may block the pressure release device.
20. Always use the pressure cooker with adequate liquid other than oil. Do not allow the cooker to boil dry.
21. Always check the pressure release device for clogging and keep the space around the safety plug on the inside of the lid clean
before use.

22. Do not release the pressure using the Quick Release System (QRS) feature while the pressure cooker is placed in the electric
unit. When you release the pressure, release the steam gently when cooking rice, lentils/beans as the liquid may froth over.
When using the QRS feature, please note that steam will issue and therefore to avoid serious injuries or burns, keep bare skin,
face and eyes away from the steam release valve. Do not use the Quick Release System for foods with a lot of liquid, as there
could be an overflow.
23. Do not attempt to force the lid open or change the pressure settings when the unit is in use and until the inside pressure is
safely released.
24. Do not use this appliance for pressure frying with oil or shortening.
25. Always turn the appliance off and disconnect from wall outlet when cleaning. Clean the surfaces of the plastic parts with a soft
damp cloth. Cleaning the body with organic solvents like thinner or benzene will damage the surfaces. Do not allow liquid /
water to enter the control column.
26. Do not remove the pressure regulator from the lid till the lid is removed from the cooker.
27. Do not lift the pressure cooker using the lid handle.
28. Do not attempt to force the VPI down, when the cooker is under pressure.

WARNING:
This appliance generates heat and escaping steam during use. Use proper precautions to prevent risk of burns, fires, or other
injury to persons or damage to property.
General Information:
This is a 120 volts, 1250 watts appliance.(See label on the product) To avoid electrical circuit overload, do not operate it on the circuit
with another high wattage appliance. Plug the cord into a 120 VoltsAC outlet.The cord length of this appliance was selected to reduce the
possibility of dangling. If more cord length is needed use an Underwriters Laboratories’ listed extension cord rated no less than 15 amps
and 120 volts. When using an extension cord, be sure not to let it dangle where someone could accidentally pull or trip over.
Electrical Requirements:
This appliance must be supplied with the proper voltage and connected to an individual, properly grounded branch circuit rated at not
more than 20 Amps. protected by circuit breaker or fuse.
Electrical Power:
The built in heater capacity is 4250 B.T.U./ hour for 1250 watts.
Consumer safety Information:
This appliance is equipped with a grounded type 3 wire cord (3 prong plug). This plug will only fit into an electrical outlet made for a 3
prong plug. This is a safety feature. If the plug should fail to fit the outlet, contact an electrician to replace the obsolete outlet. Do not
attempt to defeat the safety purpose of the grounding pin part of the 3 prong plug.
Cleaning:
Do not immerse in water/wash the plastic base and the base of the pot. Before cleaning, always be sure to have the appliance disconnected
from the wall outlet.. The best way to keep it clean is to wipe away any spills, spatter after each use with a damp cloth. Ensure that the
damp cloth used is not dripping wet. After cleaning, blot dry the plastic parts with a paper towel or sponge.

INTRODUCTION
MANTTRA ELECTRIC PRESSURE COOKER is brought to you by MANTTRA INC.
PRINCIPLE OF PRESSURE COOKING:
Under normal circumstances, most foods cook at 212
0F ( 1000 C). This is because the water boils at this temperature
in normal atmospheric pressure.
If the temperature of cooking is raised, foods cook much faster. For example, 320F (180C) increase in temperature
allows food to be cooked roughly four times faster, retaining freshness and nutritional values of the food.
By increasing the steam pressure inside a pressure cooker to 12 lbs per square inch above the atmospheric
pressure, the temperature inside the pressure cooker increases by 32
0F (180C) roughly. Thus, at these higher
temperatures food cooks much faster.
This is the principle of pressure cooking.

Dear Customer,
Congratulations! On buying our Manttra Chef-Xpress
Electric Pressure cooker.
Basically this is a pressure cooker. Therefore you have
all the advantages of pressure-cooking over normal
cooking, such as saving of time, energy and retention
of flavor and nutritive values. In addition, this unique
product is packed with advanced features, which give
you additional safety and reduce your drudgery.
Following are the features built in:
1. Pot and Lid: The basic pressure cooker’s body and
lid are made of sparkling stainless steel to retain its
lustre forever.
2. Base (skirt): This base at the bottom of the pressure
cooker has a built in electrical heater and a special
connector which links it to your domestic power
supply, through a mating connector in the Electric Unit
(plastic base) through the supplied cord. The connector
with the plastic base has a safety interlock, which
ensures that the grounding pin is first connected before
the power is supplied to the coil. This also provides a
measure of protection from accidental electric shock,
when the cooker body is out of the plastic base. Do not
immerse this in water.
3. Electric Unit (Plastic Base): This
plastic base houses the power
connections and all the electronics for
the programmable controller, the
electrical interlocks and the over
temperature thermal cutout. Do not
immerse this in water. Clean only by wiping with a
damp cloth.
4. Programming:
a. IDLE Mode:When the appliance is connected to the
wall outlet, display shows “00”. The seconds indicator
LED is off, “POWER ON” LED is off and the buzzer is
silent. This is the idle mode.
b. WARM Mode: Full power for 4 minutes
automatically followed by WARM mode, during which
BEGIN A REVOLUTION IN YOUR KITCHEN

