Cooking information
COOK ON YOUR GOURMET BBQ PIZZA OVEN
1. To achieve the desired temperature range for cooking food in your Gourmet BBQ Pizza Oven, adjust the
burner settings on your gas barbecue, or adjust vents if using a charcoal grill. Please note heating times
may vary depending on your barbecue, for best results the temperature dial should read in the
“ideal zone”.
2. Use around 2 tbsp flour to dust a wooden pizza peel and disperse over the surface evenly. Remove any
excess flour.
3. Once rolled out, place your dough on to the floured wooden peel. Make your pizza using your selected
sauces and toppings. Be careful not to spill the sauces or toppings onto the peel as this may cause
your dough to stick to it.
4. Place your wooden peel mid-way into the pizza oven, use a quick back and forth motion whilst removing
the peel to place the pizza inside. Please remember the cooking chamber will be very hot and failure to
use a pizza peel to place the pizza inside could cause serious injury.
5. Once inside the cooking chamber your pizza will begin to cook. The pizza oven is hotter at the back so
you will need to rotate the pizza every 20-30 seconds to help achieve an even bake.
6. Once satisfied that the pizza is cooked to your requirements (approx. 3-5 minutes depending on your
barbecue and thickness of your dough) you can remove it using a metal pizza peel.
BUILDING YOUR PIZZA
1. Pizza Dough - Homemade or readymade. While shop bought bases are easy they can often be too thick,
and may require longer cooking time. See below for simple dough recipes to get you started.
2. Pizza Sauce - Homemade or ready made.
3. Cheese: The best cheese to use is Mozzarella but other hard cheeses are just as tasty!
4. Toppings: Use your creativity but we recommend pre-cooked meats, chopped vegetables and if you’re
feeling brave, how about chillies!
5. Condiments: We recommend sea salt and fresh basil but you can be as adventurous as you like!
BASIC DOUGH RECIPE:
INGREDIENTS LIST
200 g | 1 1/3 cups strong white bread flour
1/2 tsp easy blend dried yeast
1 tsp caster (superfine) sugar
1/2 tsp fine sea salt
1 tbsp olive oil
METHOD
Mix the flour with the yeast, sugar and salt in a large mixing bowl and make a well in the centre.
Stir the oil into 140 ml of warm water, then pour it into the well and mix with your hands to form a rough
dough. Turn the dough out onto a lightly floured or oiled work surface and knead.
Brush the mixing bowl with a little oil, put the dough back inside and cover the top with a sheet of oiled
clingfilm. Leave the dough to rest at room temperature until it has doubled in size. In a warm room, this
should take around 1 hour. In a cooler room it may take 2 hours or more, although the longer the prove,
the better the flavour of the finished dough. When the dough has risen, repeat the kneading process until
it looks the same as it did before it was left to rise. It is now ready to be shaped, topped and baked.
FOOD COOKING INFORMATION
• PLEASE read and follow this advice when cooking.
• ALWAYS wash your hands before and after handling uncooked meat and before eating.
• ALWAYS keep raw meat away from cooked meat and other foods.
• ALWAYS ensure tools are clean and free of old food residues before cooking.
• ALWAYS ensure all meat is COOKED THOROUGHLY before eating.
• DO NOT use the same utensils to handle cooked and uncooked meats.
• CAUTION – eating raw or under cooked meat can cause food poisoning
• To reduce the risk of under-cooked meat, cut open to ensure it is cooked all the way through.
• CAUTION – if meat has been cooked sufficiently the meat juices should be clear and there should be no
traces of pink/red juice or meat colouring.
• Pre-cooking large pieces of meat and joints is recommended before finally cooking in your Gourmet
BBQ Pizza Oven.
• After cooking always clean any utensils you have used.
• Before cooking commences any foods that contain or are coated in fats, oil, or butter should not contact
the Gourmet BBQ Pizza Oven cooking chamber directly as the stone will absorb any fats, oils and
butters and can cause staining, odours, smoking and could corrupt the flavour of any future items
cooked. Instead these items should be placed on to a metal baking sheet, metal pan or a cast iron skillet.
• PLEASE NOTE: Do not pre-cook pizza, pizzas are cooked directly on the stone base of the Gourmet
BBQ Pizza Oven.
