IMPORTANT RECOMMENDATIONS
This cabinet is designed for use in restaurants, catering facilities, etc... It is
not intended for industrial use.
It should be installed by a specialised installer.
Avoid installing the cabinet near a major source of heat or in direct exposure
to sunlight.
Note that too high an ambient temperature can impair performance.
The air compressor condenser must be cleaned regularly (every 3 to 6
months) by a refrigeration engineer.
Do not modify the electrical connection made by the installer, particularly the
earth continuity circuit. In case of a problem on the electric circuit, only the
installer or the builder are competent for servicing
The supply cable that is fitted is a specific part and should only be replaced
with an original part. Being considered as a circuit-breaker, make sure that the
plug is easily accessible as a means of isolation.
Observe the rules of hygiene by regularly cleaning the :
. interior fittings
. door seals
. interior lining
Do not use corrosive or acid products.
Water spraying can cause damage.
. Do not clean with a water jet in order to avoid spraying the appliance.
. Do not install the appliance in the open air or exposed to the elements.
Correct functioning depends on the factory fitted safety systems being
respected. No responsibility can be accepted for malfunctions that result from
modifications made to the equipment.
The manufacturer can not be held responsible if the equipment is used for anything
other than the purpose it was designed for.

2. CONTROL PANEL
IMPORTANT
Regulation does not switch off general supply to the appliance.
If the unit is not going to be used for a prolonged period switch off at unplug or turn
off at the isolator to protect the refrigeration equipment.
In standby mode the thermostat does not cut off general supply to the appliance and, as a
consequence, only the compressor and condenser are switched off.
2.1 DESCRIPTION OF THE CONTROL PANEL
Key 1: "HACCP" and key (-) Led 1°: Cycle " Soft Chill "
Key 2: "Choice of cycle" and key (+) Led 2°: Cycle "Defrost"
Key 3: "Cycle launch" Led 3°: Cycle "Freezing"
Display 1: Main temperature display Led 4 : Cycle in progress
Display 2: Bar-graph display
Key 1: "HACCP"
The HACCP key will display the information of the last cycle realized when the
appliance is on standby (the main display indicates the duration then the final temperature of
the last cycle) or the information of the cycle in progress when the appliance is processing a
cycle (the main display shows the time spent from the beginning of the cycle, then the
anticipated remaining time to reach the cycle end).
Key 2: "Choice of cycle"
The “choice of cycle” key selects either "Soft Chill" or "Defrost" or "Freezing". By
successively depressing the key you select one of the 3 cycles indicated above and return to
the cycle by default.
Note: The operation is autonomous after the cycle is launched and at the end in
conservation phase (preadjusted setpoints according to the cycle chosen).

The “Cycle Launch” key launches cycles whatever the parameters.

When a cycle is in progress, the turning leds (Led 4) are activated.
It is possible to interrupt a cycle in progress at any time by depressing the "launch
cycle"key (key 3) for several seconds.
"rEG"is displayed if the cycle in progress does not comply to the regulation.
In order to reduce energy consumption, the cabinet switches over automatically to
"stand by"mode after several minutes of inactivity. The "stand by" mode is visible by the
middle led on the main display which flashes at very low frequency.
You can leave the "stand by"mode at any time by depressing any key on the keyboard.

Stopping the buzzer to end the cycle is done simply by pressing any key on the control
board.
At any time you can change the cycle time or temperature of end of cycle. To do so,
while the current cycle unfolds, press key 3. It then becomes possible to change the setting
by pressing key 1 (-) and the 2 (+).
2.2 OPERATING TEMPERATURE CYCLE
Before putting foodstuff in the appliance for chilling or freezing, it is advisable to have
set an operating temperature cycle in order to cool down the inner cavity of the cabinet so as
to benefit from optimal performance of the refrigerating system.
Depress the "launch cycle " key (key 3) and wait till the end of the cycle at +10°C.
2.3 QUICK REFRIGERATION CYCLE IN "PROBE" OR "TIME"
MODE
Depress the "Launch Cycle " key (key 3);
Electronics will automatically detect the type of cycle it can carry out in Probe or Timer
mode.
If the probe is inserted in a hot product, the cycle will start in skewer probe; if the probe
remains in the ambient surrounding, the cycle will be in Timer mode.

2.6 DEFROST CYCLE
Before starting a cycle, check the amount of frost on the evaporator. If there is a great
deal of frost it will block the evaporator and defrosting will be necessary.
2.6.1 NATURAL DEFROST
The cabinet being switched off and stopped, leave the cabinet door open.
2.6.2 FORCED DEFROST
1/ Depress the "Cycle Choice" key (key 2) to select the defrost cycle (Led 2).
2/ Launch the defrost cycle by depressing the "Launch Cycle"key (key 3).

3. UTILISATION OF THE CABINET
3.1 GENERAL REQUIREMENTS
Position the load so that il will not hinder good ventilation which ensures distribution and
circulation of cold air in the cabinet.
If the cabinet is operated with the timer, check that the skewer probe is properly
positioned on its support in order to measure temperature inside the cabinet properly.
3.2 INNER FITTINGS
3.2.1 GASTRONORM GN1/1 530x325
Inner fitting composed of runners adjustable on racks is designed for loading GN1/1 on
grids or directly in gastronorm pans.