10% power only is applied continuously. The LED will
indicate “ ”
c. BROWN Mode: By pressing the “START” button
before the “SET” button, the cooker automatically goes
into the BROWN mode. The LED will indicate “ ”.
The “POWER ON” LED will start blinking.
d. COOK Mode: The controller can be user
programmed to set any cooking time from 4 to 60
minutes. At the end of this time the cooker will beep
and automatically go to WARM mode.
e. The controller has a count down timer. During
operation the 2 digit Light Emitting Diode (LED)
display shows the remaining cooking time, and the
decimal point at extreme right blinks.
5. Safety Features:
a. The Pressure Regulator: This
appliance is equipped with a 3 stage
pressure regulator which is the first
safety device. This operates at two
pressure settings at 8 lbs. per sq. inch and at 12 lbs. per
sq. inch with the Quick Release System (QRS) feature.
If you want to cook at lower pressure (8 psi) align the
tang of the pressure regulator to the notch on the cup
in the pressure regulator console
marked by “I” (a single line) and
for cooking at higher pressure (12
psi) align the tang to the notch on
the cup in the pressure regulator
console marked by “II” (two lines).
When the cooker reaches the set
pressure the pressure regulator
will release the steam with a hiss
safely in one direction away from
you. After the cooking is over, for Quick release of
steam, align the tang of the pressure regulator to steam
release position marked as “ ” on the side of the
console.

b. Gasket Release System (GRS): In case of abnormal
conditions, when the pressure inside goes beyond the
safe level due to clogging of food in the vent tube, a
portion of the gasket will get pushed through the slot
in the lid, safely releasing the steam through the hole
on the lid located under the pressure regulator console.
This is the second level safety device.
c. Multifunction safety plug:
i. The first function of this device is
zero pressure operation. When the
cooking starts from cold the air inside
the cooker is expelled.
As pressure builds up you will see initially, emission
of steam through the multifunction safety plug and
the slot on the lid console as it takes a little while for
the safety plug to seal the cooker. During this period
the steam may condense and a few drops of water may
also drip. This will stop once the safety plug seals with
the pressure build up.
ii. The second function is the fusible plug operation.
In the unlikely event of both the pressure regulator and
the GRS failing to function, the metallic fusible alloy
in the plug melts to release the pressure.
d. Visual Pressure Indicator (VPI):
For your additional safety, your Electric
Pressure Cooker is equipped with a
Visual Pressure Indicator housed in the
safety button console. When the
pressure starts building up inside the
cooker, the VPI is pushed above and will
rise above the surface of the console. This indicates that
your cooker is under pressure. Similarly, after cooking
is over and the issue of steam stops completely, the
VPI drops below the surface of the console, giving you
a visible indication that you can safely open the cooker
by turning the safety button to “OPEN” position by
aligning the arrow mark on the button with the
“OPEN” indication of the cooker on the console.

e.Mechanical interlock: The front lid console houses
a 2 way safety button, which works in conjunction with
the multifunction safety plug and the cam that locks
the lid and body together in the closed condition. This
button can be set with the arrow mark on it against 2
positions, namely “Open” position and “Close”
position.
f. Auto Cut Off: In the event of accidental dry heating,
the cooker automatically shuts down the power and
the LED shows “ ” indication. Disconnect the cord
from the wall outlet, open the cooker, clean the pot
thoroughly, add adequate water and restart
.

This electric pressure cooker comprises of two major
components namely:
a. Electric unit (plastic base) housing the Micro
processor control system
b. Stainless Steel pressure cooker with an attached
base protecting the heater coil
a. Electric unit (plastic Base): This houses the
power connections, all the electronics for the
programmable controller, the electrical interlocks and
the over temperature thermal cutout. The pressure
cooker base (skirt), which protects the coil, has to be
positioned in this plastic base unit properly in the
groove provided in the base. The column contains the
micro controller circuit for time and power control.
This also has 3 buttons one below the other and a LED
status indicator for “POWER ON” function and the 2
digits display which displays in minutes the set time
during programming and the remaining time during
operation.
Once the pressure cooker is loaded with the required
food stuff and recommended quantity of water, close
the cooker and lock it properly as per the instructions
given under section ”How to use your programmable
electric multi cooker” (Page No. 12). While placing
the cooker on the plastic base ensure that it is properly
positioned in such a way that the projection on the skirt
of the cooker body is aligned with the corresponding
slot in the plastic base. This will automatically align
the heater terminals with the mating connector in the
plastic base. In this position, the marking “FRONT”
on the body will be facing the back of the control
column or facing you. The plug of the supplied cord
has to be securely connected to the power socket (wall
outlet).
The right most bottom corner decimal point LED of
the 2 digits display and the “POWER ON” mode LED
on the column will both be off. The 2 digits LED
indicator over the SET button (First from the top) will