3.3 LOADING
The unit should be loaded so that there is at least 15mm between items to allow air to
flow around them.
The refrigeration or freezing time depends on the load, its nature, and thickness of the
foodstuffs.
In any case, products must be as thin as possible and never be over 4 cm. For
example, for a cabinet with 20 kg capacity, it is preferable to load the cabinet with 20
elements of 1 kg than 4 loads of 5 kg.
3.4 VENTILATION
In order to guarantee refrigerating performances, verify that the ventilator grids and the
exhaust air chimney are in no case obstructed.
3.5 RECUPERATION OF WATER FROM DEFROST
Check that no foreign body obstructs the evacuation hole located on the bottom of the
drip tank in front of the evaporator.
It is necessary to empty the drawer placed beneath the appliance which collects defrost
water regularly.
3.6 SIGNALS AND DEFECTS
cE = Indicates a communication problem between the display card and the power box.
dEF = Indicates a defrost cycle in progress.
rEG = Indicates that the cycle has not progressed accoding to the regulation. By
depressing one key you delete this message.
E1 = Faulty ambient probe.
E2 = Faulty skewer probe –If the skewer probe is faulty, it is still possible to use the
cabinet in timer mode.
ELE = Faulty black out (the current cycle stop and the fridge cycle start)
The sound alarm can be switched off by depressing any key.

4. CLEANING
WARNING
Before all cleaning operations the cabinet should be SWITCHED OFF.
THE USE OF CLEANING PRODUCTS AT A TEMPERATURE OF OVER 60°C IS
STRICTLY PROHIBITED.
Using a high pressure jet or lance is also prohibited on external and technical parts of the
equipment.
The warranty will not cover problems that result from failure to heed the above warnings.
4.1 INNER CAVITY
All traces of dirt should be eliminated on a daily basis.
Button-hole mounted runners and racks of inner fitting can be easily removed for easier
cleaning (See § 2.2).
4.2 STAINLESS STEEL SURFACES
Wash these surfaces with soap and water or a neutral non abrasive detergent. RINSE
THOROUGHLY and dry
Do not use abrasive products, plastic or steel wool pads: these will scratch the surface.
Never rub stainless steel with steel wool but only Scotch Brite pad or similar product
when this is absolutely necessary and only in the same direction as the grain of the polish.
4.3 REGULAR CLEANING
In order to maintain refrigeration performance and ensure the longevity of the
compressor, cleaning is required to clear dust from the condenser every 3 to 6 months. This
should only be undertaken by the installation engineer (Refer to the maintenance
instructions).
Particular attention should be paid to the door seals using a damp sponge to remove
any particles that may lodge in the folds of the seal.
As the door seals are clipped on, they can be taken off for easier cleaning.

5. MAINTENANCE
5.1 FOREWORD RELATING TO STAINLESS STEELS
Stainless steel is a type of steel designed to allow a thin protective layer to form on the metal
surface to protect it against corrosion (Oxide film resulting from the chemical reaction of oxygen on
the metal surface).
Any element disturbing the formation of this film or making its partial destruction easier (Food
deposits, spills, stagnant liquids…) all degrade the resistance to corrosion.
Just because the composition of stainless steel allows it to resist some chemical aggression
better than ordinary steel, do not imagine that stainless steel is indestructible.
3 main factors of corrosion to watch for:
- The chemical
environment
In general :
* Diverse brines (Concentrations of salt, sauerkrauts…)
* Chlorides, particularly in:
- Cleaning products
- Bleach.
- Temperature:
Any chemical environment becomes considerably more aggressive
towards stainless steel at higher temperatures.
- Time:
The longer the contact time the more perceptible the
consequences of the corrosion will be.
The combination of these three factors can lead to the destruction of interior surfaces even
those of high quality stainless steel.
It should be noted that when stainless steel corrodes it is extremely rare that the
corrosion comes from the steel itself. Generally inappropriate or badly used cleaning
products, poor maintenance or extreme conditions of use are found to be the cause of the
problems encountered.

The manufacturer cannot be held responsible for cases of corrosion encountered in such
conditions and no warranty will then apply.
A list of the most common causes follows, to help you identify them and maintain your
equipment service life for as long as possible.

5.2 THE COMMONEST CASES OF CORROSION
Floor cleaning
Cleaning floor tiles (after building work or during normal service) is often carried out with very
aggressive products. If such products are sprayed under pressure without caution, the splashes
beneath appliances cause corrosion of bases and panels.
Even worse the vapours from these products fall onto the equipment and extend the corrosion
to all surfaces unless the area is immediately and forcefully ventilated.
Inappropriate cleaning products (Bleach, acids, soda)
If such products or any others that are not specifically designed for use on stainless steel are
used an irreversible attack occurs on the stainless steel surface.
Cleaning products applied at too high a temperature
All cleaning products become more aggressive if applied hot or to a hot surface. As a general rule the
temperature should not exceed 60 °C, so as not to attack the stainless steel and provoke irreversible
blackening of the surface…
Cleaning products not rinsed off properly
If interior surfaces once cleaned are not thoroughly rinsed in order to eliminate any trace of
cleaning product this residue will in time continue its action and provoke corrosion.
Even worse if such surfaces are heated to over 60°C with such products still on them the
problems mentioned already will inevitably occur.
Stagnation of cleaning products
In the same way any area that can retain cleaning chemicals notably gulleys, drains …must be
rinsed thoroughly and abundantly. (Use a nylon brush and fresh water to strengthen the rinsing
action).
Salt concentration
Salt found in every kitchen is often the cause of pitting in stainless steel. Any spillage should be
cleaned off immediately.
Use in an intensive brined environment
Certain products such as Sauerkraut (acidity) and seafood (presence of salt), and as a general
rule all brines require particular attention. Occasional use should not present problems provided
everything is carefully and systematically cleaned after every operation.
High chlorination levels in water
At times certain water supplies have too high a chlorine content. In such cases it is not rare to
encounter the problems mentioned above.
Cleaning aluminium or aluminium coated accessories
The presence of aluminium-coated sheet in a chlorinated solution considerably increases the
level of attack on stainless steel.
Do not leave aluminium accessories such as trays in the bottom of cabinets. One night is
sufficient to attack the equipment’s surface at the points of contact