glow and read as “00” as time. This has 2 modes:
i. If the ‘SET’ button is momentarily pressed once
and released the display will indicate 04 minutes with
a short beep and wait for the START command.
ii. If the “START” button is pressed, the cooker will
automatically go into BROWN mode and the LED will
show “ ”. After browning press CLR/OFF to
programme cooking.
iii. If the SET button is kept pressed continuously the
display will keep jumping with 1 minute increments ,
with a short beep for each increment. Stop when the
display shows the required time. In case you have
overshot the required time (for example: 30 minutes
instead of 25 minutes) all you need to do is to press the
CLR/OFF button (third from the top) once. This will
cancel the setting and restore the display to “00”. Now
repeat the operation to get the required time. Now the
cooker is programmed for the required cooking time.
Now press the START button (second from the top)
once. The heater is now put on power and the cooking
starts. The decimal point LED indicator will start
blinking at 1 second intervals showing, the timing is
in progress. The “POWER ON” LED will be ON.
Simultaneously the digital display also starts counting
down . At the end of the set time, the display will read
"00", the beeper will sound, then the display will show
“” and “POWER ON” indicator will blink, ie, 3
seconds ON and 30 seconds OFF. The heater will be
now in the KEEPWARM mode with only 10% power
applied . The cooker will remain in this state till the
the CLR/OFF button is pressed or the cord
disconnected from the wall outlet. When the CLR/
OFF button is pressed the indicator LED goes off, to
show that the WARM MODE also is now off and the
display returns to "00".
NOTE: Do not immerse the plastic base in water. In
case it becomes soiled or requires cleaning, first press

CLR/OFF button and then disconnect the unit from
the wall outlet and remove the cooker. Wipe the unit
with damp (not dripping wet) cloth using, if necessary,
any mild detergent. Water or any liquid should not
get into the plastic base.
b. Skirt : This base at the bottom of the pressure cooker
has a built in electrical heater and a special connector
which links it to your domestic power supply, through
a mating connector in the Electric Unit (plastic base)
through the supplied cord. The connector with the
plastic base has a safety interlock, which ensures that
the grounding pin is first connected before the power
is supplied to the coil. This also provides a measure of
protection from accidental electric shock, when the
cooker body is out of the plastic base. Do not immerse
in water.
Note: Always use the body handles to lift the cooker.
The cover handle should not be used for lifting the
whole cooker, but only to open the cooker lid.

a) PRESSURE COOKING:
1. Using the body handles lift and place the cooker in the electric unit (plastic base). The marking “FRONT” on
the body should be facing the back of the control column.Align the projection on the plastic skirt at the bottom
of the cooker with the corresponding slot in the plastic base. When correctly placed the safety button console
will be directly above the column. Fill the body of the cooker with required quantity of food and water.
A minimum quantity of 1 cup (7 oz.) water must be used for the first 5 minutes of pressure cooking. For every
additional 5 minutes of cooking time set, add half cup (3
1/2 oz.) of water extra. These quantities are in addition
to the liquid required for cooking foods like beans and other cereals.

2. Turn the 2-way safety button on the lid handle clockwise to align with the arrow mark on the
button with the “Open” indication of the cooker on the console.
3. Inspect the lid so that the vent tube passage is clean and clear from any blockage and also the area around the
Safety Plug is clean inside the lid.
4. Ensure correct fitting of the gasket inside the lid. Now place the lid down on the body in such
a way that the arrow mark on the lid is in line with the arrow mark on the left side body handle.
Press the lid down gently and turn the lid handle clockwise till the lid stops and the lid handle
is in alignment with both the body handles.
5. Move the 2-Way button anticlockwise fully to align the arrow mark on the button with the
“Close” indication of the cooker on the console.
6. Place the pressure regulator on the vent tube in such a way that the steam outlet on the
regulator cowl is away from the lid handle and align the tang to either the low pressure setting
(8 psi) marked as “
”or high pressure setting (12 psi) marked as “
”on the console depending
on the recipe (please refer the recipe book seperately enclosed). Ensure that the regulator sits
properly, for proper engagement of the regulator with the vent tube with a “click”. Remember,

once the pressure regulator is set and the appliance is switched on the pressure settings should not be changed
till the cooking is over and the internal pressure completely released.
7. Insert the plug of the cord securely into the socket (wall outlet) and switch on . This plug will
fit into an electrical outlet only in one way. Do not modify plug in any way. Please read the
information given on page no. 4.
8. The 2 digits LED indicator on the control console will glow and indicate “ 00 “ as time. Now set the time by
pressing the “SET” button (first button from the top) once. Now the LED indicator will show “ 04 “ minutes.
Keep pressing till you get the required time on the display and leave it.
9. Once the required time is achieved press “START” button ( second from the top). Only on activation of this
button, the cooking cycle will start. The decimal point at the lower right extreme of the LED display starts
blinking.
10. After pressing the “START” button the “POWER ON” LED will light up. If it does not, then contact has not
been made. Shake the cooker a little bit and the “POWER ON” LED will light up.
11. Once the pressure starts building up inside the cooker, the VPI will rise above the top of the safety button
console.In the unlikely event of the steam continuing for a long time and the VPI not rising, tap the lid lightly
with the tip of a knife/fork. Even after tapping, if the VPI does not rise, the reason could be due to one of the
following:

i) The appliance is not energised/the “START” buton is not pressed.
ii) The cooker is not fully closed and the 2 way safety button is not turned to “close” position.
iii) There is insufficient liquid in the cooker for steam generation.
Determine the reason and take corrective action without touching any hot parts of the cooker. Reset the cooker
and start the cooking process.
12 . Once the cooking cycle is complete, the unit will give 4 beeps and will go into “WARM” mode and the
display will indicate “ ” This will stay in warm mode till the “CLR/OFF” button is pressed. Press “CLR/
OFF” button (third from the top) until the indicator goes off and then remove the cooker from the electric unit
(plastic base).
13. Using the handles of the body remove the cooker from the electric unit (plastic base). The lid
and body surfaces may be hot. Be carefull not to touch any hot surfaces.
14. Your cooker is equipped with the Quick Release System (QRS). If you wish to operate the
QRS, remove the cooker using the body handles from the electric unit. (Refer point no. 13) Turn
the pressure regulator by aligning the tang of the pressure regulator to the steam release posi-

tion marked as “ ” on the console.As steam will issue, remove your hands and wait for all the steam to exhaust.
15. After the steam stops completely, and the VPI drops below the surface of the console, turn the 2-Way safety
button to “OPEN” position by aligning the arrow mark on the button with the “OPEN” indication of the cooker
on the console.
After the cooking is over and the steam issue stops completely after using the QRS, if the VPI is stuck in its risen
position for a long time, keep the button in the “CLOSE” position, tap the lid lightly with the tip of a knife/fork.
The VPI will drop down and now you can turn the button to “OPEN” position tosafely open the cooker.
16. Open the cooker by turning the lid anticlockwise and take off the lid gently.
CAUTION:
• Do not operate the QRS when the cooker is on the electric unit.
• When you operate the QRS, the steam issue will be very hot. To avoid serious injuries or burns, keep bare
skin, face and eyes away from the steam release valve.
• Do not use the QRS for foods with a lot of liquid. There could be an overflow.
• Do not remove the pressure regulator from the lid until the lid is removed.
• Do not change the pressure settings, when the cooker is in use, or while there is pressure inside the
cooker.

b) BROWNING:
Braised foods always taste better, when browned before
cooking in liquid.Your Electric Pressure Cooker can also be
used for browning, following the simple procedure given
below:
•Add required amount of oil in the pressure cooker pot.
•Place the ingredients in the pot.
• Place the pot on the electric unit.
•Press “START” button once and the display will show
“” The “POWER ON” LED will start blinking at 3
seconds on and 3 seconds off. In case the “POWER ON”
LED does not light up, shake the pot slightly to ensure
contact.
•Brown the contents to your choice, by continuously
stirring.
•Press “CLR/OFF” button. The browning mode will shut
off.
•Now proceed with your recipe and continue cooking.
c) WARMING:
This function helps to re-heat or keep the food warm
for a maximum of 4 hours time.
•Pour one cup (7 oz) water into the cooker body.
•Place the cooked food to be warmed in the cooker
body, either on the trivet or in the basket.
•Close the cooker with the Stainless Steel lid and
position it properly on the electric unit, following
the steps outlined under the Pressure Cooking
section.
•Press the SET button once and the time will jump
to “04” minutes.
•Press START button. The right most decimal LED
indicator will start flashing. Ensure “POWER ON”
LED is lit. If not shake the pot slightly to ensure
contact.
•Once the SET time has elapsed, the cycle will
automatically go into “WARM” mode and the
display will indicate “ ”
